f there’s one thing Dubai does well, it’s food. Yep, the emirate’s burgeoning restaurant scene is worth bragging about. We’ve got street eats (if you haven’t been to Global Village yet, trust me – you are missing out), we’ve got hipsterfriendly homegrown concepts, and we’ve got the very best of fancy local and international brands. In fact, even though Dubai may seem ‘small’ compared to other cities across the globe, it would be impossible to eat your way through the emirate. There are simply way too many restaurants, diners and cafes to cross off even the most adventurous foodie’s list. So how can you choose where is really worth visiting? We’re here to help. Forever faced with the question of which high-end restaurants are worth parting with your cash for, the EL team decided to compile its own list of the 50 best restaurants in Dubai for 2016. The rules were simple; for a restaurant to qualify as ‘high-end’, the bill for two (excluding drinks) had to be a minimum of AED 400. To make it as fair as possible, each restaurant that we sampled had a final score calculated from factors, including online reviews and other ratings. And by the way, unlike some other lists out there, no restaurants have paid to be in our Top 50 – all have been chosen fair and square. L

iving in a cosmopolitan city like Dubai, you can expect a new restaurant to pop up every week. Let’s face it; the choice can be a little overwhelming! Fortunately for me – cue marketing spiel! – I founded a startup which shortlists the best of everything in the city, including the top foodie hangouts. For me, food is as much about the experience as it is about the taste, so I often pick a restaurant according to its vibe. So here are my five favourite picks right now:

DATE WORTHY: NOLA EATERY & SOCIAL HOUSE Effortlessly trendy, Nola is my mid-week, wind-down session. Jazzy beats, incredible roast chicken and warm deep south hospitality are what keep me coming back for more. Pair that with an Apple Pie Moonshine, and I’m good to go!

ARTY: FARZI CAFÉ DUBAI One of the new kids on the block, Farzi Café has won me over with its quirky creations. Taking Indian food to another level, this is where I go for a molecular surprise. I mean, who can say no to yoghurt shots floating in liquid nitrogen?

SWEET TOOTH: SUGAR FACTORY I’ll admit – my sweet tooth needs satisfying more often than I’d like! Thanks to Insydo, I’ve been introduced to the awesome Sugar Factory. For die-hard dessert divas (like myself), The Goblet is one of my faves – I’m talking fruit, fizz and candy thrown into one massive bowl.

2. Nathan Outlaw at Al Mahara Burj Al Arab If there’s one new restaurant to try this season, it’s Nathan Outlaw at Al Mahara. Even though it has only very recently opened – the high-end restaurant at the ‘seven-star’ Burj Al Arab was being refurbished – Al Mahara deserves its top two spot on our 2016 list. An acclaimed seafood connoisseur, two-time Michelin star chef Outlaw’s appointment is a good move for the Jumeirah hotel. The British culinary wizard’s creative cooking is all about fuss-free and flavoursome dishes, such as cured salmon with saffron kohlrabi and horseradish yoghurt, or lobster risotto with orange, basil and spring onions for starters. Out of his mains, our favourite was the toothfish with red peppers, olives, tarragon and porthilly crab source, a meaty dish that’s just right for a lunch date. But make sure to leave room for dessert – the sticky toffee pudding with clotted cream and stuffed dates is an Arab twist on the British classic. jumeirah.com

