Fall is here and in 2016 it will be a ‘game changer’.

W

hat does the future path resemble when changing the status quo? Does the difficulty lie in the beginning, middle, or final stage? Can you have a transformation without a strategy? Who are these individuals or teams creating this change? A significant shift is happening and the Viera community will see aspects of the development progress and experience this change in the years to come. The Duda family has always seen the Viera property as a long-term investment and it became a standout community very quickly. Growth levels in all areas include roadways, business, real estate, retail, education and leisure. The

continued changes maintain the balance and meet the expectations of a master plan while providing the growth we continue to see today. This issue includes a few of our local game changers or industry disrupters that have met the challenges in their area of expertise. Innovations in modern home building and design are featured in the new communities in Central Viera. Our local schools continue to raise the bar and have succeeded academically, artistically and athletically with educators and staff leading the way. The major roadway expansions will be completed soon allowing for a significant change in our connectivity. he very notion of a globetrotting, epicurean rogue like Anthony Bourdain – the larger than life travel guru, culinary wizard, Emmy-winning television personality, bestselling memoirist and author of detective fiction (hardboiled, of course), buzzworthy

public speaker, as well as husband and father, being stuck in a difficult escrow process is almost inconceivable. This is a man, after all, who says that the best meal of his life was a fistful of earthworms blackened in an empty cat food tin with an acetylene torch. (“The skins were blackened and crunchy,” Bourdain rhapsodizes, “but the simple stomachs of the earthworms were loaded with loamy richness.”) So, um, yeah. It’s easy to forget that the 60-year old Bourdain is a mere mortal, interested in many of the same things that we are, tasked with providing for his family a roof overhead and a well-stocked larder. Still, two years ago, the Kitchen Confidential: Adventures in the Culinary Underbelly scribe dropped $3.35-million on a 3-bedroom,

3-bathroom. 2,250-square foot condominium in the ‘tony’, 32-story Carnegie Hill Tower (just off of opulent Fifth Avenue, one block from Central Park). The rub for many celebrity gawkers is that in an age where Manhattan kitchens comprise an average of 7-percent of a property’s floor plan (according to real estate-brokerage Engel & Völkers), the 6'5" Bourdain has a cooking space more fit for a Lilliputian. Welcome to New York, where the only things big are the, uh, Big Apple and the stand-by line for Hamilton tickets. Though Bourdain – currently seen on CNN’s acclaimed series Parts Unknown – maintains a professional baseball player’s whirlwind travel schedule, when he is home he “mostly orders out,” he says, between episodes of The Wire (his preference) and Yo Gabba Gabba (his daughter’s favorite).

Occasionally, Bourdain will head for the stovetop to whip up a pan-seared steak au poivre with a simple pasta. He is in the process of customizing the condominium’s kitchen at present, his most urgent aim being to purchase “a professional stove and a good knife.” With an acrid laugh, Bourdain muses that maybe he should also one day “buy a kitchen to put the stove and knife in.” Bourdain says the key to excelling in any kitchen scenario, regardless of layout or square-footage, is organization. Mise-en-Place is critical to a high functioning chef’s workstation, Bourdain writes in Kitchen Confidential. “Miseen-place is the religion of all good line cooks. Do not (mess around) with a line cook’s ‘meez’ – meaning his setup, his carefully arranged supplies of sea salt, rough-cracked pepper, softened butter, cooking oil, wine, backups, and so on,” he writes. “A line cook’s ‘meez’ is an extension of his nervous system, and he should be able to reach everything and use it well, even with his eyes closed.” To that end, Bourdain suggests renting, buying, or somehow making ample counter space – all wood or marble preferred. “It’s more important than a high-end stove, the ability to rapidly survey all ingredients in progress being of utmost importance to the celebrity chef,” he says. Open shelves and a walk-in pantry are vital for creative, unfettered culinary ingenuity, as well. Most high-end chefs, Bourdain says, are migrating to the “eat fresh” bandwagon, abandoning side-by-side freezer-refrigerator units for oversized, standalone fridges. While there is little Bourdain can do to expand his culinary sandbox by way of square-footage, he does highly recommend – almost insist – that every kitchen, professional or private, be stocked with a few critical instruments of creation: GLOBAL G-2 – 8-INCH, 20 CM CHEF’S KNIFE. “All you need in your kitchen is one good knife,” Bourdain insists. “You’re cooking dinner, not fighting in the Sino-Japanese War.” Avoid knife sets, especially those offered on television, in favor of a sturdy, but lightweight single blade that feels good in your hand, something that can cut “anything from a tiny shallot to a huge watermelon.” VICTORINOX CUTLEY 9-INCH WAVY EDGE BREAD KNIFE, BLACK POLYPROPYLENE HANDLE. If you really need to see

