CityBeat food critic Michael Gardiner is as comfortable in a little known dive as he is in the newest fine-dining restaurant. Here are a few highlights from his local foodie adventures from the past year.

Barrio Dogg (2234 Logan Ave., Barrio Logan) For Barrio Dogg , the TJ dog—like the lowriders that are a regular staple in the neighborhood—can be art. Put differently, it’s tacos done as hot dogs: wrap the dog in bacon (or don’t) then fry or grill it and pile on ingredients of your choice. Many of Barrio Dogg’s options are TJ-style takes on pre-existing dogs. The El Capone, for example, is its take on the Chicago dog and El Aleman is its German-style dog. Cucina Urbana

Shank & Bone (2930 University Ave., North Park)

BARRIO DOGG

The space at Shank & Bone is airy, open and dominated by a huge Shepard Fairey mural called “Revolution Girl.” The restaurant’s ne plus ultra is the Signature Pho: classic Vietnamese beef noodle soup featuring bone marrow, oxtail and shank. The broth has the depth and strength of flavor that comes only from long, slow cooking of the bones (and only a tiny hint of MSG). They also do a good banh mi bo kho: essentially a cross between pho and a French Beef Bourguignon. shankandbone.com

Calozzi’s Cheesesteaks

(505 Laurel St., Bankers Hill) Cucina Urbana has a Cal-Italian sensibility that’s also affordable (no menu items over $20). While Urbana is definitely not “a pizza joint” there really is no better way to taste Urbana’s casual sophistication than in those pizzas. Try the potato, leek and prosciutto pizza with mozzarella, fennel pollen and chilies. It’s basically a vichyssoise (or, slightly more accurately, a Parmentier) soup done in pizza form. For a somewhat less exotic take on pizza try the Casalingo pepperoni and fennel sausage with mozzarella and peppadew pepper. urbankitchengroup.com

Cross Street (4403 Convoy St., Kearny Mesa) I’ve come to believe the real reason I didn’t love chicken wings before might have been because I hadn’t yet tasted the Korean fried chicken wings at Cross Street in Kearny Mesa’s Convoy District. Korean fried chicken features a thin, crunchy, clean and CROSS STREET non-greasy skin with a moist, savory interior. Also, chicken is seasoned after cooking, rather than before, and the batter includes both cornstarch and baking powder, giving it a lighter feel. My favorite is the Seoul Spicy, which feature a sticky-sweet sauce with a definite kick. crossstreetcnb.com

(1146 Garnet Ave. Suite A, Pacific Beach) There’s basically just one thing on Calozzi’s menu: cheesesteaks. And after trying these cheesesteaks, I probably won’t eat another unless I’m in Philly. Choose between the classic version, The Donnie (with mushrooms), The Pepper Steak (sweet bell peppers), The Pizza Steak (pizza sauce) and The Roni (pepperoni). Then pick a cheese: Cheez Whiz, American, provolone or mozzarella. But my fave might be the off-menu offering, The Kitchen Sink, a combination of The Pepper Steak and The Donnie) with provolone. calozzis.net

Himitsu (1030-G Torrey Pines Road, La Jolla) The best sushi isn’t always the freshest. One great place to learn that is Himitsu. Take, for example, Himitsu’s salmon nigiri. It’s not fresh off a boat, and it wouldn’t be nearly as good if it were. Chef Mitsu Aihara, a Sushi Ota protégé, cures the salmon in western-style white wine (not sake) before serving it, the goal of which is to refine some of the salmon’s flavors and this results in a piece of fish better suited for sushi. himitsusd.com

Terra American Bistro (7091 El Cajon Blvd., La Mesa) Located near the border of La Mesa and San Diego, Terra American Bistro’s décor features American farm imagery and trinkets and the food follows suit: a Midwest farm country eatery doing mostly well-executed comfort food with a few elevating, cheffie flourishes thrown in. Terra’s signature dish might be the pot roast braised in Karl Strauss Amber Lager, but the best main, though, is the rigatoni bolognese that uses chicken fennel sausage instead of classic Italian sausage. terrasd.com

Carve Modern Deli & Beer (8583 Aero Drive, Serra Mesa) Carve is all about delicious, handcrafted pastrami. Owner Chris Karetas is a chef by training as well as heritage (he’s second generation in the industry) and he brings that approach to the world of deli. His hickory-smoked pastrami is nothing short of extraordinary. Carve offers two pastrami sandwiches, both excellent. In addition to the pastrami, the namesake Carve ’Strami sandwich includes thick cut maple bacon, pickles, Dijon mustard and Mornay sauce (béchamel with gruyère cheese) on a toasted bun. carvesd.com

