the el tovar hotel
T
he El Tovar Hotel, also known simply as El Tovar, is a former Harvey House hotel situated directly on the south rim of the Grand Canyon in Arizona. The hotel was designed by Charles Whittlesey, Chief Architect for the Atchison, Topeka, and Santa Fe Railway and was opened in 1905 as one of a chain of hotels and restaurants owned and operated by the Fred Harvey Company in conjunction with the Santa Fe railway. It is at the northern terminus of the Grand Canyon Railway, which was formerly a branch of the Santa Fe. The hotel is one of only a handful of Harvey House facilities that are still in operation, and is an early example of the style that would evolve into National Park Service Rustic architecture. The new hotel was built before the Grand Canyon was a formally protected Federal park, following on the heels of President Theodore Roosevelt’s 1903 visit to the canyon. The hotel was built as a “destination resort”, providing a high level of comfort and luxury standing literally on the edge of the wilderness, 20 feet from the rim of the canyon. The El Tovar was one of the first such hotels in national parks, part of a trend in which railroads would build large hotels in newly-accessible scenic locations like Yellowstone and Glacier National Parks, stimulating tourist traffic, necessarily railborne, to those destinations. The railroads consciously employed architectural design in keeping with the image they wished to convey, a superficially rustic resort that provided a comfortable retreat. deliciousbites LAMB SHANKS
INGREDIENTS Serving 4 to 6 people 1. 4 to 5 lamb shanks (12 to 14oz each) 2. 3 spoons olive oil 3. 1 onion 4. Half oz of garlic 5. 1 lb Basmati rice 6. 4 dinner spoons of tomato paste 7. 1 tea spoon turmeric 8. 1 tea spoon lemon pepper 9. 4 oz of dill weed 10. Half pound of fava beans 11. half tea spoon black pepper 12. 1.2 oz salt
PREPARING THE SHANKS
PREPARING THE RICE
STEP1. Cook the lamb shanks in one gallon of water for 20 min. Dump the water out and rinse the lamb shanks with warm water. STEP 2. Use a frying pan, use the 3 oz of olive oil and heat it up. Saute the lamb shanks in the olive oil for about 5 min. Make sure all sides are done evenly. STEP 3. Dice the onion and garlic and mix it with the shanks and stir for another 5 min until the onions are golden brown. At this time add the turmeric, lemon pepper, and black pepper to the shanks. STEP 4. Transfer the shanks with all the ingredients from the frying pan into a pot large enough to hold the shanks and add at least 2 quarts of water. Add the tomato paste, salt and bring it to boil and turn the temperature to medium and cook for almost 3 hours. Check the taste for salt and more if needed.
1. Soak the rice in water for 1 hour 2. Put a gallon of water in a pot and bring it to boil 3. Add the rice and cook for 8 min 4. Pour the rice and water in a strainer to get rid of excess water and rinse it with warm salt water. Let the water drain for 10 min. 5. Mix the rice with dill weed and fava beans and pour it back into the pot 6. Use 2 to 3 oz of olive or vegetable oil in the bottom of the pot to prevent the rice from burning. 7. Use med high heat for 10 min and med heat for 20 min to steam the rice and you should have it ready.

Why Are Sedona’s Rocks
Red?
The answer to one of the most asked questions by Sedona visitors is iron! The incredible array of colors displayed by Sedona’s famous Red Rocks is a direct result of iron oxide in water seeping into sandstone rock formations. Water carrying dissolved iron oxide drains through the porous sandstone and literally paints quartz grains – you guessed it – red! The Red Rocks vary in origin, color and age. Some were originally sea sediment while others came from blowing sand. You’ll see bright orange, red and tan rocks. The brightest orange rocks are more than 250 million

years old. White and grey rocks are limestone that formed at the bottom of the sea or sandstone that had its red color washed out by water. You may also stumble across basalt extruded by volcanoes in the past. Sedona and its famous Red Rocks have been in the making for hundreds of millions of years. Use the information available on the web site, www.nps.gov/grca/, to help plan your visit. Once you arrive in the park, read The Guide and talk with the rangers for up-to-the-minute information. Elevations along the rim vary from 6650 feet (2030 m) at Hermits Rest to more than 7400 feet (2260 m) at Desert View near the East Entrance. Summer temperatures are pleasant along the rim, but increase rapidly as you descend into the canyon. Low humidity makes for big temperature differences between day and night. The low humidity and high elevation also means that it is important to drink water frequently. Afternoon thundershowers are common in July, August, and early September. Windy conditions prevail in April and May. Snow may fall as early as November. Winter snowstorms continue into March. Many miles of roads along the rim feature numerous pullouts to enjoy the views. Hermit Road to Hermit Rest is open to private vehicles only from December through February. The free shuttle bus system provides a worryfree way to explore the developed areas of the rim. 86
The Rim Trail winds along the rim for more than 13 miles (21 km), much of it paved and suitable for visitors in wheelchairs. The Greenway, a broad, paved pathway suitable for hikers, bicyclists, and wheelchairs, leads two miles (3 km) from Grand Canyon Visitor Center to Grand Canyon Village. A separate segment heads east from Hermits Rest along the rim. The Bright Angel and South Kaibab trails descend steeply into the canyon. Rangers present programs—walks, talks, and evening presentations—throughout the year. All activities are free. Check in The Guide for programs during your stay. VISITOR CENTERS The National Park Service staffs several visitor centers on the South Rim. All are open every day of the year; hours vary seasonally. Grand Canyon Visitor Center Located near Mather Point The largest visitor center on the South Rim is a good stop for an introduction to Grand Canyon and for assistance in planning your visit.

