Karols Korner As we approach 2018, making New Years Resolutions and plans for holidays amongst other things, get fit, stop smoking, etc.. I wonder if the holiday season is really about family and not about the best present list. Health and fitness are important but so are family and loving those around us. What about a New Years Resolution to spend an extra hour a week with a relative or donate an hour a week to a local charity as a volunteer? These gifts are priceless, and mean so much to the recipient, far more than some smellies, or a box of chocolates. We finish the showing year with a fantastic win at LKA (at the NEC) for Wally, with a Best Dog Puppy, his last puppy class as he was 1 year old a few days later. So very pleased with my young man!! History Welcoming in the Old New Year
As we bring in 2018 with WRDVWV Ă&#x20AC;UHZRUNV DQG D URXVLQJ UHQGLWLRQ RI $XOG Lang Syne, itâ&#x20AC;&#x2122;s perhaps worth remembering that 1HZ <HDU KDV EHHQ D ELW RI D PRYHDEOH IHDVW It is not written in stone that New Year be celebrated on 1st January. With the now wellknown and colourful carnival that takes place in London, most of us are familiar with the Chinese New Year that takes place a few weeks after our own. But did you know that some people in Europe also mark the start of New Year a little later than we do?

Today, in common with the rest of Europe and most of the world, we all use the Gregorian calendar originally set up by Pope Gregory XIII in 1582. Europe universally adopted this calendar in the 18th century, although Russia was behind, changing over to it in 1918 after the Bolshevik Revolution. Previously, the older Julian calendar, introduced by Julius Caesar in 46BC, had been observed. According to this calendar, New Yearâ&#x20AC;&#x2122;s Day falls in the middle of January, after the end of the Advent fast. The Russian Orthodox Church continues to abide by the Julian calendar and although it is not recognised as a national holiday, the â&#x20AC;&#x2DC;Old New Yearâ&#x20AC;&#x2122; is still celebrated by Orthodox Christians in central and eastern Europe on 13th and 14th January. These countries include
Russia, Ukraine, Belarus, Bosnia and Herzegovina, Georgia, Uzbekistan, 0RQWHQHJUR $]HUEDLMDQ 0ROGRYD 0DFHGRQLD DQG Serbia (as well as in Greece), comprising Orthodox Christians across countries that together once formed the USSR, where celebrating the Old New Year had previously been banned by the Communist regime. 14th January also coincides with St Basilâ&#x20AC;&#x2122;s Day, and the festival is marked with feasting, ERQĂ&#x20AC;UHV DQG Ă&#x20AC;UHZRUNV ,Q 0DFHGRQLD SHRSOH JDWKHU outside their houses to share food and drink and to sing traditional songs. It is customary to eat unleavened (pita) bread with a coin inside (or dumplings with a hidden FKDUP LQ 5XVVLD 0XFK like our Christmas pudding WUDGLWLRQ ZKRHYHU Ă&#x20AC;QGV WKH coin will have good luck for the New Year. And in Serbia, WKH &KXUFK SXWV RQ Ă&#x20AC;UHZRUN displays. The customary feast includes a range of pork dishes in the hope of securing a good farming year, the traditional St Basil celebratory dinner being a whole roasted pig. Another St Basilâ&#x20AC;&#x2122;s day morning tradition has been to eat ceremonial porridge that has been cooked overnight by the oldest woman in the house. The porridge would be prepared and put into the oven in the early hours of New Yearâ&#x20AC;&#x2122;s Eve (13th), and the condition of the porridge the following morning would signify

A national holiday in China, celebrations feature processions with drums, &KLQHVH GUDJRQV Ă&#x20AC;UHFUDFNHUV to ward off evil spirits, and decorations in signature red for good luck, including banners and Chinese lanterns.

