Sapulpa Community Theatre invites you to celebrate their 35th anniversary by joining them for a season of “Classic Nostalgia,” with presentations of well-known works and an evening of original plays by local playwrights. The organization’s season includes “State Fair,” “Every Christmas Story Ever Told (And Then Some),” local playwright showcase “Etcetera, etcetera,” “Death of a Salesman” and “Quilters.” Opening the 2013-14 season is “State Fair,” presented October 4-6 and 11-13. The play, adapted from Phil Strong’s novel of the Frake family’s adventures (and misadventures) at the Iowa State Fair, was itself

later adapted by Rodgers and Hammerstein into the big-screen musical of the same name. Audiences may not be as familiar with “Every Christmas Story Ever Told (And Then Some),” scheduled December 6-8 and 13-15, but as the title suggests, they’ll know the source material. The show centers on three actors who decide to perform every Christmas story ever told and sing every carol ever sung. Families are sure to enjoy this madcap romp through the holidays. “Etcetera, etcetera,” scheduled February 7-9 and 14-16, is sure to be new for everyone, as SCT, in (continued on page 22)

diagnosed with sleep apnea there’s a good chance you were prescribed a CPAP device. Most patients hate using a CPAP, for a variety of reasons. Studies show that 50
percent of patients stop using them in the first year, which places the person at high risk for serious health issues, and even death. Dr. Bennett treats patients who snore, and those diagnosed with mild to moderate sleep apnea, using dental appliance therapy, which is approved by the FDA. “There are 50 different appliances recognized by the FDA to treat snoring and sleep apnea and they all work in ways that helps open the airway when you sleep.” states Dr. Bennett. Treating snoring or sleep apnea is not a “one size fits all” process according to Dr. Bennett. “I like to have at least three or four that could work and then let the patient choose the one they like. If you’re only offered one, it’s likely that dentist is only trained to provide one device, which may not be the best one for you.” Dental appliance therapy is generally covered by insurance when there is a proper diagnosis and sufficient documentation. There are many symptoms of TMD/TMJ. The main ones include
headaches/facial pain, ear pain, vertigo, tinnitus, chewing problems, and jaw popping. TMD/TMJ is treated in a similar manner as sleep apnea using a dental appliance. Individualized Learning Programs Enhance Your Child’s Education American Christian Academy offers students more than an education in Sapulpa.

There are many factors that influence a family’s decision to pursue their child’s education independent of the public school system. Philosophical or religious principles are a commonly cited reason; however, some families come to the realization that their child’s needs call for a more individualized approach than larger public or private schools offer. Regardless of the reasons, American Christian Academy in Sapulpa offers individualized educational programs for primary and secondary students. Rose Mary Lopes is administrator at American Christian Academy, a small private Christian school in Sapulpa. She has been educating students at the school since her own son, now grown, was attending. Mrs. Lopes strives to provide quality education in a Christian atmosphere that takes into account the specific skills and stage of development of each student enrolled at ACA. American Christian
Academy offers two distinct educational programs for students. For students in the homeschool program (offered for grades 1-12), ACA provides coordination of curricula and lesson plans, as well as guidance and support. For students enrolled in the on-site, full time program, ACA provides individualized, one-on-one instruction. “The
curriculum is similar for home school and full time students,” explains Mrs. Lopes. “The main difference is whether or not the students are studying and completing assignments at home or here, in the classroom with our support.” The curriculum includes core subjects, such as reading, grammar, civics and history, mathematics and science.

