Rooibos
Rewards
Rooibos does not just make a great tea (which can rival green tea) for some great health benefits but is also used in cooking, beauty products and even in gardening and first aid. Rooibos is not a true tea, but a herb. The brew made from the dried leaves is therefore a herbal infusion (a tisane) rather than a tea, but is more commonly known as Rooibos tea.

BOTOX IS THE BOMB!! now I am not one to go in for much in the way of maintenance. I tend to go for the “Just got Out Of Bed” look, mostly because that is the easiest. I would far rather have that extra 5 minutes of sleep than spend it panel beating myself. I do get my hair done when I remember, or when the grey is just too much to bear. I do go for my monthly indulgence of a pedicure, introduced to me via a birthday voucher from a very concerned friend. It took me a while to get my head around that one, but now I am well and truly hooked. An hour of uninterrupted Me-Time = pure bliss and pretty toes.

I, of course, go to the salon to get BEAUTYLICIOUS, and so it was that Emu and I were standing chatting to the Mistress of Pain, (she of the Chinese torture practise of ripping out hair from its follicles) when she suggested Botox. Errrrmmm? Isn’t that what movie stars get? Therefore hellishly expensive? Isn’t it a form of snake poison? Isn’t my face going to be frozen into a permanent look of surprise? Cue a picture of the once beautiful Pricilla Presley and the horrendous results of silicon fillers. Eeeuuuwwwww. My limited understanding of Botox was that it was the realm of the rich & famous and if not famous, certainly the rich yummy mummies and partners. Most definitely out of the reach of mere mortals such as myself. So I did a little mini survey amongst friends I have always thought were much younger than me. Turns out that they are much younger than me but do indulge in the Botox. Well, wasn’t I stunned? Ordinary people? Botox? And looking beautiful and youthful as a result.

That was it! I made up my mind! I was going to get me some of that! Serendipitously, my very own Mistress of Pain offered the very service that I was after. So now I was committed. Then followed the consultation, by a very youthful-looking doctor, I might add. Most exciting there was even more on offer – Fillers! What are these you may ask and if you have an ADHD mind like mine the first thing that popped into it, is an image of Kim Kardashian’s sizable booty. Turns out that Fillers fill in those areas that, thanks to the wonderful aging process, are starting to give way to gravity. It cannot be denied, we all have that occurring, even in the booty area but I’m sure that fillers like that will cost a bomb. So Dr Delightful inspected the battered remnants of my visage and concluded that indeed I was in need of this amazing fountain of youth in the form of Botox and Fillers. Too much of excited I was, but wait! This comes at a price that is more than the outlaying of money! Pain! Injections! Fear began to overcome me. That awful needle, that tiny, shiny sliver that causes goosebumps and sweating! I hadn’t thought about how this miracle Botox and Fillers were going to find their way into my face. Now we had a little speedbump in my beautifying process.
What to do? Delightful Dr came to the rescue. Looking deep into my eyes, holding my gaze with his lovely brown eyes, he softly said to me – “Beauty is pain now suck it up!” So suck it up I did. With the anticipation of the pain of an epidural I closed my eyes, feeling the sweat glands beginning to work themselves into a frenzy. It’s true – I am a ninny. I don’t enjoy pain of any kind. I still scream in pain whilst being waxed by my gorgeous but lethal Mistress of Pain who I am sure is a sadist who trained in Chinese torture. Well, that’s my opinion; everybody else seems to love her. Turns out I was stressing for nothing. Being the ninny that I am I was terrified but a mere pin-prick was experienced and the finished results were certainly worth the anxiety. Just this once I am going to let you into my secret and tell you where you too can partake of this magical transformation with the fabulous Genevieve Coetzee of SalOn SedOna, 14 Old Bush Rd. do tell her that I sent you!

S U M M E R Summer is finally here, so it’s time to put the winter woollies away, and pull out soft fabrics and bright colours. I always suggest a bit of a wardrobe clean out at the beginning of each season. This allows for you to make a list of what is needed in order to avoid those bad buys. Have a look through the fashion mags to see what’s new for the season, so you can add a few updated pieces.