Observing New Year in the middle of January is not uncommon and other countries across the world have their equivalents. I am often asked what the benefit of a financial adviser is. I often explain that financial advisers try to help their clients achieve their dreams – so we try to deal in good news, not manage bad news. I would always recommend checking that the firm of financial advisers and the advisor themselves are listed on the Financial Conduct Authority’s
register of approved persons – that way you know you are dealing with a reputable person, subject to a high standard of regulation and that you will receive protection if you need it. If you want equity release or long term care advice for example expect the adviser you are dealing with to hold the right qualifications if they are advising you. Respectable advisers are always able to prove their qualifications – ask
them to do it! MOUSSAKA RECIPE Moussaka is possibly one of the best known Greek dishes, and for good cause – it is delicious! It involves a lot of work, but the end result is worth it. You’ll feel proud of your work and rewarded once your family and friends enjoy your moussaka with a fresh salad and a glass of dry red wine. Serves 8 INGREDIENTS Mince meat sauce: • 1 big onion finely chopped • 2 tbsps olive oil • 1 kg minced meat (pork or pork/beef or lamb) • 1 tin chopped tomatoes or 1 glass grated tomatoes • 1 glass red or white dry wine (optional) • Salt and pepper to taste • 1 tsp oregano • Half bunch finely chopped parsley (one cupful) Bechamel sauce: • 175g butter • A few tbsps flour (just enough to absorb all the butter) • Milk as needed • 1 cup of Halloumi cheese grated or a mixture of other cheeses • ½ tsp grated nutmeg Vegetables: • 4 large aubergines • 4 courgettes • 4 potatoes • 1 ½ – 2 cups corn or sunflower oil METHOD: For the meat sauce: • Heat two tablespoons of olive oil in a frying pan and sauté onions. • Add the minced meat until brown, for around 10 to 15 minutes. • If you want to add wine now is the time to pour it in. • Add the tomatoes, salt, pepper and oregano and stir well. • Add the garlic, cinnamon, bay leaves if using. • Cover and cook for 20 minutes to make a moist sauce, then remove lid and cook for a further 10 minutes (don’t let the sauce get too dry) • Take off the heat and add the parsley, mix well and put aside 14
until required. • Remember! Parsley in Greek dishes with such sauces is always added last and after the heat is turned off. For the Béchamel sauce: • Melt butter in a saucepan. • Add flour, stirring with a wooden spoon so it absorbs all butter. • Take off heat. • Slowly add the milk, stirring constantly and quickly. • When a smooth custard-like sauce is achieved, put on heat again • Carry on stirring/whisking, adding more milk as needed • Your béchamel should be smooth and thick but not stiff • When the sauce is ready, add 3-4 tbsps of grated cheese and grated nutmeg and mix well. For the vegetables: • Peel and wash potatoes. • Wash aubergines and courgettes and cut off stems and tips. • You can peel your aubergines a bit but not completely. • Cut aubergines, courgettes and potatoes lengthwise into large 5mm slices • Place aubergine slices in salty
water for an hour. • Rinse well under cold water in a colander. • Dry each slice very well with kitchen paper. (If one drop of water escapes from the aubergine when frying a splash can burn you!) • Heat up oil in a wide frying pan. You should have enough oil to cover vegetables when frying them. • Fry in batches in hot oil until lightly brown. • Drain from excess oil by placing all fried vegetables on a tray lined with a double layer of kitchen paper Finally: • Place a layer of vegetables on a lightly oiled baking dish or pyrex dish – first the aubergines, then courgettes, lastly potatoes. • Spread meat sauce over your vegetables evenly. • Cover with another layer of vegetables or whatever vegetables you are left with. • Pour béchamel sauce over the top. • Prick your moussaka with a fork all over to allow the béchamel to run a bit inside the vegetables and the meat sauce. • Sprinkle grated cheese on top. • Sprinkle ground nutmeg on top (or ground cloves or ground cinnamon). • Bake in a pre-heated oven (180 to 200) until golden brown (45 mins – 1 hour) • If your dish is full to the rim then place a baking sheet underneath to prevent spills in the oven.

Sleep: Vital for Good Mental and Physical Health problems if youâ&#x20AC;&#x2122;re overweight.
