Fran I love this time of the year. The gifts, the decorations, Christmas lights, family and friends, special times together and fab trad food. Everyone is just like, "Yeaaaah!" What’s not to love? So what do I want for Christmas? Sounds boring, I know – but what I really want is time. Time to loll around with my family and close friends. Time to read a book, bake a cake, and to do some of the nice stuff I can’t seem to get to during the year. I would also like to do something positive for at least one person in need of a lucky break, so they too can start to love Christmas.

Jude Christmas is a time to chill out and relax. The perfect Christmas morning for me is about getting up slowly, putting on some relaxed music, making fresh coffee and/or champagne with hot croissants and jam. I will then wait for my family to arrive so we can celebrate with good food, and Christmas cheer. This Christmas it could be a little different as I have my granddaughter Poppy coming from New York to celebrate a New Zealand Christmas. I’m looking forward to taking her for a walk to the Franklin Road lights in Ponsonby on Christmas Eve. Maybe it would be nice for me to take her to the local park on Christmas morning. I am incredibly grateful for having such a caring family with whom I will be with over

the holiday period. I wish all of our readers, Facebook friends, Instagram friends and all of our advertisers a wonderful Christmas break. Zanalee My Christmas wish is for my family and friends to feel true happiness and be content with life. At the moment, I am only listening to Lil Peep. RIP precious boy. I recommend listening to Girls, Repair ft. Bexey, Dying Out West and Save That Shit. I am also really excited for these shows over the summer: King Krule, Anderson Paak. , SZA, Mac Demarco and Let Me Loose, a show with some of my fave NZ rappers such as Rizvan, Diggy Dupé and Melodownz.

AJ My ultimate Christmas wish for the year is that everyone learns to be a little kinder to one another. I think that kindness is one of the greatest gifts we can all pass onto others, and I challenge everyone to do something kind for someone else these holidays. I’m also hoping for a Christmas surrounded by friends, love, inside jokes and a bunch of cheesy Christmas photos…and hoping that Santa finally brings me a cat this year. Fingers crossed!

Beth I'm very happy to say that my biggest Christmas wish has already been ticked off; my American boyfriend is going to spend Christmas in New Zealand with me and my family this year! I already know that it's going to be a special one. All I am really hoping for is some excellent Christchurch weather so that I can give him a proper summer Christmas complete the beach and a BBQ in the evening.

As for Christmas music, four years straight of working in a department store over Christmas has given me a fairly low threshold. That being said, it's hard to get sick of Michael Buble's Christmas album it's the only one I usually let my family play at home.

I’ve travelled and lived in several countries since I left the UK exactly a decade ago, but New Zealand really does feel like the place where I was meant to be. We’re actually heading back to the UK for Christmas, it’s only the second time I’ve returned, so there will be plenty of catching up to do, and my

playlist will also be a winter one. With the Gallagher brothers warring as fiercely as ever, it doesn’t look like there’ll be an Oasis reunion anytime soon, but they have both just released stellar solo albums which I have pretty much on repeat, and Slade’s Merry Christmas Everybody, and Fairytale of New York by The Pogues will no doubt get a few spins.

Nicholas died in Myra on 6 December around the midfourth century, and stories of his giving and good deeds were passed down — and no doubt embellished — through time. His name associated with a raft of miracles also. Such was his fame that Nicholas was named the patron saint of a plethora of groups like sailors, fisherman, and repentant thieves, and even of some nations, such as Greece and Russia. Around the turn of the 13th century, Nicholas also became known as the patron saint of children, and bearer of magical gifts, with aspects of other former European gods such as the Roman’s Saturn (a deity of ‘plenty’, associated with a harvest festival celebrated towards the end of December) and the Norse Odin (known for his white beard and ability to fly), written into his myth.

Fairy tale-like figures were created, based on Saint Nicholas, with variations on the legend differing across regions of mainland Europe. In Britain and early European North America, Christmas was considered almost unholy, a pagan festival that was nothing more than an excuse to get blind

But what of our dear, original patron saint of kids? Historians have long argued over what became of the body of Saint Nicholas, with many believing his bones (classed as relics owing to his canonisation) to have been stolen from Myra during the 11th century and taken to a crypt in the Basilica di San Nicola in Bari in southeast Italy. In 1957, Italian anatomy professor Luigi Martino conducted an analysis of the bones, including x-rays and measurements and concluded that they belonged to slender, 70-year-old male with chronic arthritis and a fractured nose. Using the professor’s findings, in 2014, a team at Liverpool John Moores University created a CGI reconstruction of Santa Claus’s face that captivated the world. But it turns, out, they may have the wrong man— the bones might just be a hoax. Last October, Turkish archaeologists announced they have found the tomb of Saint Nicholas in his final resting place of Myra, now known as Demre in the province of Antalya, the culmination of a 20-year dig. However, they haven’t yet accessed the crypt. Cemil Karabayram, director of Antalya Surveying and Monuments, said they had also studied old documents that proved the bones stolen and taken to Bari belonged to another holy man. “The world’s eyes will be set on here,” he tolds Turkey’s Hurriyet newspaper. “We claim that Saint Nicholas has been kept in this temple without any damage. We are at the last stage. If we get the results, Antalya’s tourism will gain big momentum.” Not everyone is convinced. “This speculation is very premature,” said Carol Meyers of the St. Nicholas Center, to National Geographic. “If relics are found, they would need to be dated and examined by international experts. The Turks, of course, are very interested in promoting tourism.” Believe in Santa? Watch this space…

The origin of the legend of Santa Claus is a far cry from the jovial, hirsute figure with a bulging sack and weird red suit, ferried by a team of reindeers — one of whom has a nose that glows in the dark. To find out how it all began, we must go back nearly 2,000 years to a Greek town called a Patara in modern-day Turkey, where a man named Nicholas was born to wealthy parents, only to be orphaned at a young age. He grew up a Christian — at the time greatly persecuted by the ruling Romans — and used his inheritance to help those in need, often giving gifts in secrecy. Nicholas dedicated his life to his faith, was ordained Bishop of Myra, also an ancient Greek town in present-day Turkey, then spent years in prison under the orders of Roman Emperor Diocletian for refusing to renounce his faith.

SPREADING CHRISTMAS CARE Now is the time of year when we frequently hear, “Do you realize there are only so many days left until Christmas?” It is often closely followed by, “and I have so much to do before then!” No matter how organized or resilient we are, hearing this can easily ignite some anxiety as we too start to believe that everything must be accomplished by December 25th. We create a false sense of urgency and thus run the risk of being distracted by the small stuff and missing out on what is actually important. Remember the lead up to Christmas is just as important so here are some practical tips on how to be productive, yet remain relaxed and happy during this exciting time of year. •

Having a long ‘to do’ list is not always a great idea. Why, because it is always easy to become sidetracked with the unimportant tasks on your list. Instead, always focus on your final outcome or the result you want to achieve. You will always find the fastest route there when you remain focused on the target.

Alleviate any stress by asking yourself some powerful questions. Such as: why am I doing this right now? How important is it really? Who needs me right now?

Maintain your self-care and wellness routines to the best

of your ability though out the holiday season. We all love to enjoy the beautiful foods and celebrations and still look and feel our best right? Planning and discipline is key to maintaining your momentum, your energy and stop any cheeky habits creeping in. •

With all the added activities, food, entertaining and gifts comes the additional spending. How tempting it would be to put our heads in the sand and face the consequences in the New Year. A sure way to avoid this is to make the decision now to always remain mindful of your finances and other commitments.

CONNECTING HEARTS WITH HOMES

Curators, Kate Chetwin's and Pam Scales's strength lies in connecting hearts with homes. Yet the talented duo are the first to admit that they are not interior designers — ‘home curators’ are more alchemists turning the hohum into a space of special treasures that feel more like their clients. Think savvy organisation meets genius inspiration meets home transformation. “Basically we turn a house into a home with what the client already owns and add to it, organise it, place it, and make it feel really comfortable for them to live in,” says Pam. Whether it’s getting walls painted or removed by subcontractors, hanging art through to buying furniture and soft furnishings, having a house washed, windows cleaned or garden tidied — they freely admit they do whatever it takes to help make it happen. The busy pair started doing this casually a few years ago for friends and family. It started with helping people move, unpack and position furniture when they moved house. It was so well-received they formalised the business six months ago after being inspired by a gap in the marketplace which Pam explains has morphed into popular service for time poor clients. They step in at either end — before someone moves helping them to downsize, de-clutter, reorganise and streamline — or after when they walk into a new house. “Lots of people think, 'Where am I going to put everything?'. They need help using what they already have to connect with their new home. That’s where we found our business lies.” Both are not scared to get stuck in clearing out cupboards. “Kitchens are one of our fortes,” says Kate. She explains their curation style: “We like lots of different eras, textures, and colours.” They don’t necessarily buy everything new either, adds Pam. “We like lots of vintage pieces and are right into upcycling. It’s just about being earthy and practical, besides, it’s nice to have that twist of individuality.”

