Nature has always inspired me, and there is still so much we don’t understand about the natural world. This mystery and beauty have driven my career choices, leading me to work in natural surroundings - as a farmer, wildlife artist, lecturer, game reserve manager and now, an environmental offcer. I love challenges, and developing an Estate where humans and nature co-exist harmoniously is one of the most rewarding yet diffcult tasks I’ve undertaken. However, the positive reactions from our residents to the work we do make it incredibly fulflling.

Towards Indoor Rowing Glory
A team of athletes, guided by John McGrath, Founder of FitLife at The Yard Gym, is preparing to compete at the upcoming World Indoor Rowing Championships.
Rocco Bosman van Rooyen is a two-time Olympian, four-time and current South African javelin champion with a personal best of 87.62 metres and is the South African indoor rowing champion.
Benjamin Coetsee is a medical doctor with an additional BSc in Sports Science. Passionate about elite health and wellness, he boasts a number of impressive athletic achievements, including being a South African powerlifting champion with records in the squat and deadlift at 300kgs, winning several CrossFit competitions, and completing multiple trail and road marathons.
Kyle Schoonbee is a heavyweight rowing stalwart who represented South Africa at the Olympic Games. Since 2016, he has accumulated numerous medals at World Championships in both U23 and senior levels. He holds many of South Africa’s national records, both on the water and indoors. Strength and power have always been his forte, allowing him to tackle the challenges of a tough 2000m race and come out ahead.
Jean-Jacques Rossouw’s talent was discovered during a Wellness Day at The Yard Gym and, under John’s mentorship, became the 500m World Indoor Rowing Champion in the U23 category. His impressive sporting accomplishments extend beyond rowing; he excelled in discus, representing his province with distinction, played a pivotal role in rugby as a key member of the Paarl Gimnasium 1st XV and became a standout player for Stellenbosch University’s 1st Golf Team, ultimately rising to the position of team captain.

Casting Lines and Catching Tips
Following two weeks of relentless downpours, the rain stopped in time for a fy fshing masterclass on the banks of Lake Simone. The event, led by fy fshing expert Pierre Joubert from Stream and Sea alongside fy casting instructor Andy van der Werff, drew an enthusiastic crowd of 41 residents. Participants ranged from complete novices to seasoned anglers, and it was wonderful to see a number of youngsters in attendance. Pierre introduced the concept of fy fshing and Andy gave a demonstration on fy casting, after which attendees were invited to try casting using borrowed rods or their own, under the watchful guidance of Pierre and Andy. While the instructors’ time with each participant was brief due to the large turnout, future sessions will ensure more personalised instruction. Plans for future clinics are underway to provide even deeper insights and more hands-on guidance, confrming to sceptics that yes, you can indeed catch a wide array of fsh using a fy rod.

Motherdough, a 100% natural fermentation bakery based in Franschhoek, has opened a new outlet within Sela Vie at The Yard Wellness Centre. Known for its delicious loaves of bread, sweet and savoury pastries and cakes, Motherdough was founded during the COVID-19 pandemic and quickly became a support for bakers across South Africa, selling sourdough starters and establishing a community of home bakers dedicated to creating real bread.
Everything made by Motherdough begins with ‘Alfonsina’, a sourdough starter frst created in 1919 in Italy. The bakery’s commitment to quality and sustainability is evident in its ingredient selection, which includes local, stone ground, GMO-free four from biodynamic farms and imported Italian four. Dairy products come from pasture-fed Jersey cattle in the Cape Winelands, while fresh milk cheeses are sourced from award-winning Italian makers in Somerset West.

Crafting Comfort Food
Chef Melissa Bird's journey to becoming the Head Chef at the Polo Pavilion by Back’s is a testament to her unwavering determination. Her story, which started with a career as a legal secretary, is a shining example of her love for cooking. Despite the societal norms that once made being a chef in South Africa, an unlikely career path for women, Melissa spent fve years in offce jobs and two years in the United Kingdom before fnally pursuing her true passion.
In 1999, Melissa obtained a City & Guilds qualifcation, marking the beginning of her culinary adventure. She started as part of the opening team for Grand West Casino's banqueting department and then moved to the Winelands, where her career fourished across various renowned restaurants. She honed her skills in Franschhoek for over a decade at prestigious establishments, including Haute Cabriere, Rickety Bridge and Glenwood.
In 2018, Chef Melissa joined Back’s Restaurant and Deli, collaborating with Raphael Chevalier-Bak for four years to create menus rich in comfort food and favours. She then left for two years to pursue an Executive Chef position before seizing the opportunity to lead the kitchen at the Polo Pavilion by Back’s, where she now serves as Head Chef.

