ou no doubt have been caught in the Houston Livestock Show and Rodeo traffic. You know what I’m talking about...each year folks descend up Houston from all over on horseback—some pulling old fashioned chuck wagons—enroute to the rodeo mecca happening at NRG Stadium. It’s trail ride!
The Valley Lodge Trail Ride Association began in 1959 by a group that lived in the Valley Lodge subdivision in Simonton. It’s one of the oldest of 13 rides sanctioned by the Houston Livestock Show and Rodeo. And it’s truly a family affair...kids, parents, grandparents and grandkids ride side by side. With over 125 riders and 10 wagons, Valley Lodge Trail Ride makes their trek from Brookshire to Houston, roughly 75 miles, in the week before rodeo. And one of their first stops? Dekker’s Mesquite Grill here in Fulshear! “We are proud and honored to be a destination stop for the Valley Lodge Trail Ride,” says Patty Knobelock, who co-owns Dekker’s with her husband Mike. “This is a great group of people with a great cause—raising awareness for the Houston Livestock Show
and Rodeo. And we all know that the rodeo is about kids and scholarships, so it’s a win-win. That’s why we’ve been feeding the Valley Lodge riders every year since Dekker’s opened. It’s the least we can do.” This year, on the morning of Sunday, February 20th, the Valley Lodge Trail Riders circled the wagons at Dekker’s to enjoy a delicious brunch prepared by one of the in house chefs. “We cook Texas style—on a mesquite grill over an open fire,” says Patty. “Perfect food for a fun bunch of cowboy families!” Dekker’s expansive deck was the ideal spot to host the Houston Livestock Show and Rodeo’s Trail Ride Committee, executive officers, vice presidents and directors...and the young cowpokes enjoyed a break from the ride to play in the sandbox. Laurenzo’s El Tiempo Cantina

Legendary Lineage El Tiempo’s Executive Chef Domenic Laurenzo’s family has been in food service for more than 40 years. His grandmother is the infamous Mama Ninfa—founder and namesake of Ninfa’s. “My grandmother, Ninfa Laurenzo, grew up in Harlingen. She met my grandfather, Italianborn Domenic Thomas Laurenzo, while visiting Providence, RI. They literally flipped a coin to decide if they would live in Texas or Rhode Island.” And with luck on Mama Ninfa’s side, the Laurenzo family would begin their legendary journey. In 1959 the couple opened the Rio Grande Tortilla Factory in Houston’s Second Ward. But this love story is marred in tragedy. In 1969, Domenic’s grandfather died suddenly. “My grandmother had five children she needed to support. In 1973 she converted the tortilla factory to a five table restaurant...the place that today is known as the Original Ninfa’s on Navigation.” Just a week after opening, the restaurant caught fire...causing catastrophic damage. But the family regrouped, repaired and reopened. By their third year, sheer word of mouth made Ninfa’s a popular downtown spot. Mama Ninfa’s concept continued to grow through the eighties, the era when “Tex Mex” was born. In fact...Mama Ninfa is credited for introducing the word “fajita” into American culinary lexicon! El Tiempo found it’s way to Houston when in 1998, Mama Ninfa’s oldest grandson Domenic and her son Roland opened the original location on Richmond. (By this time the Laurenzo family was no longer involved in the Ninfa’s enterprise.) Domenic says, “We credit the name, El Tiempo, to my cousin Antonio Martinez from Monterrey. My Dad was visiting Mexico, securing items for our new restaurant’s atmosphere. In an amazing Act of God, Antonio said we should call it El Tiempo. It means ‘The Time.’ And time is of the essence... the frame of reference for every human being. “T
he simple answer,” says Bruce Granger of NaturaLawn of America, “is you should water when your plants need water. The key is to water infrequently and deeply.” Ever notice how after a good soaking rain your lawn looks fantastic? That’s exactly how you should water your lawn. “Our soil is primarily clay,” says Bruce. “And clay absorbs water like a sponge. Think about wetting a sponge. At first, the water flies off in every direction, but then the sponge starts to absorb the water. That’s what happens with your lawn. A lot of sprinkler systems are

