ichael Knobelock has been working since he was 10 years old. “I’ve mowed yards, filled convenience store coolers, bussed tables and sold newspaper subscriptions and yellow pages ads,” says Michael. “I’ve always believed in working and saving money.” When Michael was 25, a friend had an idea...Micheal should buy a convenience store that recently went up for sale. Mike says, “My parents loaned me the money and we negotiated the equipment and reopened the store. My wife Patty and I worked seven days a week...Patty took the day shift and I took nights. The store was extremely successful, but it was just a job--not a career--and we wanted more. We sold the store and opened a Church’s Chicken. A year and half later we opened a second location.” Today, Mike and Patty own 43 Church’s Chicken’s, 21 Little Caesar’s, two Captain D’s, three Sears Appliance stores, and their own concept...Dekker’s Mesquite Grill in Fulshear. “We first came up with the idea of Dekker’s,” says Mike, “because we wanted another nice restaurant in our community. A place for our family and friends to meet and
enjoy great food prepared with the finest and freshest ingredients possible.” And that’s exactly what Dekker’s has been giving the people of Fulshear and the surrounding areas since 2012. With not one, but two renowned chefs in house, it is truly a chef-driven restaurant. All beef is certified Angus beef, and the fish is fresh, never frozen--the salmon is flown from Scotland and filleted in house. It’s all cooked Texas style--on a mesquite grill over an open fire--and accented with delicious sides, dressings and sauces...all made fresh, in house. “Our house-made yeast rolls are famous and we have a fabulous main menu,” says Mike. “In addition to favorites like steaks, smashed potatoes, and fried seafood, you’ll find five or six fresh specials daily...so there’s always something new to try.” And with live acoustic music on the patio Wednesday to Friday and an extensive wine list, Dekker’s is the place to take the kids and enjoy a relaxed, yet upscale night out. “I’ve spent my life working for the things I love and I don’t plan on stopping anytime soon,” says Michael, “but there’s always time for the finer things in life. There’s nothing better than friends and family bonding over fabulous food. Drop by anytime!”

andmark rice dryers still dot the horizon on the east edge of Katy. Have you ever wondered about them? Katy rice farming reached it’s peak in the 1970s, when with more than 300 rice farmers and about 75,000 acres of fields. Katy rice was regarded as some of the finest long grain rice grown in the U.S...and the rice dryer took everything to the next level. Katy farmers used to leave their rice outdoors to dry naturally... until Theodore Boyce “T.B.” Tucker of Katy constructed the Tucker Rice Dryer just south of US 90, on a plot between Avenues A and B. The dryer was successfully used for the 1940 harvest season, and soon after rice dryers became a fixture on our local landscape! Over a decade later when the J. V. Cardiff & Sons rice dryer (and Katy landmark) was built on Highway 90, it was the tallest in the country. Rice growing and drying remained a key part of Katy’s economy and landscape for decades, including famous names like B. Ray Woods and L. E. Morrison. In fact, one of Charles Cardiff’s sons, Hal Cardiff, farmed his family’s land until 1999, when he was ready to retire. Today land formerly owned by the Cardiff family is the

site of the Cardiff Ranch subdivision and Cardiff Junior High has been named in the family’s honor. Hal’s wife Lynn is a founding member of the Katy Heritage Society. ow hard is it to get your dog or cat to swallow a pill? Your pet may not open his mouth or he may spit out the pill. You may press on your dog’s jaw to get him to open up, put the pill on the back of his tongue, and then try blowing on his nose to get him to swallow the medicine. Some people even push the pill into the center of a meatball...only to see their dog eat the tasty meat and spit the pill back out. You don’t want it to be a chore and you don’t want to struggle with your pet. What good is medication if it isn’t taken? Wouldn’t it be nice if your cat or dog was excited to take his medicine? Dr. Colin Lathrop, DDS of Lathrop Dental Center started working in a dental office when he was 14 years old. “I swept floors and developed x-rays,” says Dr. Lathrop, “And it all just made sense to me. I’m mechanically inclined, and I found the mechanics of the mouth very easy to understand.” Dr. Lathrop, an honor graduate at HBU, attended dental school at the University of Texas-Houston Medical Center. He’s done dental research at the National Institute of Health in
Bethesda, MD and practiced in both the Austin and Houston areas. When he decided to open his own practice, he chose Katy-Fulshear. “My parents have lived in Fulshear for nearly 20 years,” says Dr. Lathrop, “and it’s home for me.” With a philosophy of patient individuality, Dr. Lathrop’s changing the overall dental experience. “You shouldn’t be scared to go to the dentist,” says Dr. Lathrop, “Trust me, I don’t want to drill if I don’t have to. And parents that are scared transfer that fear to their children. I have patients from age 18 months to 102 (and I’ll take older!) When you come here, it’s a family experience and it’s definitely not scary!” And it’s really not! The office is comfortable and homey...not clinical and sterile. The lobby is a living room outfitted with humorous dental signs. Pictures of Dr. Lathrop’s wife Raven and kids Parker, Tucker and Chandler fill the hallways. “I want you to really feel like I’m welcoming you into my home,” says Dr. Lathrop. And the scary dentistry stuff? Not scary at all! The Vatech PaX-i3D x-ray machine outputs the lowest radiation possible...and better yet, it can take bitewings from the outside of the mouth. Dr. Lathrop says, “Many people avoid the dentist because of that gag reflex during the bitewing x-ray. I want you to know that with all aspects of dentistry, you have options. There is no need to stay away!” Dr. Lathrop makes a trip to the dentist look likes child’s play
for adults and kids alike. He says, “Once we had a mom come in weeks after chipping a tooth. Without a place to leave her children... she chose to ignore it. Finally she called us when the pain got unbearable. My staff entertained the kids, while we fixed her tooth…and after that we added the playroom. Now kids can play with cool toys while mom gets her cleaning next door. She can even watch them on the video monitor (or she can watch HGTV!) And mom and kids can all get cleanings at the same appointment. I’ve even examined kids on the playroom couch... sometimes they’re just not ready for the dental chair.” Dr. Lathrop is one of the youngest access committee members of the Texas Dental Association Smiles Foundation--the organization that plans charitable dental missions to the less fortunate in Texas.