WINE OF THE MONTH
POLO CLUB CHARDONNAY PINOT NOIR 2023
The emphasis of this wine is on mouthfeel. It is well balanced, with an excellent structure, framed by an elegant finish and textured aftertaste. What sets it apart are the prominent aromas of red fruit, raspberry, and frangipane, balanced by soft yellow fruit such as apple and warm citrus. This unique combination makes it a versatile companion to chicken, duck, fish, Mediterranean cuisine, and soft cheeses such as brie, camembert, and mozzarella. The Chardonnay grapes originate from Durbanville, and the Pinot Noir grapes are from Elgin. Vinified separately, the two varieties were bunch-sorted and whole-bunch-pressed.
FIRE-ROASTED AUBERGINE COATED WITH A PARMESAN AND THYME CRUST SERVED WITH A WHITE WINE AND SAGE CREAM SAUCE
INGREDIENTS
1 large aubergine
Pasta of your choice
Olive oil for frying
FOR THE CRUST
100g breadcrumbs (panko or regular breadcrumbs)
30g fnely grated parmesan
10g fresh thyme
1 egg whisked
Flour for dusting
FOR THE SAUCE
250ml cream
100ml white wine
30g fnely chopped onion
1 clove of garlic fnely chopped
5g sage thinly sliced (keep a few leaves whole for the garnish)
30g fnely grated parmesan
Salt and pepper for seasoning
METHOD
• Place the aubergine on a braai or a gas stove with an oven grid and char the aubergine until soft but still frm to cut.
• Mix the breadcrumbs, thyme and parmesan. To make the sauce, fry the onion and garlic until they are translucent. Add the wine to the pot and reduce by half. Add the cream and reduce. Once a little thicker, add the parmesan and seasoning. Take off the heat, allow it to cool to room temperature, and then add the sage.
• Cut the aubergine in half, dust it with four, and then dip it in the whisked egg, coating the entire half. Then, place it in the mixture of breadcrumbs, thyme and parmesan.
Heat a pan with oil and place the crusted aubergine in it. Fry on one side until golden, then fip and fry until golden. Add the extra sage you put aside and fry until crispy.
• Cook your pasta, and once al dente, heat your sauce and add.
Plate the pasta and sauce in your bowl or plate. If you want extra parmesan, sprinkle more over your plated pasta.
Place the crusted aubergine on top of your pasta, garnish with the crispy sage, and enjoy.

Grey Gladiators
The large grey mongoose, scientifcally known as Herpestes ichneumon, and as a grysmuishond in Afrikaans, is a fascinating member of the mongoose family. Predominantly found in various parts of Africa and southern Europe, it inhabits landscapes that includes woodlands, savannas and semiarid regions. Its adaptable nature allows it to thrive in diverse habitats, where it plays a vital role in the ecosystem as both predator and scavenger. Their diet varies based on availability, showcasing their opportunistic feeding behaviour. Their slender bodies and sharp senses make them agile climbers and effective predators, able to pursue prey both on land and in water. They are generally solitary animals, though they may form small family groups or pairs during mating and raising young. Breeding typically occurs during the rainy season, with females giving birth to litters of up to four young after a gestation period of around two months. Despite their name, large grey mongooses exhibit considerable variation in colouration across their range, ranging from greyishbrown to reddish-brown.
Large grey mongooses measure 50 to 70 centimetres in body length, with an additional 30 to 45 centimetres for their tails.
Their diet includes small mammals, birds, insects, eggs and fruits. They are skilled climbers and swimmers, using their agility to pursue prey and evade predators.
During the day, large grey mongooses are often active, foraging for food and patrolling their territories.
They are known for their curiosity and boldness, confdently exploring their surroundings.
Their keen senses of smell and hearing, aid in hunting and avoiding predators, making them effective survivors in diverse environments.
While not currently endangered, they do face threats from habitat loss and human activities.

Bee Inspired
The humble honeybee is one of those insects that people either admire or fear. Despite the potential for allergic reactions from their stings, the Cape honeybee is notably docile, preferring solitude over confrontation. Delving deeper into the world of these remarkable insects reveals why they are not only crucial for human existence but have also thrived for over 80 million years with an unchanging ethos.
Every morning, scout bees are sent on a mission to fnd fowering plants. Upon their return, they perform a ‘dance’ consisting of a series of fgure-eight movements and abdominal waggles. This ‘dance’ communicates to their fellow workers the direction and distance to the food source.
Operating as a seamless collective, the bee colony or hive assigns roles based on age and gender. Tasks are distributed among outside workers who gather nectar and pollen, and inside workers who maintain the hive, nurture the young, and protect the colony. At the heart of this intricate system is the queen, pivotal to the hive’s reproduction. The colony functions like a single organism, where each bee is an essential ‘cell’ integral to the whole.
A honeybee can fy at speeds of up to 24km/h and venture as far as 5km in search of nectar and pollen. Nectar is stored in a specialised stomach, while pollen adheres to distinct ‘baskets’ on their legs. Considering it takes about four million fower visits to produce just one kilogram of honey, the scale of their labor is monumental. This role is crucial, as bees pollinate about 75% of our major crops, underscoring that without them, the threat of global famine looms large.