One client had a good array of furniture but she wanted it to look more eclectic. Another moved into a wonderful 1960s home with a brief for Kate and Pam to create an ambiance that felt more lived in and professionally styled. “She’s was a bit stuck on colours and placemen,t” Pam says. Their talents are complementary Kate is all about the bigger picture working with colour, texture, proportions and layers. “A home is not meant to be perfect — there is beauty in creating harmony between the old and the new. I’m probably better with the arranging and placing,” says Pam who spends considerable time doing this. “It doesn’t happen in five seconds and I need time to look and think and then it just comes together but I do like the eclectic thing.” Kate agrees: “She’s very intuitive and fiddles around before getting items in just the right place.” Aside from having ‘the eye’, the pair’s true signature is accurately aligning the décor with the essence of their clients. For one, they collected items from all sorts of places over a sixweek period thinking about what she’d like. The end goal was to turn an existing shelf unit into a vignette display of little treasures. They pulled it off. The client was thrilled and commented that their house felt like a home now. Another room transformation changed habits and possibly lives after an “amazing mid-century dining suite” was sourced that the client had never thought of. “They were thinking of a modern table and seating given they lived in an ultra-modern townhouse.” Although it had different timber from the floor, the powerful end result brought a family together. Your most recent house completed in Omaha looks great and quite different. What drives you in your designs?

You are talking about what we call in the office Omaha house #4. All our deigns are primarily driven by a desire to match functionality and aesthetics in a harmonious way. Neither of these two aspects should ever compromise each other. This is why our clients love our buildings, because they are so liveable and visually stimulating. For this house our clients liked the look of Omaha house #3, across the road, which they noted in their briefing. For both houses, #3 and #4, we adopted a design approach where distinctly different functional areas were given their own shape and cladding, together forming a pleasing sculptural composition. We do not have an office ‘signature style’.

Omaha House #4 It is more an approach to design which responds to the client brief, functional requirements, budget and site conditions (both physical and cultural).

What other projects is your practice currently working on? We do mainly residential work and that includes new homes as well as alterations and additions. Currently we are working on new house projects in; Auckland, Coatesville, Mangawhai Heads, Queenstown, Nelson, Rarotonga and The Netherlands. We are also working on a handful of alterations/additions in Auckland, and a mixed use commercial/residential ‘heritage’ project in Remuera.

That’s quite a few projects. How big is your practice? In total we are a team of six, not all of us full time. That includes 5 architectural staff and one interior/ landscape designer. I do keep the size of the practice small so that all projects can get my personal attention and involvement.

You mentioned overseas projects, tell me about it? We have been doing some work in Rarotonga for more than 15 years. We love that place and it is especially nice to be connected to the locals through work rather than as just another tourist. In the Netherlands we have recently completed a sustainable house in a new sustainable subdivision. sustainable subdivision (passive solar heating/cooling, earth heat, solar power, predominantly timber construction, reuse of rainwater, on site waste recycling etc) is unheard of in NZ but in Europe these things are addressed at a larger scale, which is professionally exciting. The house we designed for that subdivision has been nominated for a sustainability award in The Netherlands.

The New Zealand economy continues to perform strongly while in the commercial property market we’ve seen change in cycle direction with a flattening off as lending restrictions and restrictions on overseas investors begin to bite. Despite the market being of a stop-start nature this year, we’ve managed to keep busy and are proud to have recorded our biggest month ever in September. Our growth as a business reflected in a move to new modern premises in Albert Street and an expansion from our traditional city and fringe focus into central isthmus suburbs like Mt Albert, Onehunga and Mt Roskill and further into North Shore. It’s been great to see the special brand of service we’ve sought to develop as a boutique agency finding favour with clients far and wide as a welcomed point of difference. In terms of trends this year we’ve been excited by the appetite for creative new uses of industrial or gritty spaces, the rise and rise of co-working spaces such as Biz Dojo, Generator and Qb Studio’s, and it's also been good to see the activity in the hotels market reflecting high demand from tourists and upcoming developments such as the Convention Centre. The buoyant activity in the commercial market helping us grow as a business — but also helping in our efforts to feed hungry Kiwi kids through Eat My Lunch, by making a donation with each transaction we close — this year seeing us donate over 3,000 lunches to school kids in need! Looking ahead, it’s hard to predict which way the market will go next year. Lending restrictions are likely to see growth and development ease, but renewed government interest in projects such as light rail will see new and exciting opportunities in suburbs previously seen as less desirable. Whatever lies ahead we’ll continue to deliver the personalised service, and innovative thinking to ensure businesses and investors find the space or investment tailored for their needs. NEW PROPERTY MILLIONAIRES FOR AUCKLAND The residential rental housing market is never dull, but what an eventful few weeks we have just had … Were you one of the 120,000 people who checked out 10.3 million properties on the first day of online access to Auckland’s new property revaluations? Of course Auckland Council had already pre-empted a lot of increases by announcing the average house price had risen in value by 46 percent to $1.076 million since the last revaluation three years ago. But just how these increases translate as far as rate increases are concerned, will not be clear until next June when Auckland Council sets its new rate level. Regardless of how much rates increase, it is likely that we will see upward pressure on residential rents as property owners and investors attempt to maintain equilibrium in their rental returns. Those new revaluations may already be out of date It’s not news to most property owners that the Auckland housing market has been cooling for some months, but this also means that it is likely some properties may be worth less than their new revaluation. According to the Real Estate Institute (REINZ), figures just released for the year to the end of October 2017, the Auckland the median property sales price fell by 3.2% year-onyear to $850,000. This is the biggest fall since December 2010, and the lowest median price in the last 16 months. However, it might not be as grim as it first seems, as there has been a glut of apartment sales in what was the old Auckland City Council area, and this has brought down the median value for the whole Super City region. And of course it depends on how you measure “price”, as REINZ also do another calculation using a House Price Index (HPI) formula, which for the Auckland City legacy area, only resulted in a decrease of 0.8% year-on-year. HPI looks at the mix and value of the properties sold, not just the sales price, which makes an allowance for all those apartments. Feeling better? Hold, don’t sell The slowing down of Auckland residential property sales has seen a lot more previously ‘for sale’ properties that haven’t

achieved an acceptable sales price, coming on stream as rental properties. Depending on the amount of equity in the property, many of these initially reluctant landlords have been surprised at the returns that can be achieved with a well-managed rental investment property. Quinovic Parnell and Quinovic Viaduct offer free residential rental appraisals. Give us a call to discuss your particular circumstances. You might be surprised at what you can achieve. To be fair, it’s not always smooth sailing being a residential property landlord. This month the Dunedin District Court overturned a ruling known as the Vic Inglis Tenancy Tribunal decision, where rental property owner Vic Inglis had been ordered by the tribunal to pay his former tenant over $10,000 in rental refunds, due to having non-compliant alternations in his rental property. Common sense did eventually prevail as the District Court stated in its ruling that although what was essentially a technical breach was “unlawful”, as the tenant had not suffered any detriment from the technical breach, she must pay back the amount she had received. Moving forward, this means where a rental property does not have a full Code of Compliance sign-off, the Tenancy Tribunal adjudicators can now make rulings that consider both the degree of unlawfulness and the degree of harm caused to tenants. This should help ensure that resolutions are fair to all parties. We say – landlords don’t knowingly take a risk, make sure your rental property is fully compliant with all building regulations. On a positive note for Tenants Housing Minister Phil Twyford has announced the Government plans to pass the Healthy Homes Guarantee Bill by Christmas. At Quinovic Parnell and Viaduct, we have been talking to our property owners about the insulation requirements for their rental properties - compulsory from 2019 - for some time. The Labour Government has now clearly indicated there will be a minimum requirement for heating as well. This is likely to be in the form of heat pumps, with the standards for insulation and heating to be confirmed within six months of the Bill being enacted.

