Adventure. It finally feels as if we’re free to explore once again. Many of us have spent more than a year journeying around our own homes. And while much attention was given to improvements and upgrades to our indoor and outdoor living spaces, the fact remains that staycations necessitated by the pandemic couldn’t take the place of actual travels and experiences.

To begin: When some people say “my home is my castle” ... they’re not kidding. Keller Williams Luxury sat down with Tompkins for a candid conversation about her life’s work, her beloved husband, the foundation, and her proudest moments. WITH A THOUSAND-YEAR-OLD HISTORY, this castle in Bavaria, Germany is overflowing with fine details, historical elements, and exciting possibilities. The castle dates back to the year 1035. It was established as a type of monastery and shares a long history with nearby churches. The stunning architecture, stone and brick facade, and other historical details have stood the test of time, yet suit all of the needs for modern living.

“The house has been subject to many modifications during its long history. It was built as a Priory in the 11th century and stayed as such until 1791,” says Dimino. “The huge entry gate dates from the 16th century. The house has been rebuilt/modified several times, especially in the 17th and 18th centuries, but you find traces of the very first construction in the cellar and kitchen.”

A Romantic Atmosphere

Upon entering the property, guests will immediately take notice of the fine details and the overall romantic atmosphere. “The red bricks — which turn rose in the late afternoon sun — the beautiful entity of the entry portal, the tower, the stable building, and the accessory buildings against the church form a pleasant square court, which all help establish the atmosphere,” explains Dimino.

Throughout the castle, one will find 500 square meters of living space, nine bedrooms, a stunning stone staircase, a large vaulted cellar, coffered ceilings, old wall fabric, carved wood, and marble fireplaces. Gorgeous double doors lead out to a south-facing terrace made of Bruniquel stone, a garage, canopy, stables with Tuscan-style columned terraces, and a wooden gateway dating back to the 17th century, according to Dimino.

Kristine Tompkins is the definition of a powerhouse figure wherever she goes. In 1973, Tompkins launched her career as the CEO of Patagonia, Inc., the outdoor and environmentally conscious clothing brand. She was just 23 at the time.

Tompkins had just graduated from the College of Idaho when she assumed the role, where she would spend the next 20 years of her life.

At just 15 years of age, she began working for the former CEO of Patagonia, Yvon Chouinard, through a summer job at its branch of climbing gear, Chouinard Equipment.

Tompkins had always harbored a passion for protecting the natural habitats around her — from a childhood spent on a lush green Southern California ranch, to competitive ski racing through the snow in college, the outdoors are more than a distant cousin to Tompkins: they are

a cherished friend.

Fast forward about 30 years, and she is now the co-founder of the Tompkins Conservation as well as the UN Patron of Protected Areas.

The Tompkins Foundation, a nonprofit organization, was founded by Tompkins’ late husband, Doug — the pair met in the early 1990s, changing the course of both of their lives completely. Doug was the co-founder of another outdoor clothing brand, The North Face, and similarly felt an obligation to preserve the wild and remote lands around him.

In 1993, Tompkins knew it was time for a change. After an entire adult life spent as a CEO, she wanted a fresh start involving her and Doug’s devotion to the natural world, especially in dire times of fossil fuel emissions and dwindling resources.

They moved to Southern Chile — Patagonia to be exact — and uprooted their

lives to strengthen the roots of a global society decimated by climate change.

At the Tompkins Foundation, the focus is on a process called “rewilding.” Mainly centered in Chile and Argentina, the nonprofit aims to restore habitats to their natural beauty by creating national parks, rehabilitating wildlife, and inspiring activism to heal our planet.

For two private individuals, the Tompkins rank among the most accomplished conservationists in the world — today they have preserved more than 2 million acres of land. Tompkins has now been granted many coveted leadership positions: she is the Chair of National Geographic Society’s Last Wild Places campaign and was the first conservationist to be awarded the Carnegie Medal of Philanthropy.

In a candid conversation of her life’s work, Tompkins discussed her beloved husband, her daily life at a nonprofit, and her proudest moments.

I’d like to hear about your shift from Patagonia to the nonprofit world — what prompted this change and what was this transition like?

Patagonia, Inc., was an incredible place to work. I spent my whole career, from packing boxes when I was a teenager to being the CEO, working for one organization. When I met Doug Tompkins, my future husband, he was going to South America to preserve a temperate rainforest. At the same time, I wanted to start a new chapter.