set for everyday, but for a very short time. The logic is that short times limit run off. But in actuality, the soil is never absorbing any water.” So how much water does your lawn actually need? “One inch per week. So on a week we get at least an inch of rain...no need to water. When we don’t get rain, you need to put out about an inch of water...all at once. You can measure how much your system puts out with a rain gauge, or go by the rule that most systems put out about an inch an hour. To truly water correctly, you should only water when your plants show signs of stress. But if you don’t want to mess with watching them, or you’re going out of town, once a week for one hour in each zone is sufficient. You will see some initial runoff, but then the soil will soak up the water like a sponge. If your plants still show signs of stress when the temperature exceeds 100 degrees, you may need to move to twice a week, reducing the time by 20 minutes. But as soon as it’s back in the 90s...go back to once a week. And most years there’s no need to water from November till April. Several MUD districts have recently distributed literature describing this method as the most effective. tacie Henry Bowles has been an entrepreneur for the better part of her life. She’s the owner of Katelyn’s Korner, Katy’s oldest candle company. And she’s the founder of Katy’s ever-popular Home for the Holidays Gift Market. “For 15 years, I traveled with Katelyn’s Korner as a vendor to different craft shows and gift markets. But in 2007 I saw the writing on the wall. Expenses were high and I knew in my heart I needed to get off the road. I thought it would be nice to promote a local show...to do things different, from a vendor’s perspective. And in late 2008 we had our very first Home for the Holidays Gift Market. It did indeed keep me at home for the holidays!” The show was a success. In fact, it grew and escalated...and now in it’s ninth year, the Christmas Market is expected to see more than 10,000 in attendance. Home for the Holidays promotes five markets each year...the first is the Spring Market April 16th and 17th. “People ask me how I did it,” says Stacie. “It’s a long story, but basically, it’s a God thing.” When you’re a Home for the Holidays vendor, you’re not just another name on a piece of paper. aniel and Sara Johnson do! “We had a pool and we loved it...but it really needed renovating,” says Daniel. “We also wanted an outdoor kitchen and pavilion, but our backyard is oddly configured. While trying to decide what would work, we saw an article about Bratton Pools in a magazine. The featured backyard was very similar to ours. I called and asked if it would be possible to go and see that yard in person. And Mike Bratton gladly obliged.”” Daniel would get other bids and talk to various other companies about ideas for his backyard. “We ultimately chose Bratton Pools. Our decision was based on our conversation with the other homeowners—they’d had a great experience. Plus, it was very reassuring since we could see Bratton’s work first hand, and I just liked Mike a lot. He’s an honest guy and comes across as very straightforward. I immediately felt comfortable with him and trusted him.” The Bratton-built backyard from the magazine became the conceptual inspiration for the Johnson’s backyard. “While we had the concept, there were still a lot of decisions to be made, even during construction. And Pinterest is a game changer in the way you can plan. I frequently had the iPad out in the backyard consulting with Mike on ideas...and then he would bring us materials and samples to consider. Design was definitely a
moving target and Mike was very helpful with the decisions.” The Johnson’s final design included adding a spa, travertine coping, a new stamped concrete deck and French grey quartz plaster. Their new outdoor kitchen and pavilion includes a beamed ceiling and a Santa Maria grill. Mike Bratton says, “I was more than happy to sit with Daniel and look at pictures of different things he liked (and didn’t like!) It helps us get to know you and create an area that is truly yours. It’s how we operate...everything we do is custom and built to accommodate your lifestyle.” “We still pinch ourselves when we go outside! It truly feels like an extension of our home.” says Daniel. “I’ve worked with enough contractors to know that obstacles will always pop up. MedCare was founded in 1991 by a husband and wife team.