Weâ&#x20AC;&#x2122;ve known, vaguely, for a long time that losing sleep can make us struggle to concentrate and keep smiling. Even Shakespeare knew the value of sleep, describing it as the â&#x20AC;&#x2DC;balm of hurt mindsâ&#x20AC;&#x2122; and the â&#x20AC;&#x2DC;chief nourisher in lifeâ&#x20AC;&#x2122;s feastâ&#x20AC;&#x2122;. But research is increasingly proving that a lack of good quality sleep can seriously damage our physical and mental health. More than 20 large-scale studies have proved conclusively that the shorter your sleep, the shorter your life - and itâ&#x20AC;&#x2122;s not hard to see whyâ&#x20AC;Ś HOW A LACK OF SLEEP AFFECTS PHYSICAL HEALTH Weight gain and obesity Research shows that LQVXIĂ&#x20AC;FLHQW VOHHS LV D IDFWRU LQ weight gain and obesity. This is probably because sleep deprivation reduces levels of leptin (the hunger-inhibiting â&#x20AC;&#x2DC;youâ&#x20AC;&#x2122;re fullâ&#x20AC;&#x2122; hormone) and increases levels of ghrelin (the hunger-stimulating hormone). Itâ&#x20AC;&#x2122;s a vicious circle, too, as youâ&#x20AC;&#x2122;re more prone to sleep 20
Increased diabetes risk People who usually sleep OHVV WKDQ Ă&#x20AC;YH hours a night, particularly those lacking deep or â&#x20AC;&#x2DC;slow-waveâ&#x20AC;&#x2122; sleep, are at increased risk of developing diabetes. Their body processes glucose differently, reacting as though suffering from insulin resistance (a condition in which your body doesnâ&#x20AC;&#x2122;t react properly to insulin). Tiredness causes you to secrete more stress hormones (e.g. cortisol), making it harder for insulin to function correctly and leaving excess glucose in your bloodstream. Increased cancer risk Professor Matthew Walker, author of Why We Sleep, says that after just one night of RQO\ IRXU RU Ă&#x20AC;YH KRXUV¡ VOHHS your natural cancer-attacking cells drop by 70%. US researchers have discovered that when people work nights, they produce 80% less of a chemical which is a by-product of DNA tissue repair, indicating that their bodies arenâ&#x20AC;&#x2122;t carrying out the crucial cell restoration which should happen naturally overnight. Increased risk of Alzheimerâ&#x20AC;&#x2122;s Disease /RQJ WHUP LQVXIĂ&#x20AC;FLHQW VOHHS

Increased risk of heart disease, heart attack and stroke Persistent sleep deprivation is associated with increased heart rate and blood pressure and KLJKHU OHYHOV RI LQĂ DPPDWLRQ which can all put extra strain on your heart. Over-45s who sleep less than six hours a night are 200% more likely to have a heart attack or stroke. Weakened immunity Sleep deprivation damages production and distribution of immune factors. Reduced fertility and libido Research has revealed that men and women who donâ&#x20AC;&#x2122;t get enough quality sleep have lower libido and less of an interest in sex. This may partly be linked to sleep apnoea, which disturbs sleep, as men who suffer from sleep apnoea also tend to have lower testosterone levels, which can lower libido. Regular sleep disruption can also reduce the secretion of reproductive hormones.

