LETTER FROM MAYOR JENNIFER CARROLL It is hard to believe that it has already been 4 months since being sworn into office. The Board of Trustees has been working hard to develop strategies and goals to ensure we can accomplish everything we’ve promised and to continue to make Erie the best place to raise a family! In May, Town of Erie staff and elected officials attended RECon 2018. In just two and a half days, we engaged in many meetings with retailers, real estate professionals and developers to promote the Town share with them the various sites in Erie that are primed for development. RECon is the largest global convention for the shopping center industry and provides networking, deal making and educational opportunities for retail real estate professionals. Thanks to all of the grocers, restaurants (both sit down and quick serve), service businesses, clothing, home & sporting goods retailers, hotels and others who made this one of our most successful RECon events to date! I encourage everyone to visit www.erieco.gov/economic_development to learn about the following seven retail sites that Erie promoted: Nine Mile Corner, Highway 7 & Sheridan (King Soopers Marketplace), Four Corners, Highway 7 & Bonanza Drive, Erie Parkway & Briggs Street, Erie Parkway & CR5, I-25 & Erie Parkway and Highway 52 & County Road 7. While we have been busy working, we are also making sure to enjoy all the fun that Erie has to offer this summer! ELIFE: Tell us about how you became the Head Coach of Erie High School football and what you are most passionate about. CHAD: In 2016, the Athletic Director of Erie High School contacted me while I was coaching football in Broomfield, where I had been for 10 years. It had always been a goal of mine to become a High School football coach. I was excited about the opportunity in the growing and successful community and agreed to take on the position. I also taught Social Studies and PE during my first year at Erie High School and am now focused on just PE and being the Head Coach. I am passionate about contributing to the players personal and athletic growth, while providing them skills that they can use for the rest of their life. ELIFE: What is the most memorable moment from the 2017 season? CHAD: There a quite a few memorable moments, all of which had a significant impact or value. The way the team came together during the final run (last regular season game thru State Finals) was incredible. Each of the four playoff games was memorable in its own way: 11/10/17 - First Round Playoff Game against Pueblo East: Down by 7 with 40 seconds left to play against the 3-time defending champion on their home field. We drove down the field and scored a touchdown and went for AND converted the 2-point conversion, as opposed to
playing for the tie. (video_maxpreps.com) 11/18/17 - Quarter Finals Playoff Game against Durango: Traveling 7 hours to Durango with 70 kids and overcoming a 4th and 13 in the game. (video_maxpreps.com) 11/25/17 - Semi Finals Playoff Game against Longmont: Being able to play in front of the home crowd and winning resoundingly. 12/2/17 - Finals against Palmer Ridge: Being able to play at Air Force Academy. (video_maxpreps.com) ELIFE: How has last season’s success impacted your approach to the 2018 season? CHAD: We (the coaching staff) need to learn from the previous year, otherwise we are doing the players a disservice. We have raised expectations, as everyone knows what we are capable of.
We have also refined the way we practice. ELIFE: What is one piece of advice you give to your players at the start of the season? CHAD: Know that they will have to “earn” each victory as other teams will be giving us their “A” game and “best shot”. We will be “that game” on their calendar that might define their season. Our players need to focus on consistency in their performance. For football, this starts in practice and continues through to the games. However, consistency is something they should strive for in everything they do. I expect them to hold themselves accountable for their actions. They should strive for perfect attendance in school and turn in all homework assignments on time. When they are out and about in the community wearing their jersey, there will be the benefit of recognition for the accomplishment of last season, but also added scrutiny of all actions they take in public. ELIFE: What is the No. 1 obstacle you face in building a championshipcaliber
program in our community? CHAD: Our biggest challenge is growth, not only is the High School growing, but we are now also in a higher classification. In addition, we need to find leadership among the players for 2018, as we had 16 seniors graduate from last season. ELIFE: How can the residents of Erie help support you, your coaching staff, and the team? CHAD: Show up to our games, especially our home games. Our team takes pride in being great in front of the home crowd. Cheer for our team and have a good time. Since Erie only has one High School, this offers up a great opportunity to tie the community together. Our first home game is on 9/7 against Frederick. (2018 Schedule_maxpreps.com) ELIFE: I know it is quite early, but what is the outlook for your team this season? CHAD: We just won our season opener at Evergreen in emphatic fashion, 35:7. We were up 28:0 at the half and our defense
didn’t give up any points until about 2 minutes left in the game. Our next game is away at Pueblo South, which will be quite a test for our team. Our primary goal is winning our league. We have several other goals, which include beating Roosevelt and Mead, the only two teams whom we have not beaten in my two years at Erie. ELIFE: The interview with Coach Chad Cooper was conducted prior to the Erie Tigers second game, against Pueblo South. That game was played on 8/31, with the Erie winning 35:14.

