Veggie Frittata Christina Hamlett Once upon a long-ago Saturday, I invited a cute IT guy from work to dinner. (Imagine Karl from Love, Actually.) I had perfected several recipes by then, all of which involved meat or seafood. Well, he called me that morning and said, “I remembered to tell you I’m a vegetarian, right?” Yikes! I casually lied and said, “Why, yes. Of course, you did.” I doubted he’d be impressed if I just threw together a salad but it was the only thing my racing mind could think of. As I was skaddling out the door to go shopping, I ran into my next-door neighbor and explained my plight. She offered me her recipe for a veggie frittata and told me that although she normally fixed it for Sunday brunch, it would pair nicely with some buttery rolls and a crisp white wine for dinner. She was right. Frittatas are also amazingly versatile in the use of ingredients. You can easily swap out different vegetables, experiment with different cheeses and even throw in some diced ham, bay shrimp or bacon bits (but only if your guest isn’t a vegetarian). Ingredients 3 eggs (large) 3 tbsp. heavy whipping cream 4 small white potatoes (scrubbed and diced) 1 diced or thinly sliced zucchini 2 Roma tomatoes (diced) 1 can (4 oz.) sliced button mushrooms 1/4 cup chopped red onion 1 tbsp. minced garlic 1/4 cup fresh parsley (chopped) 3/4 cup grated Gruyere or Swiss cheese 2 tbsp. butter Non-stick cooking spray Italian bread crumbs Optional: Cayenne Preparation Preheat your oven to 350 degrees. In a large bowl, whisk the eggs and cream. Set aside for the moment. Melt the butter in a large frying pan. Sauté the onion, garlic and vegetables (including the potatoes) on medium heat for 2-3 minutes. Transfer the vegetables into the bowl with the eggs and cream and blend together. Add the grated cheese and parsley. Thoroughly mix. If you’d like your frittata to have some zing, add a few dashes of cayenne. Spray a 9” ceramic or Pyrex pie dish with non-stick cooking spray.
Fold the egg/cheese/veggie mixture into the dish and sprinkle the top with Italian bread crumbs. Bake for 20-25 minutes.
Upon removal from the oven, let it set for 2-3 minutes before slicing and serving. P.S. Despite the deliciousness of my debut frittata (“The best frittata I’ve ever had,” he praised), it turned out to be our only date. As lots of 20-year-olds are wont to do (or maybe it was just me), I began imagining what the future would be like if we kept dating and I actually married him. Would he expect me to give up my fondness for meat and seafood? Would I have to cook two separate entrees for every meal to accommodate our differences? Were his parents and siblings vegetarians, too? What kind of challenges would this pose for the holidays if they all came to our house for dinner? What if we had children? Would he insist they be raised as vegetarians or allow them to decide for themselves when they turned 18? In the meantime, I’m sure the only thought in his head was, “That was the best frittata I’ve ever had. TK Brown, 14-Year-old Nashville Singer/Songwriter & Recording Artist from Gun barrel City, TX The very first time I had the pleasure of meeting TK Brown was on The Gospel Singing Show on the UA Network. We were both scheduled to sing on the show that was being broadcast to millions of people from all over the world! Folks, let’s just say I was a nervous wreck but TK brown was defiantly in her zone. She was meant to shine big and shine bright in the Spotlight! I just Knew that i had to write a story on TK Brown! So, we got together and I interviewed her on face-time and her are some of the questions that i just knew in my heart of hearts that we all wanted to know! Why did TK Brown start singing? She stated: that she wants to inspire other kids to step out and use their talents for the LORD as well. She wanted to travel and to share her gifts and let other kids or anyone that anything is possible if they just give it up to GOD and let him take control in their lives. TK Brown has been featured on my radio show podcast and we talked about bullying so I asked How did you Overcome Bullying? Her bullying started when she started singing other kids would tease her and make fun of her because she wanted to travel the world and sing as a 4th grader and she was told by other kids that she can’t sing it will never happen. She said she gave it to GOD and realized that she could accomplish anything as long as she “Let Go & Let GOD”. TK Browns mom plays a huge role in her daughter’s life TK Brown actually calls her mother her MOMAGER because her mom is her best friend but also right by her side in her Amazing musical journey. Anne Beck I am a mother of three beautiful children and a grandma of two cute kids. I love to bake, cook, garden, along with being outdoors. I enjoy a good book. I also enjoy gaming on the PC. I work as a temp as an Admin Support. When I have time, I write. I love action romance and have a few that are a paranormal romance that I am working on. I would say that I am a hopeless romantic. I write books that have a message in them. I write from my heart and let the story just flow. I always have music on, and it really depends on what I am writing as to what type of music I am listening to. I use classic rock for action. Smooth jazz or love songs for the time I need romantic that needs a soft side it helps me to put the mood in. I started to journal to get my thoughts down to work through something