EDITORS WORD Hello Spring! The birds are chirping, the flowers are blooming and all around us are happy spirits are singing. Welcome to the new season, it is my favourite part of the year where everything is awash with colour. This month, to celebrate warm days ahead we venture to Croatia, becoming more and more popular since Game of Thrones has had many scenes filmed here, this sunny and playful destination is everything a seaside holiday should be and more. From the fantastic beaches to the glorious cuisine and stunning architecture, there is something for everybody. With the changing of the seasons also comes a changing of the trends, from colours to styles and even to the way we eat. Our bright and cheery fashion pages usher in the fresh colours of the season. We all love a bit of colour, it changes the mood instantly and our personality feature, the fabulous fashion artist from Durban, Ste- ve Mandy introduces us to something a little different. Painting with bleach. Taking colour out instead of adding it. We got the chance to chat to him on the back of his recent visit to London for Africa Fashion Week and find out more about Steve Mandy Designs (SMD). Warmer days and sunshine can mean only one thing in the South African context, beach time. It is also the time when the jerseys are packed away to be replaced with tank tops and tees . A time to show off your ‘tat’ if you have one or to get one if you don’t. We took a closer look at the many types of tattoos on offer and shoo wee, some surprised us and some shocked us, but no we did not debunk any myths. EMIRATES LAUNCHES NEW FLIGHTS TO PHUKET, THAILAND Emirates will operates four new weekly flights between Dubai and Phuket from December 1st, 2015. Adding a capacity increase of 57 per cent the four new flights will introduce connectivity from most cities in the Americas for the first time as well as improve connections to a number of destinations in Europe and the Middle East where Emirates currently flies from more than 50 cities. Dubrovnik port is less than 3km from the Old City and about 20km south of Old City. Both are accessible by bus or taxi. The easiest way to get around the coast is by boat. Locals and visitors alike move between coastal towns and island destinations by catamaran, ferry or yacht. Hvar. From Hvar, you can get to Dubrovnik with Krilo Star, a private company. You must book at least a day in advance during peak season. The best way to see the coast: live it up in luxury, rent a yacht and go anywhere you want at anytime, it’s the perfect place to do it.

SEARED TUNA WITH CRISPY BASIL & RADISH SPROUTS
INGREDIENTS: 160g Tuna Fillet | about 2 cm thick and 3 cm wide 1 tbs Red Pepper | cut in thin strips 1 tbs Fresh Chilly | cut in thin strips 1 Tbs Crushed Cashew Nuts 2 Tbs Alfalfa sprouts 2 Tbs Radish Sprouts 1/2 tsp Black Sesame Seeds Rock Salt | a pinch Chilly Flakes | a pinch Sesame Seed Oil Olive Oil Fresh Basil | approximately one handful METHOD: 1. Pat dry tuna fillet. Drizzle with olive oil and season lightly with rock salt and chilly flakes. Preheat non stick pan to a high heat and add a few drops of olive oil. When the olive oil starts to smoke add seasoned tuna fillet to pan and lower heat to medium high. Cook tuna on one side for 2-3 min, flip and cook for another 2 min. Remove tuna from the pan and put on the side to rest. 2. In the same pan that you were cooking tuna increase heat to high and add good glug of olive oil, add fresh basil, red pepper and fresh chilly and fry until basil leaves become crispy. Turn off the heat and leave everything to rest in the pan. 3. Cut rested cooked tuna fillet in thick slices and arrange on the plate. Dip your finger in sesame seed oil and brush tuna slices. 2 dips should be enough for all slices or otherwise the sesame flavor will be overpowering. Arrange alfalfa sprouts on top of Tuna slices & add crushed cashew nuts. 4. Spoon out fried basil, red pepper and chilly from pan and gently lay on top of tuna slices and alfalfa sprouts. Add one layer of radish sprouts on top and season the whole dish with black sesame seeds.

