letter from the editor During a recent visit with Grandma Bergman, I did not fore see what I would learn or rather, affirm to my heart. With a silent intention, almost unsure, Grandma went into her bedroom and brought to my lap a twist-tied clear plastic bag she once used for storing her most amazing fresh baked bread. But this time it held colouring book pages, folded coloured stock, and loose leaf. All kept in pristine condition and date order with many of the documents almost 30-years old. Some pieces I laughed so hard I cried with my mom in the likes beside me, and Grandma rushing for the Kleenex box. Like a homemade newspaper with a “Dear Annie” section, news, classifieds where I sell my neighbour’s items for maximum dollar value (and include their phone numbers), a sports story between Winnipeg Blue Bombers and Calgary “Roughriders” (so sorry Uncle Dan, I do NOW know it is Saskatchewan Roughriders). Looking back at my childhood through the lens of these pieces, I guess it’s no surprise that I earned my first degree in Journalism & Publishing, and that many of the pieces also reaffirmed my humanitarian side for “helping those in need and feeding the world” to foreshadow my lifelong values. I hope you enjoy this special edition of Victoria Almost Free Magazine, our annual Food, Wine, & Wellness Issue.

Contact him and his team at: I'm not sure how life altering it was, but holding a six inch strip of shark bait while a dozen sharks circled me was certainly a memorable experience. I was on the island of Moorea in French Polynesia, in the middle of the Pacific Ocean and feeding strips of fish to wild sharks in an open lagoon. It turns out that the sharks, while wild, were also relaxed and calm. They were not aggressive. As the coasts around most islands have been protected for years they are numerous and utterly fearless. I had a few opportunities to swim with them in the past, but I had never been that up close and personal. That's just one of the many charms of French Polynesia. Located about 4000 kilometers south of Hawaii, or an 8 hour direct flight from Los Angeles, there are few places in the world as remote or as beautiful as French Polynesia. I was drawn to it by the dream of over-the-water bungalow accommodations and the promise of peace and tranquility on the Pacific. Most people will know the image. Those five star resorts that movie stars and billionaires run off to relax on. You might have seen it in a movie, or a tv show, or if you've ever done an internet search for paradise. The most common islands for people to visit are Tahiti, Moorea, and Bora Bora. But you must take 'common' with a grain of salt. The entire country of French Polynesia receives as many tourists in a season as Honolulu receives in a day. The country is also comprised of exotic far flung atolls with equally exotic names. Places with names like Fakareva, Raiatea, Huahine, and Nuka Hiva that seem like they belong in Captain Cook's memoir.

I went for the Overwater bungalows and I chose Moorea and Bora Bora. These islands are circled by coral reefs which create huge shallow lagoons around the islands and it is in these lagoons that the bungalows are built. So not only are you able to step off a private cabin into the water, but you do so into a four foot deep lagoon and can walk among the reef and water life for hours. The resorts are mostly four and five star properties and include some of the finest resorts on the planet. The bungalows are made of luxurious tropical hardwoods and share some commonalities. Most have a large window under the coffee table so you can view the reef under your room(with optional lights to attract sea life at night). They tend to have multilevel patios, one for sunbathing and one for launching into the water

Olive Oil & Balsamic dishes Premium olive oil and local BC wine are a brilliant pairing for anyone who is interested in either one. It just makes sense that those of us who stick our nose deep into a glass of wine would also taste olive oil right from the spoon.

We are very excited that James Bay Spinnakers has paired up with Olive the Senses. In the same way that Olive the Senses maintains close relationships with their suppliers, farmers, etc. and have a thorough understanding of and an intimate connection to their product, so do we here at the James Bay Spinnakers. Many of the wines we’ve selected come from producers whom we’ve met, whom we talk with often, from wineries we have been to, and are wines that we have tried year after year. Some of them are new to the store and we couldn’t be more thrilled to try them. Premium olive oils and vinegars can enhance and compliment the ingredients they are used with. Same goes for the wine you drink with a meal. Our favourite

pairings of the evening were difficult to narrow, but most notable were the adventures of the Chickpea Salad paired with Glenterra’s Brio Red Blend, and the balance of the Harvest Vegetable & Butterfly Chicken Dish with Rocky Creek’s On The Mark Red Blend. An honourable mention goes to how the Dostana Gewurztraminer and Chickpea Salad went hand in hand, playing off each other, creating an Indian Cuisine heaven. The wines we chose are all pure expressions of where they come from and represent their respective places, be it Vancouver Island or BC’s Okanagan Valley. Each shows the beauty that can come from quality local ingredients and the skilled hands that craft them. As we get deep into autumn and

