Welsh Rarebit Ingredients 25g flour 25g butter 125ml strong beer – non alcoholic 125gcheddar cheese– grated 1tsp English mustard 1tbsp Worcestershire sauce
Method 1. Grate the cheeseinto a bowl. 2. Warm the beer in the microwave. 3. In a saucepan melt the butter and make a “roux.” Cook for a couple of minutes, stirring to stop burning. 4. Stir in the warm beer gradually, until you have a thick smooth sauce. 5. Add the grated cheeseand stir until melted and you have a thick “paste”. 6. Mix in the mustard and Worcestershire sauce.
To serve – lightly toast and butter slices of bread, cover generously with the cheesy mixture and cook under a hot grill until browned and bubbling.