TERRA AMERICAN BISTRO

(1410 Rosecrans St., Point Loma) Charles + Dinorah is the revamped and reimagined restaurant at the iconic Pearl Hotel, a midcentury modern masterpiece of a boutique hotel set in the heart of Point Loma. New chef Andrew Santana (ex-Campfire) and bar manager TJ Majeske offer promise to the vintage space. Santana’s most successful dishes are the starters. Try the kushiyaki, Japanese grilled meat on skewers, or the roasted fennel and beet with honey curd, puffed quinoa and smoked almonds. thepearlsd.com/dining

After Chef Jean-Michel Diot closed his acclaimed Tapenade, he opened this eatery down the street with an emphasis on “bistronomy”—a portmanteau of “bistro” and “gastronomy”—which basically means casual fine dining that slots in somewhere between a simple bistro and traditional fine dining. Perhaps there’s nothing on Diot’s menu that gets the point across as well as his tournedos, sauce au poivre noir and frites. bistrodumarche.net

The Friendly (4592 30th St., North Park) The pizza and burger joint with a ’50s diner feel is all about simple food done right. The signature order is the Dirty Flat Top Cheeseburger. It’s exactly what it sounds like: a twopatty hamburger on a standard-issue bun with less-than-extraordinary cheese and mayo. The whole thing comes together as a glorious trip to a nostalgic time and place. facebook.com/thefriendlySD Hachi Ramen (2505 Fifth Ave., Bankers Hill) The best dish at Hachi is the Tan Tan, a ramen take on dan dan noodles, a fiery Sichuan classic. It is, in a sense, a trip back to the ramen’s Chinese origins. Hachi’s duck ramen is more elegant than powerful. Marinated and roasted duck breast is the star topping of this dish, and it pairs well with the chicken shoyu broth. hachiramen.com Taste Of Denmark (142 University Ave., Hillcrest) Upon taking a table at Taste of Denmark, each diner receives a plate of food featuring small slices of bread, pickled red cabbage and two spreads, all gratis. That that bread is absolutely glorious. While the menu is meat-heavy, the dessert menu is a must. The aebleskivers are basically pancake puffs with cardamom in all its evocative, spicy, herbal and citrusy glory. truetasteofdenmark.com Maestoso (1040 University Ave., Hillcrest) Maestoso specializes in contemporary Roman food with much of it served from roving dim sum-style carts. Yes, Cooks bring food to the tables, either in the old-fashioned way or on roving carts. Maestoso

highlights its pastas. The tagliatelle with pork cheek is pasta perfection with modern presentation. maestoso.com j/wata Temaki Bar (4646 Convoy St. ste. 103, Kearny Mesa) Temaki are hand rolls, which are, traditionally, sushi rice and fillings rolled into a four-inch cone. j/ wata goes totally tubular with the shape of the handrolls, insuring a proper filling-to-rice ratio all the way through the roll and a consistent flavor profile throughout. Try the negi yellowtail, or chopped hamachi with scallions. j-wata.com Lola 55 (1290 F St., East Village) At the end of the day, there are no tacos in town better than those at Lola 55. Two of the best tacos on the menu are carnivorous delights.The ribeye carne asada taco is a luscious, luxurious, perfectly medium rare mesquite grilled steak with crispy leeks, smoky pasillachile sauce and a blistered jalapeño salsa. The pork belly al pastor taco takes the classic combination of pork, achiote marinade with pineapple and elevates it further with a sinful slab of pork belly. lola55.com Vistal (901 Bayfront Court, Downtown) Located inside the downtown Intercontinental Hotel, Vistal features a drop-dead gorgeous view and Chef Amy DiBiase’s “mindfully curated coastal cuisine.” Try the pickled black cod with Persian cucumber,

