The charismatic, outspoken chef, recently featured on “Top Chef Seattle,” gets pretty fired up when she talks about being a female chef in a male-dominated field, as well as her newest restaurant, Meatball Spot at Town Square, at the south end of the Las Vegas Strip. Food first. Pellegrino’s lifelong passion for cooking shines through in the restaurant’s take on Italian comfort food. The tequila will pour at Cabo Wabo Cantina inside Miracle Mile Shops at Planet Hollywood Resort & Casino during a rockin’ National Margarita Day celebration on Friday, Feb. 22. Every day is Margarita Day at Cabo Wabo Cantina with more than half a dozen margarita selections including Mango Picante, Margarita Verde and the signature Waborita. Sammy Hagar’s Strip-side eatery will honor the date dedicated to good times and the margarita by serving up $8 house margaritas all day. Partygoers can pair their festive libations with Cabo Wabo’s savory Baja Mex fare including Sammy’s Tequila Shrimp, made with Baja shrimp, garlic and Cabo Wabo tequila-lime sauce; and Cilantro Jalapeño Chicken topped with jalapeño, onion, cilantro, pepper jack cheese and jalapeño ranch.
Señor Frog’s Las Vegas at Treasure Island Hotel & Casino will host a National Margarita Day fiesta with food and drink specials on Friday, Feb. 22. hen you walk into Strip House on the Mezz level of Planet Hollywood, you are immediately immersed in the elegant and sexy atmosphere that permeates the space. From the vintage black and white boudoir photographs to the sumptuous all red decor, you can’t help but think that this is not a typical steakhouse. The menu is simple, yet intriguing. Their appetizers range from seafood specialties like the delicious New England Sea Scallops or the Lump Crab Cake to salads and even a House Cured Beef Jerky that melts in your mouth. If you like to share with the whole table, order the Fried Rock Shrimp or Warm Garlic Bread with Gorgonzola Fondue. Nightly specials may also include a fantastic raw Spicy Tuna Salad served over fresh chopped avocado wrapped in cucumber and finished with roe. Since Strip House is, in fact, a steakhouse, you will find the familiar lineup of Filet, Rib Eye and Porterhouse in addition to their namesake bonein New York Strip. If you are not in the mood for a traditional steak, they have seafood options like lobster, salmon and tuna or you can have a Colorado Lamb Rack or Veal Chop.

Although the New York Strip is a great choice, you may find yourself drawn in by the description of a perfectly seared Sea Bass served with Jalapeno mashed potatoes - and you will not be disappointed. At a restaurant like this, you can’t forget the sides, especially the house specialty Crisp Goose Fat Potatoes; amazing velvety inside with a perfect crisp outside. The Black Truffle Creamed Spinach is a close second to the potatoes; just the right amount of creaminess to complement the steak. The other options are all tempting, but if you happen to be there on a night that they are serving sides of Roasted Corn with Maple crusted with herb bread crumbs or the Roasted Brussels Sprouts finished with lemon zest and chili flake, count yourself lucky. If you’ve made it to dessert and still have room, you can’t miss their signature Strip House Chocolate Cake made of twenty-four layers of chocolate and creamy filling that will leave you in awe. Not a chocolate fan? The Tahitian Vanilla Crème Brulee or Caramelized Banana Tart will knock your socks off. To complement the amazing menu, Strip House has a lineup of signature cocktails and an extensive wine list to please any palate.

Loveable Qualities of Las Vegas Dealers
Dealers are the unsung heroes of the Las Vegas casino experience. It takes a special kind of person to be a dealer, and most have some qualities in common. Here are 10. Patience - Most people who play in casinos aren’t professional gamblers. They’re trying their hand at games they may not be all that familiar with. The best dealers enjoy teaching games to new players, recommending the best bets and helping players avoid the “sucker bets.” Intelligence - In just about every casino game, math wins. Dealers have to know the payouts for a variety of bets in a variety of games. Dealers also have to retain an enormous quantity of information about procedures and even have to multi-task by keeping an eye out for cheaters. Humor - One of the ways dealers cope with their sometimes stressful jobs is by cultivating a sense of humor. Humor helps the time pass, and also warms up customers so they’re in the mood to tip
more generously. Patience - Yes, “patience” has already appeared on this list. But patience deserves another spot because it also applies to dealing with customers who may have overindulged and can’t wait to spill a drink, knock over chips or generally aggravate other players and casino staff. Deep breaths. Wisdom - Dealers have seen it all. Dealing in a casino gives you a wealth of experience and insight, and most dealers are happy to share that wisdom. Just ask. Optimism - The nature of gambling is that there are long stretches when luck dries up, as do tips. Dealers, therefore, must be infinitely optimistic, much like the players they serve. Acting Ability - If Lady Luck isn’t smiling, customers can become disgruntled and often belligerent. To cushion the blow, the best dealers excel at pretending to be genuinely disappointed when a bet doesn’t win, even if they’ve already done so a hundred times that day. Endurance - Dealing can be physically demanding. Count the number of times a craps dealer bends over in the course of 10 minutes, then multiply that out over the course of a shift of six or eight hours. Dealers are tough cookies. Friendliness - At their core, dealers have to be people-people. Nobody wants to play a casino game across from a robot. Personality is everything, and can turn even a losing streak into a good time. Patience - It bears repeating! Too often a dealer will provide stellar service to a gambler for hours, then watch the player walk away without so much as a dollar left as a tip. Casino dealers make minimum wage and survive largely on tips, or “tokes.” Treat your dealer well, because if you do, you’ll get to experience another loveable dealer trait: Gratitude. 57

