The Case for Using IoT to Monitor Food Safety Learn how convenience stores can protect their biggest revenue drivers by ensuring compliance and eliminating human error associated with collecting temperature data. BY: STEVEN BABB, IOT & MONITORING SOLUTIONS CONSULTANT @ FSG SMART BUILDINGS

It’s no secret that self-serve and prepared food items are the top revenue producers in c-stores. It is commonly understood that gas prices get feet in the door, but the food items in the store are what pay the bills. Offering food of any kind, prepared or not, comes with a great responsibility: maintaining health code and food safety compliance according to HACCP principles and application guidelines. For most convenience store owners and operators, the most commonly accepted practice for ensuring compliance is a basic system involving visual inspections by employees recorded onto clipboards and later logged. There are two major flaws with this type of system: time and human error. This is an inefficient practice that takes up time that could be better utilized serving customers and enhancing the overall customer experience. In addition, manual temperature logging leaves the safety of your food products subject to human error. In order to better understand how to more effectively manage food safety, particularly in open-air cooler systems, let’s look at how these systems actually work: Cold air is heavier than warm/hot air. When a standard refrigerator door is opened, the column of cold air “falls out” from the bottom of the opening creating a vacuum that allows warm/

hot air to be sucked in to the upper area of the fridge. This causes the compressor to cycle on in order to evacuate the newly introduced warm/hot air in order to replace it with cold air. Open air coolers use “air curtains”. Vents along the top lining of the open-air cooler blow cold air in all directions, effectively sealing in the colder, denser air. The design of these coolers are quite intentional as, again, cold air is heavier and, therefore, sinks to the bottom. While this design is more convenient for on-the-go consumers, it is not without its flaws. The system is largely dependent on ideal environmental conditions for optimal operation. If an open air cooler is within proximity to a regularly opened door, for example,

the constant airflow from the opened door will present a constant disruption to the “air curtain” effect. This becomes more prevalent with multi-tier open-air coolers where the air curtain is vertical as opposed to horizontal. Suffice it to say, a “successful” c-store will have its doors being constantly opened. Besides consumer convenience, another reason open-air coolers are such an attractive option for c-store owners is their merchandising abilities. Open displays are more visually appealing, allowing merchandise to be deliberately placed according to plan-o-grams and market demand. An obvious compliment to merchandising is lighting. Modern open-air coolers contain LED lights which produce light with less energy, thus producing less heat. Heat is still a factor and will cause variations in surface temperature within the open-air coolers. On the topic of modern day options, the life expectancy of an open-air cooler is generally in the 10-year range. This number will vary based on the performance of individual components but it is a safe assumption that the air-curtain feature will have suffered some degradation over the course of a decade. With brand new open-air coolers running in the $5,000-$10,000, it is understandable why c-store owners would keep their current units up to and beyond their anticipated life expectancy. In any cooling system, the catalyst that determines whether the compressor kicks on is the thermostat. Anyone who lives in a two-story home can tell you that a single thermostat is never the full story. While the first floor is frosty, the second story is usually much warmer (remember: cold air is heavier which is why heat rises). Now imagine this two-story house is your open-air cooler. The food on the first floor might be fine and maintained at an ideal 40°, but the food upstairs will be living in an environment 5°15° warmer, situated right in the Danger Zone. Source: usda.gov Before we go any further, let’s recap a few key points: 1. Cold air is denser than warm air 2. Open-air coolers use “air curtains” to trap cold air 3. Lighting- no matter the typeproduces heat 4. Acceptable temperatures for prepared food are: <40° for cold food, <0° for frozen food, and >140° for hot food 5. Life expectancy of proper operation of an open-air cooler is around 10 years 6. Thermostats can only tell part of the storyManual temperature logging offers no actionable data or mitigation strategy, is prone to error and is a time sucker

