For all its connectivity, our modern world can be awfully lonely. A stop by any trendy coffee shop can be low-key Orwellian, with nearly as many black screens as lattes. Duffy’s Restaurant in Broken Arrow provides a much-needed respite for the modern soul in a laid-back atmosphere where everyone is a neighbor or friend and the definition of a good meal includes “made from scratch with love.” For many, the diner experience is about so much

more than food. It’s the place where everyone knows each other. Like any diner worth its salt, Duffy’s offers the same made-from-scratch pancakes they’ve served for more than three decades, fresh battered chicken fried steak, and staples like home cooked roast beef and meatloaf. Of course, it wouldn’t be a true diner without all-day breakfast. But for many locals, the food is almost a formality. The bright, welcoming dining space, equipped with requisite cozy booths and

cheery walls, is a home-awayfrom-home to many. Owner Eddie Chamat couldn’t love his job more. He smiled as he extolled the family atmosphere. “We are now serving our fourth generation of regulars,” he bragged. It’s not uncommon to see guests laughing and joking with each other and staff on any day. Over the 32 years of its existence, Duffy’s has come to be something of an anchor in Broken Arrow community life, with Eddie rarely passing up an opportunity to be involved. A gentle man with a kind demeanor, he shrugged humbly when waitress Scarlett

Getzloff bragged about his community support, pointing out that he gives to several charities, even donating pancake batter when local organizations want to host a pancake breakfast fundraiser. But the boss’ efforts at modesty were belied by his excitement when Thanksgiving was mentioned. Eddie’s eyes lit up as he spoke about his 30-year tradition providing Thanksgiving for anyone in the community in need of a meal. “We fed about 1000 people this year,” he beamed. “It’s a tradition for many families. They stop by here with the kids, the entire family, and they volunteer for a while before heading off to do their own Thanksgiving dinner,” Eddie grinned. The event is slated for February 18th, beginning at 6:30 p.m. at Moore Farms Rustic Weddings & Event Barns. “The 2017 “Chair-ity” Auction promises to be even more fun than last year’s near sell-out event,” said Volunteers for Youth’s Executive Director, Chris Butler. “If you attended and had fun last year, you will want to put the February 18th date on your calendar. If you missed it, definitely make plans to attend this one!” he added. The Mardi-Gras themed event will feature a live auction of creatively re-purposed and re-designed furnishings. Donations of “chair” entries along with any type of creatively re-purposed and redesigned small furnishing are being accepted by contacting the Volunteers for Youth office. The silent auction will offer men and women alike something for every budget. Cajun cuisine, jazz music, a cash bar and a mysterious new game of chance will round out the evening. Also being inducted are posthumous inductees, bluesjazz violinist Papa John Creach and beloved composer and bluegrass fiddler Randy Howard. “This honor is one I never expected,” said inductee Joe Spivey. “It’s a great deal. 1.5 ounces vodka (1 shot) 1.5 ounces strawberry soda ½ of small lime 8 ounces ginger beer

INSTRUCTIONS • Pour vodka, strawberry soda, juice of ½ lime and ginger beer into copper mug or glass. • Stir to combine, serve cold. SERVE THIS COCKTAIL FOR THE FRIEND WHO COULDN’T FIND A DATE

INSTRUCTIONS • Combine gin, lemon juice, lime cordial, grenadine & bitters in a cocktail shaker filled with ice. • Shake vigorously. • Strain into a cocktail glass that is rimmed with salt and garnish with raspberries & a mint leaf.

5 C. Rice Chex cereal ¾ C. white chocolate melts or chips ¼ C. chocolate melts or chips 2 oz. cream cheese, room temp 1 ½ Tbsp. milk 1 C. Red Velvet Cake mix ½ C. powdered sugar Valentines colored candies Heart sprinkles

INSTRUCTIONS • Measure out Rice Chex cereal and place into a large bowl. • Place cake mix and powdered sugar into a large plastic bag or Tupperware with a lid. • Melt chocolates together in the microwave or on the stovetop. Stir until smooth. • Stir in cream cheese and milk • Pour chocolate over Rice Chex cereal and stir until coated. • Dump cereal into the bag or Tupperware with powdered sugar and cake mix. Shake, shake, shake until coated. • Dump onto a cookie sheet and let cool. • Mix with extra colorful candies and serve!