Additionally, ACA includes biblically-based character training for their students. Whether enrolled in the homeschool or full time program, students can count on personalized educational plans with lots of face time with educators. ACA provides a spectrum of services for students. Diagnostic assessment is an important step in any child’s educational program. Without a clear understanding of a student’s strengths and weaknesses, it is difficult to establish an educational plan, let alone goals. Mrs. Lopes observes, “Every student is different. Some students need a lot of help; others, not as much.” ACA focuses on the student; lessons are planned and paced according to his or her specific abilities and needs. Whether the student is an accelerated learner or has special needs, Mrs. Lopes is passionate about creating a positive, supportive and successful learning environment for him or her. Mark your calendar for September 19 and 20. You don’t want to miss “The Event” of the year with two exciting evenings to celebrate Will Rogers, Oklahoma’s favorite son, and the 75th
Diamond Jubilee Anniversary of the Will Rogers Memorial Museum. The celebration, a fundraiser, will kick off in Claremore with the Will Rogers Memorial Foundation

hosting an evening event to highlight Will and the Museum as well as the presentation of “The Award,” honoring the early pioneers and founders of the Memorial Museum in a video presentation. “There are so many people who deserve recognition for their efforts in establishing and keeping the Memorial going for 75 years,” says Linda Bradshaw, a Will Rogers Memorial Roper (docent) and event chairperson. “Our goal is to build support locally, regionally and nationally to enhance Museum programming and provide capital improvements.” Although the Memorial is state funded, “the building is aging and we, as citizens, have to do our part in raising funds to preserve the building and keep Will’s legacy alive.” This is the first major fundraiser for the Will Rogers Memorial Foundation. “We must work together to make sure future generations are introduced to Will Rogers. He was a man of his times, a beloved man all over the world, and he brought a conversation of decency to the table.” Former Oklahoma Governors George Nigh and
Frank Keating are honorary co-chairs and will be part of Friday evening’s activities along with entertainment provided by Wild West entertainer Kowboy Kal Cook of Apache, and World Champion Roper Doug Smith of Medway, Ohio, as well as Will Rogers Museum’s Andy Hogan, a Will Rogers interpreter and Museum historical guide. The Tulsa Playboys and the First Lady of country fiddle, Jana Jae, will provide musical entertainment. Judge Robert Henry, president of Oklahoma City University, will be keynote speaker. Henry, a Will Rogers scholar, is also known for quoting Will in his public appearances. A silent auction at “The Event” will include the following items: a trip for two to California, Will Rogers State Historic Park and afterhours tour with Jennifer Rogers-Etcheverry (greatgranddaughter of Will Rogers); lunch for eight with Will Rogers’ great-niece Doris “Coke” Meyer at Belvidere Mansion; 2014 Will Rogers & Wiley Post Fly-In take off and landing in vintage aircraft; Mike Wimmer print, framed and autographed: “Will on Top of the World”; and more.

RRide for Kids
The annual motorcycle and family-friendly event rolls into Tulsa this September in support of the Pediatric Brain Tumor Foundation.

On Sunday, September 15 motorcycles from all over will come together and ride in support for children afflicted with brain tumors. The Oklahoma Ride for Kids, benefitting the Pediatric Brain Tumor Foundation, will meet at the Tulsa Health
Department (near 51st and 129th E. Ave, just off the Broken Arrow Expressway). There is still room to join the ride, and motorcycles with side cars are especially desired, since survivors typically ride along. On-site registration is open from
8 a.m. to 9:30 a.m. The escorted ride begins at 10 a.m., rain or shine. Ride for Kids rolls into its fifth year in Tulsa, and is gaining momentum. Betty and Jim Jones, who have participated for a couple years, are helping organize the