It was a huge leap of faith to launch that project with him, and more conservation projects soon followed, but love is a great motivator. The contrast between the life I left behind and the new one could not have been sharper — from running a company to living in one of the most remote corners of the Americas in Southern Chile, surrounded by Andean peaks, using a radio to communicate. Once I was there, I understood how important it was to protect these vulnerable places.

Can you describe the day-to-day of a preservation project?

The projects run by our partners in Chile and Argentina are all unique. Some are in Patagonia, where we are working to bring back the very endangered huemul deer in the southern Andes, alongside rhea, puma and other

species, while in northeast Argentina, the Ibera Park project is bringing back top predators like jaguars, giant river otters, and other species to restore the complete wetlands ecosystem.

And in the south of Argentina, we have a coastal project which will start to rewild algae, which will help marine species recover. There’s a lot happening at once and never a dull moment.

My husband Doug used to say, “commit and then figure it out.” We are driven by the species extinction crisis and the climate crisis, and these issues will not wait. So, I’d say everywhere we work, we are very action-oriented.

In the field, the teams are small, but dynamic and experienced. Many individuals have been working with us for decades. They live and breathe this work, often in harsh climates with a lot of wind, or heat, getting up early to work with animals, visit with local communities, or work with governments.

How do you decide the next location or target of where you’d like to center the preservation?

We work where we can make the greatest impact, which can start with protecting land and creating national parks, but that also means making sure those places feature abundant wildlife, for their own sake, but also for their contribution to mitigating climate chaos.

There’s a lot of evidence out there that intact ecosystems — particularly grasslands and peatlands — can sequester carbon more effectively. So, there’s a number of factors that we look at.

The first step is to protect large tracts of land, or ocean, so these ecosystems will have a chance to fully recover and return to abundance. The next step is to ask “who’s missing,” particularly keystone species, like top predators or seed bearers, which help engineer an ecosystem back to health. Then, we work on bringing them back and doing what is necessary to make an ecosystem whole and functional.

Some places, like Pumalin Douglas Tompkins National Park in Chile, required very little intervention. But others have experienced overgrazing or severe deforestation and have lost their native species.

Does the nonprofit live by a particular mission statement?

Our mission is rewilding the Americas. At Tompkins Conservation, we work to protect places, reintroduce species and reconnect

people to the wild — which we like to call rewilding ourselves.

Where do you see the future of the nonprofit after the world turns back to semi-normal? Are there long-lasting effects of COVID-19 for the Tompkins Foundation?

There are so many effects from the pandemic. We have learned that nature can recover if it’s given half a chance. And that we can travel less and still accomplish our goals. But the urgency of our global situation is the same.

We all need to live on a healthy planet. That means taking action to mitigate climate chaos now, not later. And also taking responsibility for our failings as humans in causing the sixth mass extinction.

The good news is that we can act and bring back these species from the brink, while making nature whole. And in the process, we can make ourselves whole, too. It is possible, I’ve seen it happen. But we can’t wait too long.

What is the most rewarding part of your job?

I get very emotional when I see the tangible results of all this work. I tell you, seeing giant otter pups or watching jaguars released into a million-acre wilderness, where their offspring may live free for generations — it’s pure joy. These are the moments we live for.

Discrimination within the housing market still exists, despite the Fair Housing Act of 1968 — which made it unlawful to discriminate against or prefer a potential tenant based on race, religion, gender, or national origin.

“The United States of America has a long history of racism in real estate,” says Israel. “Practices such as redlining, blockbusting, and racially restrictive covenants have contributed to today’s disparities in homeownership.”

housing inequality and segregation was the norm in the 20th century. People of color had a harder time qualifying for loans and finding a real estate agent who would fairly represent them.

In many parts of the country, continual residential segregation and a racially segmented housing market have serious implications for African Americans’ economic mobility. In 2019, the Census Bureau reported that black households had the lowest homeownership rate at only 42 percent.

The homeownership rate was 72 percent among white Americans, 48 percent among Hispanic or Latino Americans, 51 percent among American Indians or Alaska Natives, and 58 percent among Asian or Pacific Islander Americans.

People of color are not the only group that face discrimination in the real estate market. Individuals of certain religions and cultures have a harder time navigating the homebuying process, as do women and members of the LGBTQ+ community.

The Fair Housing Act does not currently protect against discrimination based on sexual

orientation or gender identity.

The LGBTQ+ community faces discrimination during the renting and homebuying process, which has caused the homeownership rate for the LGBTQ+ population to fall behind the national average.

With its diverse team of agents and employees, Keller Williams works to create an environment that fosters individuality, values open communication, and prioritizes diversity education.