fennel, preserved plum, horseradish crema and malted toast. And the Snake River wagyu cheeseburger, with bread and butter pickles, is a perfectly executed burger. vistalsd.com Tuétano Taqueria (143 San Ysidro Blvd., San Ysidro) At the heart of Tuétano tacos offerings is birria (red meat slow-cooked in broth with chiles, cinnamon, clove and vinegar) and tuétano (roasted bone marrow). Curiel offers her tuétano as a side with the idea of adding a bit of the marrow to her tacos. It’s a minor stroke of brilliance that takes the birria tacos to another level. facebook.com/Tuetano-Taqueria-243409319667945 Hidden Fish (4764 Convoy St., Kearny Mesa) San Diego’s “first omakase-only sushi restaurant.” Traditionally, omakase diners place themselves in the hands of a sushi chef who creates a menu based on the most pristine ingredients available. John Hong (aka “Chef Kappa”) (ex-Sushi Ota, ex-Bang Bang) sources product from a number of locations including Tokyo’s recently relocated Tsukiji Fish Market. Try the seared black cod with sea salt if he has it. hiddenfishsushi.com Kangxi is Coming (4428 Convoy St., Ste. 320-330, Kearny Mesa) The most successful dishes at this new Convoy spot tend to be Hunan, reflecting that province’s love affair with the chili pepper. The pickled pork with dried turnip features smoked bacon, rehydrated daikon and chunks of jalapeño and other chilies. The spice level was no joke. The formula work as well for the stir-fried spicy pork kidneys, which includes multiple chilies, a protein and a vegetable.

Breakfast and brunch spots in San Diego are a dime a dozen at this point. A town that revolves around tourism and the hospitality industry, San Diego tends to have people with flexible schedules and more free time during the day than in other city. From local, intimate joints with killer food, to party spots more appropriate for downing bottomless mimosas and listening to house music, here are some of the best brunch restaurants in San Diego.

Little Lion Cafe Sunset Cliffs’ Little Lion Cafe (1424 Sunset Cliffs Blvd.) has achieved near-cult status in the hearts of Obecians and Point Lomans, but the hype has now spread inland. It’s damn near impossible to get a table on busy weekend mornings and afternoons. Diners flock to the tiny restaurant for its creative salads and sandwiches, daily-changing eggs benedict, baked eggs with chimichurri and a full coffee menu with spritzer cocktails, as well. thelittlelioncafe.com

The MED The MED at La Jolla’s La Valencia Hotel (1132 Prospect St.) has recently started serving weekday brunch in addition to its popular weekend service. Go beyond The MED standards like its popular chilaquiles, smothered cinnamon rolls, lobster rolls or the La V Burger with foie gras, and try one of the new items like a pink velvet waffle with vanilla bean cream cheese frosting. Brunch starts at 10 a.m. daily and comes with generous ocean views and an opportunity to hang out in one of San Diego’s most iconic landmarks. lavalencia.com

The Rose The Rose (2219 30th St.) is South Park’s most beloved wine bar and shop. Urban Solace

The Grass Skirt

Longtime North Park mainstay Urban Solace (3823 30th St.) can be credited with helping to ignite the neighborhood’s current restaurant scene. While newer, flashier restaurants have come and gone, the New Orleans-themed spot is still very popular. It recently pivoted to emphasize breakfast and brunch, while still offering signature dinner dishes at night. Toasts, pancakes, savory egg dishes and more make up the menu, which is served daily from 8 a.m. to 2 p.m. barsolace.com

One of the most lively and fun brunches in town is at The Grass Skirt in Pacific Beach, which hosts Tiki Brunch on Sundays from 11 a.m. to 3 p.m. The tiki-inspired bar and restaurant offers a special menu, which includes fried rice dishes, upmarket riffs on popular fast food breakfast items and tiki cocktails made especially for brunch. Kettner Exchange

One of San Diego’s most notoriously bumping brunch party scenes is at Rustic Root in the Gaslamp (535 Fifth Ave.). The multi-level restaurant has a quieter downstairs dining room, but those looking to party all day know the rooftop is the spot to hit. Pro-tip: Those who can handle starting early can book a table in the downstairs dining room before 10 a.m. and will receive a complimentary bottle of bubbly to kick off their festivities. rusticroot.com

Kettner Exchange (2001 Kettner Blvd.), though one of the city’s most popular restaurants, sometimes gets a bad rap as having too much of a club vibe. The truth is that it’s one of the consistently best restaurants in San Diego, and brunch is no exception. The party reputation serves it well during these hours, as the Little Italy spot regularly brings in internationally-recognized DJs to host a variety of brunch parties. kettnerexchange.com