Donations and money raised at Ride for Kids goes toward funding research and family support programs. “This is a problem that funding can help,” explains Jim. “When the Pediatric Brain Tumor Foundation first started out, there were four categories of tumors affecting kids. Now, researchers have found treatments for three of the four types. We have one more to go. There are still children dying from this. We can do better.” The optimism and warmth emanating from Mr. and Mrs. Jones is inspiring and contagious. They have good reason to be optimistic. Last year, Ride for Kids raised over $16,000 in the Tulsa area. As part of a nationwide organization, the money adds up quickly and is put to effective use. The PBTF funds researchers who specialize in child brain tumors. The PBTF also partners with local family support initiatives, provides educational literature and awards college scholarships to brain tumor survivors. Join the Tulsa Ride for Kids on Sunday, September 15 for a fun event that features a ceremony honoring survivors and remembering loved ones who have passed. In addition to the policeescorted motorcycle ride,
attendees can look forward to live music, food and activities. Radio personality “Wavy Davy” Michaels (from 103.3 FM) will serve as Master of Ceremonies for the event. The Shriners will be out in support with their motorcycles and clowns, which is always a fun scene. There will be a drawing for door prizes and a silent auction. One of the featured items for the auction is a hat autographed by Toby Keith. Most impressive, Honda gives away a motorcycle at each event. Last year, Honda gave away 40 motorcycles nationwide. Sponsors of the event include some high profile names. Daylight Donuts is providing donuts in the morning, Starbucks will offer coffee, and Borden will supply breakfast drinks. Throughout the day, Pepsi is providing drinks. QuikTrip will bring sandwiches and snacks. It is important to note that you do not need a motorcycle to participate or support Ride for Kids. This year’s event will be held Friday, September 27 from 7 to 9:30 p.m., in the Tulsa Municipal Rose Garden. An Evening of Wine & Roses is one of the region’s largest wine tasting events. Guests will enjoy over 150 different wines from around the world complemented by elegant hors d’oeuvres and desserts from more than 35 of Tulsa’s top restaurants and caterers. The combination of delectable food and exquisite wine enjoyed under the stars, while strolling through a garden full of gorgeous fragrant roses, makes this an enchanting autumn evening. Tickets for An Evening of Wine & Roses are $65 for Tulsa Garden Center members and $80 for nonmembers. Prior to the main event, a

IIt’s Greek to Me Experience Greece without a passport or jet lag at the 53rd annual Tulsa Greek Festival.

