Christmas indulgences for the big day! ... Emporium style Bloody Mary

Mulled wine

Ingredients Ice cubes Vodka, double shot ½ lemon, juice only 6 dashes Worcestershire sauce 3 dashes Tabasco sauce 150ml/5fl oz tomato juice Pinch salt and freshly ground black pepper

Ingredients 400ml / 14fl oz red wine (Shiraz is fantastic) 400ml / 14 fl oz water 400ml / 14 fl oz good quality orange juice 80ml / 2½ fl oz brandy 4tbsp dark brown sugar ½ tsp ground ginger ½ tsp cinnamon ½ tsp nutmeg 3 cardamom pods Clementine 6 cloves (to pierce the clementine)

Method Place the ice into a tall glass and add the vodka. Add the lemon juice, Worcestershire sauce, Tabasco sauce and tomato juice. Stir well. Adjust the seasoning to taste with salt and pepper and serve straightaway.

Champagne with cranberries Ingredients Champagne (or any good quality sparkling wine) Dried cranberries

Method Make up a spice bag using muslin or a piece of thin cotton, with the ginger, cinnamon, nutmeg and cardamom. Place the red wine, water, brandy, orange juice and sugar in a large pan; add the spice bag, and clove-studded clementine. Heat slowly and simmer over a very low heat for at least 30 minutes.

Method Simply pop 5 dried cranberries into each glass and pour the champagne over. The cranberries ‘dance’ in the bubbles and look very Christmassy.

War poets As we head towards Armistice Day, it’s a pertinent time to reflect on the work of the ‘War Poets.’ The phrase is generally taken to refer to the 16 men who wrote about their first-hand experiences of the First World War and who are commemorated in a slate memorial at Poets Corner. The 16 are; Richard Aldington, Laurence Binyon, Edmund Blunden, Rupert Brooke, Wilfrid Gibson, Robert Graves, Julian Grenfell, Ivor Gurney, David Jones, Robert Nichols, Wilfred Owen, Herbert Read, Isaac Rosenberg, Siegfried Sassoon, Charles Sorley and Edward Thomas. Now often studied as part of the English curriculum, the work of these poets is particularly notable for being violent and realistic and challenging earlier poetry which had a prowar message. Their work expresses extreme emotions of fear, anger and love. The War Poets Association says; ‘the young soldier poets of the First World War established war poetry as a literary genre. Their combined voice has become one of the defining texts of Twentieth Century Europe.’ Some such as, Isaac Rosenberg, Edward Thomas, Charles Sorley and Wilfred Owen died in action, whilst Siegfried Sassoon and Robert Graves survived but went on to express their emotional distress through poetry.

Wilfred Owen is generally accepted as the greatest war poet to have written in the English Language. After being blown up, suffering concussion and being shell-shocked, Owen was sent to a psychiatric hospital in Edinburgh were he met Robert Graves and Siegfried Sassoon who inspired him to develop his poetry further. Owen was awarded a George Cross in October 1918 having seized a machine gun and shot and captured several Germans, but just a few weeks later, he was killed at Orps. His most famous poem is ‘Dulce Et Decorum Est’ meaning ‘it is sweet and right’ with the last line going on to mean ‘to die for your country.’ In his poem The Sentry he talks about how one of his sentries was blinded. He said ‘All a poet can do is warn. That is why the true poet must be truthful.’ Anthologies celebrating the best of the genre often include: Charles Sorley’s ‘When you see millions of the mouthless dead’, Isaac Rosenberg’s ‘Break of Day in the Trenches’, ‘Lights Out’ by Edward Thomas, ‘To his love’ by Ivor Gurney and ‘The Soldier’ by Rupert Brooke. Whilst not written by one of the commemorated 16, the most quoted poem of this era remains ‘In Flanders Fields’ which was written by former doctor John McCrae during the second battle of Ypres. Many widely renowned British poets also have war poems covering a wide range of conflicts within their collections, including Kipling, Tennyson, Hughes, Larkin and Hardy.

