Bumblebees and bee-friendly gardening The deep buzz of a bumblebee flitting between flowers may currently be a familiar sound in your garden, but bumblebees are suffering worrying population declines. Two species of bumblebee have become extinct since 1940 and there are now twenty-four species left in the UK. This decline is thought to have occurred due to changing agricultural practices, namely the removal of hedgerows and increase in pesticide use, meaning many species are now in trouble. There are two types of bumblebees: social bees and cuckoo bees. Social bumblebees have a queen, just like honeybees. In the spring the queen comes out of hibernation and begins building a nest to begin her colony. Depending on the species the nest can be underground, at the surface in rolled grasses and mosses, or in trees. The first eggs to hatch in late spring are worker bees, which help to expand the nest and collect pollen to feed the next batch of workers. Later in the summer the queen will begin to produce male bees and new queens which disperse and reproduce. At the end of the summer the colony will naturally come to an end while the new queens forage and fatten up to last the long winter hibernation. Cuckoo bumblebees, like the birds, lay their eggs in the nests of social bumblebees, often killing the

social bee queen. The social bee workers continue their foraging and unwittingly raise the male and female non-worker offspring of the cuckoo bees, until they leave the nest as adults, disperse and mate, and then the mated female cuckoo bee will hibernate over winter. Bumblebees are known to be important pollinators and they play a vital role in food production. Without bumblebees and other insect pollinators, commercial food industries would need to find other means of producing fruit such as strawberries, tomatoes and apples. The price of our food would rocket and there may not be enough to go around. Luckily, there are lots of things we can do to help bumblebees, from large scale agri-environment schemes to smaller scale projects like making our own gardens and allotments more bee-friendly. The easiest thing to do to help bees in your area is to make sure your garden has a summer-long supply of pollen and nectar-rich flowers. Plant up a range of plants with different flowering times, from daffodils and crocuses through to buddleias and fuchsias, to ensure that there is a constant supply of pollen throughout all the important life cycle stages. All about herbs...

Lemongrass Lemongrass look a little like fat spring onions, with the same swollen base, but the stalk is woodier, and composed of tightly packed greygreen leaves. The fragrance and flavour is unique - lemony, but sweet - and is quite subtle until the stalk is cut or bashed.

Gin thyme tonic

A cocktail to pep up your palate, with a refreshing combination of lemongrass, lime and gin. Ingredients For the thyme and lemongrass syrup 225g/8oz caster sugar 4 stalks lemongrass, bruised handful fresh thyme sprigs

For the cocktail 1 lime wedge 35ml/1½fl oz gin 1 tbsp thyme and lemongrass syrup splash tonic water sprig fresh thyme, to garnish For the thyme and lemongrass syrup, put 600ml/1pint of water into a saucepan and add the sugar, lemongrass and thyme. Bring to the boil and simmer gently for 10 minutes. Remove the pan from the heat and set aside to cool. For the cocktail, squeeze the lime wedge into a tumbler. Add the gin, lemongrass syrup, top up with tonic water and stir gently. Garnish with a sprig of fresh thyme.

Tips When Buying Shoes 1 Have feet measured by a qualified fitter. Please ask to see qualifications as this is gained by attending a fitting course. Both feet should be measured as it is rare that two feet are the same size. Also check what the schools specific requirements are for example No laces ..No ballet pumps .. No trainers etc... 2 Remember to bring school socks or tights and any insoles your child has with you for a good fit when buying new school shoes ... 3 REMEMBER the fitting gauge is only a guide. A good fitter will use their knowledge to interpret a correct fit as there is no standardisation of shoe sizing in the UK. 4 Try to buy footwear made from natural materials leather, cotton etc as man-made materials can make feet perspire and this can lead to fungal infections. 5 Look after your shoes and keep them polished as they will not only look better but they will last longer. 6 Children’s shoes should be checked approx every 10-12 weeks this does not mean they will need new shoes

Dramatic events in Guilsborough “Can you sing?” was the first question Guilsborough GP John Hughes asked his patients back in 1971 when he decided that he wanted to stage “The Mikado” in the village. Dr Hughes assembled a cast of over 40 and so began Guilsborough and District Choral Society. He went on to direct most of the Gilbert & Sullivan and Rogers & Hammerstein repertoire over the next 15 years at Guilsborough School. So determined was Dr Hughes that the show must go on that when a production was threatened by a flu epidemic he arrived at rehearsal with his bag and instructed everyone to roll up their sleeves for a jab!