The “Unconscious Bias” will focus on how the brain unconsciously produces bias, how bias continues to impact the housing market, and how to identify and alleviate bias.

culture, help agents better serve clients of different cultures and backgrounds, and foster positive change within the housing market.

“No matter the background or culture of the client, I have found that if you genuinely come from a place of contribution and want to assist the client to the best of your abilities, you will succeed as an agent,” explains Delgado. “As agents, we have to be ready to interact and participate in a meaningful manner with clients.”

Michelle Rios, co-owner of the RiosDelgado Realty Group and Realtor for Keller Williams Realty Chattahoochee North, is originally from Mexico City. She has found that Keller Williams cultivates an environment that promotes success for all agents.

David Kong of Keller Williams New York City has had a similar experience as a Keller Williams agent.

“As an Asian American, I have always thought that working hard and keeping my head down was the way to make it in America,” Kong says. “When I was with my previous firm, no one ever spoke to me about opportunities beyond being an agent. Ownership and leadership, these were never even discussed.”

When Kong was approached by leaders at Keller Williams about pursuing higher-level and leadership opportunities, it changed his perception of success. “I think many agents are not aware how much opportunity there is with

It is Keller Williams’ mission to inspire and engage their diverse group of agents, pushing them to success. Through the Keller Williams International Associate Leadership Council (IALC), Keller Williams ensures that all voices are heard and equally represented.

“Having decisions made from the bottom up makes a difference and ensures that the culture and community is there,” says Rios. “I can assure you that my voice is heard, and that all agents’ voices are heard.”

The IALC is made up of the top 20 percent of agents from each office to ensure that agents are at the forefront of company decisions. The IALC has played a leading role in landmark company decisions, such as the amendment of the company’s belief system — the WI4C2TS — to be read as WI4C2TES, adding “Equity: opportunities for all.”

In 2020, the IALC also built the Keller Williams’ inaugural Social Equity Task Force, which consisted of more than 60 leaders from every region of the United States and Canada.

The team created strategies to uproot racial disparities within Keller Williams and ensure an inclusive environment for all protected classes within the KW ecosystem. The task force created initiatives to increase diversity in every level of the organization, increase homeownership in communities of color, and provide diversity training and education to agents and employees.

“The creation of the task force is evidence the company has deepened the conversation beyond diversity,” says Israel. “It is pushing forward to make progress in areas of equity and inclusion.”

“Businesses who choose to embrace diversity will be able to broaden their reach and tailor their business to appeal to a wider customer base,” says Israel.

Delgado hopes that in 2021, diversity is a universal want by all industries. “Diversity sparks ideas and experiences, and people can interact and learn from each other,” he says. “It fosters an environment where employees and agents want to participate and grow together.”

Inspiring Vacations

Consumers are responding to the subscription-based travel model offered by luxury hospitality company Inspirato.

Ahome at a beach or mountain used to be the preferred option for vacation ownership. Today, desired locations might be strung around the globe. Ownership might be a single home or shares of a home or multiple homes, all bundled with a high level of personalized service, premium appointments, and someone at the ready to ensure everything goes according to plan. Quite often, this new vacation vision incorporates diverse travel opportunities that combine the experience of an upscale vacation home with a global menu of locations and privileged access to events and experiences.

Fun, family and the experience

Few ideas align better with changing consumer values than the “cost commensurate usage” fractional mantra, particularly for individuals owning multiple vacation properties. But owners and members will tell you the best aspect of shared ownership, whether a Private Residence Club, Destination Club, or premier hospitality provider, is “You show up, and you begin to have fun right away.” Equally applicable is “you show up, and you relax as soon as you step in the door.” Private Residence Clubs, Destination Clubs and luxury hospitality purveyors such as Inspirato typically offer enhanced opportunities for travel.

For current and potential vacation homeowners, models such as Inspiratio’s also present investment and acquisition opportunities. “We’re doing some interesting things on the real estate side of the business,” says Dain

Rasmussen, senior vice president of sales at Inspirato, which recently re-branded as a luxury hospitality company. “There are lots of synergies here for sure.”

Owning with strangers?

None of these options were part of the initial vision when the first luxury fractional properties, dubbed Private Residence Clubs, began to crop up in desired vacation settings in the early 1990s. At the time, the idea of owning a home — particularly a multimillion-dollar property — with strangers was novel and untested.

The Deer Valley Club in Utah, founded in 1992, pioneered the concept. Another early club, Franz Klammer Lodge in Telluride, continues today to offer fee-simple-deeded ownership interests under the Fairmount Heritage Place flag. The Timbers Club, which now has a global roster of clubs, came on the scene in 1999.

