elebrating the traditional with a mix of nostalgia is what I have come to love each year during the holiday season. The big dinner at the end of the month with family and friends may include a seat at the table for a family member on a computer via Zoom or FaceTime. They can listen to the conversation and be a part of the holiday banter making room for new memorable moments as we incorporate technology into our new traditions in profound ways. These traditions unite us and motivate our actions but the nostalgic elements come with a comforting emotion that stimulates memories of when we needed a grandparent giggle or the laugher of a child to make the moment feel normal.
The stories of what we all experienced last year have become a mainstay in almost every conversation I have with anyone about the magazine, community events, Viera’s growth, and the Light Up Viera holiday parade. The changes we made to the parade and the support of our sponsors, participants, volunteers, and staff have all kept our efforts moving in positive directions. I don’t want to over-romanticize any of these, but we appreciate the level of trust each year by all those that contribute in some way. Last year, the parade had one marching band, Satellite High School. They were able to commit even with all the difficulties of the pandemic and I want to commend them for finding a way to attend and provide us with music. The marching bands are all back this year and we highlighted them on page 12
with a look at their practice on a very hot school day this past September. Listening to them practice and watching them march with the instruments made me nostalgic for just a moment and think back to the days when we would have special photo shoots with them in their full regalia. One day very soon we will get back to those moments. Nostalgia has been cognitively researched as a form of measurement and a way to keep tract of things remembered including how we might progress through life in the form of life’s impressions even if not 100% accurate. But, I’m a glass half-full person and the excitement of that night is truly accurate. The energy flows around us all and with the first crack of the fireworks, to start the parade, to the smiling face of Santa waving hello, we are all excited to wave, dance and say, “Merry Christmas and Happy Holidays.”

LIGHT UP VIERA’S 20,000 SMILES By Stephanie Byrd
C
an a parade create twenty thousand smiles? Our team looks back through photos from past parades each year and I can sincerely say that I see smiles in hundreds of photos. The first parade in 2013 entertained us with a pair of camels with a young baby calf. By the third parade in 2015, we had lighted costumes and five marching bands. In 2018, the parade experienced its largest crowds to date and it had grown in size with more floats, more walking units and more lights.
The parade had become an event that you camp out for with some residents claiming their spots along the route as early as 8 a.m. Pre-show entertainment, food trucks and new performers in the parade were all part of the year-to-year evolution, and float sponsors became part of the magic by handing out lighted toys or balloons when they streamed by. We could never pull this off without a strong team and the help of others. Over the years I have videotaped and photographed the event, created costumes, held the parade banner, face-painted stars on faces, and emcee’d the preshow. Staff members at The Viera Company, along with their spouses and family members, also dive in and help us on the day-of by decorating floats, making sure everyone who needs a radio has one, and placing signs in roadways (so you know where to park). The volunteers over the years have also made the parade what it is today by helping us direct on location, put up and pull down tents, sing during the fireworks show, and even put on a costume or hold a banner while walking the 2.7-mile route.
We want to thank all the band directors, parents and family members who support the performers in the marching bands. They stay after school for many weeks working hard to learn their routines: we are lucky to have them share their talents with us during the parade. One incredibly important group that allows us to scale this event is our police and fire departments. Year after year they have provided the security we need to have a safe and successful parade. We can also count on them to find a lost parent or two. Finally, the choreographed behind-thescenes work is an incredible feat each year and for the last three years has been managed by Laurie Widzgowski. She has brought us a parade like no other and was able to produce a parade in 2020 during our biggest health crisis. The parade brought smiles not just to those able to attend but to anyone who watched on the various live feeds. Sure, we were not able to do things to the scale that had been done before but we made it work and still kicked off the holidays with some holiday magic. Please enjoy the photos on the following pages as a testament to the quotes that started this story. We are excited to once again produce a parade for you that has hopefully lived up to its magical promises with a fireworks show followed by the smiles and joyful happiness that is a holiday parade.

1. Preheat oven to 425˚F. Grease or line 12 muffin cups with paper cups. Place 6 eggs in single layer in saucepan; pour enough water to cover eggs by 1 inch. Set pan over high heat and bring to a rolling boil; boil for 1 minute. Cover and remove from heat. Let stand 5 minutes. Drain water and place eggs under cold running water for 30 seconds or until cool enough to handle. Peel and slice in half. Set aside.