According to CS Decisions: “Eliminating pen and paper line checks can save $250-$600 per year per store, smart sensors that prevent food spoilage can save $1,100 per episode, and reducing food and labor costs can save $4,700 per year per store, according to a recent CoInspect survey. Further, CoInspect experts said the ROI on in-store technical solutions can be as high as $10,000$15,000 per year for c-stores with foodservice capabilities.” Leveraging modern IoT (Internet of Things) tech, c-store owners can now remove visual cooler inspections from their employees’ job descriptions and gain true insight into the actual temperature of open-air coolers in all zones, not just based on what the thermostat readout is. Having access to data where you can see if your coolers are operating outside the acceptable range for longer than an acceptable amount of time would help you in determining if it really is time for your out-of-warranty cooler to be replaced. It will also allow you to move your food to another cooler location before it spoils and costs you thousands of dollars. Removing the human element from temperature logging guarantees accuracy and satisfies logging requirements for HACCP

compliance purposes. While the focus of this article has been on the inefficiencies of open-air coolers, the very same sensors are equally usable in closed-door refrigerators, and heated environments such as food rollers and steam tables. FDA MOVES TO TIGHTEN RESTRICTIONS ON YOUTH ACCESS TO FLAVORED E-CIGARETTES The U.S. Food & Drug Administration (FDA) effectively banned gas stations and convenience stores from selling most flavored e-cigarettes under its new draft guidance, “Modifications to Compliance Policy for Certain Deemed Tobacco Products.” Brick-andmortar retailers will be unable to sell flavored e-cigs other than tobacco, menthol or mint unless minors are restricted from entering the store or if those items are sold in a separate location in the store that minors are prohibited from entering.

FMCSA RANDOM DRUG AND ALCOHOL TESTING RATES FOR 2019 In January, the FMCSA this week announced minimum employee random drug and alcohol testing rates for 2019. The test rates are the minimum percentage of employees who are subject to U.S. DOT drug and alcohol requirements who must undergo a random test during the upcoming calendar year. The number of random tests conducted by employers for 2019 must equal at least 25 percent for drugs and 10 percent for alcohol. These are the same rates required in 2018.

D&H UNITED FUELING SOLUTIONS HONORS BILL WHITE D&H United Fueling Solutions announced the retirement of Bill White on January 31, 2019. White was honored at a special event at the company’s Lubbock-Amarillo branch that included fellow team members, customers, vendor partners, TFFA staff, and regulators. White helped the TCEQ develop some of its still current regulations and licensing requirements for Underground Storage Tanks (UST) and holds the first official TCEQ license number 00001. White’s retirement caps an amazing 60year career in the industry.

EPA PROPOSES YEAR-ROUND SALES OF E15 AND LIMITS TO RINS TRADING The EPA has proposed regulatory changes to allow gasoline blended with up to 15 percent ethanol (E15) to take advantage of the 1-psi Reid Vapor Pressure (RVP) waiver for the summer months that has historically been applied only to E10. The proposed rule is important to petroleum marketers because it would allow the year-round sale of E15 blended gasoline. Extending the one-pound RVP waiver to E15 through the rulemaking process is controversial because the statutory language of the Clean Air Act specifically limits the waiver to E10 blends. EPA will hold a public hearing on the proposals on March 29th in Michigan. THE INDUSTRY LEADER IN TEXAS

Behaving Digitally: How Technology is Shaping the Convenience Store Experience BY WOLFGANG MANZ, PRESIDENT OF PWM ELECTRONIC PRICE SIGNS

The convenience store industry has withstood fierce competition by offering convenience, value, and a wide variety of products. A store’s small size and accessibility enables operators to adapt to changing environments and consumer preferences, making them more resilient as busy price-conscious consumers search for the quickest and most convenient way to spend their dollars. Advancements in technology have created pressure for convenience stores to develop an efficient and integrated experience — particularly given the nature of today’s pluggedin consumer. Five years ago, the idea of an unstaffed store using facial recognition to track customers and robots to stock shelves seemed like the something right out of a sci-fi thriller.

