Summer is upon us and I don’t know about you but the sun coming out of hibernation makes me want to shake things up and get out of the house. Yet you don’t need to get on a plane or even a ferry to enjoy a fantastic get away, this island of ours offers holidays for any budget.

Next to Nothing If things are a bit lean then there is no cheaper get away than packing up and heading into the bush. Getting out of cell phone range can offer the same level of R&R that a 5-star spa can. Here is one idea for you: * Does not include camping gear – Try borrowing from a friend if you have never camped before.

Middle of the Road If, like me, you require flush toilets, a solid roof and a hot shower then packing up the car and heading to a B&B in Sooke might be right up your alley. I would recommend splurging a little and getting a room with a kitchenette or at least a fridge so you can make some of your own food for lunch and snacks. The premium for the room upgrade will be a fraction of the price of eating every meal at restaurants. Here is how this breaks down:

tbsp Blackberry Ginger Dark Balsamic tbsp Robust Extra Virgin Olive Oil (Coratina, Leccino, etc) tbsp Grainy Dijon Mustard 3-4 lb Pork tenderloin Red Onion Apple – Fuji or Royal Gala work well

Sea Salt and Fresh Cracked Pepper

Wash tenderloin and pat dry. Slice onion into ¼ inch thick rounds. Slice apple and remove the core. Using 2 pieces of thick aluminum foil, each 4 inches longer than the piece of tenderloin, layer the foil to make a thick base. Lay slices of onion in two parallel rows, creating a bed for the tenderloin, if the onion is big and has a large diameter, just make one long row. Place the slices of apple on top of the onion and sprinkle with some salt and pepper to taste. Lay tenderloin on the bed of apples and onions. In a small bowl, whisk together Blackberry Ginger Dark Balsamic, Extra Virgin Olive Oil and Mustard. Drizzle over top of the tenderloin. Carefully fold up the aluminum foil creating a bit of a tent over the tenderloin, and turning up the ends, covering it and sealing it completely. Place tenderloin on a grill, medium heat, and grill for 35-40 minutes, check half way through to make sure the foil isn’t burning on the bottom and is holding strong. Check the internal temperature is at least 165F. Remove tenderloin from foil, and place directly on grill. Scrape the cooked apples and onions into a bowl, mix slightly to serve as a chutney on the side. Any remaining juices, drizzle over tenderloin. Grill for 2-3 minutes, turning once to crisp the outside.

tbsp Grapefruit White Balsamic cup Blood Orange Fused Olive Oil

In a small bowl, whisk together the grapefruit white balsamic and the blood orange fused olive oil to emulsify. Pour into a plate and dredge each piece of halibut through the mixture, so coat. Place halibut in a small baking dish, to keep them crowded, 8x8 pans are great for this. Drizzle remaining marinade on top. Let sit in the fridge for 20 minutes, meanwhile preheat oven to 375 or grill. Take halibut out of fridge, and let rest on the counter for 2 minutes, then place each piece on the grill, or pan in the oven. Bake 10-15 minutes in the oven, until flaky and cooked through and the edges are crisp. Grilling time will vary based individual grill, but halibut should be cooked in about 7-10 minutes. Serve with a citrus chutney, on a bed of rice or grilled potatoes. You can definitely use this marinade for scallops, shrimp, or grilled oysters. Someone who doesn’t like seafood? This is a great Chicken Marinade too, just increase the cooking time to 25 minutes for boneless chicken breasts and 35 for bone in.

In a small bowl, whisk together the Tarragon Infused Olive Oil, Mustard, Buttermilk and Lemon Juice. Let sit 10 minutes to thicken. Place chicken in a large ziplock bag. Pour marinade into the bag and shake gently to coat and cover the chicken well. Place bag in the fridge on a flat surface for at least an hour but no more than 4. Preheat a BBQ Grill to a minimum 400F. Remove Chicken from marinade, and place each piece on a the hot grill. Grill 10 minutes per side, until cooked through and internal temperature has reached 165F. Place chicken on a serving plate and garnish with the fresh dill. Enjoy! Serve with grilled root vegetables and summer salads.

japanese seared ahi tuna steak 2 2 2 1 1

Large Ahi Tuna Steaks – 6-8oz each tbsp Japanese Toasted Sesame Oil tbsp Honey Ginger White Balsamic Vinegar tsp Wasabi paste tbsp Sesame Seeds

(mix of black and white are best)

In a shallow bowl, whisk together Sesame Oil, Honey Ginger White Balsamic and Wasabi paste (you can also whisk together in a small bowl and transfer to a plate). Place tuna in the bowl, turning to coat, let sit 25 minutes. Preheat grill to at least 500F. Sprinkle sesame seeds on a plate. Turning once more to coat tuna in marinade, place on the hot grill. Sear 35-40 seconds per side, remove from grill and place on plate of sesame seeds, press tuna onto seeds, turning so both sides are lightly coated. Serve immediately, with fresh green salads and a bed of rice.