and Shattered just came out. I will say that it came at me so fast I could not type fast enough to get it all out. I have a few times when I jumped up and stepped back. With all of my books and stories, there are messages in them. I will say that for me there an always a part of me in each book. I write them as real people with problems that they are dealing with. I like the women to be strong even if they are in a situation that they need to be inferior. On the flip side all the men I write are alpha male with a strong side to protect the women they are claimed to be theirs. I started this one series with each title having an “S� as the beginning title. Thankfulness Cultivating a spirit of thankfulness honors God and strengthens our faith. It also strengthens our relationships with other people. We can’t be in a right relationship with God or with anyone without a spirit of thankfulness. Cultivating a spirit of thankfulness is more than a good idea; it’s a direct command from God. In the Old Testament, God laid down specific guidelines for the Israelites to bring offerings of thanks. In the New Testament, believers are instructed to be thankful in all circumstances. When we’re struggling with trials and difficulties, this sounds like a strange command, especially since we live in a culture that encourages us to act on the basis of how we feel in the moment; but God knows that when we focus on our blessings instead, it’s easier to keep our problems and concerns in the right perspective. Being thankful also improves our physical and emotional health. Holding on to feelings of thankfulness boosts our immune system and increases blood supply to our heart. Daily guided affirmations or the habit of keeping a weekly gratitude journal can increase our alertness, enthusiasm, and energy, and improve our sleep. People who describe themselves as feeling grateful tend to suffer less stress and depression than the rest of the population. Reminding yourself what you have to be thankful for and recording your thankfulness each day helps to cement how thankful you are. It doesn’t matter how difficult your life is at the moment, there is always something to be thankful for. Finding that will help you deal with the other parts of life. Record 3-5 things you’re thankful for at the end of every day. When you’re having a particularly difficult time, it can be beneficial to go back to what you’ve written previously. Each day as you read the Bible ask yourself, what can I give thanks to God for? There will be many things: for who God is, what he’s life, what he’s done for us in Christ, blessings of friends/family/church. Keep on mulling over/meditating on these things throughout the day, rejoicing and giving thanks to God for them. This attitude of thankfulness will see you through all the trials and tribulations of life. I will give thanks to you with all my heart, O Lord my God. I will honor you forever because your mercy toward me is great. Psalms 86:12-13 Ask yourself today: How often do I express gratitude to God or to other people? Start liking stuff from your dream clients, do a shout out saying you like something they said, or share it to your inner circle. Send a helpful article you found to them. You still have your inner circle, plus thousands of people passively being “advertised” to for free. Then still do your same budget for paid messaging etc. Imagine 6 months after doing this just 1 dream client reaches out to you? Perhaps you get a few small jobs from a referral from someone you never met because they knew what your business did? My advice for writers: The final version of any written work is the result of numerous drafts. You can’t be scared to start writing because of how it sounds or comes out. You must proceed and get your thoughts on paper no matter how it may look. Once you write out your book, then you edit. It will start to take the shape you meant it have.

My name is Adrian Jefferson Chofor, I am a global mobility lifestyle expert helping people that want to live abroad and currently living abroad do so strategically and successfully. I am also a personal transformational strategist and speaker, helping those in my community to live their best lives. I had the privilege of co-authoring Step Forward and Shine! the third and final book in the Shine series and when I was presented the opportunity to write my story, I was inspired to do so because I thought about how when I was younger I wish I could have met a woman like myself that would have told me things were going to be alright. After prayerful consideration, I knew writing this book was something that I was called to do. I want the readers to know they can overcome obstacles, made stronger by the struggle, and love themselves for who they truly are, not what others may think of them. My book touches so many areas of my life, I would say this has broadened the range considerably. I delve into challenges I experienced as a teen that made poor choices, a twentysomething year old early in my career, a thirty something year old moving abroad and later having a difficult pregnancy. I share experiences that are universal and not age or gender specific, such as making major life changes in moving overseas or the power of forgiveness and its profound impact on my life and those of others. I would have to say, because of the subjects covered in my book, it’s difficult to narrow the audience down to only one demographic.