It was going to be a great year, 2017. It started well, after a sunshine-filled family Christmas with my twin sister in Tauranga. Then, back we headed to the office ready to rent lots of property — but it was not so! After the usual rush of January-February, rental enquiries were down. Properties were slow to rent and it continued throughout the year. Government elections and the uncertainty of the parliament did not help, and now we are in December and everything slows as people do not want to be looking for properties so close to Christmas. We have had many owners sell their properties this year, and what amazing prices they are getting. So, we lose management properties, and tenants are losing their homes. With the new government suggesting radical changes to the Residential Tenancies Act, such as increasing the 90 days’ notice and landlords paying letting fees, is not helping. Insulation regulation comes in on 19 July 2018, and all rental properties must have some form of insulation or heating by that date. All of these things are not encouraging investors to invest in residential rental properties. We need the rental properties available for families who cannot afford to buy a home, just as much as we need affordable homes for the first-time home buyers! If there are less rentals available, then the rents will go up! What a conundrum. Christmas is coming. It’s my favourite time of the year—up go the Christmas decorations and twinkly lights at Just Rentals. We shall look forward to the New Year with optimism and commitment no matter what 2018 has in store. Aah summer. A good word that conjures up much good stuff, like holidays, Christmas and fun summer festivals. We take a look at a collection of fun photography taken at a recent festival, with some rather happy, insanely creative people. The winelands already has its fair share of summer festivals, with tribes of tranceheads and rockers tripping and moshing in deep valleys on distant farms, but Littlegig has brought something quite different to the mix. It ticks all the boxes for partying, art and music, but adds a heavy emphasis on the taste buds. Rejecting the normal festival approach of treating food as an after-thought, Littlegig organisers put as much effort into their lineup of chefs as they do their bands and DJs. If grub is important to you, it’s a game-changer as far as festivals go. In keeping with the festival’s forest setting, Chef Chris Erasmus of Foliage restaurant (listed in the World’s 50 Best Restaurants) was one of three chefs serving festival goers. An expert forager based in the celebrated foodie enclave of Franschhoek, Erasmus produced dishes that spoke of the land, fields and sea - like wild caught langoustine, lime and ginger koeksisters with charred corn and burnt cucumber salad. His dessert option was buchu and wild dagga (marijuana) marshmallows with honeycomb, charcoal beetroot and hazelnut rocks. Lilley the baker, served up a Caprese Focaccia with local Buffalo Ridge mozzarella, marinated beef tomatoes and fresh basil, as well as a whey brine pastrami and a spicy tropical piccalilli sourdough sandwich.

Completing the trilogy of opening acts was the BBQ expert, PJ Vadas of The Hoghouse Barbeque who made smoked pork belly buns with hoisin pineapple kimchi and then an aged beef sirloin with ale pickled onions and watercress and sesame soy dressing. Befitting a headline act, celebrated 25 year-old Danish chef prodigy Rasmus Munk flew in a day before the festival started. His brief was to make a 12-course dinner for 40 guests for the Saturday night at Littlegig, but he also threw in a couple of numbers for the rest of the festival-goers. For a man who trained at The Fat Duck and is used to serving 45 course meals to guests at his 15 seat restaurant Alchemist in Copenhagen, this was child’s play. His dishes included a lamb brain mousse and a photorealistic leek and potato ash tray. “We started using lamb brains at Alchemist about a year ago. Brains need to be used 24 hours after slaughter. We make a mousse, which is very similar to foie gras, but we make it with lemon thyme.”

Perhaps aiming to tap into the hedonism of festivalgoers, Munk’s next dish, The Ash Tray, was inspired by his grandmother’s lung cancer. Served in an ash tray, it was made with different kinds of potatoes and caramelized leeks and dehydrated tomatoes cooked and designed to resemble a heaped pile of ash and glowing embers. As unappealing as a dish to someone’s dead grandmother’s lung cancer sounds, it was the stand out dish of the festival. Dark, theatrical and challenging in appearance and concept yet undeniably delicious and layered, like any festival missed out on, there’s at least one of those “you had to be there” moments that cannot really be explained. ADMIRING THE AURORA BOREALIS “Beyond the distant peaks, a green and blue symphony of lights had begun. It rippled and shimmered like sunshine on water, leaving Rich blinking back tears. He’d read something about this but had never seen it before. ‘It’s the aurora borealis,’ Lou said quietly. ‘Northern lights.’” – Danika Stone, Edge of Wild One of nature’s greatest spectacles that paints parts of the northern hemisphere’s night skies with giant, fluorescent swirls, the aurora borealis — which means ‘dawn of the north' — occurs when gaseous particles collide with solar-charged ones that have penetrated the Earth’s atmosphere around the magnetic pole. The most common colour to occur is a vibrant green, caused by oxygen molecules at an altitude of around 100km, while the rarer bloodshot auroras, also caused by oxygen, are formed at higher altitudes of more than 300km. Nitrogen stains the sky with an occasional cobalt. The aurora’s display can sometimes reach heights of 640km, and, conversely, if you go too far north, the power of the spectacle is diminished. A similar phenomenon, the aurora australis — which means ‘dawn of the south’ — illuminates our southern skies too, and though both occur regularly, they are said to peak every 11 years. Indigenous Americans and the Inuit of Alaska believe the lights, which are most clear in the north in winter, to be spirits of their ancestors and the beasts that they had hunted. Verve brings you some of the best spots to view the heavenly kaleidoscope.


CANADA Little light pollution combined with a favourable latitude means Canada boasts plenty of jaw-dropping views of the northern lights — there’s even a village dedicated to them. Aborigineowned Aurora Village, in the Northwest Territories near Great Slave Lake (the deepest in North America), offers lodge and tipi accommodation and operates many tours including dog sledding, wildlife viewing, snowshoe adventures and ice fishing. Expansive grounds hide an array of viewing areas including private hilltops and hidden enclaves from which you can admire the aurora — they even provide heating viewing seats so that you can withstand the chills for longer.

ICELAND Positioned in the shadow of the spectacular — and spectacularly unpronounceable — Eyjafjallajökull volcano, you can take in the aurora borealis surrounded by snow while in the steaming comfort of a mineral-rich hot tub at Hotel Ranga. The beautiful, boutique lodge is finished in timber from top to toe, with animal skins on the walls, woollen blankets and furniture forged from driftwood. Between aurora borealis spotting, head out to observe some whales and explore the local ice-caves.

USA Alaska’s Fairbanks is the USA’s most notable base for aurora-watching, positioned beneath the Arctic, near the state’s revered Denali National Park that's home to spectacular peaks and ancient lakes and wildlife such as the moose, eagle and grizzly. The historic Chena Hot Springs Resort shuttles guests by night to an 800m-high viewing spot (with height comes a more enchanting celestial experience), while back at the resort guests can soak in thermal mineral springs and sip on cocktails served in glasses carved from ice. There’s also a museum, crafted from ice of course, that contains lavish, frozen sculptures.

NORWAY The world’s most northern ice hotel, Sorrisniva, awaits across the border of northern Sweden along the banks of the Alta River, Norway. Guests can choose from 30 ice bedrooms carved each year by local workers and artists, along with an ice bar, an ice chapel for weddings, and several ice sculptures, all delicately illuminated with beautiful lights. Even the beds are frozen. Alternatively, a gaggle of tipilike sami tents replete with open fires afford a romantic setting to take in the aurora borealis. You can also ride snow mobiles, reindeer sleighs and try your hand at ice fishing.

FINLAND Among the cosiest options on the list is the igloo village at Kakslauttanen Arctic Resort in the Finnish Lapland. Stunning en-suite, glass-roofed igloos — specially designed to not frost or steam up — in forest clearings afford spectacular views to the heavens. Other amenities and activities include the world’s biggest smoke sauna, aurora hunting excursions on snowmobiles, skiing, quad-bike safaris, reindeer or husky sledding, and horseback riding.

SWEDEN Many consider Sweden’s Abisko National Park — home to a plethora of wild reindeer — to be the world’s premier aurora borealis destination, thanks in part to a 70km-long lake that helps create a consistently clear patch of sky, known as ‘the blue hole of Abisko’. Its legendary Icehotel is a luxury lodging much of which must be reconstructed every year, with the world’s leading ice sculptors called in to keep things fresh. Traditional chalets are available, but why opt for those when you can rest your head within your own private, intricately carved frozen space, wrapped in thermal blankets atop of reindeer hides to fend off the -8C chill? Aurora tours on snow mobiles or by dog sled can be booked through the hotel.