SWORDFISH IN BLACK CURRY SAUCE
Serves 4 SAUCE INGREDIENTS: 400ml Coconut milk 100ml Good quality fish stock 1 tbs of Red Curry Paste 1 pcs Lemongrass 2 pcs Kaffir lime leave 1 Bunch of fresh basil 1 tsp Chopped ginger 2 pcs Red hot chilies 1 tbs Cuttlefish ink FISH INGREDIENTS: 1 tsp Ground chilly flakes 1 Lime 4 Swordfish fillets (each apx 200g) Pinch of rock salt METHOD: 1. Pour some olive oil into the pan, add all the herbs & spices and sautĂŠ them for few minutes, until all the flavors start to mix. 2. Add fish stock, squid ink and coconut milk and let it simmer for 15-20 min until you get beautiful fragrant semi thick sauce. 3. Pat dry swordfish fillets. Drizzle with olive oil and season lightly with rock salt and chilly flakes. 4. Preheat non stick pan to a high heat and add a few drops of olive oil. When the olive oil starts to smoke add seasoned swordfish fillets to pan and lower heat to medium high. 5. Cook swordfish on one side for 2-3 min, flip and cook for another 2 min. 6. Remove from the pan and put on the side to rest. 7. Add black curry sauce on the plate, put fillets on the top, grate some lime peel on the fillets and squeeze lime juice on top of the fish.

SKATE WINGS, CITRUS BUTTER, CLAMS, BOK CHOY Serves 2 INGREDIENTS 2 Small fresh skate wings, 200g-225g each 2 tbsp Plain flour 75g Unsalted butter Juice of 1 small lemon 1 tbsp dried (or fresh) Orange segments Thyme twig Salt and freshly ground black pepper 100g fresh clams Steamed 300g bok choy for serving urbanlifenstyle.com
METHOD: 1. Rinse the skate wings and use some kitchen paper to dry thoroughly. 2. Place the flour onto a dinner plate and season. 3. Lightly dust both sides of the fish with the flour and shake to remove any excess. Rinse the clams. 4. Melt 25g of the butter in a large frying pan and fry the skate wings on a medium heat for about 3 minutes on each side, until the flesh is firm and white and the skin is golden. Transfer to warm serving plates, cover with foil and keep warm. 5. Return the pan to a medium heat, add the clams and cook until all are opened. 6. Remove the pan from the heat and stir in the lemon juice, orange segments and thyme. 7. Add the butter. Check the seasoning. 8. Pour the butter sauce over the skate, garnish with the clams, steamed bok choy and serve immediately. BON VIVANT

SEA URCHIN, FENNEL CREAM, OSCIETRA CAVIAR Serves 2 SEA URCHIN CUSTARD INGREDIENTS 1 egg 1/3 cup Dashi broth (1 tbs of dashi granules [Japanese stock] with 1/3 cup of hot water) 1 tbs Full cream 1/2 Pack of sea urchin (strained through a sieve) 1/2 tbs of Mirin teaspoon of light soy sauce FENNEL FOAM INGREDIENTS: 250g Fennel, cut in small cubes, keep some nice leaves for garnish 250ml cream 1gm Lecite (or lecithin) 1 tbs Butter
METHOD SEA URCHIN CUSTARD: 1. In a bowl, beat the egg and combine with the dashi broth and cream. Add the Mirin then the teaspoon of light soy. 2. Strain the sea urchin through a fine sieve placed on top of the bowl. Discard any stringy parts. 3. Pass the egg and sea urchin mixture through the fine sieve again. 4. Bring a wok with some water to boil to be used as a steamer. Place a plate on top of the steaming rack. 5. Divide the egg and sea urchin mixture between two ramekins. 6. Remove any foam that may have formed around the rims. 7. Once the water starts to boil, move the wok to the smallest stove top and keep the heat on the lowest setting. 8. Cover the ramekins with some glad wrap. Place on top of the plate and steam for about 25 minutes or until the egg custard wobbles when you move the ramekin. 9. If you use fresh sea urchin the method is the same, just the shell and sea urchin meat need to be cleaned and well rinsed. METHOD FENNEL FOAM: 1. In a saucepan melt butter, add fennel and stir fry for a minute, add cream and bring to the boil, reduce the heat to a simmer. 2. Season with salt and pepper and simmer for about 8 minutes. Using an immersion blender (stick blender), add the lecite and aerate the liquid to create stiff forming bubbles. 3. The bubbles are scooped off and spooned over sea urchin custard on completion. 4. Finish with oscietra caviar and nice fennel leaves.