THIS IS ALWAYS A BUSY SHOPPING TIME FOR ME, SO I HAVE LISTED A FEW ITEMS THAT I LOVE FOR THIS SUMMER.
THE KIMONO
This Bohemian style staple has been adapted, and comes in all sorts of fabrics and lengths. There are loads of options at different price points, so you will be sure to find one that will work for you. Try it over everything from jeans and a t-shirt, to a pencil skirt and a camisole. Keep the rest of your look streamlined to avoid looking a bit theatrical. The key to carrying a kimono off, is selecting the correct length. Look for texture in plains and sheer fabrics in prints.
THE SHORT
Whether your figure (and age) allows for ultra-short shorts, or a loose and lengthy option, the stores have catered for both, and everything in between. Lots of women veer away from shorts completely, as they seem to think that they reveal all their faults and more. If you select what works best on your figure, shorts will be a staple that you will wear year in and year out. The most versatile would be a straight cut in sateen or cotton, which can be dressed up or down. The shorter the shorts the more casual, unless they are tailored. L O V I N G THE SHIFT
For those who may not know, a shift dress is simply a straight dress that skims over the figure, and generally does not cling anywhere. This item is a must for summer, as it really suits almost any shape. From linen to cotton, lace to prints, the options are endless. Generally speaking the shift should be worn on the knee or slightly above. Pair with a wedge or flat sandal for day, and a heel for evening.
THE SHIRT DRESS
This dress has a similar shape to the shift, but generally has a collar and buttons down the front. Think longer shirt! My favourite is one in crisp cotton, preferably in a plain colour. Accessorise with a statement piece of jewellery and a pair of wedges. For the weekend look go for a softer fabric and pair with a printed pump or a pair of takkies. Layer with a leather or denim cropped jacket.
These are just a few of my favourites for the season ahead. Don’t be scared to try new things. There is something out there for everyone. Look for good quality in your staples and spend less on high fashion items.

Official cite heavy foot traffic as the reason for deterioration of the 18th century Baroque style Stairway which was last restored in 1995.The project is being funded by luxury jeweller Bulgari.
RITZ CARLTON TAKES GENEVA Ritz-Carlton has signed an agreement with the Manz family in Switzerland which will see the Hotel de la Paix in Geneva become a partner hotel as of 16 December 2015. The boutique property sits on the banks of Lake Geneva, (Lac Leman) in Switzerland. Following an extensive renovation planned by the Manz family, the hotel is scheduled for re-launch at the end of 2016 as The Ritz Carlton, Hotel de la Paix Geneva.

The Visa Global Travel Intentions Study 2015 was commissioned by Visa and conducted by Millward Brown, with 13,603 travellers, aged 18 years and above across 25 countries and markets in January and February 2015. The travellers surveyed had either travelled in the past 24 months or intend to travel in the next 24 months for business/leisure, non-domestic travel only. The study shows that travellers from the Asia Pacific region took more leisure trips in the past two years than any of the other countries surveyed, with more than 84% of those in the region having travelled solely for leisure in that time, well ahead of the global average of 76%.

The nearby Camdeboo National Park offers breathtaking views of the Valley of Desolation and bright orange sunsets over the vast plains. The Obesa Nursery is a chance to check out cacti for those who love succulents and such. The town offers a real connection to country life.

Drive along to the West Coast National Park, to Paternoster and other small beachside towns where the seafood is spectacular and the little B&B’s are abundant. Continue along the N7 making a stop at Clanwilliam dam where you can take your boat out for a water ski or towards the Cederberg mountains for a refreshing hike and the freshest oranges straight from the tree.