THE EMOTIONAL WORLD BEHIND KIDS' ATTENTION PROBLEMS: HOW SOCIAL-EMOTIONAL LEARNING SUPPORTS ACADEMICS I went to a presentation last week at my son's school about the social-emotional learning (SEL) program ad they use. I knew this was an important piece of the educational program, but the power of it didn't really hit me until one of the administrators said in passing that behavioral problems at schools that have these programs are dramatically less than at those that don't. Of course they are, I thought. Kids aren't little robots who just show up to learn and don't feel emotions or have disagreements with their friends. Instead of starting the day straight away with reading and writing, the teachers take a few minutes to "check in” with each of the kids in their group. The kids have a moment to discuss if they are in the "green zone" (happy), "yellow zone" (marginal) or "red zone" (upset or sad). The school counselor also visits from time to time to discuss with the kids strategies they can use to get back to the "green zone" after getting upset or sad. The administrators also pointed out (and much research backs this up), that schools that include a social-emotional component also fair better academically. Why is this you might ask? New research gives us a clue... As adults, we sometimes get absorbed in our own thoughts at times and cannot focus on a task we are trying to do. Have you ever considered what is going on when this happens? Well, for adults, it often has to do with a problem or personal situation we are trying to figure out in our heads. Maybe we just had a fight with our spouse or maybe we just found out one of our friends is sick. New research is showing that for children too, they may be trying to figure out emotional situations when they seem distracted or inattentive.
Why Social-Emotional Skills Matter for Learning This new research is based on a fascinating study of kindergarten-aged children in Germany. The researchers assessed the children's "emotional knowledge" over the course of 14 months. Emotional knowledge involves the ability for people to identify other's emotions (often based on facial expressions) and the situations that prompt those emotions. The assessment given to the children also tested their ability to control their own emotional expressions. In addition to these emotional factors, the researchers also assessed the children's language skills, selfregulation skills, and memory. What the research shows is that there may be a link between emotional knowledge and kids' ability to pay attention. Kids in the study who showed better emotional knowledge had fewer attention problems, even after other relevant factors (e.g., demographic factors or language ability) were considered.
THE EMOTIONAL WORLD BEHIND KIDS' ATTENTION PROBLEMS: HOW SOCIAL-EMOTIONAL LEARNING SUPPORTS ACADEMICS So what is really going on here? Why is understanding emotions helpful for kids' ability to pay attention? The authors believe that the more children understand other's emotions, then other people's emotions and reactions become more predictable. Thus, children know what to expect from other people, how to manage their own reactions and can focus on other things. This not only leads to more positive social interactions, but it frees up their brain to focus on academic subjects. In other words, kids get distracted and seem inattentive when they are using valuable brain space trying to figure out why people are expressing the emotions they are facing and how to manage that. The researchers believe this work may have implications for understanding ADHD. Developmentalists has long-suspected that the root of ADHD has to do with children's lack of executive function skills. These skills include things like working memory, self-control, and mental flexibility. In this study, however, the authors found that emotional knowledge was at least as important or perhaps more important to attention skills than executive function. Yes, that's right--emotional knowledge was that important. Wow! In the world of child development research, this is pretty important stuff. For years we have understood the role that executive function plays in the development of children's attention and overall positive growth. Now we are also seeing the crucial role that emotional knowledge plays. Noted emotional knowledge researcher Daniel Goleman puts it this way, "Most of us have assumed that the kind of academic learning that goes on in school has little or nothing to do with one’s emotions or social environment. Now neuroscience is telling us exactly the opposite. The emotional centers of the brain are intricately interwoven with the neurocortical areas involved in cognitive learning. When a child trying to learn is caught up in a distressing emotion, the centers for learning are temporarily hampered. The child’s attention becomes preoccupied with whatever may be the source of the trouble. Because attention is itself a limited capacity, the child has that much less ability to hear, understand, or remember what a teacher or a book is saying. In short, there is a direct link between emotions and learning." Ok, now that we know the importance of emotional knowledge, how can we as parents help our children gain these skills? Well, one thing we know from research is that parents who talk to their children more about what other people might be feeling or thinking, helps kids develop emotional knowledge and the ability to understand the perspective of others. So, it's really not that complicated-just talk to your children often about other's feelings. Developmentally, kids will not really be able to understand others' thoughts until they are between 3 and 4 years of age. This is the age when "theory of mind" developments. However, as kids grow they gain valuable skills in empathy and emotional learning through simple exercises like this. Amy lives in Erie with her husband and two energetic boys. How to Avoid Back To School Parenting Issues