Today, retail businesses across the U.S. have tapped into a wave of innovative technology that is creating a new kind of experience that on a daily basis fuels the bodies and vehicles of an estimated 160 million convenience-store customers, according to the National Association of Convenience Stores. It’s a challenge for convenience store operators both large and small to stay competitive as e-commerce and retail giants continue to reshape the digital landscape. The future is here and now! It is not the time for convenience stores to fall behind on the latest trends in digital technology. Forward-thinking convenience stores have a special opportunity to leverage digital technology to expand name recognition and draw more customers to their stores. Here’s a look at three emerging digital technology strategies you can use to engage customers and improve their digital experience:

Mobile Digital Coupons Couponing has come a long way since the first coupons arrived — offering a free glass of Coca-Cola to customers over 130 years ago. Consumers are tethered to their smartphones — they use digital tools when they go shopping, even as they peruse the aisles of their local convenience stores. Connected devices are changing the relationship between physical stores and shoppers, according to the PYMNTS Remote Payments Study, many shoppers are increasingly dependent on smartphones. As a result, the “face” of modern retailers has become its mobile website and app. The study found that fifteen percent of respondents who paid on location via smartphone were at gas stations. Mobile coupons often deliver redemption rates that are 10 times higher than that of paper programs, and they can be targeted to a specific audience. In-dispenser media technologies, or gas pump TV’s, is a great way to promote products and encourage customers to come inside and purchase a drink or snack. These types of programs create an opportunity for convenience stores, CPG companies, and marketers to communicate directly with the consumer. For consumers, they provide a way to save without the hassle of clipping and organizing paper coupons.

Geofencing and Beacons Beacons are small wireless devices that are strategically placed throughout retail locations to deliver information and alerts to shoppers via Bluetooth. Geofencing is literally a virtual fence that uses GPS and WIFI, which makes it possible to register persons in possession of a smart watch, smartphone, or other device within a previously selected area. The use of beacons and geofencing is primarily used for location-based marketing. The two technologies represent a huge potential for convenience stores who utilize a mobile marketing strategy. In 2016, through the use of smart beacons, Heineken increased revenue by $320,000 and customer engagement rose by 200,000. Imagine walking into your favorite grocery chain, restaurant, retail store, or pulling up to the pump and you receive a notification on your phone. It contains today’s deals and specials tailored directly to you. In a study by the beacon platform Swirl, 73% of shoppers said beacon-triggered offers increased their likelihood to purchase during a store visit. This type of tracking technology allows retailers to engage and interact with customers, while store visitors enjoy a tailored shopping experience leading to a quicker pathto-purchase journey and a better shopping experience.

Frictionless Checkout It might look like magic, but it’s actually not that complicated. Artificial Intelligence (AI) — through the use of algorithms, sensors, cameras, and customer smartphones, has the potential to create a solution that allows for 24/7 unstaffed, semi-staffed, or selfservice format at convenience stores — anytime, anyplace.

In Shanghai, a prototype of a new 24hour convenience store is completely on wheels. It has no registers, no staff, and is designed to eventually drive itself to a warehouse to restock, or to a customer to make a delivery. In 2018, 7-Eleven announced it plans to pilot a Scan & Pay technology at 14 locations in the Dallas Metro area through a proprietary app and using a geofence surrounding to track customers. Additionally, Amazon opened the first-ever convenience store that operates without cashiers or self-checkouts. It’s a technology that uses computer vision and machine learning that allows customers to enter the store, grab items from the shelf, and walk out. It is yet to be seen whether AI in the long term will become viable for convenience stores, only time will tell whether it transforms retail or it becomes an expensive flop.

Advice for making the digital transformation Customer experience is priority #1. Today’s retail consumers are becoming more demanding. They are empowered with the availability of information and data that guides their buying decisions. Convenience stores need to adapt to the new research-and-buy process so that they can retain and grow their share of consumer spending as the industry undergoes paradigmshifting changes. That is where a best target customer is described in detail, including entire demographic and psychographic descriptors on that individual. Then for fun, you give that Avatar a name. For instance, if your target customer is a construction company, you can’t say a company is the target. You must ask yourself, who actually makes the buying decision? Is it the construction company owner? Perhaps the General Manager? Or maybe there is a procurement guy. Your Avatar will be completely different depending on who the buyer really is. Let’s assume your buyer is the Procurement guy. And for fun let’s name him Fred. Fred has full authority to buy the fuel required from whoever he wants.