1. Enigma A bold step away from the safeguards of a traditional restaurant, Enigma has lived up to the hype as the most fascinating and unique restaurant of 2016. The concept – to showcase a different chef every three months – labels each season a ‘Story’ and promises to deliver a multi-sensory experience unlike anything seen in Dubai before. Our top spot is largely thanks to the current offering, a Turkish-themed dining experience courtesy of head chef Yunus Emre Aydin. Here, the menu is outstanding. The hot starter of Ahtapot – eight-hour cooked octopus, fused with citrus sauce and avocado – to quote our reviewers, is the “best dish” they’ve had this year, while the smoked eggplant soup comes a close second. Mains don’t disappoint either – although the seven-spices lamb neck is the chef’s signature, skip that for the lighter sea bass with hazelnut crust and spinach. Finally, in keeping with the Turkish theme, dessert features baklava specially flown in from Turkey every two days, while the apple mouse with kaymak ice-cream is also well worth sampling. Funnily enough, we had approached Chef Yunus to write our guest column in this issue prior to finalising our top 50 list, so it is a nice coincidence that he appears on the next page. “TURKEY HAS FINE CUISINE”

A DAY IN MY LIFE 06:30 AM: There’s no way I can wake up without coffee. I love its aroma and it really puts me on track. 8:00 AM: I reach Palazzo Versace Dubai, and go directly to Enigma’s kitchen to check all the chillers. I start working by listing down the items I need for the day and after I place the orders. Hotels are very busy in the morning with the breakfast operations, so I check if my colleagues need help with this. 10:00 AM: I start working on the mise-enplace, ensuring we have everything we need for the dinner operation. 3:30 PM: I check the mise-en-place, and I taste the dishes to check if everything is well executed. We do taste each and every item.

W

hen I was offered to perform my story at Enigma, I was overwhelmed. It is not only a dream come true, but it is also a solid brick to the foundation of my work’s personality. For the ‘Inside Story’ of Enigma, the new chapter in the restaurant’s journey, I have lined up a set of dishes to impress our guests, that’s true, but I also have been selfish enough to temper my homesickness through cooking Turkish food. I have put forward the most effective ingredients in Turkish cuisine, those not often used here in the UAE. Turkey, my home country, is such a beautiful place and it has fine cuisine. I want the people who live here or travel to Dubai to experience it as authentically as possible.

A BIT ABOUT THE MENU, AND ITS HIGHLIGHTS Turkey has coasts in three different seas, so I love seafood. Therefore, for the starter, I would choose the octopus. I love its taste and its texture. For the main dish, I would pick the lamb neck. What’s the lamb neck is doing in the menu of a fine dining restaurant, you might ask? It is a common practice for the restaurants of this calibre to use the finest cuts of meat. For me, as a chef, one big challenge is to make the less beautiful parts of the lamb taste divine. And I do this at Enigma using just seven spices. The way we cook it, the way we present it and the way we serve it keep that enigmatic note of the restaurant. For dessert, I would go for the apple mousse

(pictured right). It has a well-balanced taste of apple and vanilla. These two together create such a good harmony!

I HAVE BEEN LUCKY TO TRAIN UNDER A NUMBER OF MICHELIN-STAR CHEFS... All of them left traces on my current vision on food and the art of food. However, Michael White was the one who chose me to run Morini, his restaurant in Istanbul, Turkey. I was Sous Chef there and it was such an amazing feeling to be trusted by a Michelinstarred chef. It was flattering and I will always remember this as a milestone in my career.

MY 5 MUST-HAVES FOR THE KITCHEN ARE:

① The salt is the soul of every dish. It enhances every flavour. ② Pepper can always fire up a plate; it gives an extra kick. ③ For cooking, I would always choose thyme. It gives such a unique taste. ④ Garlic is another must-have. It can kill or beautifully revive the taste a dish. There’s no way in between. ⑤ The last one would be olive oil. It is very versatile, and having a good one is important – it’s not just cooking skills you need to make a good dish.

4:30 PM: I attend the chefs’ briefing with the other chefs de cuisine at Palazzo Versace Dubai. It is important for us all to know what is happening in the hotel and how the operations are going. 5:00 PM: I go back to Enigma for the internal briefing with the restaurant’s manager and the service team. We go through every booking and we revise the checklist for the dinner’s operations. 7:00 PM: Service starts. It’s the time I get busy in the kitchen, and I can say it’s my favourite part of the day. I meet the guests, and we talk about food and Enigma. 11:00 PM: Service ends, so we start cleaning the kitchen and clear all unnecessary items. Also, we get every equipment ready again for the next day’s service. Midnight: I close the kitchen, and I order some items for the following day. 1:00 AM: I reach home around this time, and I have no energy left but to reach my bed.