OK PARENTS……..HERE IT IS!! BACK TO SCHOOL TIME!! That beautiful and magical time of year when the kids are back to a consistent bed time and a routine that is good for them is finally here! The time when there is less fighting, and comments like “I’m bored” are drastically reduced! Yay for back to school time! For most of us, this is a time of celebration - but not for all. Back to school can be more complicated for some parents. Either way, it is imperative that we find a way to make the most of this season and ease the stress that it can create. My grandmother used to always say “In life, Lisa, you have to start as you mean to go.” As a kid these types of little colloquialisms would cause me to question my grandmother’s sanity. Now they are wise words that ring true. If you want a successful school year for you kids - one with less stress on you as the parent - we need to start the school year off on the right foot. What will be of best help for you and your children to consider? Well, let’s start with discussions about how big the kids are getting… back to school is the perfect time to talk with your children about new chores and responsibilities. Start by having a conversation with each child individually to talk about the fun school year ahead. Make this be a positive and happy celebration of how much bigger and stronger they are becoming! Let them know in kind and excited tones that with growing up they also get to help more and they get to be more grown up. If they have had chores in the past, ask them if these past chores have been ones that they liked to do, or at least didn’t hate performing for the family. Ask what new chores they might like to perform, but be prepared to assign them a few tasks if they can’t come up with things to do. (If you may need an age appropriate list of chores, please feel free to e-mail me at lisa@watershedcounselingboco.com) Don't make this a pressure-filled conversation and don't expect perfection from these chores. As parents, we must remember that we are working on growing a wonderful and well-adjusted adult! This takes time, and setbacks; bumps and blips are to be expected. As summer ends, so do the lazy days and fun activities. This is often what kids miss most as school starts. So, put your creative thinking caps on and come up with some new fun ideas. How can you create enough fun in the late summer and fall weekends that will have the same feeling as summer? Look at your child’s school calendar - usually available on the school's website - and pick out those days in which you could create a three-day weekend. Friday and Monday inservice days and extra holidays create opportunities for you to add some fun events for all of your family to look forward to.
Another way to start the year off right is to get your kids into a great mental and emotional state before the first day of school. Kids often are more anxious as this day approaches. To deal with this, we must help their nervous systems feel more at ease. This is done with good sleep, good self-discovery food and good thoughts. Since I am a mental health professional and not a nutritionist - let’s talk about the emotional needs of your children. Whether your child(ren) is/are excited or unenthused about going back to school, you will have a big influence on them. So, it is helpful to redirect that anxiousness they may be feeling. Begin by talking with them about the new school year and ask them the 5 things they are most looking forward to and the 5 things that they are less excited about. Write down their answers and talk about why they feel this way about each answer. As they begin to talk about the things that are most concerning to them, you should ask how you can help them with this concern. "Lean" into the feelings they are expressing to you. Ask if they are noticing any pain or discomfort in their tummy or back or hands. These may be signs of stress that you can watch for all year long when stressful situations arise!
Next begin to empathize with your child about the situation. “Yes Kelsey, I understand that History class is something that you aren’t looking forward to. I remember how you felt last year. What can we do differently this year to make this a better year in this class?” You will be surprised and pleased with the answers that kids can come up with!! Remind them that they do not need to react the same as last year - after all they are a year older and probably a few inches taller. Challenge them to think of this as a new year to enhance their brains and to look at this History class with new and fresh eyes. Perhaps reading some fun articles about history or going to a history museum together will help them to see this subject with new and excited eyes and there’s the added bonus of priceless time together as a family! As the fall leaves begin to change, so too do our thoughts of things change. Perhaps it is in this season of life that you are experiencing the emptiness of a child that has left for college or one who has moved on to live outside of your home. This significant change can cause feelings that are conflicting - one moment exuberantly happy to no longer be be monitoring a high school student’s whereabouts, and the next minute - worried that you have not finished teaching then everything they need to know about life. That “empty nest” can be a time of significant change for parents. Honesty and allowing yourself to just "be" with whatever the emotion you are experiencing at the moment is the key! Be sure to add to this an opportunity to reach out to friends and family to reminisce about this precious child. Think about doing fun and creative things to help with this process of letting go - start a scrapbook, put together a photo album. Write the childhood story of your child. (These may be great gifts to give them when they return at the end of the school year!) Most importantly do not keep your feelings bottled up, or stuffed into your body, mind and spirit. Make the most of this time - find new hobbies and opportunities to add more personal enjoyment to your life - so as to reduce the “emptiness” that you might be experiencing. If this stage of life creates a true feeling of depression - sadness lasting most days for the entire day and losing interest in things you normally enjoy - reach out to a qualified therapist who can help. Lean into this glorious time of year - make it all that it should be. Create new opportunities for your children to grow - and for you to grow right along side them.