MAKE BELIEVE AT RENFEST BY JAMES RUBERTO
Longing for childhood days of make believe? Mythic heroes slaying dragons, steel clad warriors jousting atop mighty steeds and knights in shining armor saving damsels in distress…this can all be found at the Arizona Renaissance Festival. There is definitely something for the children and the kid in all of us to be found at the faire. And kids love this place! Dozens of activities bring out their smiles. A Festival favorite with children is Mother (and Father) Goose brought to life, with costumed ducks and geese, Maggie, Mimi and Matilda. Kids will cheer for their favorite knight at the 5,000

seat jousting arena or try their hand at archery. Children delight in the return of a falcon, the King of sports, at the Falconer’s Heath. Kids also, love riding the people-powered Da Vinci’s Flying Machine, the Swan Swing, Christopher Columbus’ “Voyage to the New World”, the Slider Joust, as well as, the Piccolo Pony, a rocking horse bigger than an elephant. In addition to the people-powered rides, the Festival offers interactive games like the dragon climbing tower, the castle siege, Jacobs’ Ladder, a maze and an archery range. Kids will surely be asking for a hat, wand, garland, wooden sword, shield, or to have their face painted, or to make a sand dragon, or perhaps purchase a pet gorgi or drabbit along with other interesting items available for purchase at the Festival. What’s more, kids will marvel at the acrobatic antics of Clan Tynker. Those bolder of heart may feed the dragon or play King of the log. As a press release on the RoyalFaires website states, we deal with the 21st century every day. School, study, work, cell phones, pressure... these can all disappear for a day. Now the Renaissance is back, offering an opportunity to relax and escape to the amusements of a much simpler time. Spend a day where your biggest worry is which sword to choose or if you’ll need an ear of corn with that turkey leg! Ready for Spring Training BY DANIELLE RUBERTO The month of March in Arizona is dominated by Cactus League Spring Training baseball. Now if you’re anything like me, many obscure baseball terms are simply baffling. And I’m tired of just nodding my head when I hear them, acting as if I’m in the know. In an attempt to fix this, I have compiled a list (courtesy of Wikipedia) of words and phrases to interject during a game to make you (and I) sound very knowledgable! banjo hitter: A batter who lacks power. A banjo hitter usually hits bloop singles, often just past the infield dirt. The name is said to come from the twanging sound of the bat at contact, like that of a banjo. bazooka: A strong throwing arm. A gun, a cannon, a rifle.
rabbit ears: Indicates a participant in the game who hears things perhaps too well for his own good. A player who becomes nervous or chokes when opposing players or fans yell at or razz him is said to have rabbit ears. Also, an umpire who picks up on every complaint hurled at him from the dugouts is described this way.
caught napping: A baserunner who is tagged out because he wasn’t paying attention to seeing-eye ball: A batted what the defensive players were doing is “caught napping.” Often this involves a pickoff ground ball that just eludes play in which the infielder sneaks up behind the runner and takes a throw from the capture by an infielder, just out pitcher or, less often, the catcher. of infielder’s range, as if it could dying quail: A batted ball that drops in front of the outfielders for a hit, often unexpect- “see” where it needed to go. If you’re up for a scenic drive to Northern Arizona with the San Francisco Peaks standing sentinel along your way, take the less traveled, more rugged but passable Hart Prairie Road from Highway 180 northwest where 50-foot tall Aspen frame your view of meadows where deer and elk make occasional appearance. The Navajo Nation is enthroned in its rightful location on our country’s largest Reservation, in northeastern Arizona in a spectacular convergence of nature’s most rugged beauty. Treat yourself and fellow travelers to a native-guided hike, horseback ride or the four or six-wheel tours by Navajos, of Canyon de Chelly near Ganado or the Hopi-guided tours of the Mesas near Tuba City and the trading posts like the Hubbell (928-755-3475 )where you can witness the timeless traditions of rug weaving and basketry. Reservations are advised. While the Hopi Nation is surrounded by Navajo land, the Navajo migrated from Canada in the 15th century met by the Hopi who have been on their land since prehistoric times. It is known as the Four Corners Area. Don’t you wish you had a short course in photography in your past when you visit scenic wonders like the Grand Canyon at Arizona’s northern rim or Sedona in Central Arizona? There’s no time like the present at The Sedona Arts Center. California photographer Scott Stulberg splits his time between homes in this exhilarating red rock country and California, staffing photography retreats and giving 2-hour photography classes ($100) on location at scenic area spots among the famous red rocks (310) 963-1700. alking Stick, a Cultural and Entertainment Destination (TSCED), an initiative of the Salt River Pima-Maricopa Indian Community will open the Talking Stick Visitor Center to the public on Feb. 25 located at 9120 E. Indian Bend, Suite E-10 in the Pavilions shopping center, next to YC’s Mongolian restaurant. The visitor center will be open for spring training Feb. 25 thru Mar. 30, daily from 10 a.m. to 6 p.m. and will serve two purposes. The first is to be an information hub for the TSCED partners. Cultural ambassadors will be on hand to make tee times, dinner reservations or hand out area information to guests. Second, it will offer visitors a unique experience into the rich heritage of the Akimel O’odham (Pima) and Xalychidom Piipaash (Maricopa) cultures through song, dance and art. Starting February 26, traditional dance performances and art demonstrations will be offered Mondays, Wednesdays and Fridays at 11 a.m. and 4 p.m., while an interpretive exhibit by the Huhugam Ki Museum and displays from the Salt River Two Waters Art Collection will be offered at no charge.