Scrub Potatoes, and roughly chop into quarters. Skin onions and cut in half. Peel carrots, and roughly chop. Place the potatoes in the bottom of a large roasting pan, or bowl of a slow cooker. Rinse roast, and place on top of the potatoes. Nestle remaining vegetables around roast, doing your best to keep them on the sides and the top of the roast free. In a small bowl, whisk together Tarragon Infused Olive Oil, Lemon Juice, Dijon and Zest. Pour over meat. Cover roasting pan tightly with aluminum foil and top with lid (or add an other layer of foil), and place in a 325F oven for 2 hours, baste roast with juice slightly and bake another 30-40 minutes, until meat thermometer reads 160F If using a slow cooker, cover and turn on low for 8 hours. Check internal temperature to ensure roast is cooked through. When cooked, place meat on carving board and let rest 10 minutes, remove veggies from pan and place on a oven proof serving platter, and return to the oven to keep warm. To make glaze, carefully pour drippings into a small sauce pan and bring to a simmer over medium heat. Carefully bring to a soft boil and allow the drippings to reduce by half.

Sweet and Savory? 2 Tbsp Peach White Balsamic and 2 Tbsp Basil Infused Olive Oil, mix this up and enjoy as a dipping sauce for Halibut or Cod, or shrimp if you’re feeling adventurous.

Carve the meat and place on serving platter, nestle vegetables around the meat and drizzle platter with half the glaze. Place remaining glaze in a small pitcher to enjoy along side.

Love those Asian Flavours 1 tsp Japanese Toasted Sesame and 2 tsp Honey Ginger White Balsamic and 1 Tbsp Garlic infused Olive Oil, and touch of hot mustard is delicious for an asian style dip, great for dumplings to sushi and everything in between!

Once again the days lengthen, gifting us with increased light and fulfilling the promise of spring as the earth stirs from slumber and begins to burst forth in fragrance & colour. We here in the west coast community are so blessed by our gentle climate and all the opportunities that it gifts us. One great gift is renewal – who doesn’t want a chance to begin again, to be restored whether in mind, body or spirit? Taking guidance from nature we need only look, listen, reflect & respond to its lessons & move in the direction we are guided. If we have unmet promises that we made to ourselves in the dark days of winter, the increased light of spring now calls us into action. Movement & change – those are the earth’s springtime lessons. Think of your body as a garden, the mind’s thoughts its flowers, our spirit & soul the fragrance & colour. How are you caring for your garden? What are you planting? How are you nourishing it? Take time to contemplate & prepare. Then, where to begin? I would like to share this space each issue with practitioners from our community who can speak from their own personal experience on their path to wellness, health and healing. In this Spring issue it seems particularly appropriate to introduce Parveez Shahviri, a 45-year old whose personal experiences have proven to him beyond a doubt that there are no limits to the intelligence of the human body and what it can do to return itself to vibrant good health, given the opportunity. "When I was 32 my health had already been deteriorating for over a decade due to long hours working at an office job and ignoring the aches and pains in my back and sciatic nerves. But then my life really got turned upside down when I got an infection in my spine, and by the time they caught it, it had eaten all the way through a whole disc and into my L3 and L4 vertebrae. They told me that because so much of the bone mass had been lost and because "bone doesn't re-grow after the age of 18", the best case scenario for me was going to be wearing a back brace for the rest of my life, but that I should also prepare myself for the very real possibility of being paralyzed." Now, 13 years later Parveez has not only escaped paralysis and back braces, but says the bone did in fact re-grow and he says he is now "enjoying better health, strength, flexibility and outlook on life than I ever did, even as an active, athletic teenager." He