Even with the best of intentions, itâ&#x20AC;&#x2122;s almost impossible to avoid leaving a carbon footprint during your lifetime. Use any form of motor transport, throw away an item GHVWLQHG IRU ODQGĂ&#x20AC;OO RU VZLWFK on your heating on a cold day and by these simple actions you will be contributing to environmental pollution and - it is widely believed - climate change. â&#x20AC;&#x153;But itâ&#x20AC;&#x2122;ll all stop when Iâ&#x20AC;&#x2122;m dead!â&#x20AC;? I hear you say. Unfortunately, it doesnâ&#x20AC;&#x2122;t work OLNH WKDW 7KHUH LV RQH Ă&#x20AC;QDO KXUGOH WR MXPS EHIRUH \RX FDQ truly claim to have passed beyond the point of affecting the environment, and thatâ&#x20AC;&#x2122;s the way you choose to dispose of your earthly remains. In the UK today, cremation is probably the most common form of disposal. It began to win favour in the crowded towns and cities of the Victorian era when one of the queenâ&#x20AC;&#x2122;s physicians, Sir Henry Thompson, stated that it was â&#x20AC;&#x153;becoming a necessary sanitary precaution against the propagation of disease among a population daily growing larger in relation to the area it 36
occupiedâ&#x20AC;?. He also believed that cremation would prevent the risk of premature burial, make funerals less costly and protect mourners from having to stand by the graveside in bad weather! Last year a survey carried out by the government website YouGov discovered that while 17% of people in the UK want to be buried when they die, almost six out of ten would prefer to be cremated. It takes a huge amount of energy to reduce a human body to ashes, and crematoria use industrial furnaces capable of generating temperatures of 870-980 °C (1,600-1,800 °F). Despite the generation of so much heat, it can take between one and three hours to complete a cremation. As well as using energy, the process also releases toxins in the form of gases, including carbon monoxide, nitrogen oxides, hydrogen chloride, dioxins, furans and formaldehyde. Despite strict Ă&#x20AC;OWUDWLRQ UXOHV D VPDOO DPRXQW of mercury also manages to escape into the earthâ&#x20AC;&#x2122;s atmosphere. In the UK, 16% of all mercury pollution results
from the cremation process. Most people assume that burials are less likely to damage the environment and itâ&#x20AC;&#x2122;s true that they can be more eco-friendly, provided WKH FRIĂ&#x20AC;Q DQG HYHU\WKLQJ inside is made of natural materials. However, some of the processes involved in burial can release damaging chemicals; for example, HPEDOPLQJ Ă XLG D UHFRJQLVHG carcinogen - will eventually OHDFK LQWR WKH VRLO ZKLOH FRIĂ&#x20AC;QV made of hardwood take a long time to break down and DQ\ SODVWLF Ă&#x20AC;WWLQJV DWWDFKHG will probably release toxins as they degrade. Thatâ&#x20AC;&#x2122;s not to mention any concrete or steel used in the creation of burial vaults, nor the upkeep of burial grounds, where energy and resources are required to maintain the lawns, pathways DQG Ă RZHUEHGV Less maintenance is required if bodies are interred in a natural environment, and many woodland or meadow burial VLWHV RIIHU WKH DGGHG EHQHĂ&#x20AC;W RI a lovely view, providing tranquil surroundings for visitors to the grave. Use Locally - Issue 14 January 2018 to create fewer environmental hazards, it is not for everyone: once the body is interred, natural processes get to work, gradually breaking it down until only the bones remain. Not all of us like the thought of allowing our bodies to degrade in this way, but recently families in the USA and Canada have been able to sign up to methods of disposal that offer an alternative to conventional burial or cremation. Alkaline hydrolysis - known as Resomation and often dubbed â&#x20AC;&#x153;green cremationâ&#x20AC;? - is a chemical process similar to natural anaerobic digestion (a process already used in medical clinics). The body is placed in water inside an aluminium container and the soft tissue is then broken down
into a non-toxic liquid, using a combination of potassium hydroxide, heat and pressure. :KLOH Ă DPH EDVHG FUHPDWLRQ reduces the body to a relatively small amount of ashes, this method leaves the skeleton, as well as any medical implants, completely intact. The bones can subsequently be buried, or ground to a powder similar to cremated ashes. For many the idea of being immersed in a water-based solution is preferable to conventional cremation and there are indications that the technique may soon become available in the UK, although currently there are only around 14 funeral directors in the world offering this â&#x20AC;&#x2DC;greenâ&#x20AC;&#x2122; option. Further â&#x20AC;&#x2DC;greenâ&#x20AC;&#x2122; methods in the pipeline are Cryomation
- where a body is freeze-dried in liquid nitrogen then broken up into granules for burial - and ecoLegacy, where the body is cooled, then reduced to powder using pressure waves. Just 5% of the respondents in YouGovâ&#x20AC;&#x2122;s survey said they were looking for â&#x20AC;&#x153;something elseâ&#x20AC;? when it came to the disposal of their mortal UHPDLQV VR LW¡V GLIĂ&#x20AC;FXOW WR predict what the level of takeup will be when all these new options become available in the UK. Although the British public may initially be slow to break with established tradition, the introduction of â&#x20AC;&#x2DC;greenerâ&#x20AC;&#x2122; forms of burial and cremation will at least provide a wider choice for those of us seeking to leave the lightest possible carbon footprint on our planet.