Winter health

Winter is coming and it’s the time of year when we’re more prone to colds and viruses. During the colder months, we spend less time outdoors and huddle together more – whether it be at parties, stores bustling with shoppers or at the school gate - making it easier to catch infections. However you can take some simple measures to help reduce your susceptibility to winter bugs. Keep your immune system healthy by drinking plenty of fluids to maintain hydration and remember to regularly wash your hands to prevent spreading infections. It’s also best to avoid exposure to cigarette smoke and most importantly take time to relax, rest and recover as the cold and darkness urges our body to slow down. An equally important factor is feeding your body the (natural) winter fuel it needs to maintain its immunity. When the temperatures drop, there’s nothing more comforting than the taste and smell of delicious homemade soup or stew packed with vegetables to warm your soul. Try experimenting with traditional winter foods such as root vegetables, squashes, seasonal greens, beans and whole grains to create delicious flavour combinations. To give it that richer taste and nutritional boost, add garlic, ginger, cinnamon or nutmeg. Also, don’t forget that you can make nourishing dishes using cooked apples, pears and citrus fruit – all key to your body’s maintenance.

It’s just around the corner… …Christmas that is. Now we all know someone who buys their prezzies in the January sales, has their cards written and addressed by Easter and their turkey ordered before the first frost. We hate their smugness and lack of proper festive spirit but mainly we hate them because we know that we could never ever be that organised... until now! We’re not suggesting that you start planning Christmas while on your summer holidays but it does pay to be a little bit organised. You’ll arrive at December 25th with far fewer grey hairs and much lower blood pressure if you plan ahead. Clear out food cupboards – Be ruthless. Chuck out all the out-of-date items and things you know will never be eaten. Make room for all those festive goodies. Clear out toy cupboards – Be ruthless. Involve the kids. Donate outgrown and un-played with items to charity. Order meat early – Farmers’ markets and shops are teeming at Christmas. Don’t imagine you’ll get what you want if you leave it until the last minute. Who’s coming to dinner? – Are there any vegetarians, vegans or dairy intolerances among your guests. Are you planning a party? List all the food, alcohol and gift items you think you will need and add to it as you go along.

Study your list – Do any of your local shops offer home delivery? Look into local veg-box schemes. Divide the remaining list into manageable chunks and purchase a few things each week. For foodstuffs, begin with items which can be frozen and end with the fresh items which need to be purchased just a day or two before. Puds and cakes – Make these early to give them time to mature. Stir up Sunday is the last Sunday before advent and this year is on November 30th. This is traditionally the time when Christmas puddings are made and gives plenty of time to keep adding the brandy! Write the cards – It can be a chore, but put the carols on, pour a glass of something festive and get into the spirit. You’ll feel really virtuous when they’re done and they give you the chance to add a personal touch to friends and family you may not see that often. Tree lights and outdoor lights – Test them well in advance so they can be replaced if necessary. Check bed and linen status! – Will you need to buy or borrow fold-up beds, or extra bedding for your guests? What about elderly guests? They may be able to lie down on a Z bed but will they ever be able to get up again! By now you could even feel the beginnings of a smug smile twitch at the corners of your mouth. Enjoy it…you earned it.

Eggs or Anarchy is one of the great British stories of the Second World War yet to be told in full. It reveals the heroic tale of how Lord Woolton, Minister for Food, really fed Britain. As a nation at war, with supply routes under attack from the Axis powers and resources scarce, it was Woolton’s job to fulfil his promise to the British people, and Prime Minister Winston Churchill in particular, that there would be food on the shelves each week. Persuading the public to not resort to the black market and to manage on the very limited ration was one thing, but Woolton had to fulfil his side of the bargain and maintain supplies in time of crisis. A grammar school-educated genius, he was a fish out of water in Churchill’s cabinet and the PM himself doubted Woolton would survive due to the unstinting criticism he faced from colleagues, the press and public. This is the story of how he battled to save his own career while using every trick in his entrepreneurial book to secure supplies. He battled to outwit unscrupulous dealers on the black market streets of cities within the British Empire - such as Alexandria in Eygpt - persuading customs authorities to turn a blind eye to his import schemes. If Britain had gone hungry the outcome of the war could have been very different. This book, for the first time, finds out the real story of how Lord Woolton provided food for Britain and her colonies and discovers that for him there were days when it was literally a choice of ‘eggs or anarchy’.