ON A RARE DAY OFF THE THING THAT RELAXES ME A LOT IS HAVING A CATCH UP WITH MY FAMILY BACK HOME. I stay connected to what is happening in their lives, and this gives me an unparalleled feeling of good.

British chef Tom Aikens knows all about pressure in the workplace, having been a Michelin-starred chef. However, getting to the top – and staying there – isn’t easy, he tells EL

British Michelin-starred chef Tom Aikens made waves when he opened the doors to Pots, Pans and Boards at The Beach opposite JBR in Dubai last year. While the 46-yearold is only the latest in a long line of celebrity chefs to set up shop here, his restaurant has stood out for its focus on sharing platters – tapas-style food being such a big part of the way we now eat and entertain. With family in the beverage industry, Aikens realised early on that he needed to build a career in food, and by the age of 26, he was the youngest-ever chef to earn two Michelin stars. Having trained under Joël Robuchon and Gerard Boyér, he opened his own restaurant in Chelsea in 2003, and followed up with two more. By the financial crisis of 2008, however, one of his eateries was in trouble and was forced to go into administration. Within a couple of years, however, he had found new backers, and was back behind the pass, serving up innovative versions of British classics with an emphasis on sustainable, high-quality ingredients. Aikens now has eight restaurants, in London, Istanbul, Hong Kong and of course, Dubai. EL caught up with him during a flying visit to Dubai last month and asked about life as a chef – although he didn’t talk about bouncing back from the brink. Excerpts from our quickfire chat:

So, you’re a top chef. What qualities did it take for you to get there? I had a pretty clear career plan of what I wanted to do and achieve in life, and how I wanted the next few decades of my life to look like. Once that was put into place, it was the usual – lots of passion, hard work, dedication and commitment – that has brought me to where I am right now. How do you say those could be applied to other professions? What can the C-suite learn from a top chef? That we are committed to being consistent in what we are set out to do and maintain very high standards. But surely kitchens are emotional places? Or have you learned that there are alternatives to Gordon Ramsay’s management style? What’s the one thing you learned from a previous boss? You always end up learning a lot from your bosses and seniors, however the one that stood out and has stuck with me till date is how one boss managed and drove the team positively. Chefs are notorious for working 16-hour days – especially when they work for themselves. How do you manage to have a worklife balance? By staying focussed on my family and spend-

ing time with them as well as keeping fit. But how on earth do you manage to stay fit? I work out five times a week by either running or other cardio sessions. This also helps me keep my mind off work for a while, and focus on myself. Say you were talking to a young chef eager to open his or her own restaurant. What’s the one bit of advice would you give him or her about the business side? I’d tell him or her to ask himself or herself three questions, to which they need to have answers they are 100 percent sure about. These are: What’s the plan? What’s the objective? And what’s the process? Name three things you love about your workplace. It’s quite hard to choose just three things when there’s so much to love and take in, but if I had to, the three that stand out most for me are the freedom to create, the bond with your team, and yes, relationships with customers. A piece of equipment or kitchen tool you can’t do without? My kitchen steel. Name three things you love outside work. What are your hobbies outside of work? My kids and partner, gym and home cooking.