WHY-CAN’T-I-READ THE-DARN-MENU In a thick Spanish accent, our waiter described these delicacies in detail, as we stared at him with rapt attention, trying to lip read. I was both enchanted by his charming voice and confused by everything he just said (MOSTLY because of the accent and just a little bit because I can’t hear, I swear). Hesitatingly, I asked, “So, these are spicy potatoes?” The waiter nodded. Trying to summon his best high school Spanish, Kevin ordered the potato thing, some empanadas and (we think) the shrimp appetizer, camerones al ajillo. Praying we didn’t just order squid (calamares) with Ke v i n ’s r u s t y S p a n i s h , w e concentrated on the wine list, with a font size even smaller than the appetizer list. Not wanting to delay the quick delivery of wine to our table, I abandoned hope of deciphering the menu and just ordered some merlot, hoping it didn’t cost $20 a glass. The waiter said something else and paused, perhaps waiting for my
response. Not wanting to ask for the third time already, “Can you please say that again?” I looked at him, nodded and smiled. Then he looked at me, nodded and smiled, now knowing that I pretty much can’t hear a word he just said. The food truly was fabulous, and we enjoyed the rest of our dinner without a hitch. And then the bill came. The pale-gray-on-white-paper bill – again with the micro-font. We panicked – we couldn’t see the total. And if we couldn’t see the total, how could we leave a tip? We huddled together like a small football team trying to remember the playbook. Did the shrimp cost $13 or $18? I can’t tell if that’s a 1 or a 7, can you? Didn’t we end up ordering two spicy potato dishes? This felt like a nightmarish adult version o f a n a l g e b ra c l a s s w o rd problem: If we each ordered one glass of wine at $12 each and we’re leaving the restaurant at 9pm travelling east on the highway at 45mph . . . .
We started to break out in a sweat, as we noticed the waiter came by twice to see if we’re ready to pay. In desperation, we break out the iPhone flashlight again, causing the other diners to turn and glare at whatever’s killing the ambience in the room. How embarrassing! Quick turn it off! TURN IT OFF! We whipped out our cash, handed it to the waiter and scurried out with our eyes averting the others, like two teens caught making out in the back seat of their dad’s Ford Fusion. We caught our breath out in the parking lot – hey, we scurried, remember? – and agreed that our next date night needs to be less stressful. We made a pact to choose the next restaurant based, not on type of cuisine or location or even what Groupon we haven't yet used, but on which one has the better overhead lighting.

hen did that happen? When did I get this old? I just turned 64 yearsold, and although my mind is fine (depending on whom you ask), my body ain’t! Hey you kids, get off my lawn, will’ya! Get that mangy mutt on a leash! Read the sign on the door; what part of “No Solicitors” don’t you understand? The “No” or the “Solicitors”? Pick one! Oh boy, that’s really old! When did this happen? Maybe it started back in 1967 standing on line in the record department at Modell’s Shoppers’ World in East Meadow, New York. Yeah, that was it, when age became more of a real life factor than just a big number that was relatively scary to the normal (there’s that concept again) 14 year-old kid with an addiction to British Rock music. June was
a tad cold that year, with heavy rain in the forecast. What was also in the forecast was the best album of music ever recorded to that point, and arguably thereafter (once again depending on whom you ask)! “Sgt. Pepper’s Lonely Hearts Club Band” stopped everything cold, colder than the unusual late spring temperatures, weird wind and relentless rain that month! Colder than The Monkees, The Dave Clark Five and Paul Revere and the Raiders could stop, even if those American pop bands had a fiery flare warning them of the imminent. I honestly thought I heard London’s Big Ben tolling wildly as I paid the cashier the nominal charge for what unequivocally changed my life and anyone else’s who was paying any musical attention back then. >>>
Sure, I listened to the Beatles, like everyone else from their earlier collections from ‘64 through ‘66 with a keen interest in the previous most current albums to that point of “Rubber Soul” and “Revolver” in ‘66 and ‘65 respectively, but it was certainly time for “The Concept Album” and maybe some moderate “safe psychedelia” for all interested. The cover, alone did it for me, as I stared obsessively at the front cover’s “funeral scene” with the bizarre collection of personalities spanning the first half of the century and inside glossy portrait of the most garishly (even for the upcoming Summer of Love and its offerings out in San Fran) clothed combo, previously known as “The Fab Four” that I had ever imagined! What a difference from the “I Wanna Hold Your Hand” and “I Should’a Known Better” days from just a few years prior. These guys were taking the next step, just holding on to the banisters with both hands, it would turn out. Either way, I and all others had never heard such incredible music and to this day its sound has survived the decades!