Broaden your horizons

Be creative I cannot remember a time when I didn’t have a camera of my own. I think one of my first cameras was a Kodak Instamatic with a sealed cartridge film,foolproof to use. I would click away and await collecting my photos from the local Chemist. Those early shots lack clarity now but I remember being thrilled at my results and they still, to this day, remind me of times gone past . I moved on to slides and I always have pleasure revisiting my first adventures backpacking with friends...a photograph brings back so many memories of friendships, experiences, smells and wonders. Of course now the technical world has moved on and we have so many more opportunities opened up to us with digital cameras and computer programmes. A few years ago I decided to visit Badby Photographic Club, going along on my own for a club evening. There I met a lively and enthusiastic bunch of camera enthusiasts. All were at a different level, using different cameras and lenses but we were connected by the wonder of photography. We bounce ideas off each other, have chat and learn sessions, speakers who are of national note, and competitions which are judged by an outside visitor. One learns so much by talking to other photographers and looking at other people’s photographs. I soon realised that everyone has a unique style and something of value to offer. I have made some valued friendships and met people from all walks of life with differing interests and contributions. They are very ready to share their knowledge and expertise and help newcomers where and when needed. My enthusiasm for photography has been nurtured on these evenings.

I now need to take my camera everywhere and have been known to walk twenty minutes back to the car to collect my camera to take a picture of colourful bags at a French market. A walk takes longer as a perfect shot appears round the bend, this can slow down a fellow walker which can be aggravating. I think I can see a creative picture in my eye but I am learning a lot about the technical side. We have members who take slides and come up with amazing pictures by focussing and getting the right shot first time, others use Photoshop and Lightroom to enhance their digital images and some have perfect shots using their phone so all are catered for. Get your camera out and take some amazing shots this Autumn you may be surprised at your results, with a digital camera you can always delete an imperfect shot and be selective. I now realise that you can chop people’s heads off and that is creative whereas in the past it would have been placed in the bin! I realised very early on that what one person finds excellent another doesn’t. Maybe one judge doesn’t like people in his photos and counts them as distractions and another suggests include people to add interest. One judge doesn’t like boats but I do and that is the main motivation, as long as we like our pictures that is all that matters.

These are a great gift idea or for a dark rich nibble after a dinner party, they have a real chocolaty taste. The coconut keeps them moist and the nuts crunchy. They are a real treat and yet at only a few mouthfuls well worth the calories. Preparation Time: 30 minutes | Extra 30 Mins setting time Makes: approx. 16 truffles depends on size Actions Place nuts, dates, coconut and melted coconut oil into food processor and process for just under a minute or until sticky texture.

Ingredients 250g of nuts, any almonds, brazil, walnuts

Pour in agave nectar and cinnamon and blitz again just to mix up.

75g fresh or desiccated coconut

Pulse in cacao nibs as you do not want to break them down too much.

200g pitted medjool dates

Add nutty sticky mixture to melted chocolate and stir until all coated in the chocolate.

1tsp coconut oil or melted coconut butter 3tbsp agave nectar or coconut nectar or date nectar

Divide the mixture into small balls or place into ice cube tray, or on a plate and put straight into freezer for quick setting or fridge.

1tsp of ground cinnamon

Serving suggestion

40g cacao nibs

If you prefer without coconut they still work really well, or you can add any extra dried fruits, such as gogi berries or cranberries for extra sweetness!

Bake the pastry in four individual tart cases lined with baking paper and rice until cooked through and crisp, 180 Ëšc. Whisk the egg with the wasabi and herbs, then add the cream and season. Lay the salmon in the baked tart cases and cover with the egg mix. Bake until set in the middle and a touch of colour on top.

