Jamaican Style Banana Fitters submitted by Alexia Walker

Ingredients • 3 bananas (ripe, starting to turn brown) • 1 1⁄2 cups flour • 1⁄4 cup water/milk • 2 -4 tablespoons brown sugar • 1⁄4 teaspoon vanilla extract • 1 pinch salt (optional) • oil (for frying) Instructions Step 1: Peel bananas and smash them in a bowl using a fork or spoon until they are runny. Add flour, water/milk, sugar, vanilla extract and salt. Step 2: Mix until the batter is a just a bit thinner than pancake batter. It cannot be too thick! Step 3: Using oil and at medium heat, place small amounts of batter (about a tablespoon) into frying pan. Step 4: Wait until the edges are firm before flipping to other side. They should dark brown in color on both sides. Step 5: Once done, soak excess oil out of fritters with paper towel. Step 6: Enjoy! Additional Tips It’s okay if it turns out a little burnt. It will still taste pretty good.