has made it his mission "to help others understand just how much wisdom, resilience and power resides in every single one of our bodies, in every cell, and in every fiber of our beings." The key to help the body access that innate ability, he says, is "Movement! It doesn't matter how you get your daily dose of proper movement, but every day just do something that safely expands your body's natural range of motion back towards where it started out. That full range of motion is completely natural for us at any age, and no, it's never too late to start. Never." The method that Parveez found shortly after his release from hospital was Bikram Beginner's Yoga, which he has since seen transform countless lives in addition to his own. "Very soon after I started taking these classes I knew that I'd found something that everyone could benefit from, no matter what age, what background, or what condition they were in, because it's a systematic practice that meets you wherever you are when you start, and keeps pace with you as your capacities naturally increase over time." He adds, "We've all heard the saying, "Use it – or lose it", but my experience and studies have shown me that this phrase is especially true of our bodies. For example, even though it's common for many people to think that less mobility, less flexibility, reduced stamina, muscular degeneration, brittle bones, and many other supposedly "inevitable" conditions are simply a result of "getting older", is it possible that it's only because we're not using our bodies to their full capacities that their capacity naturally decreases?" So we can take a cue from nature at this time of renewal, of awakening, and growing, let's get our bodies moving again, and let's honour the eternal principles that govern our bodies, and all life. Let's move a little more today!

Spring is truly here and summer is just around the corner so our thoughts naturally progress to getting out and enjoying what the season has to offer. For many it is a time to try new activities and/or review the bucket list that you wrote at the beginning of the year. There are numerous walking, cycling and running trails to explore on Vancouver Island, so if you live in Victoria why not be adventurous and venture out of the region this summer? If you live north of the Malahat then Victoria also has many areas to discover. For those wanting a challenge you could change up your workout routine or set new goals. This is easily done and achievable with the right planning and motivation. Here are a few ideas for those looking to change it up: 1. Choose two new trails this summer to run or hike. There are many guide books out there to assist you but you need to narrow your choice as to length, difficulty and time. We can’t list them all here, but a popular trail is Gowlland Tod Provincial Park. The park features over 25 kilometres of trails with many intersecting so you can choose the intensity and length. Runners particularly like the Cascade and Timberline trails for variety and terrain. There are also some spectacular views of the Malahat Drive and Finlayson Arm Inlet. Check it out on www.explorevancouverisland.com. A gem in the Cowichan Valley is the Cowichan Valley Trail with the Kinsol Trestle as the highlight. The 187-metre walkway connects Shawnigan Lake with the district of North Cowichan. Now part of the Trans Canada Trail, it is ideal for runners, walker and cyclists. For a list of all of the trails see www.tctrail.ca 2. Join a bike tour. If you are a cyclist and have always thought of doing an extended bike tour then the Island is the place. vino? Then the Cowichan Valley Grape Escape could be for you. It is a two-day cycling tour of the Cowichan Valley, touring wineries, while raising money for a worthwhile cause - the MS Society. You can do a one-day tour or cycle both days. www.cowichanvalleygrapeescape.com. 3. Train for a half marathon. You have done a 10k or two and now that ‘other’ distance is on your mind – can I do it with the right training? Of course you can. The best way for a first timer is to join a clinic as it can take up to five months to properly train. With a clinic you can also receive professional advice on clothing, shoes and how to avoid injuries. Running stores typically start their clinics for fall races in May. Many recreational centres may also have similar programs so check out your nearest store/rec centre. The main half marathon that runners train for on the Island is the GoodLife Fitness Victoria Marathon, held Thanksgiving weekend on October 12 (www.runvictoriamarathon. com). But you can also look into a new half marathon, the Cowichan Autumn Classic, on October 26 got to www. ceevacs.com for more information. 4. Try a new fitness class/ workout. There are numerous new activities you can try many running during