We are still navigating a challenging path, yet we remain committed to Mandela’s ideal of “a democratic and free society in which all persons live together in harmony and with equal opportunities.” This commitment was vividly displayed on July 18th when Val de Vie Estate volunteers, over 60 children from creches in Groendal, Langrug and Dahlubuhle, representatives from Brenthurst Wealth, Hope Through Action staff and @HomeLearning YeBoneers came together for 67 minutes of service to the community.
‘When can we come back again?’
As we work to create light for others, we naturally light our own way. Our volunteers all commented on how much they enjoyed the day and pledged their support for next year. Brenthurst Wealth, returning for their second year, generously assembled 60 goodie bags flled with treats and juice for the children. They also provided 60 balls, which quickly became a highlight of the day. The Val de Vie Foundation is immensely thankful for their continued sponsorship and dedication to community service.

The most fun ever!
The fun included a host of activities ranging from building Lego to colouring in and for those warmed up by the ice-breakers, egg and spoon and sack races. The egg and spoon suited the most diligent children, who worked very hard to ensure they did not drop the egg. And for those who chose the sack race, if they could not do it themselves, able volunteers were on standby to carry the children over the fnish line.
Hearty soup on a rainy day
While most residents were having fun with the children, two of our newest residents, sisters Aoife Coetzee and Niamh Ward, were working hard to prepare vegetables from the Wellness Farm for 150 local families. From farm to spoon, our residents picked and prepared this hearty, nutritious soup – a true labour of love.
A heartfelt thank you
From the Val de Vie Foundation, a huge vote of thanks to the 18 residents, Brenthurst Wealth employees and members of the Val de Vie Estate marketing team who braved the cold and rain to serve with loving kindness. A special thank you also goes to the Estate’s photographers, Daniel Saaiman and Phillip van Dyk, who selfessly give their time to bring you the pictures that tell the story of the work of the Foundation.
Getting to know our Benefciaries
The Val de Vie Foundation, through our implementation partner Nation Builder, is contributing R1 750 000 to 10 benefciaries in the Paarl/Franschhoek Valley. In this and future editions of the Grapevine, we will be sharing further information about these worthy benefciaries.
Rusthof Old Age Home NPC, Klein-Nederburg, Paarl Rusthof Old Age Home is owned by the Department of Social Development (DSD). The residents fund their accommodation with their monthly SASSA Older Persons Grant of R2 200. As this stipend does not cover all the home's running costs, our fnancial and in-kind support is truly transformative to these frail, elderly residents. Our relationship with Rusthof Old Age Home NPC is not a recent one. The Val de Vie Foundation has been supporting the home for a number of years. It all began with a Mandela Day visit and a donation of coffee, cake and blankets pre-COVID-19. As an added surprise, the Marketing Director of the Val de Vie Group and Val de Vie Foundation trustee, Ryk Neethling, arranged for Siya Kolisi, Eben Etzebeth, Frans Malherbe, Zelda La Grange and Karen Zoid to be present at the visit. Little did we all know that these rugby heroes would go on to win two World Cups for South Africa! It was a memorable day for everyone involved, with Siya, Eben, Frans and Ryk serving the awestruck residents and staff.
Growing their Own
This year marks our frst year of providing fnancial support to Rusthof Old Age Home NPC. They are now guaranteed fnancial continuity from the Val de Vie Foundation and a deeper relationship with our residents. In July, the Foundation visited the home with a donation of vegetable seedlings, such as carrots, turnips, spinach, cabbage, beans, beetroot, and compost, so that Rusthof resident Arthur Seale could start a garden. Arthur beamed with pride and was excited to begin this important project – his love for gardening blossomed at a young age, helping his father plant fowers and vegetables. This initiative will ensure a regular supply of fresh produce to the home and bring a sense of accomplishment and joy to Arthur and his fellow residents.
Alvira’s
Vision
Back in 2004, Alvira Kleinhans had a vision. Her parents were ill, and nowhere in Paarl East provided inexpensive care for those in need. As a clinical nurse practitioner with experience in quality assurance and labour relations in the Cape Winelands District Municipality, she decided to take a leap of faith, leaving her secure job in government to join Rusthof Old Age Home NPC. Twenty years later, the home accommodates 104 residents and remains the only facility in the area. Alvira also coordinated and managed 15 years of community-based home care plus a 14-bed intermediate care facility for the Department of Health. She is a true angel of mercy, dedicating her life to providing love and support for the vulnerable elderly with nowhere else to go. Her request – please can our residents donate dominoes and sets of playing cards to help keep those at the home entertained.