more than one dagger before you, Bourdain says this offset, serrated blade – his sous chef’s preferred “weapon” – is a marvel at slicing and dicing everything from crisp vegetables to fresh-baked bread and thin-skinned tomatoes. “The handle is offset in a unique way, which makes it a little easier on the wrists,” Bourdain says. “It also has a safety guard, which can save a couple of fingers if you’re a messy cook with slippery hands.” BAKERS & CHEFSTM TRANSLUCENT WHITE PLASTIC SQUEEZE BOTTLES. Bourdain believes there is an element of prestidigitation to being a high-end chef, with appearances and perceptions often overshadowing simple facts. “Presentation can elevate mediocre food to ‘restaurantquality,’” he offers. “Just making food look attractive can ALL YOU NEED IN YOUR KITCHEN IS ONE GOOD

actually make it taste better. That’s how weird the human brain is.” Bourdain recommends cheap, plastic, see-through squeeze bottles for every sauce, topping, and dressing that hits your dining table, or keep the squeeze bottles under wraps and invite your guests to simply partake in your “sexy plated meal.” Bourdain says, “In the real world, a pastry chef adds a little squeeze and swizzle of raspberry sauce and charges you two or three bucks more for dessert. Use these bottles once and you’ve made your money back.” KUCHENPROFI PREP/PLATING/ FORMING RINGS. “Metal rings are the backbone of pretentious food presentation,” Bourdain laughs, both in judgment and confession. “You’ve gotta have them.” They can be used to make perfectly round pancakes or fried eggs, to cut cookies or scones, or for more sophisticated plating (e.g., tamping your mashed potatoes into an exquisitely formed mountain, ladled with a few cooked shrimp overtop, decked out with sautéed leeks and a sprig of fresh herbs. Voilà!) “Cheap tool, impressive results,” Bourdain opines. CUISINART 7194-20 CHEF’S CLASSIC STAINLESS 4-QUART SAUCEPAN. “A thinbottomed pan is useless for anything. I don’t care if its bonded with copper, hand-rubbed by virgins, or made from the same material as a stealth bomber,” Bourdain writes in his breakout book, Kitchen Confidential. In other words, Bourdain the Heavyweight will only use a heavyweight pan. “Trust me on this,” he says. “Unless you want burnt sauces and burnt bread crumbs and pasta that sticks to the bottom, you’ve gotta get a good, heavyweight saucepan.” As for stocking the Bourdain Family refrigerator, his home is never without fresh mozzarella or burrata, plenty of butter, good olive oil, heavy cream, and all the fixings for elbow macaroni and cheese. “You’ve gotta remember, it was, like, fiveminutes ago I couldn’t even dream of living in a place like Carnegie Tower, so my taste and preferences, they’re all over the map, literally. I like ‘the good stuff’ – you know, all the things sophisticated people are supposed to enjoy – but I also like the good stuff, the things that regular people actually eat with zeal,” Bourdain says. “I kind of feel like I’m on my third or fourth life here. I should’ve died in my 20s. I became successful in my 40s. I became a dad in my 50s. I feel like I’ve stolen a car – a really nice car – and I keep looking in the rearview mirror for flashing lights. Nothing yet. So I’m gonna keep on going.”

When you think school, math, science, and reading come to mind. However, programs in music and theater have held an important place in our children’s lives for many years, as well. “These programs open up our kids’ eyes to wonderful opportunities that may not be found in the classroom,” explains Henderson. “Giving kids an outlet, especially those who crave something different, is essential to their growth.”