THE 'OTHER' AMERICA

South of the US border, you will find magnificent Mexico. Once home to rich pre-Columbian cultures such as the Maya, Toltecs and Aztecs, the ruins of their temples offer a fascinating glimpse into an ancient world. Some of the best archaeological sites, such as Uxmal, Palenque and Chichen Itza, are found on the Yucatan Peninsula, where you’ll also find more recent colonial history evident in beautiful cities such as Merida. I highly recommend staying in one of the gorgeous haciendas in this region – so atmospheric, and a truly authentic experience. History aside, Mexico also boasts some incredible natural features such as the Copper Canyon. Seven times as large as the Grand Canyon and almost as deep, it is best experienced aboard the Chihuahua al Pacifico train, considered by many to be one of the most dramatic train rides in the world. Further south, with the largest percentage of indigenous Indians in all of Central America, Guatemala is without doubt the most scenically stunning of all the countries in the region. The markets of Chichicastenango are a riot of colour, and the volcanoes rising above lakes of breath-taking beauty are astounding. A true must-see is Tikal, one of the greatest Maya centres in history, with seriously impressive pyramids and temples rising above the verdant jungle. Keep going and you’ll reach the environmental jewel in the crown, lovely Costa Rica. A world leader in eco-tourism, it offers fantastic beaches, tropical jungles, cloud forest and amongst the most diverse range of bird, insect and animal life found on earth. The birdlife in particular is mind-blowing, with toucans and parrots

being as common as sparrows are to us! Other drawcards include the charmingly laid-back three-toed sloth, many species of monkeys and a colourful selection of butterflies and frogs. Lastly, there is Panama which for more than a century has provided the vital link between the Pacific and the Atlantic Oceans. A great experience is to do a partial transit of the canal on a tourist boat through the Miraflores Lock near Panama City. The old centre of Panama City is an historical gem, and it was from here that the Spanish Conquistadores set out to conquer South America.

Much of the Inca gold plundered by the Spanish was sent just across the isthmus from Panama City to Portobelo on the Atlantic Coast. This incalculable treasure was protected from marauding pirates by imposing forts, some of which remain today. You could say these were the original Pirates of the Caribbean. A sense of history is everywhere. San Francisco, New York, Rio de Janeiro and Buenos Aires are all fantastic destinations. But next time you travel to one of these, why not take a side trip to the ‘other America’, you will be surprised and richly rewarded.

A small group of friends from Okere Falls on the lake shore joined Matt and co-owner Tina for the four-month journey of over 9000 nautical miles through the Caribbean Sea to the Panama Canal, across the Pacific to

the Galapagos Islands then through French Polynesia with final landfall at Tauranga. She then had a full re-fit and was christened Tiua meaning ‘to move with the wind’ and today shows little evidence of her humble beginnings. DION NASH: TRIUMPHING

“A lot changes when you become a dad,” says the former cricketer. “As a dad, I certainly want a society that is kind and open and accepting to people of all kinds of orientations. I also want a society that respects effort, achievement, hard work, dedication and tenacity. Sometimes those traits get mixed up with masculinity.” Dion says he always felt a greater urge to “belong or fit in” rather than the need to “be masculine”, a need that he dismisses as a sign of insecurity. “I think men are certainly more open these days,” he says, “and the world is more accepting. Whether you are gay, straight or bi, it certainly feels like we have moved past the idea that you have to be, or behave, in a certain way.” Growing up in the small town of Dargaville (“an awesome community, where sport was king”) greatly shaped Dion. He talks of working on his dad’s farm, of “being chucked up high on the hay bales on the back of our Bedford truck”, from where he would throw hay to the cattle. “I felt like I was king of the world up there,” says Dion. “My parents were supportive and sports-mad, so that helped immensely. But perhaps the idea of getting out, taking on the world and exploring what was out there also drove me on.” Do you miss professional sport? “I miss being super fit and the focus that comes with that. But I had a good run, I loved it at the time but to be honest I am more excited now about the path ahead of me. As far as fitness goes, I try to go to the gym three times a week, but I’m afraid the intensity and resulting level of fitness ain’t what it used to be!”

Though he’s never met the iconic cricketer, Dion cites Imran Khan as a big influence on his life (“I always admired his spirit as a man, both in sport and after”), and names old headmaster and cricket manager DJ Graham (“because of his mana and integrity”), along with Bruce Plested (“honest, hard-working, tough and smart”) as mentors. Special praise is of course reserved for Dion’s wife, “for her humility, grace, humour and support”. I ask Dion about his expectations when founding Triumph & Disaster, and how the reality has compared. “Well, I wanted to get away from the machine and being told what to do by a boss who was a better politician than me,” he says. “The reality is I work harder and longer now than I ever have, it is all consuming and it’s tough being the one who the buck stops with. But I love it.” The company has been quickly embraced around the globe, though Dion admits it doesn’t always feel that way. “It feels like five-and-a-half years of hard toil and effort,” he says. “But we are proud of what we have achieved and excited about the future. I do think we have created a brand that appeals on a base level, I mean everyone understands the tension in life between triumph and disaster, success and failure. Each year the Institute for Economics and Peace releases the Global Peace Index that ranks countries in terms of safety, considering factors such as military expenditure, crime and terrorism rates, road safety, and medicine. The most recent report, released last month, saw Iceland top the poll for the third year running, while our dear Aotearoa was hot on its heels in second place, with Portugal, Austria and Denmark, respectively, making up the remainder of the top five. Sadly, some of the most dangerous countries such as Syria and Iraq were once cradles of some of history’s greatest civilisation, beacons of peace and prosperity. According to UN estimates, more than half-a-million have been killed during the Syrian civil war, with a further six million displaced or in exile. Superficially, the United States offered the biggest surprise with the biggest slide on the list, plummeting 11 places to number 114 out of 161—and no doubt leaving a trail of orange in its wake. “While the true extent of such siginificant political polarity in the US will take years to be fully realised, its disruptive influence is already evident,” Steve Killelea, founder of the Institute for Economic and Peace, tells Reuters. He blames rising inequality, greater perceptions of corruption, and attacks on the press to have “contributed to this substantial deterioration in the US and overall decline in peace in the

North America region”, yet its neighbour, Canada, came in at eighth place on the peacefulness ranking. Overall, the institute concluded that, contrary to general perception, there was less violence in 2017 thanks to drops in the number of countries engaged in armed conflict with 93 nations generally improving on their 2016 index score — though there was a worrying rise in countries attacked by terrorists. Needless to say, there’s plenty of overlap between this list and the world happiness report also released earlier this year that saw Iceland place third, Canada seventh, New Zealand eighth, and Switzerland and Denmark to also make the top ten of both lists (and the US fared far better, placing 14th—though this study was conducted before much of their more recent political upheaval). And of course, with happiness and harmony also comes good health. Another study published in 2017, conducted by London’s Imperial College and the World Health Organization (WHO), concluded that by 2030, average life expectancy in many developed countries will reach 90, while its current tally of the top 20 life expectancies closely


resembles the top 20(ish) of the Global Peace Index. “South Korea has caught up with Japan as its standard of living has increased, but in many parts of Asia, young people are eating Western diets,” says Sarah Harper, professor of gerontology at Oxford University. “The (previous) healthy diet may not be sustained as young people reach older ages.” Majid Ezzati, professor of global environmental health at Imperial College, who led the WHO study, says that the South Koreans are leading the way in terms of investing in childhood nutrition and education, adding: “What South Korea has done goes completely against some Western countries… against the prosperity agenda.”

The obvious outlier when comparing the peacefulness and longevity rankings is South Korea. Coming in at 47 on the Global Peace Index (and just 56 on the happiness one), it is not only ranked 11th on the current life expectancy list, but projected to be the first nation to average a life expectancy of 90 thanks to an ever-strengthening economy, solid healthcare, a diet rich in fermented foods said to boost immunity and ward off cancer, coupled with low smoking- and blood pressure rates compared with Western countries. (There’s more bad news for the US, whose life expectancy at birth is predicted to drop to one of the lowest among high-income nations, at 83.3 years for women, and 79.5 years for men—five years lower than much of Western Europe).

They’re strong words, but it really is simple. Sunburn is lethal to the skin. Sunburn can happen anywhere, it doesn’t require a beach, a bikini, or a passport. THE SUN’S RAYS The sun sends out ultraviolet rays A, B, and C. UVA are known as the ageing rays, UVB the burning. UVC rays don’t get through the ozone layer.

SUNBURN IS SKIN SUICIDE SUNSCREEN Sunscreen is an involved topic, so let’s keep it simple and speak about the common terms: What does chemical or physical mean? Chemical sunscreens absorb UV rays and physical sunscreens reflect or scatter the rays. What does broad spectrum mean? UVA and UVB ray protection. The importance of using both cannot be emphasised enough.

THE BIOCHEMICAL EFFECTS OF THE SUN The sun has an eternal allure for humans, and it’s not difficult to appreciate why. The warmth on our skin is like a luxurious balm, but it goes deeper than that. Biochemically it changes our brain chemistry meaning that basking in sunlight for a few moments gives us a feeling of wellbeing through a boost in endorphins.

What is SPF? Sun protection factor is a measure of how long a sunscreen will protect you from UVB (not UVA) rays.

FEELING THE BURN It all goes belly up when we overdo it and our skin raises the alarm. If we don’t listen, our skin will, quite literally, begin to burn. Sunburn is the skin’s natural response to extreme UV ray exposure and indicates severe damage.