Take the coastal route to Muisbosskerm, a seafood feast on the coast of Lambert’s Bay where a large Afrikaans man will welcome you into an unsuspecting thatched enclosure. Open fire, the smell of freshly baked mosbolletjie, the sounds of the ocean crashing and an unforgettable sunset took me away to a true South African eating paradise. Keep driving, away from civilization, through to Hondeklipbaai, where a 4x4 vehicle will certainly come in handy on the unpaved stretches of road. This small humble town offers few lavish amenities, but leads to the many adventures of the Namaqua National Park where peacefulness and bright blue skies will greet you with a gentle howzit.

An indulgent way to experience the history of the surrounding area, the cave style accommodations transport you to a different time and place. If you’re not inclined to stay or time is of the essence, at least enjoy a meal at their award winning restaurant, Roots. Just be sure to book in advance as the restaurant is highly popular and reservations are absolutely essential.
Take a leisurely drive to the Magaliesberg and visit the Mountain Park Sanctuary. Enjoy the hiking trails and then cool off with a swim in the crystal clear waters.The privately owned nature reserve is an oasis of tranquility. Day visitors are welcome but numbers are limited so be sure to call ahead. Once you’re back in the city there are many ways to kick back and relax, with markets too many to mention and pubs and clubs just about everywhere. My favourite place to enjoy an ice cold cocktail after a long hot day is at The Living Room in Maboneng. Set in nursery like surrounds on a rooftop overlooking the city, this is a great place to watch the sun go down. Gauteng has loads to offer within easy driving distance, you just have to make up your mind to get out of the hustle.

Lennard Marais ExEcutivE chEf | La REsidEncE lennard grew up in a farming community in the Swartland region of the western Cape. with no grocery stores nearby, everything was made fresh at home and len quickly developed a passion for cooking as he helped his mother with her daily food preparations. Len knew from an early age that food would always be a big part of his life and it seemed natural for him to pursue cooking as a career. Len joined John Jackson at his acclaimed ‘Jacksons’ restaurant early on in his career where he did in-service training receiving mentorship from one of the best chefs in the country.

He then moved on to Klippe Rivier Homestead, one of the first 5 star guest houses in the country where he was resident chef. After this, he moved on to be a part of the opening team at the Table Bay Hotel at the V&A Waterfront where he was exposed to new cooking styles and some of the best chefs in the world. Len’s warm and hearty personality drew him back to boutique hotels where he could spend more time interacting with guests and he spent some years at the very exclusive Ellerman House Hotel in Bantry Bay. Len then took time off from hospitality to travel the world and learn new International cuisine styles. In between trips, he used the knowledge and experience that he had acquired to give cooking classes and also did private catering, specialising in wedding cakes. In 2010, Len joined The Royal Portfolio where his rustic, country French inspired cooking has defined La Residence’s cuisine. The baking, pickling and preserving techniques that he learnt in his childhood are put to good use as he incorporates produce fresh from La Residence’s farm into all aspects of his menus.

Broccoli & Ricotta Soufflé SERVES 4 INGREDIENTS: õĘ 400g ricotta cheese õĘ 60g small broccoli florets õĘ 50g grated parmesan cheese õĘ 40 g unsalted butter õĘ 5 egg whites õĘ 5 egg yolks, lightly beaten õĘ 3 tablespoons dry breadcrumbs õĘ 2 tablespoons olive oil õĘ 1 onion, finely chopped õĘ 1 garlic clove crushed õĘ A pinch of nutmeg õĘ A pinch of cayenne pepper õĘ A pinch of cream of tartar
METHOD: 1. Preheat the oven to 190°C. Cook the broccoli florets in boiling water for 4 minutes, then drain well and roughly chop. 2. Heat the olive oil and butter in a frying pan. Add the onion and garlic and sauté over medium heat for 5 minutes, or until the onion has softened. Transfer to a large bowl and add the broccoli, ricotta, parmesan, egg yolks, nutmeg and cayenne pepper. Season with sea salt and freshly ground black pepper. Mix well. 3. In a clean, dry bowl, whisk the egg whites with the cream of tartar and a pinch of salt until stiff peaks form. 4. Stir one-third of the beaten egg white into the broccoli mixture to loosen, and then gently fold in the remaining egg white. 5. Grease ramekins, sprinkle with the breadcrumbs, turn the ramekins to coat, and then shake out the excess. Spoon the broccoli mixture into the ramekins and bake for about 25 minutes, or until puffed and golden brown. Serve immediately with a salad and some homemade chutney.

