BBQ RECIPES Find the Infused Olive Oil and Balsamic Vinegar products used in the recipes at Olive the Senses

chimichurri A traditional intensely flavourful and bright Argentinian sauce commonly served on a grilled flank steak and other grilled meats, with rice or is easily used a marinade!

cup Chipotle Infused Olive Oil cup Espresso Dark Balsamic tbsp freshly squeezed Lime juice tbsp minced garlic tsp salt

Mix all ingredients well and place in a zip lock bag or plastic container with up to two pounds of your favourite type of meat, poultry or vegetables. This is also delicious drizzled on burgers, brushed on salmon, or paired with blue cheese on steak. Refrigerate and marinate 1-2 hours or for meat overnight. Grill and enjoy!

In a food processor, add all ingredients except vinegar and EVOO. Pulse until finely chopped and then with motor running, slowly pour in both vinegar and EVOO, stopping once mixture is completely blended. Store in fridge for approximately 1 week. Serve alongside your favorite cut of steak – flank steak is traditional, or use as a flavourful marinade for poultry, fish and red meats.

2 tbsp Harissa Infused Oil 1 medium onion 4 cups chicken broth 1 cup Phillip’s Root Beer 1 cup Red Apple Balsamic cup corn syrup cup molasses 1 cup tomato paste cup ketchup 2 tbsp mustard 1 tbsp hot sauce tsp garlic powder 7 – 10 g Lapsang Smoked Tea 1 apple 1 tsp cinnamon 1
tbsp brown sugar
Peel and cut Apple into thin thumb Slices, Place in pot half submerged in water. Add tbsp. of Brown Sugar and let cook down for 10 – 15 minutes until soft enough to mash EASILY into applesauce. Grind up tea into fine powder. In a Large pot, Mix together all ingredients over a Medium Low heat stirring occasionally. Allow to boil and reduce (2 hours did the trick for me.) If any solid chunks of apple remain, mash them with potato masher. Wait until the mixture thickens enough to coat back of a spoon. The Sauce can be a little sweet on it own, but add a little heat from cooking and it comes completely into itself. Marinate Bite sized pieces of steak in the sauce, wrap those in bacon, brush with another layer of BBQ sauce and throw in the oven or on the Barbeque. Enjoy!

An acreage in the country, a big family, a piano, a harp, a couple of guitars, an acoustically pleasing music room with a steady stream of instruments that I can’t identify, never mind play. The oldest child is twentyish, and the youngest is five. I didn’t anticipate that I would to be entertained with a concert of theatre quality when I accepted the invitation to dinner from the parents of these gifted children, but was pleasantly surprised.
The evening began with rural neighbours getting together. Everyone brought something and our host provided the main staples, organically grown in their garden. We were treated to goat cheese of many flavours, the differences explained in detail by the older siblings who prepared the cheese from the collecting stage to the aging process. While visiting and engaging with each other we were drawn into conversation with the younger children with such a natural flow that you just know that this is a family who has their meals around the family table and communicates effectively. This family is a great example the local sustainability, family values, and effective teaching. The children all played multiple instruments and serenaded us with a wide variety of pieces from classical to more contemporary pieces from the younger children. The children performed vocally both individually and as a group, treating us to harmonies that can only be achieved when there is genuine connection between the artists. They looked at each other with appreciation, leaning forward and engaged, listening to every note. They performed by
memory, playing by ear and loving by heart. Throughout the night, I noticed that something was missing. Not present were the distractions of electronic games, cell phones, televisions, tablets and computers. Instead, they were replaced by attentive listening and authentic communication, family love, patience, and genuine gratitude for each other’s presence in their lives. The family unit is not a thing of the past. It doesn’t matter what your family dynamic is - you have the choice to grow and to set the standard of what ‘ideal’ means to you. Admittedly, I confess to being addicted to my devices. On this night, I realized that to be without the electronics is not to be deprived, but rather to be freed to introduce meaningful opportunities and gifts to myself and to those I love. This is the perfect time to reduce your screen time and to embrace something meaningful and gratuitous into your life. I challenge you to have a ‘no screen’ day for you and your family – and then to make it a regular event. Most of us are not lucky enough to have a pension from work; these are going the way of the dinosaurs in a hurry. So what to do? Without a pension you are not without options.
Registered Retirement Savings Plans (RRSP’s or RSP’s) RRSP’s are the most common retirement savings vehicles and one of the least understood. Simply put, RRSP’s are a way to procrastinate on your taxes. Here is how this breaks down. Think of RRSP’s like an umbrella, you can put as many different buckets (accounts) under the umbrella as you like and many different types of investments inside the different buckets. As long as your money is under the umbrella you don’t have to pay tax on it or the growth. As soon as you take the money out from under the umbrella you pay the tax. The theory is when you are working you will be in a higher tax bracket than in retirement therefore you pay less tax overall. Here are important facts about RRSP’s RRSP’s are a type of account, not something you buy