A sunscreen with SPF 15+ should provide adequate protection as long as it is being used correctly. Sunscreens with SPF 50 or more offer a safety margin as most people don’t apply sunscreens as heavily or as often as they should.

THE RISKS Sun damage brings the risk of skin cancer and prematurely aged skin. There are different types of skin cancer — some are treatable — but melanoma is insidious and life threatening. Unfortunately, New Zealand has the worst rates in the world. BE SUN SMART We need to protect our skin from UV rays, every day, winter and summer, rain or shine. However, most people don’t. Nor do they use sunscreen correctly, which is liberally and often. I often have clients come into the clinic and say, "These brown spots popped up overnight, but I wear SPF every day." While it appears they’ve come out of nowhere, it’s cumulative damage coming to the surface.

Is a higher SPF better? A sunscreen with a SPF 15 provides about 94% protection. Protection is increased to 97% with SPF 30 and to 98% with SPF 50+.

I suggest products with SPFs no lower than 30 and no higher than 50. A FEW FACTS • The latest stats show that approximately 2,200 Kiwis are diagnosed with melanoma every year. That’s equivalent to six people being diagnosed with melanoma every day. • Research has shown a correlation between childhood sunburn and sun damage in later life. • Every day, all-year-round is a sunscreen day. Even on cloudy days, 80% of UV gets through clouds. As skincare professionals, we’re on the front line of skin saftey. AN ERA OF NEW DAWN! The medical world and advent of new treatments depend upon clinical trials. Clinical trials are designed to try new treatments, and in most trials one treatment is compared with the other. The results favour one treatment or another. Sometimes these are not able to answer these questions and new trials are needed. The doctors call this 'evidence-based medicine'. You might remember an article written by me few months back on new treatment for strokes. In this article, I am going to give an overview of recently published clinical trial results published in a reputable medical journal. The name of the trial is DAWN study. The new stroke treatment concerns clot removal, which doctors call 'thrombectomy'. The new term is suggested for this treatment in New Zealand by stroke specialists, and is called percutaneous stroke intervention, or PSI. The current cutoff for administration of this new treatment is six hours after the onset of stroke symptoms. This is the reason most patients become ineligible for the treatment as they are brought too late to the hospital. This treatment is only available in three centres in NZ: Auckland, Wellington and Christchurch. The patients from other places are transported to thee centres (usually by air ambulance) for this new treatment. You can imagine, this put constrains on the provision of this treatment to these patients. It is a race against time. The DAWN trial asked the question, “Can the time window for this treatment be extended beyond six hours?” The study was designed to answer it. They divided patients into two groups. The first group was to receive the standard treatment in six hours time window and the second group up to 24 hours (after the onset of stroke symptoms). The investigators also suggested a new scan for patients getting the late treatment called a CT perfusion imaging/ scan. This is a special CT scan of the brain which gives coloured pictures of the brain to show which part of brain is damaged and which is abnormal, but can be saved. These areas give different colours on the scan films. The specialists can read the scans and predict the recovery, if treatment is given. The results of DAWN trial confirm that this treatment is useful in selected patients (whose CT perfusion scan show salvageable brain tissue) up to 24 hours after their symptoms. The treated patients have less disability or no disability at all. How will it affect treatment of stroke patients in NZ? Stroke specialists are currently discussing the results of DAWN trial among themselves. The consensus will be agreed in due course. In the best case scenario, the treatment will be offered to selected patients up to 24 hours after onset of stroke symptoms. All the hospitals must acquire the technology of CT perfusion imaging/scans and have excellent transport facilities (ideally air ambulance) to one of the three centres. St John’s is willing to transport these patients and are in discussions with national and regional stroke networks. Watch the space!

Mix two parts of rice flour or sea salt with one part whipped cream and apply to neck and face for up to 15 minutes, it's a wonderful and effective exfoliating paste. When I was growing up, what I was going to wear on Christmas Day was almost as important to me as the presents. As a child, we’d usually get some new clothes, and they’d be quickly put on to be worn for the day. As an adult I always bought my own. That’s stopped for me in recent years as I realise that although it’s an occasion to get a bit dressed up, buying something especially for the day isn’t strictly necessary. Then of course, there’s the holidays around Christmas — the trips to the beach or a city-break. There’s a ‘separate-to-youreveryday’ holiday wardrobe to contend with. Packing well is an absolute skill, and I’m often called upon to help my clients pack for a trip. Here’s my basic list for what might go into your summer sojourn suitcase: • A jacket: needs to be lightweight and easy. A denim jacket or light bomber is perfect • Two pair of pants: shorts if you are heading to the beach, something smarter if it’s a city break • A skirt (or two): summer skirts are a great alternative to shorts and often cooler to wear. • Dresses: the ultimate summer staple. Be it a simple t-shirt style or something slightly smarter, a dress is perfect as you can dress it up or down, wear it out to an impromptu dinner or to the beach. • Tops: the top you choose to pair with your bottom half can

determine how 'dressy' you are. A trip to the camping ground is unlikely to warrant any need for much beyond a tee shirt, a city break may require something with a touch of glam. Ideally, you should pack around five tops that work with any of your pants or skirts. • Shoes and accessories: consider what you’ll be doing and pack accordingly. This is the time to be circumspect; you may normally wear a different pair of shoes with that one dress, but the pair that goes with several other outfits will probably work just as well. Consider also the shopping you may do while you are away. Sometimes having no time pressures gives you more time to shop, and you may come home with a few gems in your suitcase. Best advice for this? Don’t get carried away in the moment, think about your ‘real life’ back home, otherwise you wind up with a souvenir of your holiday that hangs in the back of the wardrobe rather than a garment that works in your life. LEARNING TO FRY

In the same way that Christmas brings to mind Santa, pine trees hung with sparkling baubles, and mince pies, Chanukah (pronounced Ha-Nu-Kah), which begins on 12 December this year and runs for eight nights, evokes images of dreidels (spinning tops), menorahs (candelabras) — and fried food. In countries like the United States, Chanukah tries to compete with Christmas — you’ll see Chanukah bushes hung with Stars of David. But in New Zealand with its relatively tiny Jewish population, less (perhaps even little) is known about this Jewish holiday. There’s an old Jewish joke that condenses the massive scope of Jewish history into a single pithy statement, describing each of the Jewish holidays from Purim and Passover to Chanukah thus: “They tried to kill us, we survived, let’s eat!” And oil is central to the Chanukah story. Are you starting to see the fried food connection? Good. More about that later. First an abridged version of the story: When the Maccabees, also known as the Hasmoneans, defeated foreign invaders in ancient Jerusalem, around 165 BC, they found their temple had been desecrated. This temple housed an eternal flame and the Maccabees immediately set about reconsecrating it with oil that ought to have run out in a day. The miracle of Chanukah is that this tiny amount of oil kept the flame burning for eight days. So on each night of Chanukah, to remember this miracle one more brightly coloured candle is added to the menorah until all eight candles are lit and on the final night a ninth — the candle used to light the other eight — is left to burn too. To celebrate, food fried in oodles of oil — starting with potato latkes and ending with the somewhat lesser known, but equally central, sufganiyot (an Israeli-style jam doughnut) — is eaten. There are less oily dishes too — brisket is traditionally served, as is a pudding made from noodles called lokchen that is possibly to Chanukah what stuffing is to Christmas. These recipes and many more tried and tested (and often closely-guarded) Kiwi-Jewish family recipes, can be found in the 50th anniversary edition of The Menorah Cook Book, published to celebrate the Golden Jubilee of the Auckland Hebrew Congregation’s Synagogue and Community Centre at 108 Greys Avenue in central Auckland.

Originally published in 1967 to augment the funds for the Synagogue and Community Centre, The Menorah Cook Book’s recipes were submitted by the Jewish women of New Zealand. Continued popularity and demand saw a second edition published in 1969 and a third in 1979. A note in the 1979 edition describes the recipes as "not only the Jewish traditional, but also the exotic and unusual". Alexa Johnstone, author of cookbooks celebrating New Zealand's culinary history, references recipes from the original Menorah Cook Book in her book, Ladies, a Plate. She agrees that The Menorah Cook Book “always had the fanciest recipes”. For the 50th anniversary edition, recipes that have managed to age gracefully over the last half-century remain alongside more modern recipes collected from the Synagogue’s current member families and the adjoining Greys Avenue Deli, Auckland’s only kosher café. Recipes for challah (plaited brioche-style loaves), chopped liver, chopped herring, gefilte fish balls, chicken soup with kneidels (dumplings), hamentashen (triangleshaped pastries), blintzes (folded crepes filled with sweet cream cheese), kreplach (meat dumplings), holishkes (individual stuffed cabbage leaves) and more will appeal to anyone interested in Jewish cuisine. There’s even a recipe for a chickpea latke to try along with the potato ones on Chanukah. Of course, deep-frying is not for the faint of heart. But there are some tips from those in the know to make the job a little easier. Darya Bing, who prepared the latkes for this story, used a grater found at a Japanese store to grate the potatoes and onion as finely as possible. Then she squeezed out the moisture before frying for ultimate crispiness. It goes without saying that paper towel is your best friend once the latkes are cooked. Bing serves them Israeli-style with hummus, garlic, tomatoes, olives, and a dollop of sour cream, but Jews who descended from Eastern Europe also eat latkes with applesauce or cinnamon and sugar. For the sufganiyot, Danit Lawrence demonstrated a nifty kitchen hack to help the doughnuts retain their round shape — squares of baking paper lowered into the hot oil prior to the ball of dough and then carefully scooped out a moment later. If you want your sufganiyot to look professional, buy a doughnut injector from a kitchen supplies store. Otherwise the back of a wooden spoon and a pastry bag will do.