the summer - check out my column in the last issue (February/March 2014) for some tips on some of the trends for 2014. If you have feel as if you have reached a plateau with your workout then incorporate some new elements. One way to liven it up is to treat it like a circuit session. Start with a warm up on the bike or treadmill for 10 minutes, then proceed with some upper body strength training, e.g. chest press. Then alternate cardio with more strength. So three minutes on the treadmill, another strength session e.g. lat pull down, cardio, strength and so on. This is a great workout and you can make it as long as you like (a typical session would be 45 min – 1 hour). Some fitness centres feature circuit training so if you like a group environment then it is a good way to try this out. These are just some suggestions if you feel in need of a change or a challenge this summer. Vancouver Island is all about getting out there and doing it! So what are you waiting for? Peter Chan felt too hot, and business was slow, so he opened the kitchen door and stepped out into the evening air. That’s better, he thought. Oxygen. Never mind that the neighbours hadn’t taken out the garbage yet. Nothing could spoil the smell of spring. Even in the back alley, one could feel that winter was really over. The street lights flicked on, standard city lights mixed with glowing lanterns, red and orange. A string of little white lights hung over the top of the alley, wrapped around a nail, trailed halfway down the wall and stopped at a mossy ledge. Peter lit a cigarette and leaned against the cool brick, squatting to relieve the pain in his lower back. A long drag; a tiny crinkling sound from the burning tobacco. My God, that is good. A few stars prickled out from the darkening sky. But that one was no star. Too bright – and it was starting to move. Closer. The odd brightness approached and grew until it flooded the alley. Peter stood up slowly, too fascinated to move. Keeping his eyes on the light, he took a last puff on the cigarette and flicked it away. The light floated down, stopped immediately in front of him and dimmed. It swirled and fizzed, now like a lava lamp, now like a cloud. From an opening in the shining mass emerged three small figures. Children? No – not shaped like children. Definitely aliens. The light ebbed away, leaving just the spill-light from the kitchen to illuminate the newcomers. They’re green, thought Peter. Just like a movie! The middle creature stepped forward and addressed himself to Peter: “Hello upon this day, hyoo-mun. Good to being here. We have come for the curling.” “For the curling,” intoned the other two, nodding. * The visitors’ names were Meep, Sarla and Ricardo. Short for Ricky Ricardo, he explained, because his parents loved watching I Love Lucy. Meep and Sarla rolled their eyes while Ricardo spoke. “So weird,” said Meep. “So, let me get this straight,” said Peter, locking the front door and pulling down the blinds. A quick glance into Fisgard Street confirmed that the neighbours hadn’t noticed the giant light. “You came all this way to watch curling? And you can see our old TV shows on – on your planet? How?” Sarla waved dismissively. “Oh, you no can understand. Too hard for hyoo-munce. Hyoo-

Do you want some chow mein?” “Sweet and sour?” asked Ricardo. “I don’t have that. No gwai-lo food here. How the hell you know about sweet – never mind.” “I want chopsticks, no fork. Why do you love it so much?” The aliens looked at each other, then back at Peter. “The little brooms,” said Ricardo, solemnly. “The little brooms.” * “Okay, guys, you need to get down more. Someone’s going to see you,” Peter admonished from the driver’s seat. “We want see Bland Chard,” said Meep. “It’s Blanchard, and it’s nothing to see, don’t worry. Get down. And leave my camera alone, okay? It’s expensive.” The aliens giggled. “ExBENNNN-siff, ha ha ha!”

Peter scowled at them in the rear view mirror. “Do you want to see curling or not?” “Yeeeeess,” they sang on a low note. * They didn’t like being squashed into a gym bag, but they were too excited to complain much. Peter didn’t like carrying it, especially through security, where he had to show his press pass and do some clever explaining about the big lumpy bag. He lugged them up to the balcony where they could get a view through the open zipper. “Stay here and don’t move. I have to go down there and take pictures. Everyone okay?” “Yeeeess” they sang. “I want chips,” said Ricardo. “No chips and no more talking. I’ll be back in a little while.” In the end, China was knocked out by Sweden. Peter went to congratulate the Chinese team on a good run, and to invite them back to the restaurant for a farewell meal. “Just give me an hour to get ready,” he said. “Okay, one more group photo. Yeah, terrific, very nice!” * He drove the aliens back to Chinatown. Luckily, there was a parking spot on Government, and they could slip back into the alley unseen. “That was A-number one,” said Ricardo. “Thanks you.” “Yes, thanks you, Peter Chan. You not a dork butt,” said Meep. Sarla bowed low, and took Peter’s hand in his. “Thanks you for chow mein, and for show us curling. We are friends together, yes?” “Yes, friends,” said Peter. “Travel safely. Oh – your leftovers!” He unlocked the kitchen door and ducked inside to get the containers out of the fridge. But when he came back out, they were already gone. On the brick wall across from his kitchen was etched in shining calligraphy: Your kindness will never be forgotten. He stood a moment, looking at the inscription, then watching the night sky. It was my mother’s birthday and although she had passed away two years earlier, I wanted to acknowledge her special day. For that reason, I went to the ocean with some roses to gift them to her memory.

