side swimming pool in Havana, Cuba, for years. He says the place just fascinates him. Whitman is also fascinated by the act of smoking: putting out a cigar on a shoe, a gentleman lighting two cigarettes (one for himself and another for his lady) and all the little gestures that go along with smoking. From amusing to mind-bending, see the world through Whitman's eyes on the walls of Chelsea Market this December and January.

obert Whitman loves to travel. He's been all over the world, from Moscow and Havana to Rio de Janeiro, Acapulco, India and beyond. No matter where his fancy takes him, Robert brings along his finicky Contax T3 point and shoot film camera. "I take pictures of real-life moments that happen to inspire me," says Whitman. "Once, in Tijuana, I came across a donkey painted as a zebra. I turned a corner, and there it was, taking a piss." Whitman's been documenting one of his favorite places, an ocean-

GRILL A CHEF KALE SALAD Kale Salad w/ Roasted Squash If you’re feeling frisky, accent this salad with some freshly grated nutmeg and toasted nuts.

· 1 medium kabocha squash, peeled, seeded and cut into 1 inch chunks (Fuit Exchange) · 5-8 kale leaves (any variety) · Juice and zest of 1 lemon · 2 tbsps EVOO (Buon Italia or the Filling Station) · 6 oz. Dunbarton Blue Cheese (Lucy's Whey) 1. Season the squash with salt and pepper, coat lightly with oil and roast in a 400 degree oven

until just tender - about 16-20 minutes. 2. Remove the kale stems. Leaving the leaf whole, roll it up as tightly as possible, hold it tight and use a chef's knife to shred it as thinly as you can. 3. Toss the shredded kale and roasted squash in the olive oil and lemon juice and zest. Season liberally with salt and pepper. Let this mellow for at least 15 minutes. The salt and lemon will break down the kale a bit, making it more pleasant to eat. 4. Crumble the cheese over the top and enjoy! grillachef.com.