Chocolate Tart This simple delicious cheesecake has all the velvety smoothness from the rich chocolaty topping and the natural sweetness from the nutty based that would make you believe it’s naughtiest treat ever! Just don’t tell your friends what it’s made from they will never know. Preparation Time: 20 minutes | Serves: 6 - 8 You will need a removal bottom cake tin and a freezer Actions

Ingredients 200g mixed nuts, walnuts, brazil, almond mix 6 pitted dates 3 tbsp coconut oil or butter melted topping 4 large very ripe & soft avocados 5 heaped tbsp. of high-quality raw cocoa powder 2 tbsp of algae nectar or coconut nectar 2 tsp of lemon essence or lemon rind 3 tbsp coconut oil or butter melted

To make the base, using a food processor on full speed, blend nuts, dates and pour in melted oil to make a stiff mixture. Press down the mixture into cake tin and then place in freezer while you make topping. Scoop out the avocados (without stones) into the clean food processor. Add cocoa powder, agave nectar, essence and melted oil, keep going may need to scrap the sides and keep going until all chocolaty and smooth, it takes longer than you think! Taking base from the freezer, smooth on the topping, and place in the fridge for 2 hours to allow the topping to firm and set. Or place back in the freezer for 30mins and allow 10mins to defrost, works just as well and is quicker.

Gorgeous doors!! What better way to welcome friends and relatives into your home at Christmas, than adorning your door with a beautiful seasonal wreath? I love making wreaths at any time of year but the wealth of fabulous greenery around in the winter months offers so many possibilities that sometimes it’s hard to choose – although I am not keen on too much holly as it is so painful to work with!! During the rest of the year there are so many other beautiful ingredients to choose from but in winter the humble ivy, laurels, spruce, conifer all take centre stage. If you are lucky enough to have these growing in your garden then magnolia grandiflora, euonymus, viburnum or bay are all perfect for wreath making. There are many different methods and styles but I prefer my Christmas wreaths to be made from all natural ingredients starting with a mossed base – made by binding moss onto a wire ring frame. Then I add layers of mainly foraged foliage onto the moss ring to build up thick textures and tones which form a perfect backdrop for the addition of little jewels like berries, seed heads, fir cones, twigs, feathers and of course dried fruits and cinnamon sticks to embellish and decorate and make the wreath look really full and extravagant. This moss backing is then kept wet, which in turn keeps the evergreen foliage moist and promotes longevity This type of wreath is not really suitable for freshly cut flowers but the flowers from plants like heather, skimmia, wax flower, helicrysum or hydrangea, which look gorgeous when dried naturally, can make a stunning addition to a wreath design. The hanging of a Christmas wreath has been a winter tradition for a long time with the word ‘wreath’ derived from an English word meaning twist, such as in a circle. A circle is widely used as a symbol of friendship, love, protection, rebirth and life itself; no wonder the wreath is such a popular traditional decoration throughout the seasons of the year in many countries and cultures. Despite ending up on Christmas day with the world’s driest , chapped hands and an aching back – I wouldn’t miss out on the creative process of making these gorgeous decorations every year! November/December gardening tips November

Leaves are now falling onto lawns, ponds and beds, rake up as many as possible and either make a leaf mould or put onto compost heap. Protecting tender plants from frost, if you cannot take them inside or put in the greenhouse you can wrap in fleece or any other protective material such as bubble wrap. Winter can be a tough time for birds, keep water and food supplies well topped up especially if you have been putting food out through the summer months. Carry on with the winter digging until the soil is too hard, use compost, manure and leaf mould to replace the goodness in the soil. Over the winter the elements will break any clods of soil down, making spring planting slightly easier. Make sure you cover any brassicas as pigeons may be a problem. It is still not too late to plant tulip bulbs for a spring display next year. Prune roses and plant out winter bedding. Make use of the 5th November to have a bonfire (where allowed) to dispose of excess cuttings unfit for composting.

Carry on digging over beds and borders and add as much organic matter as you can. Forking over not only helps prepare the soil for next year, it helps to expose any pests for the hungry birds to enjoy. Harvest leeks, parsnips, winter cabbage and sprouts. Make sure the greenhouse heater is in good working order to protect any plants overwintering in there. Take hardwood cuttings and look after in the greenhouse. Protect pots and taps from frost by wrapping them in bubble wrap. Now is the time to prune apple and pear trees as they lie dormant (not the ones trained against walls though). Prune birches, acers and vines before Christmas to avoid bleeding Deciduous trees and shrubs can still be planted and transplanted. A very quiet time in the garden which gives you plenty of time to make your Christmas cakes and puds, enjoy!!