You can have many different types investments inside an RRSP (for a complete list, check the CRA website)
•
When you turn 71 you have three options

recommend this option 2. Purchase an annuity, this is an insurance product that pays a predictable annual income based on an initial investment 3. Roll the money over into a Registered Retirement Income Fund (RRIF). These are similar to an RRSP but you are required to withdraw (and pay tax on) a set percentage each year. Once you use up RRSP contribution room it disappears permanently •
Tax Free Savings Accounts (TFSA’s) TFSA’s are a wonderful tool if used correctly, however most people don’t use them to their greatest potential. The magic of a TFSA doesn’t come with what you put into it; it’s what you do with it. Similar to RRSP’s, TFSA’s are like an umbrella. You can put as many buckets as you like under the umbrella and you can put many different types of investments inside those buckets. As long as the investments are under the umbrella you don’t pay tax on what you earn in growth. The difference is that when you take the money out from under the umbrella you still do not pay tax. You NEVER pay tax. Just make sure that you don’t go over the contribution limit. Here are the important facts about TFSA’s:

Spring has sprung although after an incredibly mild winter, many of us have already have been out and about enjoying outdoor activities. One of those activities for you could be cycling. You may be thinking that this is the year to seriously think of commuting on your bike, or think beyond the box and do an epic ride – like a 50K or even a Gran Fondo. No matter what your goal you will need a reliable steed to get you from A to B and back again. Not to mention the helmet, shoes and all the accessories you need to make your ride comfortable. Before those dollar signs play havoc with your mind, relax and read on… cycling is affordable.
BIKES There is a plethora of bikes out there – prices range from the low hundreds to the high thousands. There are urban bikes, hybrid bikes, touring bikes, mountain bikes, racing bikes… the list goes on. So the first question you need to ask is – what do I want a bike for? “You need to decide if you want an urban bike for commuting or getting around town, or if you plan on doing longer rides,” says Patrick Humer, Product Team Leader, Cycling at MEC. If it is for town use, an urban bike would be fine. MEC’s own brand of urban bikes, starting at $675, have steel frames, for sturdiness, and carbon seat posts (lightweight) so an ideal combination. “Fenders would be extra for that bike, but upgrading to the Ghost Panamao, starting at $950, you are looking at full fenders and front suspension for a more comfortable ride,” Humer says. If you want to do some touring – 50K plus – then an entry level bike would be approximately $1,300 and Humer recommends a lighter frame. “Aluminum frames are ideal for Fondo’s and they are built for speed so great for those long hours in the saddle,” he says. HELMETS Not enough can be said about wearing a helmet that fits properly. Getting fitted at your local bike shop is worthwhile – they are the experts and can recommend one that again suits your purpose. Prices can range from $20 - $250 – the lower end is a more generic fit, the higher end a better fit. And that age-old question of what is the lifespan 22