Rieslings can be versatile and complex. They’re usually dry with high acidity showing citrus fruit on the palate making them good fun to pair with dinner. Their intense fruitiness softens their acidity and they can have the weight to accommodate whatever heart-warming dish you’re planning on.

Saturna Wild Ferment Riesling 2011, Saturna Island, BC $20

Soft, subtle and layered on the nose. This wine has matured over the last 6 months. Now coming of age as a deeply expressive wine it has shed its lemon and lime youthful aromas and developed a lovely vanilla spice and baked apple bouquet. This truly is a versatile wine that is showing off its character. ‘Wild Ferment’ refers to part of the winemaking process in which the yeast used to ferment the grapes is wild (as opposed to cultured or cultivated). Just another touch of local love.

Harvest moon in colour, its embracing autumn appeal warms the senses. A million bubbles rush up the glass and onto your palate. Lemon rind, apple orchard and freshly baked bread on the nose followed by fully ripe citrus and green apple on the palate. It has a round soft finish with notes of fermenting fruit and a hint of spice. The Backyard Blanc de Noir Brut brought out the soft smoky syrupy flavours of the Dark Maple Balsamic when tasting the Canapé first. Tasting the Canapé following the Brut awakened the bitter notes from the lemon rind. The buttery sweetness of the salmon augments the tartness of the Brut creating a nicely balanced pairing.

Preserved lemon and crisp red apple on the nose, medium to high acidity, light body, bright and complex minerality like a handful of wet pebbles, incredibly long finish, brilliant to start a meal or to pair with something simple, yet rich. This was a favourite! DeVine Pinot Grigio’s light body had an incredibly complex palate and proved to be a BIG wine. Tasting the Canapé and then the wine expresses a velvet swirl on the tongue followed by a sharp citrus bite and a creamy long finish reminiscent of the creamy boursin and buttery salmon lox. In reverse, you’ll discover a sensational experience. We got a distinct peppery zing at the back of the tongue from the Leccino Olive Oil used in toasting the crostinis when tasted after a sip of Grigio. The wine’s citrus notes amplified the cranberry pear balsamic.

1. Thinly slice baguette for about 20 slices, drizzle with Leccino Olive Oi and bake in oven for 10-15 minutes at 350° until toasted. 2. Simultaneously, you can have the carrot slices baking until slightly tender but still firm (approx 10 minutes). To prep the carrots, peel, slice think on a diagonal and mix in Cranberry Pear White Balsamic, chopped chives, and salt & pepper in an oven safe casserole dish. 3. When crostinis and carrots are ready, spread boursin cheese on each crostini. 4. Then top with the salmon lox, which can be formed in a cylinder upright. The carrot slices can be placed in and around the salmon. 5. To finish, spoon or drizzle Maple Dark Balsamic to the top avoiding the carrots or to the side to seep over the boursin layer. SERVES 4-6 MAKE EACH OF THESE DISHES TOGETHER TO CREATE A 4-COURSE DINNER, OR ENJOY EACH INDIVIDUALLY.

1. Toss Chickpeas, peppers, onion and olives in a medium sized bowl. 2. In a small bowl, combine Persian Lime Infused Olive Oil and Oregano White Balsamic, Curry, Cumin and Garlic. 3. Using a small whisk, mix well until completely emulsified. 4. Pour over top of chickpeas and veggies, tossing to coat. 5. Toss in olive and sprinkle with parsley. Let sit an hour to allow flavours to develop or overnight. When serving as a main, this dish is perfect over wild rice, barley or farro, topped with a dollop of Greek Yogurt. SERVES 4-6

Welcoming aromas of orange blossom and dried orange peel supported by bright and fresh lychee, passion fruit and sweet citrus. Full mouthfeel, very round and bold. Bring on the spice. It can take it. A great pairing for all palates. Take a bite of the salad and a sip of the Gewurtz and magically you’re teleported to Indian Cuisine Heaven. The cumin persists right to the finish of the wine. The wine’s lychee notes stand out in this pairing, and when tasting the wine then salad, the floral and fruity wine hugs the earth and spice letting the bright elements of the dish shine. You’re left savoring the fresh parsley and Persian Lime Infused Olive Oil only a hint of cumin. Truly a flavour wonder! Very interesting pairing.