The Tulsa Greek Festival is the longest-running ethnic festival in Tulsa. Celebrating its 53rd year, the event showcases Greek culture with authentic dances, costumes, music and, of course, food and drink. TGF runs September 19-21 and is hosted by Holy Trinity Greek Orthodox Church, located at Guthrie Ave. and 13th Street. Greg Metevelis, general chairman for Tulsa Greek Festival, has a strong connection to the event that is almost twice his age. As a lifelong member of Holy Trinity Greek Orthodox Church, he has grown alongside the festival. “I’ve been involved since I was a kid, first as a performer in the dances. Then, as I grew up, I got more involved with organizing the festival,” he explains. Now in his third year as general chairman for the festival, Metevelis is excited to see the event grow and continue to engage, entertain and educate the community. The Greek holiday has become a favorite event for Tulsans, providing cultural education and entertainment,
as well as much needed support for the various community partners in Tulsa and beyond. Money that is raised from the event helps fund the many projects and initiatives that Holy Trinity Greek Orthodox Church partners with. “Throughout the year, our church supports over a dozen charities. Some are local and some are located throughout the country,” explains Mr. Metevelis. Some of these projects include ongoing work with John 3:16, Iron Gate Community, Tulsa Day Center for the Homeless, Camp Agape Cancer NW and the Special Olympics. For three days, Tulsa Greek Festival will offer indoor and outdoor entertainment for all ages and interests. The event will showcase ethnic dances and music throughout the weekend. Performed by parishioners, young and old, dressed in authentic ethnic costumes, these dances bring to life ancient traditions and tell the stories of love, war, passion and adventure. The marketa (marketplace) will feature Greek wares ranging from
ceramics, jewelry, clothes and much more. A new official Tulsa Greek Festival T-shirt designed for 2013, as well as “Cooking Greek for Tulsa” – a cookbook comprised of favorite recipes shared by Tulsa-area Greeks – will be on sale at the marketa. Tulsa Greek Festival will have plenty of food and drink to fuel the celebration. Guests can build their own dinner, choosing from a variety of home-cooked entrées and sides, including lamb, chicken or pork soulvaki (shish kabob), gyros, spanakopita, tiropita and much more. Desserts and bakery items will be plentiful, too, featuring authentic homemade favorites like baklava, finikia, kourambiethes, and koulourakia. The tavern will serve Greek wine and beer, bottled water and EPSA beverages (non-alcoholic carbonated drinks imported from Greece). “We have a kafenion, where you can get Greek-style coffee,” says Greg, adding a perfect pairing for the pastries offered at the bakery. Pecan Chicken Fingers Ingredients: 1 cup pecan halves 1 1/2 cups all-purpose baking mix 1 teaspoon salt 1/2 teaspoon pepper 1 (18.4-oz.) package boneless, skinless chicken breast tenderloins 2 large eggs 1/2 cup buttermilk Vegetable cooking spray Garnish: green onion curl Makes 6 to 8 servings Place pecans in a single layer in a shallow pan.Bake at 350° for 10 minutes or until lightly toasted, stirring occasionally. Process toasted pecans, baking mix, salt, and pepper in a food processor until pecans are finely ground. Place 1/2 cup pecan mixture in a large bowl. Add chicken, tossing to coat. Whisk together eggs and buttermilk. Dip chicken in milk mixture; dredge in remaining pecan mixture. Arrange chicken in a single layer on a lightly greased aluminum foillined baking sheet. Lightly coat tops of chicken with vegetable cooking spray. Bake at 425° for 20 to 25 minutes or until chicken is golden brown. Arrange on a serving platter, and garnish, if desired.
Spicy Sweet Deviled Eggs Ingredients: 1 dozen hard-cooked eggs, peeled 1/2 cup mayonnaise 3 tablespoons mango chutney 1/8 teaspoon ground red pepper Kosher salt to taste Garnish: sliced fresh chives Makes 10 to 12 servings Cut eggs in half lengthwise; carefully remove yolks. Mash yolks; stir in mayonnaise, chutney, and red pepper until blended. Spoon yolk mixture evenly into egg white halves. Sprinkle evenly with desired amount of salt. Garnish, if desired. Chill until ready to serve.
SLOW-COOKER BARBECUE BEEF SANDWICHES Ingredients: 1 (3 1/2-pound) eye-of-round roast, cut in half vertically 2 teaspoons salt, divided 2 garlic cloves, pressed 1 (10-ounce) can condensed beef broth 1 cup ketchup 1/2 cup firmly packed brown sugar 1/2 cup lemon juice 3 tablespoons steak sauce 1 teaspoon coarse ground pepper 1 teaspoon Worcestershire sauce 12 Kaiser rolls or sandwich buns Dill pickle slices Makes 12 servings Sprinkle beef evenly with 1 teaspoon salt. Stir together remaining 1 teaspoon salt, garlic, and next 7 ingredients. Pour half of mixture into a 5 1/2 quart slow cooker. Place beef in slow cooker, and pour remaining mixture over beef. Cover and cook on HIGH 7 hours. Shred beef in slow cooker with two forks.Serve in rolls or buns with dill pickle slices.
Beef, Black Bean, and Chorizo Chili Ingredients: 2 links Spanish chorizo sausage (about 6 1/2 ounces), thinly sliced 1 1/2 pounds beef stew meat 1 1/2 cups chopped onion 4 garlic cloves, minced 1 (7-ounce) can chipotle chiles in adobo sauce 3 tablespoons tomato paste 2 teaspoons sugar 1 teaspoon salt 2 teaspoons unsweetened cocoa 1 teaspoon ground coriander 1 teaspoon dried oregano 1 teaspoon ground cumin 1 cup dry red wine 1/4 cup fresh lime juice 2 (14-ounce) cans less-sodium beef broth 1 (28-ounce) can whole tomatoes, undrained and chopped 2 tablespoons masa harina 2 (15-ounce) cans pinto beans, rinsed and drained 1 (15-ounce) can black beans, rinsed and drained

