The Purple Onion

The Purple Onion carries on the tradition of creating a gathering place which reflects the gracious casual pace which has characterized Saluda for years. Located in Historic Saluda, with outdoor dining available and live music on Thursday and Saturday night, The Purple Onion features a variety of ethnically inspired dishes with an emphasis on the Mediterranean’s simple and healthful cuisine. The menu offers pizzas, pastas, seafood, vegetarian and meat dishes using locally raised trout and organic, locally grown produce when available, antibiotic and hormone free meats and poultry. Fresh locally roasted coffee and espresso are available, as well as a selection of fine wines and beers including biodynamic and organic selections. The featured entrées on the cover are Super Seed Crusted Sunburst Mountain Trout alongside Tailgate, which is marinated shiitakes, grilled onion, corn medallions, squash, zucchini and carrot ribbons. The other is NC seared sea scallops served with a golden beet and sunflower seed hummus and a tomato chutney topped with Bearded Bird Farms micro greens. 4

What is the greatest part of my Job? There are too many to mention. But if I had to narrow it down to one, it would be getting to know our customers and sharing our passion in supporting our local farming community. Food, for centuries has, brought people together, and we hope to continue that here at The Rural Seed Restaurant. What makes your restaurant standout from other restaurants? We try to offer our community the cuisine that is not available anywhere with-in Polk county. Offering a mix of fresh beef, pork and fish in a casual steak house with a laid back atmosphere, that happens to serve fresh vegetables and meat grown with-in a 200 mile radius. I don’t know of many restaurants where the chef and manager are also the farmer. If Mother Nature cooperates, we should be using our own produce this spring and summer.

Then the expression on customer’s faces when they take that first bite, and they like it, motivates me. My wife Adrienne is the one that inspires me to be a better chef every day, for I always tell people that she is a better chef than I am.

7 ways to dine ‘out’ when staying in

As restaurants, bars and taverns have closed their doors voluntarily or under government orders amid the public health crisis surrounding COVID-19, a population accustomed to the freedom of dining out for special occasions or as part of daily life has found they must make an assortment of changes. However, it’s still possible to enjoy the offerings of your favorite restaurants. Restaurants have made some dramatic changes in an effort to meet the needs of their customers. • Oven-ready meals: Some restaurants are offering ovenready meals that fully prepared dishes that customers need only heat up at home. • Deep discounts: Certain businesses are cutting prices on menu items in order to generate revenue. The Los Angelesbased Morrison Pub recently slashed prices to $10 or less for items that typically cost more than that. Other restaurants are shuttering dining rooms and providing discounts on take-out as incentives to customers. • Prepaid options: The reservation service Resy has opened up its service to restaurant owners to offer take-out 24

Other reservation businesses may soon follow suit. • Delivered spirits: Businesses with on-premise liquor licenses might be able to deliver alcohol and offer it for takeout. Rules depend on where you live, but the New York State Liquor Authority temporarily allowed alcohol takeout beginning in March 2020. • To-go party plans: CEC Entertainment, the parent company of the Chuck E. Cheese and Peter Piper Pizza restaurants, said the concepts would launch new family and birthday packages that included takeout pizza, birthday cake and goodie bags, in addition to two game apps for Chuck E. Cheese that provided virtual tickets redeemable at a later date when restaurants reopen. • Pre-packaged favorites: Certain chain restaurants have long offered frozen selections of their popular appetizers and other dishes. When at the supermarket, check the freezer section for items from restaurants like TGI Fridays™ and PF Chang’s™.

How to support local businesses Small businesses are the backbones of local communities. According to the U.S. Small Business Administration, small businesses make up 99.9 percent of all businesses in the United States and employ 59.9 million employees. The SBA notes that the accommodation and food services sector is the second largest small business industry. Many of these businesses have been hit especially hard as more and more of their regular customers stay at home in the wake of government advisories promoting social distancing. But small businesses are vital to local communities, and there are ways to support them and help them stay afloat as they confront the challenges posed by the COVID-19 outbreak. • Order delivery. It’s still possible to enjoy foods from your favorite local restaurants. Many restaurants that had not previously done so have begun to offer delivery services, be it curbside or at-home, and this can provide a great respite for families who have had to cook three meals a day at home for their entire families for extended periods of time. Curbside delivery has made it possible to get takeout meals without compromising social distancing recommendations. • Recognize that more than food is available for takeout. In response to the COVID-19 outbreak, Governor Andrew Cuomo of New York announced