I like experimenting and trying out new restaurants, so I cannot say which one is my favourite. With new restaurants opening up so often, almost every other meal may end up being my favourite! What was your most memorable meal – and why? In Sweden at Frantzén [by Björn Frantzén] and Faviken [run by Magnus Nilssen], two very different places to eat, but both so focussed on provenance and history of classic flavours that they have adapted. That home cooking you spoke of. Who does it? You or your partner? Me. Wow. And at the end of the day, what dish is comfort food for you? circuit that really shows how capable it is. Yet the Panamera Turbo’s true raison d’être is to transport four people and luggage quickly and in great comfort. The new model is bigger, so there’s even more room, and the interior is a much nicer place to sit in, helped by 14-way electrically adjustable ventilated front seats. Options include seat ventilation and electrical adjustment for those in the back, massage functions for all occupants and a stonking high-end Burmeister surround sound system. Tick the boxes for rear-wheel steering and ceramic brakes if you really enjoy your driving.

The new version of Ferrari’s flagship model follows several of the brand’s traditions to create a car that makes great sense for many markets, those of the Middle East included. The GTC4Lusso was introduced earlier this year – a comprehensive reworking of the FF range-topper that kept the car’s familiar silhouette, V12 engine and patented four-wheel drive system but added a smart four-wheel steering system to enhance agility and stability. Elements of the name may also be familiar to those who know their Ferrari history – both the GTC and the Lusso monikers have been used before, denoting grand touring capabilities and luxury respectively.

The new T variant uses a twin-turbocharged 3.9-litre V8 engine that produces slightly less power (610 hp) but slightly more torque (760 Nm) than its V12 sibling – enough to propel this four-seat GT from 0 to 100 km/h in just 3.5 seconds and on to a top speed of 320 km/h. The car ditches the four-wheel-drive system, which contributes to lower weight and a claimed 30% improvement in fuel economy, but keeps the four-wheel steering system. Inside, the wellappointed and elegant interior is identical, with four wellsculpted sports seats, plenty of soft leather and a 10-inch HD touchscreen display.

The high-performance range topper is certain to be as big a hit as the original in this part of the world. Smoother, sleeker and less bulky-looking, the new Panamera Turbo is powered by a 4-litre twin-turbocharged V8 engine that pumps out 550 hp and drives all four wheels via an eightspeed PDK dual-clutch gearbox. While its 0-100 km/h acceleration time of as little as 3.6 seconds is mightily impressive, it’s the 7:38 lap time of the legendary Nürburgring race

While the 2016 Paris Motor Show was almost as notable for its absentees as for its debuts, one of the biggest shows on the motor industry calendar still churned out a large number of new models. We’ve chosen four of our favourites from premium brands – all of which build on the strengths of their badges and their stablemates or predecessors.

Top-quality materials are used throughout the interior, which features the latest version of Audi’s MMI infotainment system with 8.3-inch screen, as well as the 12.3-inch ‘virtual cockpit’ screen, which sits directly in front of the driver and displays information such as speed and navigation maps and instructions. The car should drive better, too. It’s powered by new engines but, more importantly, it’s almost 100 kg lighter than its predecessor – which will also reduce fuel consumption.

Some concept cars exist purely to explore future styling directions or technical ideas, while others are used to provide a barely-disguised glimpse of a production model that’s just around the corner. The BMW Concept X2 falls between these two camps, as it previews a forthcoming small SUVcoupé from BMW while also showing a clear evolution of the company’s styling language. Due in 2018, the X2 will follow the X6 and X4, and will share its architecture with the BMW X1 SUV, in the same way that its big brothers share their underpinnings with the X5 and X3 respectively. While the X2 will be sportierlooking than the X3, it will not feature the falling roofli-

ne of the X4 and X6, instead using a lower roof, well-defined shoulder line and short overhangs to create a more dynamic appearance that should be paired with a reasonable amount of practicality. Since the mid-2000s BMW has been playing things very safe style-wise and the Concept X2 represents a welcome break from this trend. Classic BMW styling elements are there – such as the kidney grille, the twin headlights and the ‘Hofmeister Kink’ at the trailing base of the windowline – yet all are given new treatment or twist, giving the Concept X2 a fresh appearance that we hope isn’t watered-down for the production model.