Dijon mustard ½ cup melted unsalted butter, cooled 1 cob cooked Dandy® Sweet Corn, kernels removed 1 cup shredded aged Cheddar cheese, divided 2 green onions, finely sliced 4 slices bacon, cooked crispy and crumbled
2. Meanwhile, in a large bowl, whisk together next 12 dry ingredients. In a separate bowl, whisk together milk, 1 egg and mustard; whisk in melted butter. Stir into flour mixture until just moistened. 3. Fold in corn kernels, half of shredded cheese, green onions and bacon. Divide half of the batter evenly among prepared muffin cups; nestle half an egg in each muffin cup. Top with remaining batter to cover each egg. Sprinkle with remaining cheese. 4. Bake for 15 to 18 minutes or until muffins are golden brown and tops spring back when lightly pressed. Let cool on a rack and serve warm or at room temperature.
Pro Tips: Spoon batter into a piping bag to distribute batter easily over the eggs in the muffin cups. Older eggs are easier to peel. Don’t worry if eggs are misshapen when peeled, as they will still look terrific in the muffins.

DIRECTIONS 1. To prepare the potato hash, first remove the leaves from celery and place in the bowl of a small food processor. Finely dice the celery. Place 1/4 cup of the diced celery in the food processor with the leaves; add 1 cup of spinach, the sliced almonds, garlic and Asiago cheese then process until combined. With the motor of the food processor running, add the 1/4 cup of oil then process until well combined; add 1/4 teaspoon of the salt and stir to combine. 2. In a 12 inch skillet, heat the tablespoon of olive oil and the tablespoon of butter over medium high heat. Stir the remaining diced celery, the potatoes, the tablespoon of shallot, remaining salt and the pepper into the pan; cook, stirring occasionally, until the potatoes are tender and golden brown, about 15-20 minutes. Combine the pesto and the potatoes just before serving. 3. Meanwhile prepare the hollandaise. In a 6 in. skillet heat the teaspoon of olive oil over medium heat; stir in the minced celery, scallions and shallot and cook until tender but not browned, 3-5 minutes. Transfer celery to a blender and add the sea salt, chili paste, egg yolks and lemon juice; blend. Finally add the melted butter to the container and blend until smooth. 4. To serve, spread the avocado over the toasted bread, evenly dividing. Arrange one slice of avocado toast on each of 4 serving plates. Top the avocado with a poached egg. Spoon the hollandaise over each egg. Divide the pesto potatoes between each serving plate. Garnish each with shaved celery and celery leaves then serve.

ISLAND IX When Island IX opened in Viera in August, owner David Clark was realizing a promise he had long ago made to his grandmother. “We used to cook together and I always promised her I would have my own place,” said the entrepreneur, who launched the laidback, unique restaurant with his business partner, Brett Paul, owner of Play It Again Sports in West Melbourne. The long-time friends spent years discussing the possibility of their very own eatery. Both partners had worked in restaurants before and the itch to open a place never abated. “We always talked about it,” said Clark.

