About eight years ago, Chef Sandoval presented another opportunity to me. I moved to Denver to lead the kitchen team at Tamayo as their chef de cuisine. While working at Tamayo, I was enlisted to help with the hospitality group’s culinary training program. In this position, I’ve been able to travel around the world to open 17 new restaurants for the brand. Some of these trips included travel to Chicago, Dubai, Fort Worth, New York, Qatar and Costa Rica, among other destinations.

Tell us a bit about yourself and your background:
I’m originally f rom Los Angeles, California, but spent some time in Mexico City during my childhood. As a child, I learned how to cook f rom my grandmother. I was lucky to grow up in a family that shared meals together regularly. Food was a way to show love to one another. After studying culinary arts at Cetis 51 in Mexico City, I began my career in the kitchen working at Club de Banqueros de Mexico. After seven years working there, I was discovered by international chef and restauranteur, Richard Sandoval. He hired me to work at his New York restaurants, Pampano and Maya. This is where I started my career with Richard.
Three years ago, Richard had the opportunity to open Toro at Hotel Clio (formerly J.W. Marriott). It was an amazing chance to work on a new restaurant and menu from the ground up. My team and I have worked incredibly hard to turn Toro into an award-winning concept. In fact, in August of 2021, we won best brunch, best dessert, best chef and best happy hour in Cherry Creek Magazine’s “Peak of the Creek” awards. It was such an honor to know that our guests and neighbors took the time to vote for us. When did you know you were destined to be a chef?

Being a chef was def initely outside the traditional career path for my family. My grandfather, grandmother, father, aunt and uncle are all professional mountain climbers. It started with my grandmother and grandfather who actually met while in a climbing club together. Since then, my family has climbed mountains at many of the national parks around the
U.S. My father even did some ice climbing in Alaska. Mountain climbing runs in my family and it’s something I grew up doing, but I always knew I wanted to be a chef. At 15, I was practicing cooking styles, using different ingredients and experimenting with my passion for food with the help of my grandmother. Meanwhile, my grandfather would create these beautiful banquets for the family at his home. Sometimes it would be for 10-12 people. Other times, it would be for more than 50. These banquets would use food to bring love to everyone who attended. At the end of each meal, my grandfather would tell everyone to take the leftovers home to “share with more family.” Since as long as I can remember, I’ve seen food as a way to share love with others.

What’s the most fascinating thing about creating dishes for Toro? Mixing traditional Latin American flavors with local ingredients f rom Colorado is such a fascinating process. We’re using radishes, bison, beef, cheeses and other seasonal ingredients f rom local farms and mixing them with combinations f rom Chef Sandoval’s recipes. It’s a constant creative process that never gets old and continues to evolve. What are your plans for the next several years?
D O
I’d like to practice more cooking with f ire. I remember doing this while cooking outdoors during
my family’s mountain climbs. We’d often use fire to prepare our meals. I’ve recently participated in the Heritage Fire event in Snowmass and absolutely loved it. The event is a whole-animal, live fire cooking demonstration and feast with participating chefs from around the world. It takes me back to those days of cooking outdoors with my family. The Toro in Fort Worth and the Toro Toro in Los Cabos both have wood fire grills. I’ve really enjoyed experimenting with those grills and with fire. I’m also always looking to experiment and discover new flavors while learning about new dishes. As a chef, I’m always interested in growing and learning about new ways to prepare food. Tell us something most don’t know about you.

I’m so happy all the time. I enjoy life and, when people talk to me, I want them to feel like they’re family. I always want people to feel comfortable with me and I love sitting down to talk with the guests at Toro. It’s always so fun to talk about the history of the dishes and ingredients in what I prepare. I think it makes each meal much better when someone understands the background behind a dish. Lots of places have great food, but I want to tell the story of the food. For instance, we have some great empanadas, but most people don’t know the history behind empanadas. Most people don’t know that chimichurri is the national sauce of Argentina. Knowing these details makes those flavors much more interesting and memorable.

Eggs in Purgatory Tomato Sauce Base • • • • • • • • • •
1/4 cup extra virgin olive oil 4 ounces Spanish onions, medium dice 1/2 ounce garlic, sliced 4 ounces tomato paste 28 ounce can whole San Marzano peeled tomatoes 1 bay leaf 1 teaspoon black pepper 1 teaspoon fresh oregano, minced 2 teaspoons fresh basil, minced 2 tablespoons salt
Method: Sweat onions and garlic in E.V.O.O. until translucent. Add tomato paste, bay leaf, pepper, and toast for 3-4 minutes. Add canned tomatoes and simmer low and slow until desired consistency is achieved. Remove from heat then add the herbs. 6 ounces tomato sauce 2 eggs 1.5 teaspoon ricotta 5 garlic cloves 5 leaves of fresh basil 2 pieces of grilled baguette Method: Preheat the oven to 400 degrees. Using a cast iron pan or pie dish, fill with 6oz of sauce, with a spoon, make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes in the oven, or until the eggs are done to your liking. Garnish with Ricotta, garlic, and basil and serve with a grilled baguette.