The next fractional evolution, Destination Clubs, tapped into the growing desire of affluent consumers to travel extensively without compromising service, quality, amenities, or the experience of being in a private vacation home akin to a second home. Rather than owning a share of a home, membership brought access to a collection of luxury homes.

As the concept matured, so too did the way clubs were structured. Today, each offers a different take on equity, cost of membership, occupancy and how they acquire and hold their portfolio of properties. Hefty initiation fees and a long-term commitment are not unusual.

Shifting again

By the early 2000s, the concept of shared or fractional ownership of high-end homes was moving mainstream, with major hoteliers introducing branded residences along with shared ownership. Premium hospitality brands also established high standards of quality and service across all their properties, which elevated expectations of affluent consumers. Now, says Rasmussen, “We believe the world is shifting to that same type of thinking when it comes to home-based travel.”

Inspirato, launched by Brent and Brad Handler in 2011, grew out of the destination club industry. Instead of investing in an extensive inventory of million-dollar-plus properties, their model called for long-term leases of high-end homes. Today, Inspirato offers a curated collection of residences worth hundreds of millions of dollars, villas and suites at premium resorts, and hotel rooms through resort partners. Custom travel opportunities and access to one-of-a-kind experiences and events are other benefits. Dedicated travel planners arrange visits and travel, customizing each stay and experience, making it almost as easy to plan an African safari with extended family as it is to arrange a week by the ocean in a home that caters to multiple generations.

In the last decade, the pace of wealth

creation and changing consumer values have expanded the potential audience for fractional and shared ownership. The number of individuals who could join a club has doubled in the last decade, shares Rasmussen, who has been in the industry, first at Exclusive Resorts and then Inspirato, since the early days of Destination Clubs. “Since we started the company 10 years ago, there’s just a lot more people who can travel like this. That’s part of what’s changed,” he says.

In 2020, interest in vacation homes surged, with Lawrence Yung, NAR’s chief economist, calling them a “hot commodity.” Vacation home sales rose by 15.4 percent.

What’s also changed is a growing number of individuals don’t want to be tied down to one location or want to experience other places to supplement the vacation home or homes they currently own.

In 2019, Inspirato introduced a subscription option, Inspirato Pass, and then transitioned to an all-subscription model. “We’ve grown out of what used to be called the destination industry,” says Rasmussen, describing Inspirato as “the first and only luxury travel subscription business. We are a subscription

business at this point that focuses on luxury travel. There might be other subscription travel business out there, but few, if any, specifically focus on the luxury segment.”

“The conceptualization of Inspirato Pass was a natural next step in the evolution of the luxury travel space,” said Brent Handler. What hasn’t changed is the portfolio of club properties, alliances with resort partners and curated travel opportunities. Standards of quality, service, level of amenities, and fit and finish of homes remain the same. There are two ways to subscribe: The club option that charges $600 a month and a $600 enrollment fee, and offers booking privileges in their homes and affiliated resorts along with unique travel opportunities, but charges the club’s nightly rates. Or, a $2,500 monthly option (and a $2,500 enrollment fee), offers access to more than 150,000 travel options and club properties without nightly rates, fees or taxes. Both subscriptions can be canceled at any time. According to Rasmussen, compared to the traditional destination model, Inspirato’s approach is more agile. “People can join and see if it works for them without having to commit forever.”

Market pivots

A model based on leasing properties enables a pivot to adapt to changing consumer desires and

circumstances. “The nimble nature of the model helps us to add inventory and availability where we see growing demand or add seasonal inventory in a destination,” says Rasmussen. In the last year, he says, drive-to destinations emerged as a top priority. In response, they added residences, including 10 new properties in Nantucket. Other additions include 26 residences in the Dominic in New York. NAR research says counties in Florida, Maryland, Massachusetts, Michigan and North Carolina topped places for vacation sales.

“In a world of COVID-19, you have to be a little more nimble in terms of your assets and where you have those assets,” shares Rasmussen.

Promoting investment in vacation homes

For owners of vacation homes, Inspirato’s model offers unique benefits. Typical worries for someone buying a luxury vacation home, according to Handler, are: “You won’t use it enough, it will become a money pit, and managing it will become a second job.” Since Inspirato’s model centers around leasing rather than acquisition, they offer a long-term lease (often as long as five years) and fixed rental income that pays virtually all costs on the home. Their team works with agents — such as those from Keller Williams Realty — and

also with prospective buyers. Their full-service property management takes care of everything from marketing and bookkeeping to guest service, housekeeping and maintenance. Leases are often bundled with optional benefit for buyers, which might include complimentary use by owners at various times of the year and access to the club’s portfolio of homes. Standards for home selection are rigorous and take into account intangibles such as views, or whether or not gathering spaces can accommodate an entire family.