relaxations on laws governing what can and cannot be obtained via takeout, allowing takeout on goods that were previously restricted in regard to takeout. For example, Cuomo announced that the New York State Liquor Authority intended to temporarily relax regulations regarding the takeout and delivery of alcohol. Utilizing such services can be a great way to support local businesses while still adhering to recommendations designed to slow the spread of COVID-19. • Purchase a gift card. Gift cards can help small businesses generate revenue at a time when their doors are largely closed to the public. This can be vital to these businesses’ survival, and it gives consumers something to look forward when life returns to normal. • Help market local businesses. Spread the word when local businesses deliver in the wake of the restrictions put on them due to COVID-19. Share these experiences via social media or online reviews, and urge your neighbors to patronize these businesses. Local businesses are suffering during the COVID-19 outbreak. But communities can come together to support business owners and their employees to help these vital businesses stem the tide.


How diners can prepare to go out as restaurants reopen

• Dine out in small groups. Phase 1 reopening guidelines issued by the Centers for Disease Control and Prevention recommended gatherings be limited to no more than 10 people. But when dining out, consumers should keep their groups even smaller. An assortment of studies from the CDC have found that the virus is easily spread among groups of people in enclosed spaces. By limiting dinner parties to no more than the number of people in their households, consumers can help restaurants safely reopen. • Wear masks. Wearing a mask to a restaurant may seem odd, but by keeping their mask on until their food arrives, diners can help prevent the spread of the virus. The World Health Organization notes that it’s believed the virus can spread through small respiratory droplets produced while talking or laughing. So diners can keep themselves and fellow customers and restaurant workers safe by wearing their masks until their food arrives.

• Remain patient. Life in the era of social distancing requires significant adjustments, and restaurants reopening will be adjusting right along with everyone else. Afford restaurant staff ample patience and go along with any protocols restaurant owners put in place. All measures are aimed at keeping customers and staff safe while getting people who have been out of work for months back on the job. Each of those goals is worth the patience it may take to help restaurants achieve them. • Order takeout. If you’re uncomfortable visiting a local restaurant in person or frustrated by potentially long wait times for a table, order takeout instead. Restaurants need the business after a very rough stretch, and consumers can benefit greatly from a night off from cooking. Local restaurants are reopening in communities across the globe. Supporting these businesses can be vital to local economies and help millions of people return to work.

3 tips to planning efficient home-cooked meals A few generations ago, dining out was an experience reserved for special occasions. However, until recently, when restaurants were shuttered in the wake of the public health crisis prompted by the spread of COVID-19, many people were dining out multiple times a week. Hospitality solutions provider Fourth surveyed 1,000 American adults in 2019 and 56 percent reported dining out at least two to three times per week. Ten percent said they ate out four to six times each week, while 6 percent said they dined out everyday. People accustomed to relying on restaurant for meals multiple times per week may be unaccustomed to cooking many meals at home, which has become the norm thanks to restrictions placed on restaurants and other food-related businesses as part of COVID-19 social distancing precautions. Learning how to shop for food and prepare items by maximizing available ingredients can reduce trips to the store and help people reduce food waste at a time when food is not as readily available as it once was.

Plan meals/browse circulars

Meal planning and shopping lists are vital tools for people preparing meals at home. Without doing so, individuals can be left floundering in the supermarket, spending more money than necessary and making impulse purchases (all the while forgetting items they truly need). Use sales circulars to browse weekly

discounted items at stores. Build a week’s worth of meals off of these sale items — going so far as to write out a cursory menu — then fill in any extra ingredients or staples needed on a shopping list. Leave a day or two for leftovers. Try organizing the list to follow the natural layout where items are arranged in the store.

Shop smart

With paper and pen in hand or a digital list compiled on your phone, go aisle by aisle and check off items as they are added to the cart. If you are shopping for food you hope will last a week or more, consider substituting canned and frozen foods and other nonperishables for fresh items because they can be stored for longer periods of time. “Club size” or “family size” packages of foods may cost less per volume and can be sub-divided and stored for later use.

Minimize waste

Cook only as much as is needed for the household. Generally speaking, a meat or poultry serving of three to four ounces per person is adequate. That means a roast or steak of 11⁄2 to two pounds is fine for a family of four. Use up older frozen or perishable foods first. Store foods properly and use them before the use-by date. The following are a handful of benefits of shopping farmers markets that might turn market novices into full-fledged devotees. • Freshness: Many people visit farmers markets because the fruits and vegetables sold at such markets seem to taste more fresh than those sold at chain grocery stores. People are not mistaken, as the produce available at farmers markets often comes from local farms, meaning there’s no longdistance shipping necessary.