JRDN With easily the best brunchtime view in San Diego, Tower 23’s waterfront restaurant, JRDN (723 Felspar St., Pacific Beach), is a well-loved brunch destination. JRDN recently debuted Bubbles and Brunch, the mechanics of which should be fairly self-explanatory. The restaurant teams up with a visiting winery, that pairs a selection of bubbles with a three-course brunch menu. Tickets tend to be around $60 and the events run every month or so. t23hotel.com

San Diego is having a bona fide steak moment. In the last few years, not only have a variety of buzzy new names opened up in downtown, but old standards continue to fill seats as well. From of-the-moment party palaces that also happen to serve a mean New York strip to more down-to-earth, lunch-type joints, it’s safe to say there’s something for every kind of carnivore in San Diego.

STK San Diego After a multi-year wait and build out, the party-oriented steakhouse STK (600 F St.) finally opened in the Gaslamp in 2018. The original outpost of STK is in New York’s Meatpacking District (natch) where it gained a reputation for its club-like atmosphere and high-quality steak and seafood. Born & Raised The crown jewel of Consortium Holdings’ many bars and restaurants is undoubtedly Born & Raised (1909 India St.), which opened in 2017 in Little Italy. The swanky, two-level

Cowboy Star Ask almost any food-obsessed person in town what their favorite steak spot is and the likely answer is Cowboy Star (640 10th Ave.). An East Village mainstay known for its high-quality chops and in-house butcher shop, Cowboy Star is so good it has expanded to Colorado Springs. Its patrons love its Wagyu selection, sustainably-sourced fish and creative craft cocktails. thecowboystar.com

Del Frisco’s Double Eagle Steakhouse Brand new to the waterfront is Del Frisco’s Double Eagle Steakhouse (901 Bayfront Ct., Ste. 105), located in the Intercontinental San Diego Hotel. Already well-known on the East Coast for its upscale steakhouse dining, San Diego boasts the chain’s first West Coast outpost. The two-level restaurant can sit a whopping 480 people in its various rooms and outdoor


patio, which are designed in contemporary style. The thing to order is their signature “Double Eagle” steak, a double-bone, bone-in prime ribeye chop, dry aged for 45 days. delfriscos.com

Turf Supper Club Nestled in the heart of Golden Hill, Turf Supper Club (1116 25th St.) is adored by hip nightlife folks and San Diego’s bar scene. It’s just one of those places that everyone and their parents have gone to numerous times over the years. The retro decor, strong classic cocktails, dim red lighting, stacked jukebox and the grill-your-own-steak experience are the main draw. Add a baked potato, an iceberg lettuce salad and a hearty slab of grilled garlic bread and the Turf experience is as classic as it gets for late-night noshing. turfsupperclub.com

Lou & Mickey’s Gaslamp steakhouse Lou & Mickey’s has added a state-of-the-art dry-aging room to allow it to dry-age its prime steaks on-site. It’s quite rare for steakhouses to do this, as many buy their meat already aged from a third party. The restaurant is now aging cuts from Double R Ranch in Washington state for 30, 45 and 60 days in its temperature-controlled room lined with pink Himalayan salt. The meat is also now butchered daily on premises.

We’re an oceanfront city, so it shouldn’t come as a surprise that San Diego has killer seafood. But thanks to the completely opaque and messed up international seafood supply chain, quality options and good sourcing were often hard to come by until recently. Sourcing responsibly remains an uphill battle for the industry all over the world, but the following San Diego restaurants not only do it right, but serve delicious food to boot.

TJ Oyster Bar Baja-style seafood is the word at Chula Vista’s TJ Oyster Bar (601 E. Palomar St. and two other locations). The mariscos joint specializes in seafood cocktails, smoked tuna tacos and fried fish tacos, which are served to a dining room almost always packed with people.

For those who might be visiting with a hangover from the night before, the spicy shrimp aguachile provides the perfect punchy kick-in-the-butt to start anew. tjoyster.com

Mitch’s Seafood Mitch’s Seafood (1403 Scott St.) is an unassuming fish shack on the docks in Point Loma and is probably best known for its Baja-style fried fish taco. Mitch’s sources its seafood directly from the waters in San Diego and Baja and nowhere else, making it a truly sustainable and local seafood operation. Mitch’s also offers an extensive California-based craft beer and wine list, which is heavy on options from San Diego County. Add the waterfront view and Mitch’s might just be the perfect seafood restaurant. mitchsseafood.com