I’m in the State of Quintana Row on Mexico’s Yucatan Peninsula, booked at the Hotel Xcaret Arte, Playa del Carmen, under a loaded sky and overlooking a sandy Caribbean coastline with skillful low-flying seabirds blessed with remarkable diving talents. It’s a world removed for me and the travel expression “connect with the destination” is operating in full force. The tropical environment of fluttering palms in twenty shades of green, myriad colorful songbirds, and a striking property that understands hospitality is the effervescent epitome of “good reasons to travel”. I’ve made this trip with Peter, my sales and marketing VP, and I’m anxious to see in what way the hotel treats a woman far from home who is not fluent in their language. The Mexican government officially recognizes 68 indigenous languages within its borders, and I think I heard more than a few of them the first day. From the moment I set foot on the property, I could feel my stress level propelling downward as I enjoyed the all-embracing fragrance of Patchouli wafting on the air. The staff, called butlers, greeted us with a joyful “welcome home”, all of them clad in flowing robes and for a moment I felt like I was entering a heavenly cult or visiting Netflix’s The Good Place. Lorena, Edgar, and Adrian handed us chilled hand towels and fresh fruit ice pops and invited us to follow them to our rooms. To my astonishment my room was an oceanfront suite with a view of, not just the ocean, but an infinity pool, and a meandering lagoon as well. The suite is modern and Boho chic with all the essential amenities one would ever need, along with fresh fruit, a mini charcuterie platter, and the classic Mexican Mezcal with a slice of lime specially crafted to give your taste buds a huge whack. Hotel Xcaret Arte, which opened July 1, 2021, with 900 exclusive, adults-only suites, is all inclusive and it’s easy to see that the hotel is a one-of-a-kind, erected with respect to the lush Maya region, and truly motivated to embrace Mexico’s artists and culture. The architects and interior decorators applied their creative muscles with daring geometric designs that balance a sculptural look with an ingenious blend of natural light and lighting fixture projecting volume and weight to convey color and warmth to the interior.
Hotel Xcaret Arte Riviera Maya I was informed by my butler that there are five exclusive casas artistic workshops, all of them mainstays of Mexico’s ancient culture: Casa del Diseno, a textile workshop, one of my favorites; Casa de la Musica with dance instruction; Casa de los Artistas to inspire guest to paint; Casa de la Piramide to explore Mexico’s rich and diverse pottery traditions; and Casa de la Paz, with cooking workshops specializing in vegan cuisine, another favorite. For gastronomic aficionados, a dining bonanza awaits with nine culinary options each with their own chef, all of them among Mexico’s finest, including two with Michelin Stars. By any means, I won’t have enough time to experience all the dining opportunities but, if I can avoid palate fatigue, I’ll give it my best shot. I’m in Maya country and the sweeping world of Central, or Middle America, is all around me, full of abundant mystery and intrigue. The Maya people left in ruins a complex enigma that can lay hold of the sensibilities and inflame a strange sense of tragedy and lingering spirits. Xcaret in Maya means “small inlet” and the area, at one time in history, was an important Maya trading center. Never a single, all-encompassing empire, the Maya flourished between AD 250 and 900 and, like jungle vines, spread across the Yucatan and Middle America. The ancient Maya were truly impressive; they pioneered the mathematical concept of zero and place numbers, predicted solar and lunar eclipses, charted the route of Venus with an error of only 14 seconds a year, had an advanced and complex writing system, and are recognized for the grandeur of their architecture and towering pyramids and art, as seen in relief carvings, sculptures, murals, and pottery. Best of all, for me, they are recognized as skillful weavers. The hotel is aptly named, and is a destination that will impress anyone with an affinity for art and architecture. It seems everything here has a sense of style from the vaulted ceilings, modern Mexican chairs with a bend to the classic Equipale furniture, the use of bright interior colors, and exceptional wood craftsmanship. Later that evening, standing by the rooftop swimming pool with far-flung views of a pugnacious skyline crowded with a whole nebula of stars, it seems as if I’m engulfed by trees, vines, roots, and plants, all with a tight vise-like gripe on the walls of the hotel, a harmony of nature, and a setting that has clearly taken advantage of the environment, and it was all I needed to make the evening perfect. The hotel offers entrance to a magical world and the welcoming atmosphere provides a huge boost to the spirits. The following day, Peter met me for a buffet lunch at Cayuco adjacent to the main swimming pool. Chef Franco Maddalozzo, born in Italy, brought to the table all the traditions of his native Italy while combining and blending Mediterranean and Mexican cuisine with a variety of eccentric delights. In 2010, UNESCO designated Mexican cuisine as an Intangible Cultural Heritage of Humanity, and it’s a great honor to be here in the Yucatan enjoying the collection of celebrity chefs, all following their ancestral culinary roots with a focus on Maya and Yucatecan cuisine.