Once a home is in the portfolio, the inhouse design team invests in linens, kitchenware, audiovisual technology and amenities to ensure it meets the brand’s high standards.

Inspirato frequently works with real estate agents to find homes to add to its collection.

“We work with agents in a couple of ways,” says

Rasmussen. “One is to see if they have any highend property that we could potentially lease or clients that have properties we could lease. Often people don’t want to feel they have to go to their second home all the time. They just want it from an appreciation standpoint.”

Travel, especially for discerning travelers, has become more complicated, from navigating required testing, to staffing, to availability of flights. Also, he says, there is “much more uncertainty around clean and safe. Clean and safe is much more important now than it was on the front end.”

Being nimble also enables a quick response to unforeseen circumstances. For example, Rasmussen says, “We will proactively move people’s trips if they are going to a destination that might become unsafe for them, whether from weather or other reasons.”

In addition to expert planning ahead of a trip, most clubs bundle a high level of service into the experience, including pre-visit grocery shopping, so the pantry and refrigerator are stocked. A concierge is on hand.

Inspirato’s transition to a luxury subscription model may be a first for the industry, but their alliance with owners and agents could be equally transformative.

Not all talented chefs cook at restaurants — some cater to an exclusive clientele of billionaires and celebrities.

The most recognizable chefs are creating experiences in restaurants open to the public, but culinary schools report increasing numbers of their graduates choosing a different career track. Some are placed at cultural institutions, Fortune 500 corporations or private homes to cook for celebrities from the worlds of entertainment, business or sports. Success as a private chef requires different skill sets than working in a restaurant kitchen, and many find the specialty emotionally and financially rewarding.

Chef Kai Chase combines the influences of her California upbringing with her Creole, Cuban and African-American roots to create healthy but intriguing dishes that keep her A-list celebrity clientele engaged. Chase’s father was a Latin jazz musician and her mother worked for comedian Redd Foxx, who was her godfather. “It was normal being around celebrities as a kid, which was great experience for my career as a private chef,” reports Chase, who worked as a journalist in the music industry before she

embraced her passion for cooking and enrolled in culinary school. Returning to Los Angeles after refining her technique at Le Cordon Bleu in Paris, Chase worked for celebrity-owned restaurants and Wolfgang Puck Catering before finding her calling as a private chef. She is known for an innovative New American cuisine infused with diverse, bold flavors.

Chase was working in the residence of wealthy bankers when the financial crisis hit in 2008 and her clients were forced to divest themselves of luxury amenities, including her culinary services. While between jobs, an agency recruited her to work for a family as their private chef and, to her astonishment, that family turned out to be Michael Jackson and his children. “Michael was an entertainer, and his body was his tool, so his diet consisted of small portions of lean proteins like fish or chicken, as well as organic juicing,” reports Chase, who reveals his occasional guilty pleasure was KFC.

“I always get into the rhythm of my clients, so I can experience how they feel and how they

need to eat,” says Chase, who is now the private chef for famed actor and comedian Kevin Hart. “If my client is vegan, I go vegan,” she explains. The chef, who always makes a connection to families, has worked with the Hart family for close to 10 years now, traveling with them and keeping them nutritionally healthy. “Cooking for a world-famous comedian can be a lot of fun. Much of my inspiration comes from laughing,” reports Chase. “If you cook for a family, you’re privy to a lot of personal information, so trust and loyalty

are mandatory,” explains the chef, who adds, “Clients can be food-challenging, but you have to remember you’re there to feed them and keep them on track to good nutrition.”

Chase’s star-studded client list has included a wide range of celebrities such as Grammywinning songstresses Mary J. Blige and Macy Gray, Oscar-winning actor Jamie Foxx, television personality Steve Harvey, and NBA star Jalen Rose. When Chase cooked for Barack Obama, she created a menu infused with the flavors of

Kate McAloon, author of The Flavor of Joy — a memoir and cookbook from her days as a private chef — is adept at turning out healthful cuisine that does not lack flavor or imagination. Her clientele has included Gwyneth Paltrow, Dwayne “The Rock” Johnson, Miranda Kerr and Orlando Bloom, Sheryl Crow, Courteney Cox and David Arquette, and Steven Spielberg and wife Kate Capshaw. McAloon reports generally warm relationships with her clients, but cautions, “You always have to remember that you’re there as a professional to do a job,” and notes she is not even authorized to disclose the names of her most privacy-conscious clients.

