A Weight Loss Recipe with Cheese! BUFFALO CHICKEN SALAD The highlight of this Buffalo Chicken Salad is the blue cheese dressing that goes on it. Low-fat buttermilk and Greek yoghurt keep the calories low but the flavour high.
INGREDIENTS 2 boneless, skinless chicken breast cut into halves 2tbsps hot sauce 2tbsps olive oil 2 carrots, coarsely grated 2 scallions, green part only, sliced BLUE CHEESE DRESSING 2 tbsps mayonnaise ¼ cup low fat buttermilk ¼ cup plain Greek yoghurt 1 tbsp white vinegar ½ tsp sugar 1/3 cup crumbled blue cheese Salt and freshly ground pepper
PREPARATION Preheat the grill. Put the chicken in a Ziploc bag and pound it with a mallet or hammer so the chicken breast is evened out like a fillet. It should be evenly thickened and should approximately be ¾-inches. Then cut the chicken crosswise into ½ inch strips. In a large bowl, combine the hot sauce, olive oil and chicken and toss it around until the chicken is evenly and well-coated. Arrange the chicken pieces on a baking sheet and put it on the grill. Cook it for about 4-6 minutes until the chicken is cooked through. In another large bowl, combine the shredded carrots and scallions. Toss it with the blue cheese dressing. BLUE CHEESE DRESSING PREPARATION Fold a full sheet of paper towel into quarters and put it into a small bowl. Spoon the yoghurt on the paper towel and place it in the refrigerator for 20 minutes to drain and thicken. In a medium bowl, whisk the buttermilk and thickened yoghurt into the mayonnaise until it comes out smooth. Add the vinegar and sugar and continue to whisk it until all the ingredients are well combined. Stir in the blue cheese and season it with salt and pepper.