Speaking of decades, there have been five! Fifty yearsold is the Club Band of the Sergeant’s, just not so lonely as they once were. More than just a collection of songs or album of music, it was and still is a veritable work of artistic achievement on all possible levels, revealing the multiple and various ideologies of the 60’s with a side of nostalgia on both sides of “the pond”! Countless things did the record change all around the globe. Countless people did it turn on to “different” and fascinating musical compositions. Countless times did I sit and marvel at each and every one of the 13 ingenious songs. So, it’s time to celebrate the sarge and his solitary band mates’ 50th birthday. It was seventy (not 20) years ago today that Sergeant Pepper taught the band to play and they’re still guaranteeing to raise a smile! Countless smiles! Countless memories! I have only one regret though; I’m still waiting for those grandchildren on my knee-Vera, Chuck and Dave!

Tips for Hiking with Dogs One of my favorite ways to reset and recharge my soul is to get outdoors and enjoy Mother Nature with friends. It's a wonderful way to maintain a balanced mindset and a healthy physique. Some of my favorite companions to hit the trails with are MY DOGS! To ensure that I can have an enjoyable time, it's important that my dogs behave appropriately when out in public. This means coming when called, heeling on and off leash and staying neutral around unknown dogs. Here are some guidelines that I follow to set myself up for success.

Once I arrive at the trailhead, I calmly open the car door and attach my dogs’ leashes and remote e-collars. Because we practice manners at thresholds everyday, my dogs already know that they need to be calm while they wait for permission to exit the car. By reinforcing the rule that dogs need permission to exit the car, the crate and the home on a daily basis, I’ve made these behaviors reliable, so I can rely on them in highly distracting situations. Once I give permission to exit the car, I’ll keep my dogs on leash as I enter the trail, even if its an off leash trail. I want confirmation of a few things before I unhook my dogs. I want to get away from the dangers of the parking lot, I want to get my dogs in "working mode" and heeling nicely on leash as I scan the environment for other dogs and assess if those dogs are under control or in the proper mindset. It's important that my dogs follow the common courtesy rule and NOT run into another dog’s personal space uninvited and NEVER approach a leashed dog. I like my dogs to be neutral around other dogs and not approach an unknown dog without my permission. You never know what can happen and I don’t want my dog to have a bad experience. So, I ALWAYS call my dogs to come and heel and focus on me when we see a dog. My dogs stop asking to engage with unknown dogs in public because the answer is usually NO. Of course I let them play with dogs, but only if I initiate it. When dogs can remain in control of their emotions and focused on their handler, it makes them a joy to bring everywhere.

Throughout the walk, I call my dogs often, reward their recall and give them freedom again. If we’re coming to a tight section of the trail where I can’t see too far ahead and my dogs could go ahead out of sight, I will call them back to me. I mostly do this because there are people and dogs that are intimidated by approaching dogs and I want to be respectful of everyone that is on the trails with us, including the natural wildlife. In addition to beautiful scenic views in Colorado, we also have the best craft breweries, here! After a strenuous hike with friends, I love to celebrate with a cold craft beer! At the end of a long hike, my dogs are in a relaxed mindset and are the perfect companions to bring to a brewery to grab a drink on the patio. By following these tips you’ll be on your way to enjoying safe adventures with your dog. The more you can enjoy exercising and exploring outdoors with your dog, the better your health and relationship will be. Sometimes the internal clarity I’m seeking comes from adventuring outdoors with companions.