of a helmet? Usually three years, but that does depend on how often you wear it and if you have had any falls. “Some manufacturers such as MET or Urge Helmets have crash replacement programs, where you bring in your damaged helmet and you get 50% off your next one,” says Humer. LIGHTS Lights are just as important as helmets, and yet so many cyclists don’t have them. You should choose your light based on where you will be cycling. If you are in town with street lights you may not need as bright a light as if you were riding on the Galloping Goose or Lochside Trail at dusk. So choose your lights carefully. A front LED light can cost $20 but you can go with a Light & Motion light that ranges from $100 and up. CLOTHING AND SHOES You can be bright and reflective or dull and boring when it comes to clothing. Jerseys seem to get more colourful – not a bad thing when you need to be visible. MEC branded shorts range from $89 and tights $85, wind jackets from $65 and heavy duty jackets from $165. Gloves start at $25. Choosing shoes is a personal choice – do you go for cleats or a sturdy bike shoe? “It is definitely more efficient when you strapped into your pedals, “says Humer. But it does depend on the type of riding and your comfort level getting in and out of cleats. An entry level shoe can be approximately $105. OTHER ACCESSORIES A great way to help plan your ride is to have
an odometer on your handlebars. Again the range is enormous and it really depends on what you want it for. A Pfizer brand can be as little as $17.50 or you can get a Garmin GPS for $170 if you are a techie and like downloading all of your ride data. Panniers are essential for commuting and touring. Wearing a backpack can compromise your posture and give you very sore shoulders, whereas panniers fit on the bike, giving you equal weight. Many are waterproof and also are reflective so visible in poor light. Costs can range from $44 to $179. Ricardo, so named for Ricky Ricardo of Earth-television fame, popped his head over Sarla’s shoulder and peered at the dashboard. “Are we there yet?” Sarla jumped. “Ooff! Don’t do that! You startled me!” “Sorry.” Meep lifted his head sleepily and wiped some drool from the corner of his mouth. “What’s going on?” “Nothing,” said Sarla. “Just Ricardo asking if we are ‘there yet’ for the millionth time. As it happens, we are almost there. That’s Pluto up ahead. We have just entered what the hyoo-muns called The Solar System.” The aliens giggled. “THE Solar System. Ha ha ha!” “They’re adorable,” said Meep, rubbing his eye. “I’m so excited!” yelled Ricardo. “We all are, Ric. We all are,” said Meep, with a yawn. “I hope that Peter Chow is well,” Ricardo said. “He was most kind to us, taking us to the curling last time. To see the little brooms and such.” “Yes, he was most kind,” agreed Sarla. In no time, the little craft had slipped undetected into the Earth’s atmosphere and skimmed unseen across dark blue waters, toward Vancouver Island. Ricardo was beside himself and could not keep still. “Oh! Oh! There is Victoria! Oh, I shall pee!” “Ech, no, Ricardo! Please control yourself!” Sarla recoiled. “Land in the same place as before! That alley behind Fizz Guard Street! Where we first met Peter Chow!” “Fisgard. I was going to do that already, 26

Ricardo,” Sarla said. “Now please stop jostling me and sit down; you are making me crazy, and also nervous that you might pee on me. Sit.” “Okay.” Ricardo sat, and fidgeted. He craned his neck to peer out the window. “Lanterns! LANTERNS! Ohhhh, so beautiful.” Sarla smiled. “I see them.” “There are more this time,” said Meep. “See, more on Government Street. How lovely.” “Victoria is the most wondrous place on Earth! Perhaps anywhere!” shouted Ricardo. The aliens alighted in the alley behind Peter’s noodle shop and stepped out of the craft. “It is foolish to expect that he will be outside, like last time. He could be inside. He may even be absent,” Sarla noted. “It is true. I had not thought of that,” said Ricardo, sadly. “It’s okay, Ric. We’ll find him.” Meep patted his shoulder. Peter was not inside the noodle shop. In fact, he was very far away indeed. He was in Zambia, and he was in trouble. *** Peter Chow had been in Lusaka for a month, on a project to teach noodlemaking to the locals. He had wanted to do this for years, and had found an opportunity through church connections. His idea was that if the people could make noodles, they could preserve the flour which came to hand so easily through food programs, but which was often spoiled by insects before it could be used. The ability to make noodles might also give his

African students a livelihood -- cooking for the Chinese people who were moving into the region in the wake of Chinese investment in Zambia. Peter’s first student, Maria, acquired the skill very quickly, turning out batch after batch of flawless noodles. Others students soon followed: Zachariah, John, and Lily. Lily would work feverishly for hours, always reluctant to stop. She watched Peter’s hands with a grave face each night as he placed the padlock across the kitchen door. “Must we stop, teacher? I’m not tired.” Lily said one evening, timidly. “Yes, Lily. We’ve done enough. Sufficient to the day –“ “Are the evils thereof,” she finished the verse quickly. Peter laughed. “Yes. Or, in this case, the noodles thereof.” Lily smiled. “Yes, teacher! The noodles thereof!” Peter looked at her. “Have you eaten today?” Lily shrugged. “Oh, I’m not hungry.” That is not possible, Peter thought. In fact , I have never seen her eat. Lily cooked part time in a restaurant in the neighbourhood. Peter happened to go in one day for lunch and caught sight of her through the kitchen window. He waved to her. She smiled and walked toward him, wiping her hands on her apron. “Hello, teacher! You are here!” “Yes! You didn’t tell me you worked here! Good for you.” Lily looked down. “It is nothing, teacher. I am not a boss like you, only a cook.”