And who says these programs aren’t teaching? Reading a music sheet is much like solving a math problem. Going from note to note – correlating the right key to the minim, crotchet, or quaver – talk about brain power! Here in Viera, string instrument programs start as early as elementary school, providing a building block of education that benefits all areas of schooling. Henderson loves how our music and theater programs bring out our children’s creativity. “Bring it back to kindergarten – when finger paints taught us how to express ourselves. We learned through experience and experiment; this is how music and theater works for our older kids, just as important as math and reading, giving them a learning outlet outside of a textbook to foster those amazing minds.”

and community involvement we cherished during football, lacrosse, cheerleading – our beloved sports programs. Sports have the amazing tendency to bring the entire community together, whether it be a Friday night football game or a soccer match in another town. Sports teach the important building blocks of connecting, networking, and community involvement. “How great is it to teach such strong leadership skills at such a young age,” Henderson exclaims. And how right she is. Sports give the outlet for solid team-building skills, conflict resolution, and problem solving.

From pulling off the perfect stunt to figuring out how to win in the last quarter can turn into running a board meeting or solving the budget crisis as a team. These skills that are learned on the field, court, or in the pool easily carry over into the adult stages of our children's lives; something that is not often found behind a laptop or school-desk.

SOCCER Of all Viera’s many sports, perhaps none is as identified with the town as association football, and its athletes do win: two state championships for Viera High School’s girls and six State Cups for Space Coast United’s boys’ and girls’ teams. Its athletes play for Division I universities and some go on to play professionally. It is successful, according to SCU Director of Coaching Scott Armstrong, because it has the right people and the right plan. Armstrong, a member of Florida Institute of Technology’s great men’s teams and a professional player before winning State Cups and high school championships (he has three and two second-place finishes), recites the names of highly-regarded players and coaches. Oliver Twelvetrees, the head men’s coach at Eastern Florida State College, coaches there, as does Dean Flexton, who played for Tottenham Hotspur. Teresa Brantley Moon was a state champion at Satellite High School who became a hall-of-fame player at FIT and assistant women’s coach at EFSC. On it goes: a host of soccer notables. They teach more than 1,600 players from throughout the region, including some like Chynna McGirt of Vero Beach, who commutes here every day, “because it is worth it.” That so many players advance is the result of what Armstrong calls “our system,” in which every player is thoroughly analyzed and placed at the level and the type of coaching best suited to him or her. "We talk about how to develop those players and our emphasis is on the individual, rather than winning.” It’s not all about playing soccer, he adds. “We also try to put together the best educational plans for our kids because in the end, it’s about education. A Division I school may not give a player the education she or he needs, so we talk to them about that too. It’s about the whole player.”

“Why is it that way? It’s simple: Viera has the families and the facilities,” says Scott Armstrong, one of those who came here years ago and stuck around. The director of coaching at one of Florida’s most successful soccer clubs, Space Coast United, he is no slouch at winning, having hoisted three Florida high school championship trophies and led his teams to the same number of State Cup titles.

Roger Welton echoed him. “The atmosphere for the growth and success of lacrosse is right in every respect,” says Welton, who started the Viera-Suntree Lacrosse Club (the Vipers) and operates Viera Lacrosse & Sport, which offers everything from equipment to camps. “This is a place for families, the fields are here and it’s centrally located, so we attract players from throughout the area.”

That brings smiles to the faces of people like Scott Miller, vice president of sales and community management at The Viera Company, president of Viera Realty and a reminder that Viera was founded by a family – his family – specifically to attract other families, and that its emphasis on residents being non-sedentary is built-in. “I think that from the beginning it has had an emphasis on not sitting at home, but getting

out; it starts with a commitment to a healthy community,” he says. “For example, our trail system, which was built into Viera, has become a cornerstone of this community. When we ask people what attracted them here, one of the most (common) answers was ‘the trail system.’ It’s always in use and it kind of sets the tone. When you drive along Lake Andrew Boulevard or Judge Fran Jamieson Way near the Brevard County Government Center, you see county employees