Glenterra Brio Red Blend 2010 (35% Merlot, 20% Dornfelder, (13 grapes total), Cobble Hill, Vancouver Island $24

Taking colour from the Dornfelder and texture from Merlot, this wine shows intense aromas of black cherry, dark plum, cocoa, leather and campfire smoke. Dark fruit and spice compete on the palate encouraging sip after sip. It delivers gamy and herbaceous complexity that finish with solid tannic structure. Pair with turkey to let the wine shine or with more intense dishes to balance its power. It’s juicy enough to compliment spice well.

This is a bold adventure which is why it was one of our favourites. Try this wine after a bite of the salad and it really brings out the lime and bell pepper. In the reverse, unlike the last pairing where the wine hid the cumin, you’ll get distinct cumin and parsley, dancing with your taste buds. The wine’s earthiness matches that of the salad.

1. Preheat oven to 425° 2. Using a 9x13 pan, toss root vegetables. Drizzle with ¼ Cup of the Coratina, and shake well to coat. 3. Wash and rinse chicken with very hot water. Place chicken, breast side down, on a cutting board. Using very sharp kitchen sheers, cut along the ribs, close to the backbone of the chicken. Repeat on the opposite side of the spine, to remove. 4. Open up the chicken to butterfly and sprinkle the inside generously with salt and pepper. Turn the chicken over, and place overtop of the root vegetables; salt and peppered side down. Drizzle chicken with remaining Coratina. 5. Place in preheated oven and roast for 45-50 minutes, until chicken is no longer pink and root vegetable are tender. Cooking time will vary based on the size of the chicken. 6. To serve, transfer chicken to a platter and cut into pieces. Spoon roasted vegetables around chicken, or serve in a separate dish.

Aromas of black currant, blackberry, sophisticated oak, spice, bold and fresh, light to medium body, easy to drink any time, but would pair well with lighter meats in a rustic preparation.

Strawberry, rhubarb and a little butterscotch on the nose, deeper red fruit like raspberry and hinting at plum on the palate, full mouth feel, fruity but absolutely not sweet, dry finish, tart overall.

The consensus was that this pairing balanced perfectly. A sip of wine after a bite of the chicken swirls the buttery oils from the chicken along your palate. A bite of veggies followed by wine brings out a peppery arugula note from the Coratina olive oil. Each sip and taste brought a new flavor combination. The bright acidity from the wine kept the buttery richness of the chicken in place and the root vegetables brought out the earthy side of the wine.

This is a sophisticated rosé we felt could pair with either a summer or fall BBQ. It’s everything its description entails. Fruity and floral but certainly not sweet. The roasted vegetables followed by the wine brought out a hint of smokiness. The juicy flavours of the chicken helped bring out the floral of the rosé of the palate. Very interesting and enjoyable.

1. In a small bowl whisk together olive oil and cheese, use to dollop over finished pudding. 2. In a large bowl, whisk together eggs, and sugar. Beat in olive oil and slowly add the milk. Continue to mix until well combined. 3. Grease a 7x11 pan with 1 Tbsp of blood orange fused olive oil – or 4, 1 Cup Ramekins. 4. Toss in cubed bread 5. Pour egg and milk mixture over top of bread. Let soak for 20 minutes, or overnight. (This is very easily made the night before and served for breakfast) 6. Cover top with aluminum foil and bake at 375° for 35 minutes. Remove foil and bake another 10 minutes. Test with a toothpick to ensure pudding is baked through. Run a knife around the outside of the pan. Let sit for 5-10 minutes while you make the sauce, allowing pudding to set and cool slightly.