The 50th anniversary edition of The Menorah Cook Book comes just in time to master the culinary delights of Chanukah, the Jewish Festival of Lights.


SUFGANIYOT DOUGHNUTS INGREDIENTS

• 7 cups (1kg) all purpose flour, divided, plus more for dusting. • 2 tbs dry yeast • 1 ¼ cups lukewarm milk • ½ cup granulated sugar • 3 eggs • 100g butter, softened • 2 tablespoons brandy • zest of ½ lemon • 1 ½ litres vegetable oil, for deep-frying • strawberry jam for filling, icing sugar for dusting

METHOD

1. In a mixer fitter with the kneading attachment, add about half of the flour and mix in the yeast. 2. Add the milk, sugar, eggs, butter, brandy and lemon zest, and mix for one minute until the batter is loose. 3. Gradually add the remaining half of the flour, mixing at low speed. Turn the speed up to medium, and knead for another five minutes, until the dough is smooth and shiny. 4. Cover the bowl with plastic wrap and set aside until the dough doubles in bulk, 1-2 hours. 5. In a wide pot, heat the oil on medium to medium high (about 160 degrees Celsius if using a thermometer). 6. Deep-fry the doughnuts four or five at a time, for about two minutes on each side, until brown.

7. Remove and place on paper towel to absorb excess oil. 8. Using a pastry bag or a doughnut injector, fill the sufganiyot with strawberry jam and generously.


GREYS AVE DELI LATKES INGREDIENTS

• 3 potatoes, peeled • 1 medium brown onion, peeled • 2 eggs, beaten • 2 tsp white pepper • vegetable oil for frying

METHOD

1. Heat 1cm oil in a large skillet over medium to medium-high heat. 2. Using a grater, grate potatoes and onion into a large bowl. Add eggs, salt and pepper and combine with a wooden spoon. 3. Drop mixture into oil in mounds — smaller mounds if you want smaller latkes and larger mounds if you want bigger ones. 4. Press down gently with a spatula to form patties. 5. Fry in batches of 2-4, depending on the size of your skillet, 2cm apart until golden brown, about three minutes on each side. 6. Put in a saucepan over medium heat and warm for 3-4 minutes. 7. Drain latkes on paper towel to remove excess oil. 8. Serve with hummus, fried baby tomatoes and garlic and a touch of sour cream.

M E TH O D 1. Preheat oven to 160 C and line a 36cm x 25cm sponge roll tin with baking paper. 2. Using an electric mixer, whis eggs, sugar and vanilla for five minutes until thick and creamy and the mixture forms ribbon trails when you lift the beater. 3. In a separate bowl, sift flour, cocoa and baking powder and mix to combine. 4. Using a large metal spoon, fold dry ingredients through egg mixture until combined. Spread mixture into prepared tin. 5. Bake for 15 minutes or until the top of the sponge springs back when lightly touched. 6. Turn out onto a clean tea towel and cool for two minutes. While sponge is still warm, with long side facing you, roll it up in the tea towel into a log. Leave to cool completely. 7. To make coulis, place berries, sugar an water in a saucepan over medium heat and cook for 6- 8 minutes. Cool. 8. Whisk two cups cream until soft peaks form and fold into two cups chocolate ganache. Gently unroll the sponge and spread with the ganache mixture. (If sponge cracks, repair with extra ganache mixture.) Top with coulis and chopped cherries. Roll up to enclose filling. 9. Place log on a wire rack with a tray underneath. Pour one cup chcolate ganache over, until the log is well covered. Leave to set for two hours, then repeat with remaining ganache. Garnish with chcolate leaves and cherries. C H O C O L ATE L EAVES 1. Place chocolate melts in a glass bowl over a saucepan of simmering water and gently melt. 2. Using a paintbrush, paint melted chocolate onto camellia leave. Once dry, gently peel leaf off chocolate. Use a palette knife to ease them apart if necessary. Glue any broken Chocolate Leaves together by painting chocolate on the underside of the leaf.

Matcha is a fine bright-green powder made from special ground, green tea leaves. It is popular in Japan, and is commonly used to make matcha tea, but we have included it in this recipe to give a beautiful colour and taste, with the added health benefits including being an antioxidant. Matcha combined with vanilla and cashew makes a sweet, creamy and refreshing Japanese-fusion ice cream. Dietary: gluten- and dairy-free, vegan Soak time: 30 minutes Prep time: 5 minutes Freeze time: 3 hours Serves: 4 INGREDIENTS

1 cup cashews 400ml coconut cream 4 Tbsp coconut oil 3 Tbsp maple syrup 1 Tbsp matcha powder 3 tsp vanilla extract a pinch of sea salt

METHOD

1. Soak the cashews in warm water for 30 minutes. 2. Drain and rinse. 3. Line a loaf tin with baking paper. 4. Blend all of the ingredients together in a food processor, until smooth. 5. Pour into the loaf tin, and place in the freezer. 6. After one hour, remove the ice cream from the freezer, stir it, and place back in the freezer. 7. Keep in freezer for a further 2 hours before serving. 8. Scoop, and serve in a bowl. 9. Store in the freezer in an airtight container or in a covered loaf tin, where it will keep for up to two weeks. METHOD

1. Soak the 2 measures of cashews in warm water for 30 minutes. Drain and rinse. 2. Line a 12-hole muffin tray with baking paper. 3. Except for the coconut oil, place all of the base ingredients in a food processor, and blend for a few minutes. 4. Slowly add the coconut oil to the food processor, and blend until combined. 5. Press the base into the muffin-tray holes, and put into the freezer. 6. Rinse out the food processor, then place all of the strawberry layer ingredients in the food processor, and blend until smooth and creamy. Add more lemon juice if you prefer the mixture to be tart. 7. Take the muffin tray out of the freezer, and pour the strawberry mixture over the bases. Place muffin tray back in the freezer. 8. Rinse the food processor again, then place all of the cream layer ingredients in the food processor, and blend until smooth and creamy. 9. Take the muffin tray out of the freezer, and pour the cream mixture over the strawberry layer. Place muffin tray back in the freezer for 3 hours to set. 10. Before serving, top with fresh strawberries.

FEEDING KIWIS Lisa King was no stranger to good deeds having once secured Neil Finn to entertain the folks at City Mission on Christmas Day, but in 2015 she upped the charity ante by founding Eat My Lunch, a “forprofit commercial enterprise, with a big social mission”. That mission is to feed hungry schoolkids by way of a simple business model: for every meal her catering company sells, they donate a lunch to a kid in need. “What sparked the idea was when I saw the Campbell Live report on lunchboxes in schools [the 2012 investigation into child poverty], and I got quite upset about it,” says Lisa. “It really stuck with me, and, having spent 15 years working in big business and corporate, I wondered what I could do to help.” Had you worked in catering before? “No, never! We had no idea what we were getting ourselves in to. A couple of months after we started, Diane Foreman came to our house and said that we had chosen the hardest industry — especially using fresh produce every day.” Lisa partnered with esteemed chef Michael Meredith who “shared a passion for community”. The project began out of Lisa’s kitchen where they expected to be preparing around 50 meals a day for the first year, but within the first 12 weeks hit their three-year forecast. Michael estimated they wouldn’t be able to prepare any more than 200 meals daily from Lisa’s home, but by the time Eat My Lunch shifted to larger premises they were sending out around 700. “I’m a self-proclaimed foodie!” says Lisa. “Michael and I plan everything, design and test the recipes ourselves. I started out with a very romantic idea of how it would work, making everything ourselves from my home, but it soon became apparent that it wasn’t going to turn out that way.” It’s certainly a satisfying way to experience a sense of disappointment. In just a couple of years, Eat My Lunch has given more than 600,000 meals to 55 schools across Auckland, Wellington and Hamilton. There are a further 50 schools on a waiting list. “Every day people from around the country ask when we are going to come to them,” Lisa says. “Especially in places such as Christchurch. But we’re still a relatively new company, so we just need more time.”