“It’s just a good place to run,” Viera resident John Davis said with a shrug sometime last year, between departing for the Boston Marathon and winning Space Coast Runners’ Runner of the Year title. That it is a good place to do so, and to play virtually any other sport, goes back again to the town’s developer. Land for the 125-acre Viera Regional Park, the 12-acre linear park adjacent to the Brevard Zoo (and the zoo property itself), parks and recreational facilities at each

community, and the 72-acre Space Coast Stadium complex, all was donated by The Viera Company, going back to 1992, and undoubtedly more will come. All that started the ball rolling, so to speak, and games that once took place elsewhere, at venues that can only be described as sub-par or simply not big enough – the Viera Suntree Little League once played strictly on rough fields behind elementary schools and Space Coast United was limited to undersized pitches elsewhere – now are based at one of the best-appreciated facilities in the region, Viera Regional Park, with full-sized, professionalquality fields. On any given weekend, thousands of athletes and spectators are in and out of that park, some of whom have had, or will have, fame that extends well beyond Viera. University of Mississippi wide receiver Tre Nixon played there in the Suntree Viera Youth Football League (SVYFL), as did Wake Forest quarterback Hayden Kingston. Thanks to VRP, Viera has become one of the most prominent soccer communities in the the county, hosting collegiate exhibition matches that have attracted the likes of

If you play club or collegiate soccer in the Sunshine State – and that includes members of various national teams, chances are excellent that you have played in Viera. Seven girls from Space Coast United will enter NCAA Division I soccer and three current stars of the National Women’s Soccer League – Michaela Hahn, Kristen Grubka and Katie Stengel – played for SCU, as did United Soccer League goalkeeper Cody Laurendi. United States Women’s National Team goalkeeper Ashlyn Harris has trained here.

No wonder, then, that its high school program should have become as good as it is as fast as it has. In its 10th year, Viera has won four state team, five state individual, 13 regional and 53 district championships. Last year the Hawks went to the Florida High School Athletic Association Class 7A football title game. Scott Kingston, a Viera resident who has been instrumental in building youth football as well as baseball here, and whose son, Hayden, quarterbacked its team for four years, calls the connection between youth and high school excellence “a natural process” and says that when coach Kevin Mays came to Viera’s football program, “He knew we were the feeder program, so he was on board from the beginning.” Mays emphasizes the support lent by the community in general and families in particular as the primary reason for Viera’s success. “We have a total support system in place here, with parents, teachers and coaches,” he says. “Viera is very much a (town) of families and we deal with the kind of kids who are encouraged to be in sports and who plan for the future. Our families are supportive and I have a great booster family that does everything from fund raising to painting the field to our website. They leave it to me to coach football, and when you’re not distracted by all those other things, you’re a better coach.” Courtney Baines Lundy, assistant principal at VHS, winner of back-to-back state girls’ soccer titles and Top Drawer Soccer’s current National Girls’ Coach of the Year, agrees. Lundy, a former professional player who also starred at the University of Central Florida,

describes VHS parents as “involved and supportive” and adds that “They have resilience and always work to educate themselves.” On it goes, and Viera’s quest for sporting excellence goes beyond the norm, its facilities designed to serve sports-mad visitors as well as residents. It has two of the county’s leading golf clubs, Viera East and Duran, and when the latter opened in 2005, it included an Academy of Golf. At Duran, charity golf tournaments are the norm, college teams play the course regularly and the National Junior College Athletic Association Division I Championship took place here last spring. It also has something most courses do not: lights, so the balls fly into the night.

It all adds up to a recipe for success, and all concerned expect that to continue. “You are successful when you make it easy for parents to support their kids in what they do… or when the facilities you want are right there,” Miller says, adding that more will come from The Viera Company too. The trail system will be expanded and, in keeping with residents’ propensity to run, will be distance-marked. New communities will have parks, as always. Facilities will be built, including a YMCA, if things go according to plan, and existing ones modified as needed. “If you live in Viera, you are active and your kids get out and play,” Kingston says. “This is the place for it. This is why we excel.”