Peter lowered his voice. “Listen. Do you taste the steak before you send it out?” Lily’s eyes widened. “Oh, no teacher. I would not do that! The food is for the customers only!” Peter shook his head. “That is very wrong. You must always check the quality. Always take a little slice and eat it to make sure it is good.” “Okay, teacher. I will.” “Promise. It is very important to taste. Every time. For the sake of your customers.” “Yes, teacher, I promise.” But Peter would not be in Lusaka to check on Lily in the weeks to come. He had run out of money, and he was now on the verge of real hunger himself. He would have to go back to Canada earlier than he had planned. He gathered the students together under the churchyard tree for one last potluck. He was moved by the pleasure they took in such a basic meal. The students made speeches of thanks and farewell, while their children practised backflips off the low stone wall. The sun was setting when Peter set out alone for a last ramble on the outskirts of the town. He wanted to inhale this landscape one more time; his brief home. He also wanted to walk off some stress. He had only about three British pounds to see him through several hours at Heathrow the next day. It would be a very long trip back to Victoria. To add to his woes, he presently became lost in the dark. The lights of Lusaka were not much help from this angle; they were not familiar enough for him to find his way back to the hostel. Exhausted, he sat down on the earth and looked up at the stars. His stomach rumbled. He had eaten as little as possible at the farewell meal. “Peter Chow!” said an otherworldly voice behind him. He spun around, terrified. There stood Sarla, smiling, flanked by Ricardo and Meep. “Do you want a lift home?” said Meep, with a wink. “Oh Peter Chow! I missed you!” Ricardo shrieked. A 118 year old barber’s chair greets you as you walk into headstart, but there is nothing old about this hair salon, except good old fashioned service. Owner Garry Preston prides himself on providing a personal service to his clients, and although he has hung up his scissors, his long-standing staff, one of whom who has been with him for 40 years, continue to maintain the high standards he established when he started in the business 52 years ago. Trained at the Marvel School of Hair Design, in Calgary, Garry bought his first salon when he moved to Victoria in 1970. Called Lady B Lovely, he and his wife and partner, Chris, established a loyal clientele, 40% of whom are male. This precipitated a name change to headstart, and a move to their third location on Cook Street in 2013. “Our specialty is hair cutting and we also do smoothing and ionic straightening. We have the best ionic straightener in the city as well as a Vidal Sassoon trained stylist,” Garry says proudly. “We also sell an array of products and have some of the best prices in the city.” In addition to hairstyling they also have a small private area for manicures, pedicures and waxing. Philanthropy is high on Garry’s list. Megan Stretch, salon manager, organizes their community events. “We raised $5,000 for Cuts for Cure, and donate several thousand dollars to The Cridge Centre’s Respitality Program through cut-a-thons,” Garry explains. And what is the story behind the old barber’s chair? It’s a solid oak KOKEN barber’s chair from St Louis, which was owned by Garry’s father-in-law and now lovingly restored, taking pride of place in the salon.