PASTRY METHOD: 1. Sift the flour. 2, Prepare some lukewarm water. 3. Make a small depression in the centre of the sifted flour, put the salt, oil and one egg into it. 4. Mix with a knife, slowly adding the lukewarm water. 5. Knead the dough until completely smooth. 6. Divide the dough into three equal parts, brush them with oil, cover with a heated bowl and set aside for about half an hour. FILLING METHOD: 1. Mix the fresh cottage cheese, whisked eggs and salt until light and fluffy. 2. Add the flour and mix well. METHOD 1. Flour the table cloth well. Roll out one of the dough pieces with a rolling pin, and continue stretching the dough with floured hands towards the edges of the table until it becomes thin. 2. Cut off any thick edges. Leave the stretched dough to dry for a while. Spread one-third of the prepared filling over one-half of the prepared dough and roll into a strudel. 3. Press the roll every 5 cm with a large wooden spoon handle, and then cut out the Štrukli with the edge of a plate. 4. The edges of the dough must be slightly sealed. Cook the Štrukli in salted boiled water for about 15 min. But do not cook large quantities at the same time. 5. Take the Štrukli out of the water with a slotted spoon and arrange them on a plate. SERVING: 1. Fry the breadcrumbs in oil briefly and pour over the Štrukli. Štruklis prepared in this manner can be served as a separate dish. 2. You can serve cooked Štrukli with breadcrumbs as a dessert but then add less salt in the filling and sprinkle the Štruklis with sugar. 3. Another way of baking Štruklis is once the Štruklis are boiled, arrange them in a deep serving dish, pour over with cooking cream and bake them in an oven (200°c) for about 45 min. Until golden brown glazed.

CAPON DUBROVNIK STYLE SERVED WITH HOMEMADE GNOCCHI SERVES 2 INGREDIENTS: 500g Capon meat 200g Onions 200g Homemade gnocchi 100g Carrots 100g Dried figs 100g Dried apricot 150ml White wine 100ml Capon or chicken stock 50g Raisins 2 tbs Honey Salt and pepper Olive oil METHOD: 1. Fry both sides of the capon in olive oil. 2. Take the capon out of the skillet and set aside. 3. Use that same olive oil to braise the onions together with carrots and dried fruit. 4. When the vegetables are tender and golden, add white wine and braise for another few minutes. 5. Then add the capon, and the capon stock then cook for about 25 min. 6. Finally add the honey and bitter orange marmalade and cook for another 5 minutes. Serve with homemade gnocchi.

DARK CHOCOLATE LAVA CAKE SERVES 4 INGREDIENTS: 200g Dark chocolate 200g Butter 120g Plain flour 4 Eggs 15g Softened butter 15g Sugar 15g Cocoa powder METHOD: 1. Grease the molds with softened butter. 2. Mix the sugar and cocoa powder. 3. Sprinkle the molds with the mixture. Set the molds on a baking tray. 4. Preheat the oven at 190째c. Melt the chocolate and butter on a bain-marie. 5. When the mixture is well blended and smooth, remove it from the heat and gradually whisk in the yolks. Set aside. 6. Put the icing sugar, cocoa powder and flour into another bowl and mix together well, then gently stir the chocolate mixture into it until smooth. Set aside. 7. Beat the eggs whites with a pinch of salt until firm, then gently and gradually add to the chocolate mixture using a wooden spoon. 8. Pour the mixture into the molds. Bake in preheated oven for 9 minutes at 190째c. Serve hot with ice cream and fresh seasonal fruit.