El Pescador Fish Market La Jolla’s El Pescador (634 Pearl St.) operates both as a seafood vendor and a restaurant to packed crowds who visit it from all over the city. A long-time staple in the community, the restaurant, which opened in 1974, is loved for its seafood cocktails, poke bowls, grilled seafood, fish sandwiches and rotating specials. elpescadorfishmarket.com

Water Grill The Gaslamp’s Water Grill (615 J St.) has one of the largest selections of oysters available in the city, serving over 15 varieties daily in addition to its other prime seafood offerings. Part of the Los Angeles-based King’s Seafood family of restaurants—a family-owned and operated restaurant company that’s been around for over 70 years—the expansive restaurant specializes in a variety of different seafood preparations using its parent company’s sustainable supply lines. watergrill.com

CAFE SEVILLA’S ALBONDIGAS AL JEREZ (MEATBALLS) INGREDIENTS: 2 tablespoons olive oil 2 cups minced onion, from about 1 large onion 4 ounces roasted garlic, puréed (about 1/3 cup), see Note About 1/2 cup (3/4 ounce) chopped fresh basil leaves About 1/2 cup (3/4 ounce) chopped fresh cilantro

Prep time: 50 minutes Serves 10 to 12

1 tablespoon dried oregano 1 tablespoon Spanish paprika 1 tablespoon kosher salt 1 tablespoon freshly ground black pepper 2 eggs 1 cup plain bread crumbs 1 pound ground pork 1 pound ground beef 1 cup grated Manchego or Parmesan cheese Chopped parsley, for serving

DIRECTIONS: 1. In a sauté pan heated over medium heat, combine the olive oil and onions, cooking the onions until they soften and become translucent, 6 to 8 minutes. Remove from heat and place the onions in a large mixing bowl. 2. To the bowl, add the roasted garlic, basil, cilantro, oregano, paprika, salt and pepper, stirring to combine. Set the mixture aside until the onion has cooled to room temperature. 3. To the cooled onion mixture, stir in the eggs and bread crumbs, then the ground pork, beef and cheese, mixing with your hands until uniform and fully combined. 4. Divide the mixture into 36 meatballs, each about one-fourth cup. The meatballs may be covered and refrigerated at this point up to 3 days before cooking. 5. To cook the meatballs, heat the oven to 375 degrees. Spread the meatballs out onto foil- or parchment-lined baking sheets, spacing them an inch or so apart for even cooking. 6. Cook the meatballs until firm and golden and a thermometer inserted reaches 165 degrees, 15 to 20 minutes. Rotate the baking sheets halfway through cooking for even heating and coloring. Serve garnished with parsley.

Crushed Avocado Instructions Combine avocado, minced green onion, juice from 1/2 of a lime and a pinch of salt. Then, crush with a fork to mix. Ceviche Brine Instructions In a small pot heat 1 cup of water, 1T of salt and 1T of sugar until salt and sugar have dissolved. Then, pull from heat and add the distilled vinegar, the jalapeño that has been cut in half and the smashed garlic clove - let cool. How to Brine the Shrimp: Dice one pound of raw shrimp. Then, pour cooled brine over shrimp and allow to macerate for 4 hours in the refrigerator or until shrimp has firmed up and appears cooked. Final Assembly Instructions: Mix brined shrimp with crushed avocado, cucumbers, diced jalapeños and cherry tomatoes. Divide into 4 margarita glasses. Garnish ceviche with pineapple, radish, red onion and cilantro. Enjoy with corn tortilla chips.

DIRTY BIRDS FRIED GENERAL CHICKEN SANDWICH Deep fried chicken breast dipped in our General Bird Sauce, topped with bacon, swiss cheese, shredded lettuce and tomato on a warm brioche bun INGREDIENTS: 1 chicken breast (5 oz) 2 strips bacon 1 slice Swiss cheese 1/2 cup shredded lettuce 2 tomato slices 2 oz General Bird Sauce (available for purchase) 2 oz ranch dressing 1 pickle spear 1 focaccia bun DIRECTIONS: 1. DIRECTIONS: How to make the Crunchy Shrimp: Pat the shrimp dry, toss shrimp into a bed of Corn starch previously seasoned with salt (just enough though). Shake off the excess starch and throw into the fryer. Remove in approximately 2 minute or until they turn golden brown and crispy. Set aside and strain over a rack. For the A la Diabla sauce: Chop the onion and sauté them in a small pot. Add the tomato (previously chopped) and cook for another minute. Devein the Chiles and add them to the tomato and onion mix. Top them with purified water and cook until the Chiles are soft. Blend everything to a smooth texture and add the rest of the ingredients (1 clove garlic, 1 tsp salt, 2 tsp