Stealing some of the spotlight are the signature cocktails served at the restaurant’s central, welcoming bar, with a seemingly endless offering of floats, mojitos, margaritas, martinis, sangrias, beer and wine. But even with all the tempting items on the menu, an unmistakable draw of Meatball Spot is its photogenic chef. Chef Carla Pellegrino was widely known celebrity chef thanks to appearances on programs on “The Today Show,” “CBS This Morning,” and “Fox News.” Then came a stint on “Top Chef Seattle,” the airing of which coincided with the opening of Meatball Spot. The
As the name implies, meatballs aren’t sides at Meatball Spot, they take center stage. The chef adds, “Meatballs are always a side dish, never the entrée in restaurants. We make three, threeounce meatballs the main course, and pasta is actually the side dish.” Meatball Spot is a lot more than meatballs, of course. The restaurant has a broad selection of sandwiches, pizzas, salads, along with a terrific collection of signature cocktails and desserts, including a gelato bar, all reasonably priced. “Making it affordable was important,” remarks Chef Pellegrino. “Whenever you think about having something good, you also think you’re going to spend more than you should. I like that we have teenagers here, on dates, they feel so important because the place looks beautiful, and they know they’re not going to spend a bunch of money.” Meatball entrees consist of three meatballs (classic, pork, beef, chicken, turkey and vegetarian), served with a choice of sauces (tomato, spicy meat sauce, Parmesan cream, pesto and mushroom gravy) and scrumptious French bread ($7.99). Sandwiches run in the $8 range, salads are $6.99 (half 58
timing couldn’t have been better. “We were talking about Meatball Spot, then when the ‘Top Chef’ opportunity happened,” says Chef Pellegrino. “I put the rest of my life on hold. They brought me somewhere for eight weeks, we couldn’t leave, we couldn’t have any electronics like phones or computers, so I didn’t even know if the restaurant could happen. But they waited for me. I came back,
and the timing of the show was perfect. When we opened, the show was airing, and it was great.” Pellegrino won legions of new fans with her thick accent, quick tongue and cooking determination. One of her most-quoted lines from “Top Chef Seattle” is telling: “When I’m cooking, I like to look good. I want to be a James Beard [award winner] and I want to have a nice ass.” Pellegrino’s looks, and gender, have been a blessing and a curse in her chosen field of endeavor. “Being a woman definitely makes it harder to be a chef. I turned it in my favor. The work of being a chef is so hard. Women have to work even
though some tried. Pellegrino shares, light-heartedly, “When I did think about having a restaurant, my ex-husband, who was a very traditional Italian, said ‘It’s too hard a job, this is a guy job, you’re going to have work 14 hours a day, you’re going to be all dirty and smelly.’ I think that was traumatizing. I always thought I’d be fat, dirty and smelling like garlic. I’ve spent a lot of my life proving I wouldn’t be fat, dirty or smelling like garlic.” How do you like her now, Roberto? With the success of her latest restaurant, each day is a vindication she made the right decision about becoming a chef. In a journey that began at age 10, helping her mother in a catering business in Brazil, Chef Pellegrino, by way of Italy and now Las Vegas, has found a way to fulfill the goal her food served to begin with: She cooked to show people she loved them, and she still does. As for Meatball Spot, Pellegrino says, “It’s just a great place to hang out. It’s not a place to come and be a snob and be self-important or better than anyone else. Our guests are all VIPs. Come to relax. It’s fun. Being here is like being in a park. Good food at a good price, and just stay. Watch a game. Enjoy drinks. I see people spending three or four hours here. The more feminine part of being a woman, the smelling good and having make-up has to be set aside. You stop doing your nails because you can’t wear polish in the kitchen. I decided to never let my femininity go. I’ve found ways to balance those things.” Pellegrino isn’t shy about the adversities she and other chefs have faced. She says, “Women are just 29% of chefs in the world. Men turn into a chef between the ages of 28-30, but for most women, 35. Female chefs make 30% less than male chefs.” But Pellegrino’s passion for cooking was a fire not easily extinguished, 59

Tara: Las Vegas is truly the ONLY 24 hour town. Today: Craziest Vegas story you care to share? Tara: When I first moved to town, I experienced my first “after hours club.” I remember getting home at 11am. Needless to say, that never happened again. Today: Where do you eat in Vegas at night? Tara: Ferraro’s and Bootleggers are my favorite late night spots. Today: Best place to see the sexy people? Tara: Everywhere you turn there are sexy people in Las Vegas. But if you want to see the sexiest, go see the performers in the shows around town! 60
Today: Time to plug, tell us about yourself: Tara: I am celebrating my 10 year anniversary of living in Las Vegas next month! This town has been so wonderful to me! It truly has been a place where I have been able to cultivate my talents and share them with the world. I began my Vegas journey being cast in “Jubilee!” at Bally’s where I got the taste of true “Showgirl-ism” I then moved on to open the show “Bite” at the Stratosphere and also performed in “Fantasy” at Luxor. I was then given the tremendous opportunity to open the show “Peepshow” in the role of “Red Riding Hood” and most recently have reached one of my life’s goals of performing as the lead dancer in “Vegas! The Show,” a show I am incredibly honored to be a part of! I am working hard to reach my singing goals currently, performing all over town both solo and with a newly formed female vocal group; “BBR” A Blonde, A Brunette, and A Redhead.”
