In 2018, an era known for its innovative cocktail culture, that may be a surprising answer, but it may tell you everything you need to know about Kingfisher. That’s the new cocktail bar Umstead is opening with his wife, Michelle Vanderwalker, at 321 E. Chapel Hill St., next to The Durham hotel in downtown. It is expected to open later this year.
The Triangle is already teeming with classic and inventive bars, but Umstead said Kingfisher represents the next step: farm to cocktail.
A strawberry daiquiri “made right” means tart and dry, some sweetness from the rum, some lime juice and is an entire white sand world away from the saccharine sweet frozen concoction usually thought of today.
Kingfisher intends to build a drink menu that shifts the dominant flavors from the booze to strawberries, or tomatillos or celery, and then adding the spirit that complements it. Umstead said the bar will be big into pickling, preserving, jamming, dehydrating and wringing ever bit of interesting flavor from the bounty of North Carolina. He said he picked up his tricks simply by paying attentions in the kitchens he’s worked at in New York and North Carolina.
It is the longtime cocktail dream of Umstead, who grew up in Cary and moved back to North Carolina from New York City in 2013, serving as the assistant manager at Herons at the Umstead Hotel in Cary
“We’re focused on presenting North Carolina produce as the star and then bring the booze behind that,” Umstead said.

Kids Town for Triangle Today Kids love to eat with their fingers. It’s just one of the fun things about meal time when we can accommodate them. With tacos, you have so many options that really only your imagination can stop you! Here are a few ways to help your kids create a healthy Taco Tuesday. Turkey Taco Lettuce Wraps Definitely low carb and healthy but by using ground turkey and romaine lettuce for shells, your kids will never know it! Depending on the age of your children, they may be able to help with preparation by dicing toppings or washing lettuce boats. Here is what you’ll need: For the filling: 1 Tbsp oil (preferably olive oil) 1/2 chopped onion 1 lb ground turkey 2 cloves garlic or 2 Tsp minced garlic 1 taco ceasoning packet 1/2 cup tomato sauce 1/2 cup low-sodium chicken broth Romaine lettuce leaves, doubled up, for serving Toppings such as your favorite shredded cheese, diced tomatoes, diced onion, diced avocado, chopped cilantro, light sour cream, for serving -
whatever your family enjoys on their tacos. If your children are old enough, consider allowing them (with your supervision) to dice toppings. You can also save time in this part of the process by finding diced toppings in your local grocers produce department. First, dice your onion and garlic cloves. Let the oil heat a few minutes before tossing them in. Sauté for 2-3 minutes before adding ground turkey and seasoning mix. Second, cook ground turkey until it is completely browned, drain if there is excess fat in skillet. If you have to drain, put the spiced turkey back into the skillet, return to stove top. Third, add tomato sauce and chicken broth. Bring it to a nice simmer and hold it there for 15-20 minutes. While your taco meat is simmering, prepare your favorite toppings or help the kids finish. By the time you have these ready, your taco meat should be ready as well. Enjoy