They had originally considered a franchise for the eatery at the Viera Colonnade Shops near Viera Petworks and Jersey Mike’s Subs, but when the chosen franchise did not deliver on its promise, Clark and Paul opted to go alone, choosing a volcano theme that pays homage to exotic locales. The mysterious Roman numerals after the name are the first initials of Clark’s children’s first names, Isla, 10, and Xander, 10, who both think it fantastic to have a cool burger place in the family.
Speaking of burgers, Island IX has plenty of them, as well as other sandwiches, all named after iconic volcanoes from around the world. There is much more in store, as seafood boils, outof-the-ordinary salads and lobster rolls---including to-die-for deep-fried lobster rolls---soon become part of the menu. Start the meal with appealing appetizers such as Panko-crusted avocado spears before proceeding to temptations that include Mt. Kilimanjaro, a black bean burger topped with fried avocado, and the Mt. Santorini with lamb, spices, feta and tzatziki sauce. Do not forget the sidewinder fries, which a young customer called “lucky fries” because of their wide, twisty, beer-battered wonderfulness. Save room for the S’more Lava Cake, a graham cracker cake replete with chocolate ganache. Island IX’s spacious outdoor seating with its staycation vibes glows in the light of tiki torches and rivals the restaurants’ unique handcrafted interior tables. The soda fountain is not your average drink dispenser, but rather a techie wonder that infuses vitamins to all the craft sodas. Look for fundraisers, beer and wine nights and other special events at a place already showing promise of becoming a favorite hangout. “We’re off to a great start,” said Clark. CRUMBL COOKIES Cookie lovers, be prepared for serious temptation, with Crumbl Cookies anticipated to arrive in town as early as December of this year. The aroma of freshbaked goodness will indeed be alluring at The Avenue Viera’s new temple to cookies, made possible by Shae Malachowski, a Utah native with Florida roots. Shae’s family had been Crumbl Cookie groupies for years, so when the opportunity to join the world’s fastest-growing dessert company arose, she gobbled it up as if it were a Crumbl Milk Chocolate Chip, the flagship cookie of the company Cousins Jason McGowan and Sawyer Hemsley started Crumbl Cookies in Logan, Utah, in 2017. In four years, Crumbl has expanded to 200+ bakeries in 32 states.
“We usually split each cookie into fours, but once you have one piece, you’ll go back for more,” Shae Malachowski, Owner “So many things make Crumbl unique, from their products to their culture and branding,” said Malachowski, who admits to being a cookie snob never satisfied with mundane grocery store varieties. “The minute I tried a Crumbl Chocolate Chip, that was it,” she said. Always on the menu are chocolate chip and sugar cookies, but every week, four additional flavors, inspired by everything from Biscoff and peanut butter to blueberry cheesecake and cereal, are featured. “We have a very strong sense of family and it makes everyone feel like they belong,” said Shae. Malachowski considers baking part of her DNA. “My mom’s side is Filipino and Italian, so food and baking go with the culture,” she explained. “Every Christmas, my mother baked dozens of various cookies and as kids we loved helping.” In college, Malachowski earned pocket cash by decorating cakes, a job that led to a cupcake catering business with a friend and the eventual---and memorable--competition on Food Network’s “Cupcake Wars.” As chief cookie officer at Crumbl, Malachowski plans on hosting many a fundraiser, since giving back is a critical component of the company’s corporate philosophy. “Crumbl loves to be a part of their community and regularly implements “Crumbl Cares,” she said. “In addition, because Crumbl is part of The Avenue, there will be a lot of fun events going on year-round.” For more information, visit crumblcookies.com.

MAD ABOUT YOU, TERIYAKI MADNESS Entrepreneur Ven Puskur expects Viera to go crazy for the dishes at his new Teriyaki Madness franchise, since there is indeed much to love about the chain that it was named the fastest growing restaurant in the country in 2021 by Restaurant Business Magazine. “It’s healthy, affordable and delicious,” said Puskur. Founded in 2003, the company now boasts more than 150 locations in the United States, plus two each in Mexico and Canada. With a slogan of “fresh, fulfilling and fits your life,” Teriyaki Madness, or TMAD as it is fondly known, is helping to redefine the concept of Asian fast casual. “The flavors are amazing,” added Puskur. The menu, modeled after the Seattle Teriyaki concept, is replete with fresh options that are good for the body and easy on the wallet. Puskur selected the franchise because it offers such a great alternative to the traditional Asian takeout. Ingredients are natural with nary a monosodium glutamate in sight.
Based on a build-your-own approach, bowls reign supreme, accompanied by a bevy of appetizers, sides and sauces. Guests choose protein such as chicken, steak, salmon and tofu, and order the veggies and carbs that best suits their taste. Junior, regular and large sizes helps customers customize portion size. Chicken Teriyaki, the eatery’s signature dish, features hand-trimmed, all-natural marinated chicken thigh grilled and served with housemade teriyaki sauce, accompanied by choice of white, brown or fried rice or noodles and steamed or stir-fried veggies. Fresh ingredients arrive daily to fill the bowls with tasty goodness. “Nothing is frozen here,” said Puskur. “In fact, we don’t even have a freezer.” Sauce choices include traditional teriyaki, spicy, stir-fry, Gyoza, thick teriyaki, sweet and sour and Katsu.“We make all seven sauces inhouse,” said Puskur. Although the restaurant offers room for 15 inside and up to 10 guests in the patio, Teriyaki Madness is ideally suited for takeout.

AROUND TOWN 1. 20th Anniversary of September 11th Terrorist Attacks The Avenue Viera is one of two locations in Viera with a portion of the steel memorial beams collected from ground zero of the 9/11 World Trade Center memorial site. The beam was placed in 2017 and local residents pay tribute each year. For the anniversary, 3,000 flags were placed nearby and white roses were available for guest to pay tribute to all that were lost that day.