The company recently released a cookbook, Food for Good, “full of easy family recipes and beautiful photos of the kids and volunteers” with a free meal given for every unit sold too. The charitable arm of the business is staffed by volunteers who prepare more than 1,800 lunches per day. “We have had over 5,000 people volunteer over the past two years, and usually have a two-month waiting list,” Lisa says. “It’s a real mixture of people, from high school students to doctors and lawyers, to CEOs and sportspeople and retirees. It’s amazing to meet all these people that you wouldn’t usually get to meet, and when they come in and don an apron, everyone is the same. I love the fact that we be able to bring different parts of the community together through this work.” Lisa also stresses the importance of healthy ingredients. “We won’t prepare anything that we wouldn’t give our own kids,” she says. “There are lots of vegetables, and portion sizes are important, too. Then, everything is packaged in plain brown paper bags to look as though it could be something that the kids brought from home, and given to the teachers to hand out. It is very discreet.” Something that the organisation would like to develop and expand further are the cooking classes that Michael conducts for the kids — with some even then even introducing their parents to some tips back at home. “Sometimes parents were not sending their kids to school when they’d run out of food,” laments Lisa. “So, Eat My Lunch has also gone some way to cutting down absenteeism.” But there’s still much that needs to be done. “Child poverty has doubled since the ‘80s,” says Lisa, “and a lot of principals have told me the problem is getting worse. The new government have spoken a lot about the issue, and we want to do all we can to help. We do try to stay out of the political arena, but businesses have shown that they can have a big impact on social issues. We are working on the immediate issue of feeding kids in poverty. CHEESE WIZ! Most of us love a good piece of brie, but you will be hard pushed to find someone more passionate about cheese than Juliet Harbutt. Over the last 30 years, she has built a reputation as one of the world’s foremost cheese experts. Having finally moved back to New Zealand, she is finding success once more running food tours through Hawke's Bay. Verve chatted with her about her new venture, running a deli business, and travelling the world to spread the knowledge of cheese. After spending over 30 years in the UK, what made you decide to return to New Zealand? I really missed the beaches, the long summers and I really wanted to see my nephews and nieces grow up, so I felt it was time to move back to the other side of the world. One of the main reasons I chose Hawke's Bay was because I wanted to feel like I had come somewhere new rather just than going back to where I had come from. Either way, I'm much closer to my friends than I was in Europe! I absolutely love being here. What inspired you to start running food tours in Hawke's Bay? Great weather, wonderful wine, fresh produce, and some really good cheesemakers! It's a real destination for people to visit. I had figured coming back that I would probably make my living doing cheese seminars, but there is a relatively small market in NZ. I realised I needed to do something which involved tourism because it's such a huge industry down here. I take people around my favourite places, wineries and makers, buying and picking delicious food along the way then assembly them into an unforgettable lunch at my home overlooking Black Barn. It’s what I love doing when I am travelling – finding out about local foods, recipes and culinary traditions and whenever possible visit someone at home and see how they live, and get a sense of what it's like to live in that country.

Your World Cheese Book first published in 2012 and a second updated edition in 2015. Have you noticed a growth in the New Zealand cheese industry during that period? Yes, but I'm surprised there hasn't been more growth. It’s very difficult to meet regulations and actually set up a cheese business, but on the other hand there is enormous scope to create something really original; yet most NZ cheeses are still copies of European cheeses. The difficulty is that because 90% of cheese is sold through the supermarket, it is treated more as a commodity or something really expensive. There isn't really much of a middle ground, but I think the potential for smaller production is huge. I’d love to help create something which is a bit different and unusual. What would your advice be to someone wanting to start their own deli or cheese shop? The first thing I would say to anyone is to talk to an expert who has done it. I run one-to-one courses which do exactly that, and help answer the questions people don't even know to ask. In the years I had my cheese shop, customers were always saying how they would love to give it a go themselves. I invited them to work with me for a week, and after finding out how hard the work was 90% really weren't interested! I spent the next 20 years persuading people about to open a shop to go and work for one first, because It will save tens of thousands of dollars and lot of heartache! What would an average day in your life be like? I could be writing an article for a magazine in Europe or New Zealand or tasting notes for a cheesemaker. Then there are my trips abroad. In May I host a cheese weekend at the Castello di Potentino in Tuscany and I have just done a lecture tour from Ecuador to Santiago, Chile on a Silversea Cruise. That’s one of the things I love most about my life; no two days are ever the same.

Tucked away quietly at the end of Sandringham Road this cosy diner leads the way with classic authentic Indian fare that continues to draw in the crowds. Auckland is blessed with an Indian restaurant providing some of the best ethnic dining in town. And there’s plenty of action on the menu. The aim, and they succeed, is to provide lovers of good Indian cooking every reason to flock here for a dining experience that lingers long after the credit card bill has faded.

And the verdict? The restaurant is interesting particularly if you enjoy a good curry with flavours that ring true. Traditionalists will find all the tried-and-trusted as well as some adventurous dishes on the menu. The food is simple and fun to eat and at sensible prices that won’t break the bank. The year has once again flown by, and we're now moments away from Santa once again breaking into our homes heavily ladened with presents. An exercise that is no way costly or time consuming for any adults involved. But before he, or indeed anyone else comes, it's nice to get things looking nice and festive. And what better way to do this than by decorating your home with some plants that'll help spread the Christmas spirit? POINSETTIA: Now named after the first US ambassador to Mexico, Joel Poinsettia, these showy, beautiful Mexican plants are now completely associated with Christmas. But be careful, for while they look stunning they can be a little fragile and will quickly burn in sunlight. For best results water them regularly, and keep them out of direct sunlight. TAHITIAN POHUTUKAWA: While the Tahitian pohutukawa isn't a true NZ native, it has one main advantage over native pohutukawas in an urban setting as it only grows around 1 x 1m instead of the usual 6m. Can be grown in a pot.

BLEEDING HEART VINE: Subtropical vine that can be grown as an incredibly delightful houseplant. With their dark green leaves and white and red coloured flowers they are the perfect colour for Christmas. Best grown in bright indirect light. AMARYLLIS: With their huge winter flowers, amaryllis (or hippeastrum) look completely stunning. Find a cool spot, with no direct sunlight and your plants will look great right through the holidays. CHRISTMAS LILY: With their tall graceful stems and their angelic, sweetly perfumed flowers, they're an eye-catching and delightful way to decorate indoors for Christmas. OPUNTIA VESTITA: This eye-catching cactus is covered in fine white hairs, making it look covered in snow. SHOOTING NEW HORIZONS Husband-and-wife photographers Michael and Vanessa Lewis first met while at university in South Africa, and though they didn’t immediately hook up, several chance encounters — including sharing studio space — in Johannesburg dictated that destiny had other ideas. Whether it be fashion, food, travel, editorials, ads, décor or portraiture, between them, the pair cover just about all possible bases, and sometimes combine their photography prowess (as they have for Verve), though are officially independent freelancers. “We help each other out,” says Michael. “And Vanessa’s the easiest person to work with.” And the feeling’s mutual, Vanessa? “Totally!” “I’m not so sure,” her husband chuckles. The amiable couple made the move to Aotearoa two years ago, in search of quiet and care-free new life — a slice of paradise in which to raise their eight-year-old daughter, Nina. Michael’s 20-year-old son, Mathew is also attending film school here. “I’m so in love with New Zealand,” beams Vanessa. “It still feels like a holiday and I’m trying to explore every part of the country. I love cows — and there’s a cow around every corner!” It’s in keeping with Vanessa’s forte for she favours photographing food and travel. “Travel and food go hand in hand,” says the snapper. “One of my happiest professional memories was for a food magazine shoot in Mexico about the origins of hot chocolate.

Air France were sponsoring it, so we had a stopover in France and ended up eating in Paul Bocuse’s kitchen. He came and sat with us, it was an amazing experience.” Much of Michael’s photography captures interesting characters. I ask him what it takes to take compelling portraits, and what it teaches him of the human condition. “A portrait setting is quite a complicated process,” he says. “You have to make a person feel comfortable — though, sometimes you must make them feel uncomfortable to emphasise a certain aspect of their personality or profession. When a person sits in front of a camera, they feel potentially judged. They have no control over the way people will views that portrait in the future. There is a lot of trust involved.” You need strong interpersonal skills. “Yes, you have to be a personable person, if you are naturally grumpy, it won’t work. You need to be confident also, to give off a certain energy. It’s like working with an animal, if you’re nervous, the animal picks up on it. It’s the same when you’re working with people.” Your careers span the digital age. How did that change things, and do you miss the old days of film? “My first year of training was only in black and white, and learning how to use the dark room,” says Vanessa. “Many of the dark room skills can be transferred to photoshop. I enjoy the freedom and the intimacy of digital, it makes things easier for me and the clients.”