I waded out knee deep in the ocean and tossed the bouquet. Petals scattered, then guided by the current, they returned and floated all around me. I kept hearing a message in my mind, ‘don’t look back’. Eventually, I left the area and strolled to a remote area of the beach. In front of me, resting on top of the sand, as if it was intentionally set there, was a perfectly clean unblemished marble. I leaned forward and picked it up. As I did, I looked back. I saw a man wade into the water and pick up the roses I had gifted to my mother’s memory. He shook the water off them and showed them to the woman he was with. I thought that I was about to witness a beautiful moment between two people in love, but it wasn’t to be. The man tossed the roses to the sand and they walked away completely unaware that I was watching this scene unfold. The roses were a gift, so I headed back down to the water’s edge to retrieve the flowers and to repeat the process. This time I was more mindful of what I was doing and spent more time thanking my mother for all of the good things she had done for me. I could intuitively feel how she wanted me to learn to love myself more, and that my gift is to help others to do the same. When I felt ready, I released the bouquet again. I left the water in contemplative silence. Once again I heard a message, this time it was louder and with more authority. ‘You can trust yourself now more than ever. Don’t look back.’ This time, I did not look back. I received the true meaning of the message. In life, we do things as acts of faith and goodwill for the future. Sometimes they are small everyday things, other times life altering. We choose to forgive, or to give more love to others. We choose to follow our heart and change our career, our family situation, or our home. We believe we are on the right path heading towards a better future and feel good about our decisions. Over time, we get distracted or fearful and we look back. We question our decisions for change. We spend time and energy repeating this process, repeating patterns, expecting to change the outcome. We choose not to follow our intuition or trust our decisions because we are distracted with everyday life and fear

of the unknown. This is why we leave relationships, homes, and jobs, only to take on another that ends up being the same as the one we left. It is why we choose to have negative feelings towards other people as well as ourselves, sometimes based on a single event that has occurred in our past. We keep re-living the negative experiences. We keep going through the motions of forward movement all the while holding firmly on to the past with our fears and emotional responses. It may be with a different person, employer, or geographic location, but it is the same issue. When we trust ourselves and in the light that is within each of us we can move forward in our lives and not look back. We can replace our fear with self-love and trust. We can choose to stay focused on the present. We can release our emotional commitment to the past. We are all divinely guided. We were born to be joyful and loving people. Contact him at: New Orleans has quickly become one of my favorite cities in the world. I was always drawn to the rich cultural history of the city especially it's unparalleled music tradition. Over the years I have been there four times including two Mardi Gras visits and will be there for my fifth visit this Easter. New Orleans has a vibrant and rich history. Having flown under the flag of three different nations: Spanish, French and the United States the city is known for it's multifaceted personality. The French Quarter is a bit of misnomer as the vast majority of buildings were built during the Spanish reign and have spectacular features like wrought iron balconies over looking the streets and spacious courtyards that originally helped keep the house cool during the tropical summers. One of the best can be found at The Court of the Two Sisters which is a fantastic place to eat as well while you are there. I highly recommend going to the daily Jazz brunch that offers an incredible selection of traditional New Orleans dishes like: jambalaya, gumbo, turtle soup with sherry, and bananas foster served buffet style. There are no shortages of great restaurants to eat at while you are there. Coop's Place has some fantastic authentic Cajun, for Po' Boys you have to go to Mothers or Mahony's. Another of my favorite restaurants is Commander's Palace in the Garden District. They have a fantastic lunch that showcases the French influence on the culinary tradition of the city. They also have martinis for a quarter at lunch so well worth the visit to the Garden District. New Orleans is equally known for it's cocktail culture and if you like to imbibe you will feel right at home. It is legal to drink openly on the streets and many people like to stroll through the Quarter drink in hand, taking in all the sights as they go bar hopping. One

of the best bars for a smart cocktail is the Carousel Bar in Hotel Monteleone. The bar itself is a carousel and you rotate around the room as you sit sipping on your sazerac. It was also one of Hemingway's favorite bars when he was in town. Bourbon street can get a little raucous in the evening and if you'd prefer to avoid the craziness I recommend heading over to Frenchmen Street. This is where all the good music is anyways. The Spotted Cat always has great live music every night and there's no cover. There's also a great art market right next door every Thursday night. If you are a traditional Jazz lover you must go to at least one performance at the Preservation Hall. The Prez as the locals call it, has been dedicated to preserving New Orleans' earliest musical traditions for decades. They have nightly shows starting at 7 PM and there is very limited space so get there early especially if you don't want to be standing at the back. There are no microphones or amplifiers just you and other music lovers in a small room hearing the best

The spring and fall are great times to go for weather as it's not too hot and humid. Go see for yourself what southern hospitality is all about in one of the most unique and fun cities in the world.
