They’re taking favorite foods and giving them a 21st century makeover using local ingredients or innovative techniques thus creating a new niche of products in the marketplace. “For me it started with a few donuts and one brioche, now I have 20 brioches; I’ve changed the “donut” paradigm! These delicious temptations are inspired by local ingredients such as: poi, lilikoi, calamansi, and Moloka‘i sweet potatoes.