INGREDIENTS: õĘ 1/2 Teaspoon of toasted ground cumin õĘ 1/2 Teaspoon of toasted ground coriander õĘ 4 Kingklip portions õĘ 3 ripe tomatoes diced õĘ Small chopped red onion õĘ 1 Small green chilli pepper, finely chopped õĘ 1 Orange, sectioned and seeded with each section cut in half õĘ 2 Tablespoons of fresh lime juice õĘ Small handful of chives & Italian parsley chopped õĘ Olive oil and seasoning õĘ Small bunch of cooked and peeled baby beets, marinated with a little olive oil, seasoning and a dash of balsamic vinegar. õĘ Blanched and refreshed green vegetables like asparagus and fine beans õĘ Marinated Italian artichoke hearts, can be grilled if you prefer õĘ Small tub of mozzarella pearls
METHOD: 1. For the salsa all the ingredients can just be mixed with a little bit of olive oil and some crushed black pepper & sea salt to season. 2. Season the fish portions and brush with a little olive oil, preheat a grilling pan until nice and hot and grill the fish portions on both sides. 3. Place grilled fish portions in a greased baking tray in a preheated oven of 180 °C and cook fish until done. Cooking time will vary depending on portion size but should be between 6 to 8 minutes. 4. Meanwhile the green vegetables and artichoke hearts can be warmed in a pan with a little butter and seasoning. Warm the baby beets in the same way in a separate pan as it will colour the other vegetables. 5. On warmed plates the vegetables can placed just off center, place cooked fish portions on top. Finish dish off with a nice spoonful of salsa, some of the mozzarella pearls and fresh Summer baby basil.

Rich Flourless Chocolate Cake SERVES 6 - 8 INGREDIENTS: õĘ 340g dark chocolate pieces õĘ 225g unsalted butter õĘ 210g castor sugar õĘ 5 eggs õĘ 2ml vanilla powder (you can also use 10 ml of your favourite liqueur) õĘ Rich flourless chocolate cake
METHOD: 1. Preheat the oven to120°C. Butter and line a 23- 25 cm cake tin with baking paper, line and wrap the outside of the tin with foil to prevent any water leaking in. 2. Melt the chocolate and the butter in a double boiler. Beat the eggs and 70 g of the sugar with an electric mixer until the volume expands to roughly 4 times. Heat the remaining 140g of sugar with 100ml of water until dissolved and allow it to boil from 1 – 2 mins. It will be a light syrup. Pour the syrup into the chocolate and butter mixture and allow to cool a little bit. Pour the chocolate into the egg mixture until all combined with the vanilla powder and then pour into the baking tin. 3. Place cake tin in a lukewarm water bath (bain marie) and bake for 50 min until set and allow the cake to cool in the pan of water before removing and turning out.