Ingredients: 1 pound lean ground beef 2 tablespoons ketchup 1/4 teaspoon salt 1/4 teaspoon pepper 1 (7 1/2-ounce) package party rolls 5 (3/4-ounce) process American cheese slices, quartered Condiments: mustard, ketchup, mayonnaise, minced onion, dill pickle slices, tomato slices, lettuce leaves
Ingredients: 3/4 cup butter, softened 3/4 cup granulated sugar 3/4 cup firmly packed dark brown sugar 2 large eggs 1 1/2 teaspoons vanilla extract 2 1/4 cups plus 2 Tbsp. all-purpose flour 1 teaspoon baking soda 3/4 teaspoon salt 1 1/2 (12-oz.) packages semisweet chocolate morsels
Combine first 4 ingredients. Shape mixture by tablespoonfuls into patties, and place on a rack in a broiler pan.
Heat a Dutch oven over medium-high heat. Add chorizo to pan; sauté 3 minutes or until browned. Remove chorizo from pan.
Split rolls horizontally, and place a piece of cheese and a meat patty in each. Serve with desired condiments.
Preheat oven to 350°. Beat butter and sugars at medium speed with a heavy-duty electric stand mixer until creamy. Add eggs and 1 1/2 tsp. vanilla, beating until blended.Combine flour, baking soda, and salt in a small bowl; gradually add to butter mixture, beating just until blended. Beat in morsels just until combined. Drop by tablespoonfuls onto parchment paper-lined baking sheets.
Add half of beef to pan; sauté 5 minutes or until browned. Remove beef from pan. Repeat procedure with remaining beef.
Note: Place in heavy-duty zip-top plastic bags; seal and freeze. Remove desired number of burgers from freezer; pack frozen in lunchbox.
Bake at 350° for 10 to 14 minutes or until desired degree of doneness. Remove to wire racks, and cool completely (about 15 minutes).
Sandwiches will thaw in approximately 2 1/2 to 3 hours.
Note: Bake 10 minutes for a soft and chewy cookie or up to 14 minutes for a crisp cookie.
Add onion and garlic to pan; sauté 3 minutes.Remove 4 chipotle chiles from can, and chop. Reserve remaining chiles and sauce for another use. Add chorizo, beef, chopped chiles, tomato paste, and next 6 ingredients (through ground cumin) to pan, and cook for 1 minute, stirring constantly. Stir in red wine, lime juice, beef broth, and tomatoes; bring to a boil. Reduce heat, and simmer for 1 hour, stirring occasionally. Gradually stir in masa harina. Add pinto beans and black beans; bring to a boil. Cover, reduce heat, and simmer 30 minutes. Note:Look for masa harina, the corn flour used to make tortillas, in the Latin foods aisle at the supermarket, or substitute fine-ground cornmeal. Use kitchen shears to cut up the tomatoes in the can. .
Bake at 350° for 15 to 17 minutes or until done.

A Season of Classic Nostalgia cooperation with Tulsa’s Heller Theatre, will present new works by local playwrights, which promise to be entertaining and thoughtprovoking. Perhaps the most well-known of all five works will be presented April 25-27 and May 2-4: “Death of a Salesman.” Arthur Miller’s classic tale of the iconic Willy Loman, which won both the Pulitzer Prize and best drama Tony Award, has been produced all over the world since its Broadway debut in 1949. Wrapping up the season June 20-22 and 27-29 will be the musical “Quilters,” which tells the intriguing story of a pioneer woman and her six
daughters. Individual stories, which woven together become blocks of a quilt, capture the harsh realities and abiding rewards of frontier life. Season ticket packages are $47.50 ($45.00 before September 1) for adults and $23.75 ($22.50) for students and children. The season packages include five tickets good for any performance. Curtain times are 7:30 p.m. Fridays and Saturdays and 2 p.m. Sundays. The organization has come a long way since its origins in 1978, when a group of actors, led by John B. Clark and Wanda Lovelace, came together to produce occasional shows as fundraisers for local charities. Since