When beer royalty teams up with a hospitality powerhouse to launch a sprawling brewpub in San Diego, expectations will be high. But since opening Gravity Heights in early 2019, AleSmith BETH DEMMON alum Skip Virgilio and the Whisknladle Hospitality team have proven themselves up to the task. With a sprawling mezzanine overlooking the working brewhouse and an in-house kitchen headed by Mastiff Sausage Company, the meat-centric plates mesh with the hop-forward beers seamlessly. Within spitting distance of Petco Park is the Irish-inspired Half Door Brewing Company. Keep on Truckin’ The demand for ever-changing food options has led to many breweries to rely on fleets of mobile food trucks instead and there are plenty of high quality restaurants-on-wheels on the craft beer circuit. Here are some of the best. Local Kebab has been churning out authentic Turkish delights since 2015. The owner, Cenk Aydin, originally hails from Turkey and brought his traditional take on the cuisine straight onto his truck. It’s easy to be seduced by the lamb döner kebab, but opt for the chicken döner kebab. The mix of spices Aydin uses on the chicken leaves a spicy, rich impression that always demands a quality beer to wash it down. Luckily, getting one’s hands on good beer isn’t a problem. It’s a spicy delight that goes great with a crisp IPA. It’s one of the longest running food trucks in San Diego and the only one cooking up authentic Polish cuisine. Pierogis are Polish dumplings and can be savory or sweet (the truck has both). The heavy plates from Pierogi Truck are particularly welcome during San Diego’s “harsh” winters, but on warmer days it’s hard to beat their Polish sausage with a nice brown ale. Finally, there’s no better pairing than German food, making Biersal arguably the most appropriate food truck to stumble upon at local breweries. Their tagline, “Local food for local beer” sums up their schtick nicely. Chef and owner Matt Schooner strives to incorporate local and organic ingredients whenever he can. The Bavarian-style pretzel (made with Hefeweizen yeast and served with beer mustard and a cheese spread) is a popular appetizer that just happens to go well with pretty much any style of beer, but the chicken schnitzel sandwich is a not-so-little slice of himmel (German for “heaven”). The former bartender and mixology expert not only expounds on life and drinks in “Anatomy of a Cocktail Scene,” but serves up the recipe as well. Here are some highlights from the past year. THE PLACE: TAHONA (2414 San Diego Ave., Old Town) THE COCKTAIL: A wonderful interpretation of one of my all-time favorite refreshing tequila cocktails, the Mexican Firing Squad. Tahona’s version ups the stakes with housemade mole grenadine, mole bitters and mezcal, all of which come together to produce a rich, dimensional version of the beloved cocktail. Agave De Cortes mezcal 1 oz. lime juice 1/2 oz. mole grenadine 1/2 oz. raw agave syrup Three dashes of Xocolatl mole bitters To make mole grenadine: Equal parts pomegranate juice and sugar, 1 tablespoon of mole rojo, 1 tablespoon of Madre mole negro and 8 ounces of pomegranate molasses. THE PLACE: MONKEY KING (467 Fifth Ave., Gaslamp) THE COCKTAIL: The Christmas in Thailand is a tropical, refreshing cocktail with notes of spice and deceiving aromatics. I like cocktails that are a bit of a mind-fuck, and that’s a little of what happens when the cocktail arrives and customers first smell it. The gin in the cocktail is infused with Kaffir lime, which throw off huge aromatics. For those unfamiliar, they smell exactly like Fruit Loops, which is great but, when combined with spice notes, it kind of plays tricks on the brain, but in a good way. monkeykingsd.com THE RECIPE: 2 oz. It’s balanced, nuanced, effervescent and refreshing. I ordered The Woodman, a cocktail that’s barrel-aged in charred American oak and containing 1776 Rye whiskey, Fernet-Branca, allspice dram and local honey. It’s rye-forward but still delightful with hints of clove, cinnamon and mildly bitter. Really, it’s reminiscent of all great whiskey-forward cocktails. It has the complexity that the Fernet and allspice dram bring, along with the subduing nature of honey, while still being angsty and aggressive.