Stored properly, it will last much longer and youâ&#x20AC;&#x2122;ll save yourself a fortune. GROW YOUR OWN This neednâ&#x20AC;&#x2122;t mean total selfVXIĂ&#x20AC;FLHQF\ IRU WZHOYH PRQWKV of the year, but aim to grow more of your own fresh fruit, vegetables and herbs. It might mean buying yourself a couple RI WRPDWR SODQWV IRU WKH Ă&#x20AC;UVW time, or creating a small herb planter, or it could be larger scale and more complex plans if youâ&#x20AC;&#x2122;re already big on grow-your-own...but increase what you do! COMPOST MORE It is easy to put things that should be composted in the waste bin, but once you get in the swing of it composting will soon become second nature. Make it easier to compost kitchen waste by putting a
container in the kitchen for vegetable peelings, apple cores and so forth. Empty it regularly and there wonâ&#x20AC;&#x2122;t be problems with smells. The amount of extra compost youâ&#x20AC;&#x2122;ll generate will be well worthwhile. Many local councils offer a really good deal on basic plastic composters. USE THAT SPACE! If you have a cold frame, porch, conservatory or greenhouse, put it to use! Far too many of these potentially great gardening structures are left abandoned for much of the year, perhaps just being graced with a handful of tomatoes for the summer months. Any sort of protected growing area has the ability to increase what you can grow and when you can grow it. So raise your own VXPPHU Ă RZHUV LQ LW IRUFH some bulbs in it in the winter or make off-season sowings of salad cropsâ&#x20AC;Śmake it work, but whatever you do, donâ&#x20AC;&#x2122;t use it as the family rubbish dump! MULCH MORE Make use of any organic matter that is bulky â&#x20AC;&#x201C; mulch with it. Whether it is well-rotted manure, garden compost, leaf mould, or the used compost from a seasonal bedding display or growing bag, make it into mulch! Applied a couple of inches or more deep over the soil surface, a mulch like this

Happy New Year! Now that 2018 is here, what are you going to resolve to do (or not do!) in the year ahead? I could write a book about what I need to do in the garden, but like those non-garden resolutions, Iâ&#x20AC;&#x2122;ve long since realised that it is best to stick to things youâ&#x20AC;&#x2122;ve got at least some chance of achieving! So Iâ&#x20AC;&#x2122;ll probably not say Iâ&#x20AC;&#x2122;ll re-turf the lawn or create the much wished for wildlife-friendly pondâ&#x20AC;ŚIâ&#x20AC;&#x2122;ve been planning both of these for years with no sign of progress! RE-CYCLE POTS Iâ&#x20AC;&#x2122;m sure that there is virtually no need to buy another plastic plant pot...and Iâ&#x20AC;&#x2122;m sure that ODQGĂ&#x20AC;OO VLWHV ZRXOG EUHDWKH a sigh of relief if we could all stick to this resolution: save all the pots you get when you buy new plants, and any plugstyle trays that house bedding plants. Rinse them out and let them dry off, and next time you need a pot there will already be one there, free of charge as well as saving you a trip to the local garden centre. Pots stored away from sunlight will last much longer as they will be protected from the harmful rays of the sun which make many types of plastic disintegrate. COVER IT UP! Make a resolution to dry off and cover up garden furniture once the summer is over. Left

McLaren 720S by James Baggot
