Tiessennau Mel (honey cakes) Ingredients 100g honey ½ teaspoon bicarbonate of soda 225g flour 1teaspoon cinnamon 100g margarine 100g brown sugar 1 egg 2 tablespoons milk

Method 1. Preheat oven – 180 C. 2. Grease patty tins.

Cream sugar and margarine together until light and fluffy. Separate egg – beat the yolk into the butter mixture. Add honey to the mixture. In another bowl whisk the egg white until it forms soft peaks. Sieve flour, bicarbonate and cinnamon into butter mixture and milk as required. Mix well. Fold in the whisked egg. Half fill patty tins and bake in hot oven for 15 ­20 minutes. Sprinkle with some extra caster sugar when hot.