The Q5, Audi’s mid-size SUV, is the brand’s most popular model, with 1.6 million sold since 2008. At Paris, the second-generation model made its debut, and Audi has invested in a whole new factory in Mexico to build it. From the outside, the new Q5 is a predictable evolution of the old car, matching the pleasingly chunky stance of the original with narrower headlights, the new-style Audi grille and a pronounced rising-falling-rising side line running between the front and rear light clusters. erlin is known as a city of reinvention, which is an apt description given its history – Germany’s capital was devastated by bombs, divided by the wall, and then reunited and reborn again all in the space of decades. Not many other cities have repeatedly been knocked down – both literally and metaphorically – only to rise again, and Berlin’s fascinating history is just one of the many things that make a visit imperative. Berlin is youthful, energetic, and creative, and rich in culture, museums, historical buildings, Michelin-starred restaurants, eclectic shops and charming neighbourhoods just waiting to be explored. Here is my selection of must-do experiences while in town.

Here you’ll see the show-stopping bust of Nefertiti at the Neues Museum as well as the awe-inspiring Pergamon Altar at the Pergamon Museum.

Rome (roccofortehotels.com) stood out. Everyone, from the highly amiable lady at check-in through to the jovial concierge team went that extra mile at every step of the way. The hotel itself is housed in what was the head office of Dresdner Bank until 1945, making Hotel de Rome one of the few luxury hotels in the city that is located in a building that, from an architectural standpoint, has character. Its central location in the Mitte area of the city meant that I could reach some of Berlin’s most renowned attractions such as the Brandenburg Gate, Museum Island, and the Berlin State Opera within minutes, which is ideal for those of us who like to repeatedly press the snooze button while on holiday. Suites are spacious and feature all the little luxuries you would expect from a hotel of this calibre, such as a Nespresso machine and big bathtub. Spa lovers are well catered for by the De Rome Spa, which is located within what used to be a vault where jewels and gold were stored. Everything is on offer here, from an extensive menu of face and body treatments (the Aroma Massage comes highly recommended) to a 20-metre indoor pool and steam room with aromatherapy. Breakfast is delicious and varied – I love having the option to order à la carte in addition to a buffet – and can be served in your suite at no extra cost. From the hotel’s other F&B offerings, I particularly liked The Rooftop Terrace where you can sip on a homemade ginger lemonade or glass of bubbly while soaking up impressive views of Berlin’s glittering skyline.

Berlin is home to numerous Michelin-starred restaurants; my favourite is Tim Raue (timraue.com), which is located in an old gallery close to Checkpoint Charlie. Asian-influenced cuisine is served at the 40-seat restaurant, drawing in both a local and tourist crowd. Tim Raue, the dynamic German chef behind the restaurant, wanted the venue to be different from the usual formal, Frenchinfluenced dining rooms, and thus the space is modern and casual – you won’t find any of the stiffness that’s sometimes associated with similar establishments. But what really stands out here is the food, which is influenced by Thai, Japanese, and Chinese cuisine. Dishes of note include the signature Peking duck and dim sum.

Buon appetito Scheduled to take place from 7-17 November, the eighth edition of the Italian Cuisine World Summit will bring together the best Italian restaurants, food and beverage producers, along with Michelin-starred chefs and culinary experts. According to organisers, the annual event – which aims at celebrating and promoting Italian cuisine and leading manufacturers in Dubai – saw 60 restaurants and hotels; 40 Michelin-starred chefs; 80 partners, and 150,000 visitors attend last year. The Italian Pizza Gourmet Dinner of the Century

Dubai World Trade Centre Hundreds of exhibitors are expected to join the summit, featuring live stations set up across the arena with demos, gelato stands and cooking competitions taking place.

Billionaire Mansion, TAJ Dubai Billionaire Mansion will play host to a memorable dinner by four Michelin star chefs and three top pizza chefs, setting the stage for a luxury dinner where their creations will be matched with the finest grapes of the world.