One of the hottest items for the Fall/Winter season is a leopard coat. Leopard is considered a neutral and it pairs nicely with most colors and of course with denim. Seems every woman already has something leopard in her wardrobe – now may be the time to invest in something bolder like a leopard dress, leopard boots or leopard faux fur jacket. Leopard is here to stay, so be fearless, you’ll love how confident you feel. And for those who dare – pair a couple leopard items together! PLAID! Yes plaid is very big for Fall/Winter 2018. This is a carry-over from last year and it’s not going anywhere soon. Consider investing in a plaid blazer or a plaid suit to wear together or separately - such a smart look for the more conservative woman. Plaid can be found in browns, blacks, greys or in colors so you can be creative. Wear your plaid suit with pumps, ankle boots or sneakers. Speaking of classic styles, cardigans are on trend and can be worn as a top all by itself or with a blouse underneath. Energize your classic separates by wearing plaid on plaid, or color blocking classic black separates with shades of blue for an on trend color combination. GLAM! Sequins, metallics, patent leather, and faux fur will be seen everywhere this Fall/Winter. Wear a sequins top with jeans and silver ankle boots for a night out. Sequins, metallic and faux fur can be worn with jeans casually or with formal wear. How about faux fur in a fun color? Don’t save your sequins for night time only. A great daytime look is a sequin skirt with a graphic tee or a button down shirt. Perhaps you are not feeling the total glam look think about

CARGO PANTS! Jeans will never be out of fashion, but cargo pants just might replace your jeans this season. Dress up cargo pants with unexpected pieces such as a silk blouse and heels for a night out. Cargo pants would look awesome simply styled with a turtleneck and embellished pumps. Of course cargo pants can be more casually worn with a graphic tee and sneakers. Wear them with neon colors, or muted colors. Cargo pants are versatile and can be a fun addition to your wardrobe. Go all neutral with your cargo pants for another on-trend style. ACCESSORIES! The exclamation point to your outfit! Take your outfits up a notch with colorful tinted sunglasses, fringe handbags, embellished clutches, metallic/silver ankle boots, pom pom beanies, oversized statement earrings, belt bags, wide brim hats, slouchy boots, headwear such as scarves, veils, and embellished caps/beanies. I DREAD football season!
There, I said it. I mean, I just don’t get it. Hours on end watching men in tights running up and down a field while home viewers yell at the television thinking that the overpaid athletes somehow can hear them or that they may even care. It is six months of the year that my house is in constant turmoil of yelling fans, commentators and ridiculous commercials. Any family activities must be planned around Sunday (all day) Monday night, Thursday night and Saturday. During those six months I forget what my husband looks like because all I see, on the fore mentioned days, is the back and top of his silvery head above the recliner couch. At least I have Tuesday, Wednesday, and Friday… that is if I can pull him away from his fantasy football stuff (I call it “stuff” because I have no idea how else to refer to it.) What can I do during all the mayhem? I COOK! Which of course, makes me the popular one (take that Payton Manning). Football food is great but there is one recipe you must have, a stellar hot sauce to go with EVERYTHING! Not out of a jar! My ever popular recipe is “pequin sauce.” Recipe from Chef Restaurateur.”

PEQUIN SAUCE 1 T vegetable oil 30 dried small pequin chili pods 1/4 cup apple cider vinegar 1/4 cup honey 2 T chopped garlic 1 1/2 tsp salt 1 tsp ground black pepper 3/4 tsp ground cumin 3/4 tsp cayenne 1/2 cup caramelized onions (see below ) 1/2 cup roasted red peppers ( see below ) 1/3-1/2 cup vegetable oil
Heat oil in sautĂŠ pan and toast pequin chilies. Add roasted pequins with all ingredients except oil to a food processor. While processing, slowly add oil until you have a smooth texture.
ROASTED RED PEPPERS Red Bell Peppers Pan spray Preheat oven to 400 degrees F. Line a sheet pan with foil and spray with pan spray. Lay peppers on the foil and roast for 20 minutes. Turn the peppers, then roast for another 20 minutes. The skin should be charred and soft, and the peppers should look slightly collapsed. If they don't, let them roast for a few more minutes. Remove from oven when let cool enough to handle, wash off all skin then remove stem seeds and core. If you have a gas stove, you can also simply char the peppers in its flame without having to use your oven or pan spray.
CARAMELIZED ONIONS 3 yellow onions, sliced into half moons Put onions in a saute pan over medium low heat. Check the onions every 5 to 10 minutes. Stir and scrape up any "fond". Exact cooking times will vary with the number of onions you're cooking, their liquid, sugar content and their age. Don't cook too quickly, allow the onions time to brown. Continue checking the onions every 5 minutes until they reach your desired level of caramelization Let’s all cheer for Superbowl! I know I do, because that means the end of football season.