The Waiting List for Ladies' Night at

VICTORIA TRANSMISSION & AUTO CARE Victoria Transmission & Auto Care has built quite a loyal following for their popular Ladies’ Night and commitment to be Victoria’s most female friendly auto shop. Founded in 2011, their FREE Ladies’ Nights are hosted in the Spring/Summer and at any given time has a waiting list of 10.

“We believe that through hands on education, we empower our female customers to take control of their vehicles' repair and safety needs, and gain knowledge to navigate their car care needs at any repair shop,” explains Adam Sullivan.

The Victoria Transmission & Auto Care staff was the first in Victoria to undergo Ask Patty.com’s female friendly training. This training helped primarily with communication to better explain the reasons, causes and issues pertaining to their vehicle maintenance and repairs. “We feel transparency is paramount in creating trust and we invite all of our customers to ask questions as well as come out into the shop and see the work we have recommended,” says Adam. They even have a tool called virtual vehicle MD that is a computer program that shows the inner working of the vehicles' components—even what’s going on inside the motor. This tool has helped customers understand the reasons and causes of why things need to be done.

The Ladies Automotive Education classes aim to teach women about 3 major things; 1) General Automotive Knowledge (How do brakes work? What’s a tune up? How often should I get my oil changed? Etc.)

2) Learning on your own vehicle how 3) Green driving tips, money savings to – check your fluids, change your tips, new cars vs used cars, tire, jump start your car, check your warranties and an open dialogue tire pressure etc. to ask any and all automotive questions they may have.

Let’s face it. We all want at least some degree of health, wealth and happiness. Often, we just don’t know what order, or to what degree we want them in! And sometimes, we don’t know how to get from where we are now, to the next level we would like to achieve. It seems we can navigate through life making sure we are never too dull or too bright. We move forward only when we can clearly see that it is safe to do so and that everyone else is doing it. There are people in front of us, and people behind us, and most of us are tucked safely into the middle maintaining the status quo. Not too healthy, not too unhealthy. Not too rich, not too poor. Not too happy, not too unhappy. Mediocrity can be very comfortable for many people. Judgment there is kept to a minimum. If that is where you are and where you want to stay there is no shame in that. For those of us who have a deep instinctual belief that there is more available for us – there is no comfort in ‘the comfort zone!’ It becomes a place where we feel inadequate and a million miles away from where we are destined to be. We have a great life… a life many people would only dream of. Somehow, it is not enough even though logically it appears to be more than enough – especially when we compare ourselves to those less fortunate in the world.

In order to avoid exhaustion and frustration in the process, we must obtain a humility that allows service to resonate in all that we say and do. ‘How may I serve’ must become our mantra. When we concern ourselves with the perceived limitations and judgement of others, or rely on the praise and support of others, we give away our power. Our success or lack thereof begins to hinge on people and events outside of ourselves. We lose our authenticity in order to maintain that delicate balance of service to that which is outside of our true nature. This is when we become firmly planted in the comfort zone. We lose touch with our inner guidance, and instead use the opinions, approval and judgements of others as our compass for the road ahead. Everyday things become more difficult, we become more and more tired, we question our progress, our purpose and our dreams. Our light begins to fade. A young mother receives formula and diapers free of charge, another chooses clothing and equipment from the Practical Helps room. A family receives advocacy as they apply for low cost housing and a classroom learns “The difference between Love and Infatuation. All of this is through the programs and resources offered at The Victoria Pregnancy Centre. They are an independent, non-profit and non-political registered charity. All of their services are free and confidential. Five years ago a customer/acquaintance approached me, asking for financial support for The Centre, of which she is the Director. She was following a strong tug on her heart that had led her to approach me for support. Little did she realize I had been researching pregnancy organizations thinking that I would like to volunteer in the upcoming fall. She suggested as little as $100.00 per month would be so helpful. I needed time to consider the request as I was sure I could not spare $100.00 per month! What followed can only be described as “Divine Intervention” as pieces clicked together with unbelievable ease. This is the key word: ease. We have now just completed the 4th Annual STUFF Your Bag Sale and have raised upwards of $25,000.00 in that time frame, all for The Centre. While we did not have the means to offer cash, we were able to fill an incredible need by being open to bigger ideas.