Hotel Xcaret Arte Riviera Maya After a day of browsing, I relaxed by the infinity pool just outside my suite with a chilled Pina Colada and freshly made guacamole, thinking about the Maya who, eons ago, were the first to enjoy this widespread delight. I had dinner at Tah-Xido, my meal prepared by Chef Luis Arzapalo who is widely distinguished for his appreciation of prevailing Asian cuisine which he cleverly combines with the flavors of Mexico and the Yucatan. Carlos and Gabriella served me lightly baked Duck Spring Rolls, and Fried Wonton with pieces of crab, lobster, and tartar. The Rock Shrimp arrived with fresh lettuce bathed in a succulent Yara juice vinaigrette. The Tree of Life dessert was a surprising work of art, completely edible with matcha and coconut ice cream slathered with chocolate. Striving to experience the brilliance of the various chefs, I enjoyed breakfast at vibrant Mercado de San Juan whose menu is created by Executive Chef Juan Licerio, a man noted as having a strong work ethic, who has worked in the United States, speaks English, and celebrates the flavors of Mexico. While dining, I was informed that over a hundred different types of chiles are grown in Mexico, all with a different taste, and also that Maya Vegan is a plant-heavy traditional cuisine rooted in corn, beans, squash, wild greens, cactus, nuts, and chiles. After a relaxing stroll through the hotel, and a leisurely hour spent mesmerized by the sea, I had lunch at Kibi Kibi with Chef Roberto Solis. Originally from Merida in the Yucatan, Chef Solis has created a menu that is a meld of Yucatecan flavors, swayed by the ancient Maya, which incorporates flowers, herbs, and local spice. Surprisingly, the menu is also influenced by Mexico’s Lebanese immigrant community. Celebrity status arrived for Solis when, in place of red chiles, he initiated the idea to cook with a traditional Yucatan salsa called Recado Negro, which now has spread across Mexico. I ordered Cochinta Kafta, created with achiote, a red, sweet, highly peppery sauce, with vinegar, garlic, and juice from an orange, blended with marinated, shredded pork. A big Olay to Chef Solis. Before dinner I visited the holistic and mystical Muluk Spa for a peaceful and stimulating two hours of rejuvenation and relaxing. The hydrotherapy ritual intensifies the senses with a Jacuzzi, sauna, steam room, cold and hot water tub, and a recreational pool. It was a perfect day from the essence of Muluk to an evening encounter at Encanta where Michelin-starred Chef Paco Mendez creates his magic. Chef Mendez, a Mexico City native, young and also passionate about Mexican cuisine primed by his grandmother and mother, was honored with a Michelin Star in Barcelona where he was an avid ambassador for Mexican cuisine. I truely enjoyed Chef Mendez’s far-reaching Tasting Menu that touched all corners of Mexico.
Monday unfortunately arrived and it was time to drive 45 minutes to the Cancun airport and head for home, but not before a casual Italian lunch at Fuego, a sister property. My language skills are okay but my attempts at Spanish could use some help. Hotel Xcarte Arte is one of my favorite Mexico destinations, the most verdant and oasis-like I have personally experienced, and for me, one of the most beautiful hotel settings ever. I feel a sense of urgency and excitement as I head out to experience the treasures of Denver and the enduring appeal of knowing there will be something new around every corner. For me, Denver is a city full of surprises, a vibrant city with affable and welcoming Denverites that contribute greatly to the popularity. A star attraction is the active way of life in a fantastic landscape setting, and the brilliant selection of accommodations. I booked the Kimpton Hotel Born in Union Square along with my friend Wendy. The lobby was inviting with an earthy Colorado modern vibe and, luckily, we arrived just in time for the classic Kimpton complimentary wine hour. I tipped my glass to the late Bill Kimpton, a pioneer in developing small, Europeanstyle boutique hotels, who in 1981 created the complimentary afternoon wine, beer, and hors d’oeuvres hour in San Francisco at his first ever Kimpton hotel as a way for guests to mingle. It was a clever concept and mingle we did. The front desk was welcoming and the view of Union Square from our room’s floor to ceiling windows, a feature throughout the Born, was remarkable. Gazing at historic Union Square, my mind was racing as I tried to imagine the World War II war years when Union Station was a major rail transportation hub accommodating 24,000 passengers a day, mostly those in the service who filled the square with their tearful farewells and joyful homecomings. The original station opened in 1881 and was a key transport center for the soldiers of two world wars, and Vietnam. With that history it’s not surprising that Union Station is listed in the
National Register of Historic Places, as well it should be. The interior of our room was modern, sleek, and attractive, designed with lots of wood. The huge barn door that opened to reveal the bathroom was impressive, as was the chic, large freestanding garden tub, perfect for a soothing fullbody soak. High quality linens complemented a handsome, custom-designed pinewood canopy headboard, and we discovered that for a sip of coffee, coffee makers were available upon request. I recognized after spending some time in the room that the view through large windows conveyed a sense of place that was impossible to ignore. We enjoyed dinner at Citizen Rail, a restaurant connected directly to the hotel, and a perfect place to watch the capricious Colorado weather fluctuate. Open kitchens, like the ones I first discovered in New York City, are my favorites; for me, they add warmth and coziness to a restaurant, and the Citizen Rail, with its blazing wood-fired grill, was ideal. Executive Chef Christian Graves understands Colorado cooking, sourcing from the local growers and creating homegrown cuisine. Chef Graves offers Weekly Specials but, after scanning the selections, we ordered a delightful Hearth Baked Rosemary Sourdough created with wild mushrooms, mozzarella curds, truffles, and a touch of aged balsamic to share. Further treats were the Coal Simmered Mussels in a light Dijon broth, succulent grilled Marinated Swordfish, and Roasted Ricotta Dumplings. Overall, a playful menu with a twist on the classics.