As many accomplished Chef’s have done, Bertus got an early start – cooking since the age of 17, and by 19, he had moved to England to work at the Michelin-starred restaurant, Chez Bruce. “Working at this restaurant was the moment that changed my life. This is where I honed my culinary skills and learned how to respect fresh ingredients,” says Bertus. In the following years Bertus went on to represent South Africa in some of the world’s best cooking challenges, including the invitational Bocuse d’Or, The Culinary Olympics and The Global Chefs Challenge. Early this year in February 2015, Bertus and his new business partner, Allistaire Lawrence, opened the doors to Bertus Basson at Spice Route at the Spice Route destination on the Suider Agter Paarl Pad. The focus is modern South African cuisine with a relaxed unique interior in a spectacular setting that is Spice Route. Bertus is a judge on a South African reality cooking show, The Ultimate Braai Master, travelling around Africa in search of the ultimate braai master. The success of the show has lead them to shoot a forth season in mid 2015. The Ultimate Braai Master is currently aired in 22 countries. Alongside cooking at Overture Restaurant, Bertus offers a range of services from restaurant consultations to workshops and hands on demonstartions, as well as catering for private events. Bertus also owns Bertus Basson food trailer, forming part of Cape Town the Food Truck scene, this little caravan is in high demand, catering to weddings, functions and your local markets. This whole idea was driven by his love for hot-dogs and braai food items and wanting to create an informal dining concept. Bertus isn’t one to wear starched, white jackets or fancy hats. Chicken Liver Parfait INGREDIENTS: 750g butter 1kg fresh chicken livers 10 eggs
METHOD: 1. Make sure all ingredients are at room temperature and butter melted!! 2. Blend and pass mixture and then season it. Some sugar will be needed. 3. Bake in Bain Marie covered with foil in sprayed moulds at 130째C, until wobbly in centre. Set in fridge, must be nice and pink when you serve it.

INGREDIENTS: 1pkt Brine mix 12l Water 15 Cloves 15 Back pepper corns 20 Coriander seeds 6 Pork bellies 2 heads Garlic, split METHOD: 1. Dissolve the brine mix in the water, add the spices, garlic and bellies, brine for 24 hours. TO COOK THE BELLIES: 100g Whole Ginger 20l Water 1l Soy Sauce 5 Star anise METHOD: 1. Bring all the above ingredients to a simmer, add the bellies and simmer for 2 hours. 2. Remove the bellies and press. 3. Skim and reduce the cooking stock by half. Reserve the sauce.

INGREDIENTS: 140g Sugar 130g Flour 10g Baking powder Apples – peeled, cored and wedged. Pinch of salt 60g Butter 70g Milk 3 Eggs METHOD: 1. Cream butter and sugar. 2. Add the eggs and milk and mix through thoroughly. 3. Sieve the dry ingredients together and fold into wet mixture. 4. Pour mixture in the baking tin, lay apples on top and bake at 180°C, until golden brown.

INGREDIENTS: õĘ 300g Boerewors õĘ 60g Piccalilli õĘ 60g Tomato and Onion Relish õĘ 75g Onions õĘ 30 g Butter õĘ 1 half French Loaf PICCALILLI INGREDIENTS: õĘ 200 g fine green beans , chopped into short lengths õĘ 300 g shallots , cut into eighths õĘ 500 ml white wine vinegar õĘ 1/2 large cauliflower , cut into small florets õĘ 6 tablespoons sugar õĘ 4 red chillies , seeds still in, finely sliced õĘ 4 tablespoons flour õĘ 4 bay leaves õĘ 3 cloves garlic , crushed õĘ 2 handfuls fine sea salt õĘ 2 tablespoons mustard oil õĘ 2 heaped tablespoons mustard seeds õĘ 2 tablespoons ground cumin õĘ 2 tablespoons turmeric õĘ 2 bulbs fennel , cut into small chunks õĘ 2 green chillies , seeds still in, finely sliced õĘ 2 tablespoons English mustard powder õĘ 2 apples , grated õĘ 2 mangoes , peeled, stoned and roughly chopped õĘ 2 tablespoons dried oregano õĘ 1 red onion , roughly chopped õĘ 1 head broccoli , cut into small florets õĘ 1 nutmeg , grated PICCALILLI METHOD: 1. Put all the vegetables in a bowl, add the salt and enough water to cover. Leave in a cool place for about 1 hour. 2. Heat a saucepan big enough to hold all the vegetables. 3. Add the mustard oil to the pan, then fry the mustard seeds, cumin, turmeric and nutmeg for a moment. 4. Lower the heat, add the mustard powder, flour and a splash of vinegar. Stir well to make a thick paste. 5. Gradually add the remaining vinegar and 100ml water, stirring all the time to make a smooth paste. 6. Add the apples, mangoes, sugar, garlic, oregano and bay leaves. Cook for 2–3 minutes. 7. Drain the salted vegetables and add them to the pan, stirring well to coat with the spicy paste. 8. Cook for 10–15 minutes until the vegetables have just softened and started to release some juice. 9. Spoon into sterilized jars and close the lids tightly