CClaremore’s Biggest Festival Returns The 34th annual Bluegrass & Chili Festival returns September 5-7, 2013
By Carol Beck-Round An estimated 30,000 people will converge in Claremore September 5-7 to enjoy lots of free award-winning musical performances, a competitive chili cook-off, a vocalist competition and other family-friendly activities at the 34th annual Bluegrass & Chili Festival at the Claremore Expo Center grounds. “We have seen tremendous growth in the 14 years the venue has been in Claremore,” says Dell Davis, Chamber of Commerce president. “We estimated last year’s crowd between 25,000 and 30,000 over the three-day event. We even have people who have attended every one of the festivals.” Weekend festivities include three stages of free “pepper hot” concerts by national and regional artists. Headliners set to appear include a host of award winners. Thursday night’s concert venue will begin with the Quebe Sisters Band, a Texas trio whose music encompasses western swing, jazz, country and bluegrass. Following the sister act is the award-winning The Lonesome River Band with Sammy Shelor, winner of the Steve Martin Award for Excellence. Rounding out the
evening’s entertainment is the Grammy-nominated Sanctus Real, a contemporary Christian band. Friday’s lineup includes IIIrd Tyme Out, Brooke & Darin Aldridge Band, Lonesome Road and emerging artists Dave Adkins & Republik Steele. On Saturday, headliners include Rhonda Vincent & the Rage, festival favorites Doyle Lawson & Quicksilver, and the king of newgrass, The Sam Bush Band. Top regional acts will also be entertaining on three stages, performing a variety of music including country, gospel, bluegrass and classic rock. In addition to the free concerts, other musical entertainment highlights include the “Junior Showcase,” designed to give talented youth, 21 and under, stage exposure and experience in a non-competitive venue. An acoustic guitar will be awarded in a drawing of all participants. “This gives young people the opportunity to get exposure without the pressure of competing,” says Davis. Area vocalists will also be competing for “The Best Country in the City Vocalist Competition.” Vocalists of all ages will be vying
for a cash prize. Dancers will add to the fun as they “kick up their heels” during the festivities. Other family activities include the indoor Festival Market at the Expo with a variety of crafts, services and businesses. A Kiddie Korral with a variety of free activities will be available to little buckaroos. Other family-friendly activities include The Open Car Show, sporting classic and current beauties, as well as an Antique Tractor Pull. The Mid-America Regional Chili Cook-Off and Salsa Competition will be sizzling with The International Chili Society Division winning cook representing the Festival in the World Cook-off that boasts a $25,000 first prize. A non-profit division is open to non-profits, schools and churches, with the winner receiving a $1,000 first prize. Open and corporate division teams will vie for awards – and bragging rights. Jennifer Coffey is a certified fitness instructor in Tulsa who is passionate about helping her clients become fit, healthy and happy. Jennifer has worked in the fitness industry for ten years, but four years ago she began experiencing knee pain that started to derail not only her career but her entire life. “I was in so much pain that I started missing work. Some days I couldn’t do my full fitness routine or work with my clients simply because the pain was so intense.” Jennifer “went through the whole rigmarole of options” for treating her knee pain, including injections, medications, physical therapy and even surgery. Then last year, while she was working with a client, she mentioned her chronic knee pain. The client referred her to Dr. Ronald S. LaButti, a board certified orthopedic surgeon widely known as "The Hip and Knee Doc." “I called his office and got an immediate appointment,” says Jennifer. “Dr. LaButti is friendly, straightforward and honest. He was willing to

listen to all of my concerns, answer my questions, and genuinely wanted me to get back to work and my active lifestyle.” Jennifer also appreciated that Dr. LaButti was initially conservative with her treatments; however, he eventually recommended total knee replacement surgery as the only remaining option. Dr. LaButti performed the total knee replacement on Jennifer’s left knee in August of 2012. Now only a short year later, she is totally pain-free and thrilled to be living her life filled with enthusiasm, movement and helping others. One of Jennifer’s favorite activities she was forced to give up due to her knee pain was gardening. She was still in recovery during this year’s planting time, but by next season, she plans to be fully back in “ninja form” and creating a beautiful garden. She is also excited to be teaching Zumba classes at the brand-new Meltdown Fitness, located next to the Campbell Hotel at 2648 E. 11th St. in Tulsa. The studio opens at the
beginning of September and will offer a variety of fitness classes. In addition to leading Zumba participants to shimmy, shake and sashay their way to fitness, Jennifer will be instructing other classes in the future, such as body sculpting.