“It was a joy to cook for them,” says the affable McAloon of Spielberg and his wife, and reports that Capshaw is an excellent cook herself who would leave suggestions on Post-it-Notes with the instruction, “Please add your own special twist.” The renowned director favored McAloon’s chicken pot pie — his affinity for comfort food is not surprising, as his mom operated a Jewish deli in L.A. for decades — and Capshaw was a fan of McAloon’s jalapeño relish.

The American-born McAloon, who now enjoys permanent residency in Australia, cooked for Aussie model Miranda Kerr and former husband Orlando Bloom. The chef’s healthy chocolate-coconut-walnut torte was a favorite of Kerr’s while Bloom was partial to her chicken curry. While retained by “Friends” star Courteney Cox and then-husband David Arquette, McAloon prepared big spreads for Sunday parties where healthy food was a priority, but sweets and agave margaritas were also appreciated.

The notoriously health-conscious Gwyneth Paltrow was enthusiastic about McAloon’s blondies, a guilt-free treat Spielberg also adopted, reports the chef. While cooking for “The Rock” during the shooting of San Andreas in Australia, enormous quantities of proteins were essential, but so were McAloon’s chocolate-peanut brownies that became part of the action star’s legendary “cheat meals.”

“I call it a passion, not a career,” says McAloon, who never formally attended culinary school, but took cooking classes in the South of France and owned a nightclub on Spain’s Costa del Sol. “I love to put smiles on people’s faces, and I’ve found the best way to bring joy to people is through food,” she explains.

Specializing in cooking for athletes is Las Vegas-based Adam Kaswiner, better known as

Chef Kas, and his passion for weight training and martial arts allows him to relate effectively to world-class competitors. His clients have included NBA stars Arron Affalo and Zach Collins, mixed martial arts fighters Rory MacDonald and reigning UFC heavyweight champion Francis Ngannou, Brandon Marshall of the NFL, and Chicago Cubs star Kris Bryant.

“Of course, everything has to be properly prepared and if it doesn’t taste great, nobody will stick with the program, but I view nutrition in terms of lifestyle development,” explains Kaswiner. Recognizing food is only part of a rigorous program for his clients — whether they are all-star athletes or casino executives — he views his menus as part of a holistic approach to health and fitness.

Enjoying the adrenaline rush of working on the line in a busy kitchen early in his career, Kaswiner enrolled at the prestigious Culinary Institute of America, but ultimately found the role of private chef more rewarding. “You have to be both the back of the house and front of the house,” he reports, adding, “It’s not just about cooking, but planning, shopping and having a sense of how to take care of people.”

While most diets for athletes remain heavily weighted in animal protein, Chef Kas is personally and professionally an advocate of a predominantly plant-based diet. “Among other things, a plantbased diet results in less inflammation, which allows athletes to recover faster from training,” explains the chef.

Nate Romo has spent most of his career as a private chef to billionaires and celebrities, occasionally taking time to learn new techniques at Michelin three-star restaurants like Le Bernardin and Daniel in New York. Romo’s specialty has required the classically trained chef to cook on yachts in the Mediterranean, in Las Vegas hotels, and on world tours with rock stars.

“I was working two to three jobs and just not making enough money to afford the lifestyle I wanted in L.A,” explains the Detroit native, who

initially arrived in Southern California to cook at a Ritz-Carlton hotel. “Driving through Beverly Hills, I thought to myself, ‘All these people must have private chefs,’ so I began building up enough experience to be represented by an agency,” recounts Romo.

His big break occurred when Cher needed a new private chef at her Malibu estate and during her residency at Caesar’s Palace. “I realized the food people eat at home is very different from what they expect at a restaurant,” says Romo, who adds, “I learned to edit and simplify, using the best quality ingredients and treating them with respect.” He recounts, “I already knew how to cook, but I had to learn how to plan meals and manage my time,” noting that he suddenly became a regular at Whole Foods, a place he previously could not afford to shop as a struggling young chef. Fortunately, Romo discovered that working as a private chef is considerably more lucrative than most culinary positions at restaurants or hotels.

Observing that L.A. is a transactional city and earning the trust of colleagues is critical, Romo founded the Private Chefs Guild to assist his peers in networking. “Caring about what you do and looking out for people around you are essential to

success in this town,” says the chef, whose next mega-celebrity gig was an assignment cooking for Lady Gaga on a world tour in 2012 following the release of her album “Born This Way.”