DUTCH BAKERY AND DINER
The name says it all - behind this unassuming store front is a shop full of every imaginable organic and herbal remedy – from vitamins, supplements and oils to teas, tinctures and skin care. Owner Brian Hawksworth bought the 12-year old store five years ago and last year moved it from its original location on Cook Street to Fort Street. A travel agent by trade with an athletic background (he was a nationally ranked 400m runner), he always had an interest in health and when he saw the opportunity to buy the store, he took the plunge. ”Getting into the business was a real adventure for me, and I really feel I have a role in the community.” While he sells many national branded products, he likes to promote local companies such as Prairie Doctor and Fireweed Botanicals. He also has a niche: selling organic, culinary, Chinese herbs in bulk, as well as herbal teas he packages himself. There are 38 different herbal teas to choose from, many medicinal in nature and known to be good for treating allergies and complaints of the digestive system. Customers can also choose from a variety of essential oils, with the added bonus of making up their own sprays, in the size of their choice. On staff there is a part-time certified herbalist/nutritionist who can offer expert advice and provide healthy solutions, and a Traditional Chinese Medical Practitioner who works three days a work, specializing in acupuncture and Chinese massage. “There is now a definite trend towards a more holistic way of approaching health,” Brian says. “We see people who come in looking for an alternative to medicines such as antibiotics, and we are able to offer them healthy, natural choices.”
For nearly 60 years the Dutch Bakery has been a comforting fixture on Fort Street. Originally called the Dutch Bakery and Coffee Shop, the name change to Diner has come with a renovation of the restaurant area, and a more open shop front. Customers can enjoy the same warm welcome and an amazing array of home-baked goodies, all from family recipes going back three generations. Michele Byrne and her two cousins Jack and Brook Schaddelee are grand-children of Kees Schaddelee who emigrated from Holland in 1955, and who a year later opened the bakery. “We make everything from scratch here from grandfather’s recipes, some very traditionally Dutch,” says Michele. While Michele oversees the front end of the business, Jack is the head baker and Brook is the chocolate specialist. They have daily pastry specials and a variety of cakes, cookies and home-made chocolate, made from Belgian chocolate (and they make their own marzipan from California almonds and sugar). The diner has an all-day menu from traditional full breakfast options to continental style Danish pastries. Their popular signature dish is beef croquettes in gravy, rolled in breadcrumbs and deep fried, their home-made burgers are all delicately spiced, and sausage rolls are a blend of fresh beef sausage. Dessert includes 21 different varieties of pastry. The Dutch Bakery attracts a variety of customers from regulars dropping in for their daily coffee and pastry, to families enjoying their home-cooked food. “The diner atmosphere is attracting the younger generation more now,” say Michele. With 28 staff the bakery is a busy, bustling place, but it has retained its family atmosphere, and is in safe hands as a new generation continues the legacy of producing traditional home cooked cuisine.

Since November 2002 Carolyn Barter and her consignment store, Baja Rosi’s has built a strong client base of shoppers who care not just about fashion and current day styles, but who also share Carolyn’s passion for the environment. Located on a busy corner in downtown Langford, consignees regularly bring in their unused or gently worn clothing, which is how Carolyn likes it. “We aren’t like regular retail, clothes come in all day, every day without an appointment,” she explains. Many are unused, even with the original labels on. “People get enticed by sales and often have closets of clothing they have never worn.” This waste, she feels is unnecessary, so offering consignment clothing makes so much sense. “If we were to never manufacture another clothing item I'm sure there is already enough to supply the world for a very long time!” There are three reasons that customers shop in the store – they are on a budget, they like the experience and uniqueness of the clothing, and they have a desire to contribute to the environment. “Some get hooked and never shop anywhere else.” Over the years Carolyn has had up to 12 staff and attributes her success to her team, who are very knowledgeable about styles and labels, and share her ideals. The store has a strong history in the community, donating unsold clothing to charity and helping local school initiatives. “Our customers have voted us Best Of The City since 2010, and I have been honored to receive many other community awards along the way.”
It’s clean, bright and airy with a new coat of paint - only the large truck having its windshield replaced gives it away that this is Van Isle Auto Glass. Owner Diana Steele prides herself on this cleanliness and tidiness – a far cry from the shop she bought 2 ½ years ago. In addition to auto glass replacement they install commercial glass store fronts, and residential glass including windows. They can custom-cut household glass as well as auto glass for older vehicles. They are an ICBC approved glass express shop, have certified ITA technicians on site, and offer a 100% guarantee on their work. Even though they are in a competitive market, customers come as far away as Duncan and Mill Bay to experience their service. While Diana is focused on her business, she is also community-minded, supporting the Grizzlies and the Soroptimists. That was in May 2014, and now one year later, they have built up a loyal, local, home consumer base, offering a unique personalized service in the community. The 600 sq ft. store, decorated in warm, welcoming tones, offers complete computer repairs, service and sales including sales of printers and ink (they offer the most price effective line of ink in the Valley). Both Evelyn and George know business well – for 10 years George has managed NuTech IT Solutions, offering mobile support to businesses, and Evelyn is a graphic designer and owner of Visual Edge Graphic Design. So going into retail was a natural progression for them and a complement to their existing companies. They pride themselves on their customer service. “We ask a customer what they are going to use the computer for, then we can look for the best deal offering the best performance,” says George. Both are active in the business community – George is a Director in the Chemainus Chamber of Commerce, and Evelyn was on the Board of the BIA. They encourage everyone to shop local. “We give a fair price to our customers because we want people to shop here,” adds Evelyn.