VIERA HIGH SCHOOL Consider that Viera High School’s first state championship came in 2009, when Luke Zippi, later of the University of Alabama, won the state platform diving meet. Then consider that Viera doesn’t have its own pool. “We still share one (on Post Road in Melbourne) with Eau Gallie and Holy Trinity,” VHS swimming and diving coach Morgan Woodard said with a laugh. “We’d rather have our own facilities, but I think the clientele we have, with strong academics as well as strong athletics, is what drives us. They’ll go there. These athletes won’t stop for anything.” Such is the Hawks’ attitude across the athletic board, and others have taken note of how well it has worked, with four state team, five state individual, 13 regional and 53 district championships. “Our name is becoming known,” Athletic Director Chris Gallagher said with a smile. “We’ve earned some respect. Our kids are stepping up to the plate when necessary.” Where does he see the future? “Tennis (in which Sasha Balaya was a Class 3A state champion last year) is climbing the ladder, and we want to see volleyball climb too because we have some good players and a great coach (Sarah Wayne). Basketball could take shape too,” Gallagher added. “It is in our favor that we have so many students. They (families) move here because of our schools and our programs. Our economy’s growing, our area is growing, our school is growing and our program continues to do well with them.”

LACROSSE Think of Roger Welton as the lacrosse man. A star midfielder at Montclair State University in New Jersey, where America’s native sport always has been played, he helped start Brevard County’s first LAX club in 2008 on the beachside, but when it came time to open a store that specializes in the sport, and a youth club that will become a league, Welton, otherwise a veterinarian, turned to Viera, “naturally,” in his word. “We started the Space Coast Lacrosse Club, the Vipers, and we’ve just really made tremendous progress here,” he said. “We have 300 kids now and it is an exponential grower; it is growing by at least 50 percent every year.” Schools like Melbourne Central Catholic High School, Holy Trinity Episcopal Academy, and most of all, Viera High School, are doing especially well because, as with other sports, the club feeds interest and feeds the program. That may lead to additional, lacrosse-specific facilities, Welton says. “We have someone who wants to build a place in Viera for box (indoor) lacrosse,” he says. “Box lacrosse is the way it is played elsewhere, and because it is so fast (and not affected by weather), it is one of the ways to develop great players. In the North, box lacrosse players dominate. Regardless, we continue to grow and so we have plans. We have a template.”

“When I first moved here, the first time I was on the show, I was a single mother,” Chira explains. “The community feeling of Viera made me feel safe, welcome, and at home.” Fast forward a few years later, Chira’s family has grown, and working with her Realtor, Cartama Ramos-Crafton of International Advantage Realty, Chira and her husband made the move to another part of Viera (see where, on HGTV this fall.) “We both knew we wanted to stay here.” Chira said. Viera has shown the Gaines Family that an address can be so much more than a physical location. Not only do they enjoy the many amenities minutes from their house – from The Avenue’s many stores, to Publix, parks, and walking trails – they also have found that the community feeling of Viera has given them a sense of home that they couldn’t find anywhere else. “They say it takes a community to raise a child,” Chira’s husband Rodney explains. “You just get that feeling in Viera that the community is here for you.” Her now seven-year-old son has made many friends in Viera – the doorbell rings every day from the other neighborhood children. “I can feel okay with him playing here.” Chira said. And they all play in Viera! From walks and bike rides to cruising around in their golf cart they enjoy exploring the exploring the new places and meeting friends here. “We all know each other! We’re like a big family.”

Chira’s Realtor, Cartama, said helping the Gaines’ find a home was easy. “Viera is a top choice for many of my clients.” She and Chira have now made a lasting friendship and often explore Viera offerings together. Cartama also had a hand in helping Chira and Rodney reconnect. “He was an old friend who sent me a friend request on Facebook and asked for my Realtor’s info,” Chira said. “Little did I know she would move him five houses down from me.” Once they decided to marry and find their family home, they called Cartama again. “There was no leaving Viera,” Chira said. “We wanted to continue raising our family here; from the community feel to the clean, landscaped environment – this is our forever home.”