Cooking in strange venues, many with inadequate equipment or infrastructure, was challenging and taught Romo the value of mise en place (a culinary term for preparation). Cooking soup ahead of time and packing it in a Cryovac bag was important when the next destination might have little more than a toaster-oven for cooking. “She genuinely loves food and cooks herself,” reports Romo of Lady Gaga, who was partial to the chef’s Bolognese, a dish he perfected while training in Italy. Romo remembers the artist as generous and approachable, often taking the crew out to restaurants even in the face of aggressive paparazzi, and was willing to try local specialties.

Adding to the chef’s A-List clientele was an assignment with Sir Elton John, but Romo now prefers individual events rather than long-term celebrity bookings. “I’ve been fortunate to travel the world through food, but I like not having to be reliant on other people’s schedules,” says Romo after almost 20 years on the showiest stage of the culinary industry.

Luxurious Links

These bucket-list-worthy U.S. golf courses remain well above par.

Golf’s upswing continues in 2021, after a year of pandemic uncertainty saw the already socially distanced game attract new players and call experienced players back to the green.

Last year, Forbes reported a 12-percent jump in the number of golf rounds played in the U.S. at public courses, with rounds at private courses spiking nearly 19 percent, according to data released by the National Golf Foundation and market research firm Golf Datatech. Luca Rutigliano, the managing

director at CordeValle — a 7,360-yard championship golf course with uninterrupted views of Northern California says, “the sport is one of the fastest-growing sports in America. The pandemic has fast-forwarded the growth of the game.”

The United States is home to a few select top-tier courses that are held to the highest of standards and are sure to get you excited for the game. “Golf is a smart game, a healthy game, and a family game,” says Rutigliano, who advises those who are new to

the game to not be afraid to just get started. “I recommend jumping straight into it. I think golf has a little bit of a dark shadow over it, as being expensive and hard to get into, but it can be available for everyone.” John Morrissett, the competition’s director of Erin Hills Golf Course agrees. “Golf is so popular because it appeals to people for a variety of reasons. Some like the challenge and competition; some like being outdoors in a pretty setting; some like the exercise; some value the social aspect of it,” Morrissett says.

The Sea Island Golf Course can be found on the gorgeous Atlantic Coast of Georgia, which is conveniently located between Jacksonville and Savannah International airports. The three wonderful golf courses — the Sea Course, the Plantation Course, and the Retreat Course — play differently on top of one of the best practices areas in the world.

According to Brannen Veal, director of golf at the Sea Island Golf Club, “the great thing about the Sea Island Golf Club is that the design of each course allows players of all skill levels to enjoy their round of golf. The wind, especially on Seaside, can be the most difficult element that a player will experience while playing at Sea Island Golf Club.”

With careful attention to detail, from the engineering of each hole to the landscaping and foliage, this course checks all of the boxes. “The entrance to the Sea Island Golf Club begins with an amazing view of the Avenue of the Oaks and continues throughout the course. “The views that a golfer can see throughout the day are hard to replicate,” says Veal.

Some of the course highlights include the 13th hole on Seaside that has a panoramic view of the golf course, Intracoastal Waterway, and miles of marsh. “Also, number 12 on the Plantation Course requires an approach shot from the fairway that has an amazing backdrop of The Lodge and the Atlantic Ocean,” says Veal.

Just 35 miles northwest of Milwaukee and approximately 100 miles from the O’Hare Airport in Chicago is a gorgeous swath of land in Erin, Wisconsin. The Erin Hills Golf Course “offers a thoughtful design over a wonderfully natural piece of undulating terrain,” says Morrissett, the competition’s director. The course may have opened in 2006, but it has been in the making for over 10,000 years. Home to the well-known course, Erin Hills was formed by the receding lobes of the Green Bay and Lake Michigan glaciers that collided and resulted in rugged ridges, contours, and vistas. The result was a fast and firm playing surface on 652 stunning acres. “The fairways are on the generous side, but the native rough and rugged bunkering reward the player who can drive the ball well,” notes Morrissett. A traditional atmosphere is maintained throughout the walking-only course, which has very limited artificial distractions.

When the architects of Erin Hills Golf Course, Michael Hurdzan, Dana Fry, and Ron Whitten, set out to begin the design, they quickly uncovered the rare landscape that would set this course apart from others around the world. “With only four interior trees, Erin Hills forces the player to confront the elements, especially wind, and requires players to be able to control the flight of his or her ball in a variety of wind directions,” says Morrissett. Spending just a short amount of time on this course and the land in Wisconsin’s Kettle Moraine region is enough to convince guests to return time and time again.