MORAL SUPPORT Artists are notoriously, even obnoxiously, sensitive creatures. Without that characteristic, we would not be able to do what we do. But the same sensitivity that lets us tap into visual and symbolic possibilities when we work can also heighten our insecurities in the off-hours. You can help calm an artist the hell down by offering as many positive comments as you can stomach and telling him how much you admire him for pursuing his art. If you do. BUT DON’T COMPARE! Even if you intend to compliment and you’re not just showing off, comparing your friend to another artist is a crazy minefield of exploding bananas. You may accidentally tap into his profound anxieties about lacking originality, or he may hate the artist you mention and see himself as totally different. An artist almost never feels complimented by comparisons. Better tactic: ask him who inspires him. You can always nod sagely after the fact and say “Yes, I noticed Basquiat’s influence in your line when I first saw this piece.” You pretentious goof you. BUY SOMETHING! This may seem obvious, but the best way to support your artist is actually to 22

purchase something from her. I know, what a shocker. If you aren’t fond of her work, consider it charity and just pick the least heinous painting she has. If you do like her work, hey great! That worked out! If your artist hasn’t established her pricing system yet (tsk tsk) and asks you to suggest a figure, keep in mind that an unknown artist shouldn’t be charging more than about $3.00 per square inch for a standard medium like acrylic or watercolour. Oil can be more. If an artist has had publications and shows, it’s a different story – and she will already know how much to charge. (For more on art pricing, go to your nearest shiny screen and search the name Chris Tyrell Loranger --the best commentator I’ve found on pricing art, and he’s from BC! He has written a couple of excellent books, and he blogs about the business side of art.)

DON’T COMMISSION It’s a myth that artists are happy to do any type of art. Only rank beginners claim to be good at “everything.” (They’re wrong. No one is good at everything.) Seasoned artists are focused on pursuing their unique process, as a wolf pursues a rabbit through the woods or whatever. If you ask your friend to paint something special, she may do it

Victoria is stuffed with visual artists. Every time I go to Opus or Artworld I wait at least a few minutes in line to hand over my firstborn I mean pay for my stuff. So chances are, you know someone who makes art! Here are a few tips on how to support that person. Believe me, they need it. just to keep working in art, but it’s much better if you buy something she has already made. If your artist is willing to accept your commission, be prepared to wait a long time and pay a lot of money. Unless that artist is a ding dong, she should charge a premium, because art-to-order is seriously hard work. And in the end, you may get something that is far from your original idea, because your friend can’t read minds and you can’t speak art.

FUEL THE FIRE Second only to cold hard cash, artists love good hot food. Cook your artist some hearty meals and you can legitimately call yourself a patron of the arts! We almost never eat, let alone cook -- not because we're poor, but because we pretty much always have fancy substances on our hands that some "doctor" told us not to ingest. Don't even /ask/ how we deal with going to the bathroom. It can get colourful is what I'm saying. So can you...peel me a grape? Awesome...a few more will be perfect. What's that about Brie? The fall is a great time to explore the wonderful trails we have in Victoria. Having had one of the best summer’s in history we hopefully can look forward to an equally mild fall bringing with it all of the glorious colours that make the west coast so famous.

I personally like nothing better than walking (with my dogs) or running through Arbutus-lined pathways strewn with freshly fallen leaves. The colours this time of year are also particularly special making a run a bright and cheerful way to start or end the day. We are lucky here as we can choose to run by lakes, the ocean or through residential areas where rural trails are in

abundance depending on where you choose to go. Here are some favourites. The 10k trail that circumnavigates Elk and Beaver Lake is a gem in Victoria. On a warm day it provides shade and on a rainy day – shelter. For those who like running or walking with their dogs it is ideal, with many places for your canine friend to cool off and to throw a stick for. The trail