Iâ&#x20AC;&#x2122;ve just exited a roundabout â&#x20AC;&#x201C; one Iâ&#x20AC;&#x2122;ve left many times before in a variety of cars â&#x20AC;&#x201C; and Iâ&#x20AC;&#x2122;m heading down a familiar straight; I know it leads to a 90 degree right and yet more well-sighted, beautifullysurfaced road, but this time itâ&#x20AC;&#x2122;s different. Iâ&#x20AC;&#x2122;m sat behind an exquisitelycrafted steering wheel, in a plum pudding purple leather cabin, and things are happening faster than theyâ&#x20AC;&#x2122;ve ever happened before. Behind me, a 4.0-litre twin-turbo V8 is converting 710bhp into forward thrust that has to be experienced to be believed. Just a look at the numbers gives an indication of what the new darling of Woking has in its arsenal: 60mph in 2.8 seconds, 124mph in 7.8 seconds and 186mph in 21.4 seconds. Thatâ&#x20AC;&#x2122;s a lot of numbers that need perspective. Take the 124mph time as just one example: thatâ&#x20AC;&#x2122;s just a few tenths slower than a Volkswagen Golf GTD manages to hit 60mph. In the same time, the 720S is doing double that speed. Double. :KLOH WKRVH Ă&#x20AC;JXUHV JLYH \RX 44
some reference, what they canâ&#x20AC;&#x2122;t explain is the feeling that translates to when youâ&#x20AC;&#x2122;re sat behind the wheel. The g-force such explosive acceleration exerts on your body under IRRW WR WKH Ă RRU SRZHU LV like a roller coaster, like free falling from a plane as the world becomes a blur in your peripheral vision. Braking is sharp, shockingly sudden and painfully precise. The McLaren takes countryside sweepers, motorway miles and quick changes in direction and road surface in its stride. Itâ&#x20AC;&#x2122;s incredibly capable and a huge step on from the 650S it replaces. Steering is pinpoint direct, well weighted and trembling with pins and needle-like feedback. The seven-speed automatic JHDUER[ ULĂ HV WKURXJK JHDUV like a sharp shooter - OK, maybe at load speeds it can be a bit grabby as shunt through the transmission is felt in the cabin, but at speed, in maximum attack, itâ&#x20AC;&#x2122;s rapid, slick and enjoyable. The rocker mechanism to the paddles is a joy too. Pull one and you can feel the other move away
from you, and vice versa. Itâ&#x20AC;&#x2122;s a classy touch. Unfortunately itâ&#x20AC;&#x2122;s not all good news. The electronics, while much better and easier to use than the cars they have featured in before, are still buggy. Our test car warned us of impending suspension IDLOXUH ZKHQ LW ZDV Ă&#x20AC;QH DQG of power steering catastrophe, again when there was nothing wrong. You wouldnâ&#x20AC;&#x2122;t forgive that on a car costing a tenth of a price, let alone one knocking on a quarter of a million pounds. The second disappointment is the noise. Itâ&#x20AC;&#x2122;s all sucking, blowing and wind roar - thereâ&#x20AC;&#x2122;s no start up, high speed thrum, or deep bellowing exhaust note. Just a rush of air intake and utterly ballistic forward motion. OK, itâ&#x20AC;&#x2122;s no Tesla, all silent propulsion, but then at the same time itâ&#x20AC;&#x2122;s no rival for Ferrariâ&#x20AC;&#x2122;s now equally-muted, but still much better, 488 soundtrack. Thankfully, the out-of-thisworld looks make up for some of those foibles. The dramatic doors stop petrol station punters in their tracks as you

arch them skyward. It can feel like you’ve live-paused passers-by in a TV show, their mouths slowly drifting towards WKH ÁRRU DV WKH\ ZDNH EDFN up. Rarely does a car send pedestrians into a dreamlike state quite like this McLaren. Huge air scoops, slits and slants in the bodywork add to the visual drama, while also playing an important part in directing the huge gulps of air the revised power plant needs to keep it cool. Sadly McLaren still has a lot of work to do in wiggling its way into the public consciousness - as much as those we encountered fell instantly in love with it, few knew what brand it belonged to, let alone which model it was.
But back to what the McLaren does best. I’ve got dials turned to slippery sport mode, and Wales to cross. The rain is just starting to cover the road with a glistening dew-like coating and the 720S is twitching in the bends, squirming as it hunts for traction. It’s palmdampening, but exciting, and about to create a journey that’ll be indelibly marked on my memory. This McLaren may not be quite perfect, but my word is it getting incredibly close.