The reward is nothing short of magnificent. Capturing the pinks and purples of sunrise on the horizon, hot air balloons soar across mountaintops, crystal-clear waters, and exotic wildlife. From above, a zebra’s stripe looks completely different than on land, and a hyena’s call echoes just a little bit longer.

At least that’s how John Corse — the managing director of the Serengeti Balloon Safari — describes it. He says that guests often travel several countries to see the wildebeest and zebra migrations; balloon flights are coordinated with the event in order to see it at its peak.

Corse calls the migration one of The Seven Wonders of the World. In search of grass, rain, and breeding areas, wildebeest and zebra migrate throughout the vast Serengeti ecosystem.

There, guests can take safari tours of the grounds, where a rich history is awaiting perusal, through scenic plains that inspired “The Lion King.” But the main event is the balloon: it allows guests to take in the beauty at gigantic heights.

Marc Bégin, owner, pilot, and instructor at Balad’Air, also takes pride in his location: the Southern Shore of Montreal, where visitors can view the entirety of the Richelieu Valley.

“We sometimes fly low enough to pick leaves from tree tops, while other times, our gentle assent can be barely felt as we climb to see the entire Richelieu Valley,” says Bégin.

Overseeing the rich farmland in the valley, the Richelieu River flows from Lake Champlain in Vermont all the way to Quebec in Canada. There, vibrant fields are peppered with friendly creatures.

“With all the farms, we see mostly cows, but in almost each flight you can see wildlife, mostly deers, but sometimes foxes, heron, wild rabbits, et cetera,” Bégin says.

The variety of flora and fauna are also memorable for everyone on board the Serengeti Balloon. Alongside zebras and wildebeest, guests can expect a greeting from hippos, crocodiles, monkeys, birds, cheetahs, and even the occasional lion.

and so even just seeing the scenery is magical,” Corse says.

A typical hot air balloon ride lasts approximately one hour, travelling at the speed of the wind and flying at many different altitudes throughout the journey in order to take in as much of the area as possible before preparing for landing.

Diving into special features of the day, Bégin and Corse aim to bring the highest level of luxury to their unique experiences, even at staggering heights. Private, romantic flights and a champagne toast are offered to bring a high-end feel to the day.

Corse described that the champagne toast at the end of a balloon flight is an age-old tradition, dating back to the very first hot air balloon ride in 1783.

Pioneered by the Pilâtre de Rosiere and François d’Arlande in Paris, France, the first hot air balloon was made of paper and silk, and was hand-fed the fire that sent it soaring.

As for the champagne toast, Corse’s pilots take time at the end of every flight to tell the enchanting story: farmers in France were terrified to see a giant, floating balloon careening through the air upon these first flights in the 18th century, which also set fire to many of the crops on the land. The pilots, in anticipation of retaliation from the farmers, brought with them bottles of champagne to appease the civilians; an action that was actually sanctioned by the King to signify the balloon’s permittance. Thus, a longstanding tradition was born.

Exceeding just bubbles, Corse also provides an on-site breakfast for guests, which is homemade by staff and chefs from the safari, and served under the native acacia trees.

For Bégin’s special packages, a private flight for couples is void of all distractions, and can be purchased for solely one couple. Securing a private feel to the morning, pilots will only speak to answer any questions, he says.

Beyond Montreal and the Serengeti, there are luxury hot air balloons that exist all over the world, ready to launch you into the stratosphere.

Perhaps one of the most famous locations to take a hot air balloon ride is Cappadocia, Turkey, where visitors can catch a glimpse of the fairy chimney rock formations just outside the town of Goreme in South Central Turkey.

Next in line to the famed Cappadocia experience is the flight in Luxor, Egypt. From the tour, the Valley of Kings and the Nile River are just in reach.

Another remarkable location for hot air ballooning is The North Pole — this one is described as most suitable for top-notch adventurers, as part of the journey is getting to the ride itself. Often travelling to this hot air balloon requires a helicopter ride, and at very low temperatures, of course. But the high peaks of lush snow are a sight to be seen as you stay on the lookout for Santa Claus.

At the end of a high-flying day, Corse and Bégin feel incredibly lucky to be able to share this incredible occasion with their guests.

“When I first tasted the magic of a hot air

balloon ride, I started to dream of one day being able to have others share in this intoxicating sensation — to have others taste the pleasure of being gently rocked by the wind, of literally floating in the air while admiring the panorama,” Bégin recounts.

Providing such an opportunity is not just a delight for visitors, but for the pilots themselves.

“Just the magic of the occasion; seeing it in their faces is incredible. It’s definitely the most special thing,” Corse says. “That is the absolute pleasure for me, just seeing the wonder that people feel.”