is marked every kilometre so GPS deprived individuals don’t have to worry about knowing how far they have come or how far they have to go. Watch for others enjoying the trail, in particular horses. Dogs can be off leash as long as they are under control. If you like a challenge and a few undulations in a beautiful setting then Thetis Lake is a great place to run. Rated moderate to challenging by the CRD, this 834 hectacre park has a abundance of trails that intersect to you can make your journey as short or long as you like. Arbutus trees are a feature of this lake trail as is natural wildlife on the water. Like Elk and Beaver Lake there are areas for your four-legged friend to enjoy a cooling swim. The all-year round doggie beach is a particular favourite allowing your best friend to socialize with like-minded canines. The Galloping Goose trail is 60 km of sheer delight for recreational athletes with many cyclists also enjoying the Goose. The pathway is now paved all the way to Colwood. However, beyond Colwood it is still mainly trail and stunning to explore – particularly around Roche Cove and Matheson Lake

and all the way to the Sooke Potholes. This part of the Goose is surprisingly quiet and largely undiscovered so ideal for a quiet, solitary run or walk. It is marked every kilometre so you can choose to join the trail at a convenient spot and venture forth for as long or short as you like. Lochside Trail is a 29 km trail from Swartz Bay to Victoria and even though there are paved and road sections, the Royal Oak Drive to Sayward Road and beyond to Island View Road has some off road and is surprisingly quiet. It is a favourite for cyclists so if you are running with your dog then it is advisable to leash up. Ocean views are a feature of this trail. There are other great trails in and around Victoria – Horth Hill Regional Park near Sidney and Durrance Lake in Mount Work Regional Park are two others worth exploring. If you do venture on to some of these trails this fall, particularly the lake trails, ensure you invest in some good trail shoes - this will help particularly ascending and descending any slippery inclines. So be sure to visit your local running store to get kitted out. Happy trails.

The holiday season is an expensive time of year. The expense of gifts, travel and food can add up quickly. It is easy to let your heart take priority over your wallet and in turn, blow your budget. Here are a few tips to keep you on track and let you enjoy the holidays without worrying about overspending.

Make a Plan

Make a list of all the people you want to buy gifts for and their respective gift ideas. Is there anyone you can trim off the list? How much do you want to spend on each person? Other things to consider: Will you be travelling? Are you hosting a big meal? Do you plan on purchasing any new decorations? Start Now!

If you know early what you want to buy your loved ones you have more time to look for a good deal. If you are handy in the kitchen or artistically inclined, starting now will give you the time to make gifts. Be aware, making gifts doesn't always mean saving money. Keep track of your supply costs because they can add up just as quickly. Gift Exchanges

Do you have a huge family or big group of friends? Suggest a gift exchange. This is a great way to save some dough! Chances are your friends and family will be happy to save the money too. Speaking of Turkey

Turkey is most expensive at Thanksgiving and Christmas. If you have the freezer space, check the sales at your local supermarket and buy a turkey when it's on sale. This can save you up 80%!

Joint Gifts for Couples and Families

Instead of buying separate gifts for your sister, brother in-law and their two children buy them one family gift that they can enjoy together. Board games are great for this. Have a great couple you love? Get them a “date night kit,” put in a bottle of wine and some yummy nibblies. Buy Generic Holiday Cards and Include a Family Photo

Instead of forking over big bucks for custom holiday cards that have your photo on them, buy inexpensive generic cards and include a family photo inside. You can print photos at Walmart or Costco for $0.15. If this is still too much for your budget, opt for a cute e-card. Get Creative with Wrapping

Wrapping paper and bows are expensive, and usually end up in the recycling. Instead, try plain brown paper and a roll of sparkly cloth ribbon for new take on an old school look. Buy Decorations After the Big Day

Starting on Boxing Day, Christmas decor is discounted 50-75%. Make do with what you have for this Christmas and make a trip to the store after all the gifts are unwrapped for next year’s decorations and wrapping paper.

Cash Only Christmas

When it comes to holiday shopping, make sticking to your budget easy by only spending cash. If you know you will be tempted, leave your plastic at home. Do a Potluck

Are you hosting a big family meal and dreading the food bill that comes along with it? Ask your family members (or friends) to pitch in and bring part of the meal. Have the host cook the turkey, or whatever you traditionally eat, then divvy up the sides and desert to the other attendees. Track Your Spending

Keep track of what you spend this year, including your food, travel, gifts and decorations. Once you have the final number, decide if you were as frugal as you could have been. Decide a spending goal for next year, divide the number by 12 and add that amount to your monthly budget. When the holidays roll around next year, you already have a nice nest egg to work with!