2. DogFest, September 25th Their fundraising goal of $20K was met this year by the organizers and volunteers at DogFest. They fundraise for Canine Companions, an organization provides service dogs (and the ongoing care and support) for individuals with disabilities. Each dog is expertly trained and can perform practical tasks that enhance independence and transform lives.
3.Brevard Children’s Business Fair, October 2nd Nora McFarland started the fair in 2018 and it has grown from 25 excited young entrepreneurs booths to a larger participant group of 80 this year. Young children, with the help of their parents, can sell items they create such as plants, tie-dye shirts, dog toys and jewelry.

4. Viera Harvest Festival and Scarecrow Stroll, October 16th Families from all over Brevard enjoyed the Viera Harvest Festival with music, food trucks, games, and a corn maze. The 9th Annual Scarecrow Stroll showcased scarecrows designed by local businesses in the area with auction proceeds going to Aging Matters in Brevard.
5. Making Strides Brevard, October 23rd Making Strides is an annual event that brims with hope and showcases the fighting spirit within all that attend. A sea of pink participants began the day at The Avenue Viera and walk through the streets of Viera after raising money to make an impact and save lives. The event brings close to 10,000 annual walkers, sponsors, and volunteers each year.

hristmas and Hanukkah are nearly upon us here in Viera as we prepare for the Light Up Viera Holiday Parade, scheduled for November 27, 2021 at 6pm, which kicks off the holiday season. We are starting to see decorations go up and plans are being made for more normal holiday gatherings with family and friends. Cyndi and I can’t wait to start trimming the tree for Christmas the day after Thanksgiving as we look forward to welcoming visitors for the holidays. Although the return to normal has not been at the pace we had all hoped for this time last year, we still have much to celebrate and many blessings to be grateful for in reflecting on 2021. Viera continued to be highly ranked among the best-selling master planned communities in the country, taking the #18 spot on the RCLCO mid-year list with 406 new home sales through the first half of the year, up 14% from the same period during 2020. In addition, US News & World Report ranked the Metropolitan Statistical Area that includes Viera as the #18 Best Place to Live in the nation, #3 Best Place to Live in Florida, and #10 Best Place to Retire in the country. Viera was also featured as the Showcase Community during the recent Home Builders and Contractors Association’s Parade of Homes with models in the neighborhoods of Reeling Park, Valencia, Modern Duran and Adelaide taking home awards. New neighborhoods opened in Addison Village (south of Wickham Road), ground was broken for Pangea Park (southwest of Lake Andrew Drive and Pineda) and Aripeka (south of Strom Park), while plans were recently announced for Del Webb at

Viera, a new 1,300 unit 55+ active adult community, southwest of the future intersection of Pineda Boulevard and Stadium Parkway. The Sonata East at Viera independent living and memory care facility opened its doors to new residents and kicked off the grand opening by hosting local dignitaries, including Senator Debbie Mayfield. Del Webb and Sonata are serving to advance the quality of active adult options available in the community. Other exciting new openings this year included Walk-Ons Sports Bistreaux, Chick-fil-A in Borrows West, The Pearl of Viera luxury multi-family community in the Viera Town Center, Tommy’s Car Wash at Stadium Parkway and Veterans Way, Winn Dixie in the Viera Village Center and 7-11 at Viera Boulevard and Stadium Parkway. Development commenced for East Coast Christian Center at Viera Boulevard and Tavistock Drive, Jaguar
Lincoln & Land Rover adjacent to I-95, the six-story multi-family over retail project known as Luna in the Viera Town Center, The Blake Assisted Living Facility next to St. John the Evangelist Catholic Church, and the much anticipated Costco southeast of the intersection of Pineda and Lake Andrew Drive. Of course, my personal favorite highlight of 2021 was the opening of the new street hockey rink in La Roca Park which expanded the available recreation options for Viera’s children and young-at-heart by adding this innovative park element to the mix. The Tampa Bay Lightning held clinics throughout the day of the park’s grand opening with Lightning alumni and 2009 Stanley Cup Champion Mathieu Garon on hand to teach participants many different hockey skills. As we close out 2021, I finish this letter by expressing my sincere gratitude to all of those with whom I work and interact throughout Viera and the Space Coast for all you do to make our community a special place to live, work, play, worship, learn and recreate.