The following day we visited the Denver Selfie Museum, on our way to the Sheraton Downtown Denver. The museum is a bit small, but they had several rooms with different backgrounds set up for the selfie crowd. We checked in at the Sheraton and opted to indulge ourselves with a stay in the hotel’s Presidential Suite. Actually, few modernday U.S. presidents have spent the night in Presidential Suites, but the marketing is clever. “Presidential Suites” is used to describe the best and most luxurious suites on property, and they are perfect for CEO’s of large companies, sizeable marriage parties, and honeymooners, all savoring the hotel’s finest. It was easy to picture honeymooners with champagne in one hand dancing cheek-to-cheek in this spacious suite. The Sheraton has two identical Presidential Suites, on the 7th and 8th floors. Ours was on the 7th floor providing us with a city view, and two bedrooms, three baths, two living rooms, a dining table that comfortable seats ten, and a pool table for the skilled or merely over-confident. The property, listed as a 4-star, has undergone a recent $80 million renovation, and it shows. We experienced and enjoyed the 5,000 square-foot Fitness Center that is open 24-hours, there is a heated roof-top pool, and inspiring modern architecture throughout, and noted their pet-friendly policies. As evening fell, we dined at Bezel, an intimate and cozy bar/lounge, and I’m convinced from my around town dining experiences that Denver is an emerging gastronomic destination. We ordered, from the Charcutier, a Charcuterie Board teaming with a variety of
smoked, dry-cured meats, dabs of pate, various cheeses and black olives, that could have been lifted straight out of a Paris kitchen. The Charcuterie Board was also the perfect partner to a glass of chilled Prosecco. Tap into the local hospitality Best of all for Coloradans and visitors alike, the Sheraton Downtown Denver is located adjacent to ever-popular 16th street, a mile-long, pedestrian walkway jammed with dining opportunities, one-of-a-kind boutiques, and a booming nightlife with live entertainment. For the family, it is an easy homebase from which to catch nine innings of baseball at Coors Field, make a visit to the Denver Zoo, or explore the Denver Art Museum. I do believe that downtown Denver is a place to impress anyone with an affinity for a timeless and fun-filled memory. Tiaja Pierre As we age and the advances in skin care keeps raising the bar for results, there still is one common denominator…the condition of the skin and how we can remodel it, regardless of one’s age. Skin burns with sun exposure and does not tan. Type II: Fair skin, hazel/green/blue eyes and light hair. Can tan with difficulty, but burns frequently with sun exposure. Type III: Light skin, any eye color or hair color. Can tan gradually, mild burn sometimes with sun exposure. Type IV: Light brown skin, tan easily and does not routinely burn with sun exposure. Type V: Dark brown skin, tan very easily and infrequently burns with sun exposure. Type VI: Deep brown skin, tan very easily and almost never burns with sun exposure. Once a candidate’s Fitzpatrick type is determined after evaluating the skin and asking various questions, the next step is to determine which kind of chemical peel is most effective and beneficial to correct the skin condition and get the desired outcome.