“When I sold my dark room, I celebrated!” adds Michael. “All those days and nights spent on orange and yellow lights. It’s a very laborious process.” Are you fans of social media? “Digital photography has democratised the image-making process,” says Michael. “Social media provides avenues for photographers to show other sides of their personalities. Some use it to showcase their work, others for behind the scenes shots — as a way of validating themselves. Vanessa and I use Instagram as a visual release, a place where we don’t have to feel that we have to be saying something. We can just respond to the world around us in a noncommittal, pleasurable way.” It is, continues Michael, a celebration of their life experiences, without the pressure. He goes on: “I recently spoke to a photographer in Australia who told me he has to be so careful about what he uploads to Instagram because people are watching. But I think that if you’re using it that way it creates too much pressure, and are you really enjoying it then? I want to be able to enjoy my visuals, to express myself freely.” Looking back, is there anything you wish you knew when you first started out? “To be practical, I wish I’d had a better archiving system,” admits Vanessa. “Michael did, but I didn’t and I lost photos, and I regret that. Also, when you finish studies, you have all these great ambitions and sometimes you don’t want to take on the little jobs that don’t pay much or aren’t glamourous. But they are an

important part in developing your career. You build confidence and relationships. Much can grow out them.” Michael wishes he didn’t put himself under so much pressure. “I became relatively successful quite early on in my career, and I was desperate to continue that trajectory,” he says. “I would have sleepless nights before big shoots, and work myself into a state of anxiety.” In the days that followed shoots, Michael would over self-analyse, dwell on what he would have done differently, and become critical of his own work. “If I could go back, I would tell myself to relax,” he says. “That you are growing, and you will continue to grow. Be kind to yourself and enjoy the process.” Both say a big part of attaining success is the ability to be accommodating. There is so much talented competition out there that securing a shoot can come down to the client choosing the photographer they’d rather spend time with. “I was working with some of the biggest brands in South Africa, but when I came to New Zealand, nobody knew who I was,” says Vanessa. “It was a case of starting again. I may have been a big shot in Johannesburg, but it doesn’t matter now. You must learn the new rules, and earn respect. The industry is smaller here, and New Zealanders are very loyal and have a friendly approach to work, which is a good thing, but it makes it harder to get in. When I first discovered 20-year-old Dounia a year ago via Instagram, she was a Queens, NYC-bred teenager posting bedroom recorded tracks to Soundcloud, an outspoken advocate on feminist matters and a curve model driven for wider representation and inclusivity in the fashion industry. Instantly I was drawn to her online presence because despite her obvious destined star power, she felt real and attainable. And with her debut independent EP Intro To it sounds as if Dounia has found a middle ground where these passions can all exist and empower each other at once. Claiming unconformity in her sound and self, she chooses to use it as an asset to her allure. Coming from a Moroccan family who immigrated to bustling New York, Dounia has clung to unconventionality with pride for as long as she's known. As a young girl growing up in Morocco while her parents worked in the US to better her future, she would immerse herself into a world of books and words, teaching herself both English — and before she was even aware of it — how to be a lyricist. She honours her hustle on mellow hometown titled 'Casablanca', ("I'm a non conformist/shredding the to do list") always more concerned with selling her own standard than buying into unrealistic ideals. Her own standard is set in the form of a dreamy, soulful alt R&B/rap-sung divide, crossing bridges between both cultures she's grown to know and love the same. Dounia's subject matter revolves heavily around introspective musings on modern love, but her songs are much more love letters addressed to herself than they are an outward gesture of romantic love. Carried by a charmingly soft-spoken flow and accompanied by tongue-in-cheek poetic wit, she counts her burnouts as blessings on 'Dressed Up' ("Ain't play hard to get I just am", "said he lost me to the hustle, well I'm humbled, amen"), romancing herself before she graces anyone the privilege of swooning her. Lead single 'Shyne' matches the same sense of immeasurable worth over tranquil instrumentals, finessing self-love and all those who doubted her all in one swift tidal wave. It's hard not to absorb the relentless confidence that rolls off Dounia's tongue, even exuding through her moments of transparent vulnerability. Eloquent and gracefully spoken but always with the attitude, low tolerance and expectations of a young, self-made Queens girl. Summer is on its way and getting ready for a new holiday is always an exciting time.

The silly season is upon us and traffic around Auckland has become the usual ‘hurry up and wait’ where ever you go.

But while we are delighted at the prospect of a couple of weeks drinking bubble water on the beach, our pets are not impressed at being left behind. It’s a worry and you know how it goes; you’re so worried that your loved one won’t be okay that you put off trying to plan for it.

I have no plans to leave Auckland over the Christmas break and should be available for you except for the public holidays.

Best thing to do is to do your research and plan early, then you have the best shot at finding the best care for Bella and Oscar. What to plan? FIRST — Book Early! Catteries and kennels are very busy, and pet sitters have lives (and families) too! SECOND — Chose cat sitters wisely. The pet sitter should not just scoop poop and refill water and food bowls. They need to see your cats every day and check on their well-being. It is true that cats are easier to care for than dogs in many respects, and a dog sitter carries more responsibility than a dog walker. THIRD — Think 'babysitter' when choosing a dog sitter. You wouldn’t entrust your child with someone only capable of pushing a stroller. Caring for your dog means more than walking him around the house. A babysitter is responsible for the entire well-being of the child, and the same holds true for dog sitters and their charges. FOURTH — Tell your pet sitter where to go in case of an emergency. Give your vet a heads up that you are leaving Holly with a pet sitter and send him an email telling your vet where you are and your wishes in case of an emergency. With a bit of planning your pets won’t be afraid that their mum or dad is leaving them for some fun in the sun.

MERRY CHRISTMAS As 2017 draws to a close, we’ve much to celebrate here in New Zealand. We live in a peaceful part of the world. We continue to enjoy relative prosperity and a quality of life which consistently is ranked amongst the best in the world.

Most people wait around for the “perfect time”. Say, a few years from now when the kids have finished school, or maybe when you’ve saved enough money, or just waiting for the “perfect time”. There never will be a “perfect time”. The time is now. Sense of overwhelm is also common when starting out, you might wonder how on earth you can pull together all the resources you need to start and run a business. Here’s something to note, Resourcefulness shows up after you commit. Once you commit yourself to a goal, especially a big goal - like starting a business, you will become more resourceful. The key is to commit and get started. Helping kiwis turn their dreams into reality and start a businesses from scratch was the driving passion behind us starting JLK Lifestyle in 2017. We’ve just completed our first JLK Business program – it included a 7- day tour to Shanghai & in to mainland China. An intense, exciting and full-on 8 days, this was the inaugral JLK product & sourcing tour. On this trip 4 women started with an idea, which they have each turned into a business. They took the plunge, made the commitment and got started. From an idea to reality, the comprehensive JLK Program over six weeks includes mentoring, “the A-Z” of how to get started; writing a business plan, market validation, go-to-market strategy and value proposition, Branding, and of course product – from concept to design, sampling to production, across multiple categories; Including jewellery, women’s designer fashion accessories, men’s accessories, luggage, lingerie, active-wear & more. The JLK Program covers everything, import/export, retail and wholesale, digital/ social media, Accounting, logistics, global shipping, P&L and more. Four women embarked on a journey that changed their lives, they will be getting set to launch their brands over the coming months.

A strong economy means we can invest in the things which strengthen our society — good healthcare for all, including free or cheaper GP visits for more New Zealanders, assistance to those in need. We can continue to invest in our environment, such as through the huge efforts to eradicate pests that threaten our native species. I have three daughters, and I know that New Zealand is one of the best places in the world for young women to live. They have access to a quality education and no barriers to them achieving in their careers what they desire, provided they’re willing to work for it. We have heard a lot about the gender pay gap, and there is more work to be done. But we shouldn’t forget that the gap in New Zealand is one of the smallest in the world. This year, I have been cast into the political role of opposition. This is new to me, and an essential part of it is to hold the government to account. The danger, naturally, is that it leads to negativity and constant carping. I will be critical of the new government, because there are things which they are proposing, which I believe are mistaken. Such as sharply reducing the number of international students, which would directly harm the many thousands of Kiwis who work in that important export sector. But my goal is not to lapse into general negativity. This country is a great place. We have the potential to do better. So I’ll try to ‘propose’ as much as ‘oppose’.