Grilled Lamb Cutlets With Scallion Potatoes Forno Roasted Veggies & Tzatziki INGREDIENTS: õĘ 300g lamb cutlets õĘ 30 ml olive oil õĘ 2g rosemary leaves – finely chopped õĘ 2g dried oregano õĘ 2 cloves of garlic, peeled and crushed õĘ 1 lemon - zest and juice õĘ Salt and pepper to taste METHOD: 1. Mix all the ingredients for the marinade together and place the meat in the marinade for at least an hour, prefereably overnight 2. Just before serving grill the cutlets on an open flame to the desired temp. SCALLION POTATOES INGREDIENTS: õĘ 250 ml cream õĘ 100g grated parmesan cheese õĘ 10 g thyme leaves finely chopped õĘ 10g spring onion õĘ 3 large potatoes õĘ Salt and pepper to taste SCALLION POTATOES METHOD: 1. Slice the potatoes thinly on a mandoline and layer with the rest of the ingredients finishing with a thin layer of parmesan 2. Preheat the oven to 180°C and bake the potatoes for approx.. one hour until a knife can cut through the centre with ease 3. TZATZIKI METHOD: 1. Grate the cucumber on a coarse grater and place in a strainer to drain the juices. If you have enough time leave it overnight sprinkled with a little salt 2. Leave to infuse for at least 2 hours but preferably overnight FORNO ROASTED VEGETABLES INGREDIENTS: õĘ 4 baby butternuts, tips off and quartered õĘ 4 baby marrows cut into chunks õĘ 2 cloves garlic õĘ 1 red pepper, cut into 3cm chunks õĘ 1 yellow pepper, cut into 3 cm chunks õĘ 1 small butternut peeled and chopped into 3 cm chunks õĘ 1 red onion, peeled and cut into quarters õĘ 1 aubergine, scored, salted and washed, cut into chunks õĘ Rosemary õĘ Thyme õĘ Salt and Pepper to taste õĘ Olive oil õĘ Balsamic Vinegar õĘ Veggie seasoning to taste

Brioche Nutella Pizza With Vanilla Bean Ice Cream, Hazelnut Praline & Chocolate Shavings BRIOCHE INGREDIENTS: õĘ 750g Butter õĘ 225 g Sugar õĘ 190ml Milk õĘ 90g Yeast õĘ 25 g Salt õĘ 15 Eggs õĘ 1 kg Bread flour

BRIOCHE METHOD: 1. Mix all the flour, milk, sugar, yeast, salt and eggs together to form a doug 2. Knead until elastic. 3. Crumble the butter onto the dough and using the heel of the palm of your hand, gently push the dough and butter together until the dough is formed. 4. Place in a bowl and cover with clingfilm and leave in the fridge to prove overnight 5. Knock the dough down the next day 6. Divide into small balls and roll into a thin oval shape 7. Place in the forno and bake until done – About 7 min PRALINE INGREDIENTS: õĘ 100g hazelnuts õĘ 100g sugar PRALINE METHOD: 1. Place the sugar in dry pan and heat, stirring until dissolved and golden in colour 2. Meanwhile roast the nuts in a preheated oven at 180°C untill golden brown 3. Pour the hot sugar over the nuts and leave to cool 4. Chop roughly 5. Remove the pizza from the oven and spread with Nutella. Top with the vanilla ice cream and sprinkle with the praline. 6. Optional extra: Garnish with fresh berries and chocolate flakes.

Nolan Hoffman and Heidi Dalton clinched the title of top male and female rider respectively this year. Along with the elite riders and vets, there were also a number of VIP’s and celebrities who took on this year’s challenge!