“I’d worked on the business side in healthcare for several years,” says co-founder Paige Kinkade, “and I enjoyed it. My husband, Steve Wang, is an entrepreneur and already owned several successful businesses. So the natural evolution was to start our own healthcare business.” While MedCare initially started out providing adult in-home care, a phone call one day from a mom changed everything. “She had a child that needed in-home nursing care. I couldn’t turn down a suffering family. I became fascinated with this child and as I watched his condition improve, I felt honored to share in his life and participate in his care. Because parents of special needs children are a close-knit community, word quickly got around, and we began to admit more pediatric patients. Recognizing the great need in this space, we ultimately shifted our business model solely to pediatric care.” “My vision,” continues Paige, “was to fill in all the gaps in the care for our patients. By 1999, we added in-home physical, occupational and speech therapy services. Observing that some clients might do better in an outpatient rehab setting, we expanded our operations and built our own brand new building complete with a Rehab Clinic in 2005. My top priority was making it a place kids would love--right down to the colors and theme. This building is state-of-the art complete with a covered custom pool for aqua therapy. The kids we see here use the entire space--the stairs, the hallways. It’s a fun place with a great vibe. Even the smallest improvement in a child is monumental to the family. It is not uncommon to hear therapists--even our front desk staff--cheer wildly when kids make progress towards a goal.” MedCare has since expanded throughout the Greater Houston area, including clinic locations in North Shore, Spring, Pasadena and Katy. “Our goal is to offer comprehensive care to every child referred to us. We serve birth to age 21...but my next project involves creating a prevocational program for our adolescents about to age out of the program, so stay tuned!” Paige’s passion for these kids has no end. She travels to Austin--sometimes with kids in tow--to lobby when pediatric special needs decisions are on the table. She along with four of her staff sit on committees at the state level advocating regularly for Texas children with special medical and developmental needs. hen Karen Welch married into the McDougal family, she asked if it was a prerequisite that she learn to sew. Dan told her, “No.” “He lied!” says Karen. “My background is journalism and law. But I went to work with Dan more than 20 years ago when he opened a store in the Katy area. Dan started when he was 18 at the original Bob McDougal Sewing Machine Co. in the Heights, established by his grandfather back in 1940. (I also learned to sew!) Since then, McDougal has been continuously run by our family. he fun thing about any holiday is the delicious lack of routine--especially when you’re a kid. GRAND WINDOWS & INTERIORS Transforming 2016 from Bland to Grand!
W
hen Caron, owner of Grand Windows and Interiors, first visited with Mrs. Johns, she knew she had a love for decorating, color, texture and drama. Caron wanted to be sure that all of these elements were reflected in the home. In the library, since Dr. Johns studies Roman history, Teresa Staley was commissioned to paint a mural depicting Rome. Caron designed a custom Roman shade in a gorgeous fabric, had a piano bench cushion made with coordinating fabric and key ties, and reupholstered the office chair. The dining room was designed with an explosion of color—a dramatic wallpaper and beautiful draperies.
Caron asked Teresa to paint the wallpaper design as if it was wrapping the arch and flowing into the next room. Walking into the next kitchen and living area the ceilings have the look of wood. A modern vibrant rug, custom metal work made by Caron’s husband Candelario, and linen drapery with embroidered branches and birds in turquoise make a room that speaks to the Johns. Harvest Green—located just behind Travis High School—is a 1,300 acre master-planned community centered around a farm! “We’re passionate about our residents being connected to their food and knowing where it comes from,” says Harvest Green Lifestyle Director Sylvia Morgese. There was already fresh produce waiting for the first Harvest Green residents upon moving in at the start of March. By partnering with Edible Earth Resources and employing full-time farmers, the community has made it easy for residents to be a part of the action. “When you drive into the community,” says Sylvia, “you see the Village Farm, which will include a vineyard, an orchard, greenhouses, a livestock area, you-pick gardens...and we’ll also host demonstrations and classes for residents. From the adjacent 300 acre farm—maintained by Edible Earth—Harvest Green residents can get shares of seasonal produce delivered directly to their door through a Community Supported Agriculture (CSA) Program. Cooking demonstrations and food prep classes will be designed to help residents utilize the produce they receive.” And for those wanting to ‘grow their own,’ Harvest Green offers plots of farmland available for residents to lease out. All equipment is provided, and there’s a resident farmer on-site for consultation and suggestions. With this option, residents can grow what they want...and perhaps learn something in the process! Future plans for this farming community include a permanent farmer’s market, a daily produce stand and an on-site farm-to-table restaurant. And while it is farm-centric, Harvest Green also intends to provide residents with top-of the line amenities. “The Promenade will be a place for the whole family to gather and play!” says Sylvia. “It features fun for everyone with a resort-style pool and patio, splash pad, fitness center, amphitheater, park and playground. We will have wine mixers, craft days, movie nights, you name it. Some events—like our upcoming Summer Tomato Festival—will even be open to the public!” Harvest Green is fully located within Fort Bend ISD. Travis High School and Bowie Middle School are conveniently located in the community, as well as a future elementary school opening this fall. “Our expansive hiking trails include lighted paths to all three schools,” says Sylvia.