How old is Fred? Is he married? Does he have kids? What is most important to Fred? Is it saving the company money on fuel? Is it looking good to his boss? Is it making sure his crews never run out of fuel at a job? What does Fred worry about other than running out and looking stupid? I think you are getting the picture of all the info you need to gather about Fred, even though he is just an Avatar. So now when your team is working on marketing, they should think about “Fred” and what influences Fred’s fuel buying decisions. They also need to think through what would cause Fred to change fuel suppliers. If Fred is being served by a competitor, his buying trigger would likely be a run out. Understanding Fred, your marketing strategy should include item(s) you put in front of Fred so that when his existing supplier allows the run out, he will think of you, call you, and you become his hero! Now let’s step up the marketing a notch. Is there anything you can do to capture Fred’s account before a run out happens? What else is important to Fred? Can you create a trigger point?

Next, how will you keep top of mind for Fred? This means thinking through what Fred reads or listens to or watches. It means identifying who he respects. What does Fred do for fun on his days off? Does Fred belong to a professional association of procurement managers where you could be a guest expert? Maybe you find out that Fred and his family are very tied into the local kids’ sports and that association is always looking for sponsors. Armed with that info, you cleverly decide to be a sponsor. Now Fred sees your name every time he is with his kids at the sporting practice. I think you can see where this is going. Will anyone else see your sponsorship? Now you get really smart and use a unique trackable phone number on that sport association materials, different from your main account. By tracking how many people call you on that unique phone and what sales get generated, coupled with knowing the cost of the sponsorship, you just figured out your cost per lead and cost per sale for that marketing method.

Spring Cleaning Can Save Major Headaches BY TROY GOLDMAN, PRODUCT INTEGRITY MANAGER, SUN COAST RESOURCES, INC.

Spring is fast approaching, and with it comes the proverbial spring cleaning, so now is a good time to check a few things you might not be considering in your ongoing fluid handling and maintenance programs. Every program is different, but the list below is a good start.

Check the shelf life

It may come as a surprise, but lubricating oils and greases have a shelf life. All totes, drums, and pails should have a “filled date” on the label. So, if you don’t know the shelf life, a good way to determine expiration date is to simply add between 24 and 36 months to the filled date. Unlike common perishables, storing lubricants past their shelf life doesn’t mean that they should be immediately disposed. The stated shelf life gives you a reasonable expectation that the lubricant will perform as intended for a certain amount of time. If you store your lubricants in their original packaging in a clean, cool and dry area, you can use them well beyond their shelf life. But, if your storage conditions are less than ideal, you may want to collect samples and visually inspect them for water and other contaminants. The printed “filled date” has another use. It allows you to use

your lubricants on the “first in, first out” basis. This method requires you to simply organize your stock by filled date, then use the oldest stock first. This simple method will help you avoid using fluids beyond their shelf life.

Laboratory analysis should also be considered for bulk-stored lubricants as over time storage vessels can become contaminated with particulates and water, especially if you aren’t maintaining the desiccant breathers. Prevent Lubricant Contamination

Particle contamination in lubricants is the number one cause of lubricant-related equipment failure. Unplanned outages, lost production, and maintenance overtime are all very expensive. It’s a safe estimate that a chemical processing unit makes about $25,000 an hour.

At that rate, 48 hours of downtime can cost well over one million dollars in revenue. What can you do? First, it is important to use certified clean fluid to maintain the system’s cleanliness, maximize the life of the equipment, meet stringent standards, decrease unscheduled downtime, and

No matter how clean your new oil is, if stored in a dirty tank, you will end up with dirty oil. Tank particulate contamination can typically occur through the vent, through the fill port, or is generated through corrosion wear inside the tank.

The latter is usually the result of water ingress through the vent and will likely go away if you take care of the first two issues. Retrofitting your storage tank with a good 3-micron breather filter will in turn take care of these two sources of contamination.