DAIRY-FREE FUDGE INGREDIENTS • 1 can (13.5 fluid ounces) full fat coconut milk • ¾ cup confectioner’s sugar • 3 cups dairy free dark chocolate chips

INSTRUCTIONS • Line an 8x8 inch square pan with parchment paper so that there is an overhang on two sides. • Place the coconut milk in a sauce pan and heat over medium low heat, just until it starts to stem a little bit. Sift in the confectioner’s sugar and whisk to combine. Do not overheat or boil. • Add the chocolate chips and stir well until fully melted. This will happen quickly, don’t burn the chocolate. • Pour into the prepared pan and spread out evenly with a spatula. Let it cool for about 30 minutes on the counter. • Place in the refrigerator for two hours or until the fudge is firm. • Use the parchment paper to remove the fudge from the pan, then slice into squares. • Store in the refrigerator. DON’T SUFFER THROUGH CHEESY DATES — MAKE YOUR OWN

CHEESY DATES INGREDIENTS • Pitted or unpitted dates • Cheese: soft goat cheese, creamy blue cheese or gouda

INSTRUCTIONS • Slit each date in half lengthwise, remove the pit and replace it with a piece of your favorite cheese

FRUIT ROLL-UP FORTUNES INGREDIENTS • 1 box Fruit Roll-Ups • Permanent marker • Parchment paper (Don’t use plain paper; it will stick.) • 1 (2-inch) round cookie cutter

INSTRUCTIONS • Write messages with a permanent ink marker on parchment paper. • Unroll 1 Fruit Roll-Up and cut it into 4 squares. • Stack the 4 squares on top of one another, and cut with the 2-inch round cookie cutter. • Grab the corners, and crease in the middle, pinching to form the fortune cookie shape. Pinch the shape together in the middle until it sticks and stays folded. THE PERFECT TASTY SNACK FOR THE HEALTH NUTS IN YOUR LIFE

VALENTINE’S DAY TRAIL MIX INGREDIENTS • ½ cup goji berries • ½ cup mulberries • ¼ cup dried cranberries or dried cherries • cup cashews (raw or roasted & unsalted) • cup sliced almonds (toasted) • 2-3 sections of dark chocolate

INSTRUCTIONS • Mix ingredients together and serve. • Store in an airtight container for up to 7-10 days.

How to Afford Care for Seniors Living at Home As more people age, over 10K people a day are turning 65, the question of how to pay for needed care is being asked much more often. Financial planning may not be in place. There are assets-- a home and car, and a small Social Security check, and some savings. How do you know how much you can spend on care? First, you must understand your set monthly income. This includes all set payments from Social Security, pensions and any other set payment you receive. Do not include random income from occasionally working or receiving gifts. Second, make a list of all set payments you must make each month. Mortgage or rent, utilities, vehicle loans, gasoline for a month, groceries, insurance premiums and credit card payments should all be listed.

Anything you do not have to spend is non-essential. Dining out, vacations, sending money to a grandson in college and new landscaping are all expenses you can change if needed. These expenses can be hard to track and control. Try keeping your receipts for 30 days and reviewing how your money was spent—it will make you more aware of your spending habits. Subtract your set expenses from your set income and you decide how to spend any leftover money. Remember it will be an advantage if you have a little cash put away for emergencies. But what if you are upside down and you still need care? There are places to seek financial assistance in reorganizing your payments or lowering your payments. If you feel you have ‘lower income’ you may

qualify for the Advantage Plan or even a grant that will provide you with a part time caregiver. By Erica Ludwig The office of Carletti Family and Cosmetic Dentistry has been in operation in the city of Sapulpa for over 50 years. A native of Oklahoma, the late Dr. John Carletti, D.D.S., made a huge commitment to service when he moved to the city to grow his dental practice. The practice has been at its current address of 635 S. Main St. since the beginning of 1980. Carletti watched his children grow up while his office expanded, but he wanted to make an even bigger commitment to his community through education. Dental Careers of Tulsa was established in 1998, and Dr. Carletti’s legacy continues today through his children: Dr. Andrew Carletti, Karen Summers and Cathy Carletti-DuPriest.

“Dental Careers of Tulsa has optimized quality programs,” said Program Administrator Norma Tyler. “Since 1998, we have been training students to not only be the best at what they do, but also to care for their patients.” This dental assisting course consistently produces quality dental assistants by offering courses in the spring, summer and fall. There are two different class times to choose from with the same amount of hours. Whether someone is taking two classes a week for 14 weeks or just Saturday courses for 10 weeks, the commitment is the same. A maximum of eight students per class is accepted, and all class times allow students to train for their exciting

new careers while continuing to work at their current jobs. Training session topics include a general introduction to dentistry, X-ray training, infection control, anatomy, instruments and equipment of dentistry, oral surgery, and office management. “Our students complete a 40-hour internship, allowing them to have hands-on training in the field of general dentistry,” said Norma. Names of dentists who indicate that they are seeking qualified dental assistants are given to those enrolled in the program. Some are offered jobs pending graduation. “Dental assistant training is so much more than setting up a tray,” Norma said. “Students are typically ready to work immediately upon finishing the program.” Students interact with doctors and dental staff during the course, allowing for connections to be made as well as to gain an

understanding of what will be expected in the field. The program is very streamlined with an emphasis on in-class hands-on experience to compliment book work. Rather than reading about a process or procedure, students within the program immediately experience it themselves. The school is currently awarding one $1,000 scholarship per class to the student who qualifies through the school’s selection process. “Our graduates have been successful in their fields upon completing training,” said Norma. “Several have continued their education and become dental hygienists and a few have even become dentists.” Become a part of the family at Dental Careers of Tulsa.