Award winners

Several cast members from “The Mikado” are still with the group which evolved to become Guilsborough Music & Drama Society in 1994 when it moved to the village hall. GMADS has broadened its scope to plays, comedies, reviews, pantos, theme evenings – several written by members. Along the way it has won awards for “Hay Fever” by Noel Coward and “Seasons Greetings” by Alan Ayckbourn to name but a few. So what sets GMADS apart from other village groups? Firstly it’s the quality of each and every production. So many people in the audience for the first time have been surprised by the professionalism of the performance. Director Pam Townsend was one of the founder members of the group and the awards are a tribute to her enthusiasm and commitment to ensuring every production is the best it can possibly be. Secondly, it’s a very friendly group attracting members from surrounding towns and villages, not just Guilsborough. New members have commented on how warmly they have been welcomed and how

supportive everyone is. And of course not everyone wants to act. There’s a dedicated team back stage helping with sound, lighting, scenery as well as front of house. And the group likes to give back to the community by making numerous donations over the years to local charities.

What’s next?

So what does Pam look for when she is choosing a production? “It’s got to be something that will appeal to both audience and actors. Secondly I like to give a challenge to the set designer Roger Brandon-Jones whose skill and imagination is endless –producing Spanish galleons, country scenes complete with a real garden, a flowing brook and revolving stages.” GMADS next production is 26-28 November and is called “You have been watching...” written & directed by members Paul Phillips & Jill Webb. It is a comedy night based on well known sitcoms and will be fun to put on. In 1984 President Ronald Reagan designated July as National Ice Cream Month! Isn’t that a fab idea? I think the UK should definitely follow suit on this one. Around 25% of all ice cream sold in the UK is vanilla. As a nation it seems we’re not terribly adventurous. Here are some more frozen facts: The earliest known reference to ice-cream in England was in 1672. Approximately 15 billion litres of ice-cream are consumed worldwide every year - enough fill 5,000 Olympic swimming pools. According to NASA, ice-cream is among the top three items most missed by astronauts on space missions: the others are pizza and fizzy drinks. When Ben Cohen and Jerry Greenfield went into business as Ben & Jerry, they only chose icecream because bagel-making equipment was too expensive! Who knew? There is actually a diet called ‘The Ice Cream Diet’...seriously! It was developed in Venice by an ice cream store (no surprises there) and involves ‘cleansing’ your body and mind by eating five pints of raw coconut-based ice-cream a day for four straight days...I assume that’s if you don’t give yourself brain-freeze or a coronary first!

Slow roasted belly of pork, stuffed with black pudding & sage with creamed leeks Serves 3 - 4 Shopping list 1.5 kg belly pork – scored, boned and rolled by your local butcher 250g black pudding 10 sage leaves 1 shallot 50g fresh bread crumbs 2 leeks 2 sticks of celery – roughly chopped 1 carrot – roughly chopped 1 onion – roughly chopped 2 bay leaves 1 can of your favourite dry cider ½ pint double cream Salt & pepper to season 1 knob of butter Catering string for tying

Method Prepare your pork Unroll the pork, skin side down. Lay in the sage leaves, crumble over the black pudding and bread crumbs. Season with salt & pepper. and place your meat in the centre. Rub the pork belly skin with salt then slow roast for 3 hours at 150oC. Remove and rest for 30 minutes on to a cooling wire. Wrap with foil to retain heat. Garnish To prepare the garnish, trim, slice and rinse the leeks into 1cm rounds. Cook in a saucepan on a low heat with a knob of butter and a lid, for 5 minutes or until soft to the touch. Then add salt & pepper & 1/4pt of cream. Bring to the boil then cook until cream has thickened slightly (until cream coats back of spoon) then set aside. Sauce To make the sauce, scrape all juices including vegetables from the pork belly tray into a saucepan. If there appears to be a lot of fat, poor away. Add the cider and the remaining cream and simmer, reduce till slightly thickened. Season to taste then pass through a sieve. To serve slice the pork into thick slices. Served upon the creamed Leeks with a drizzle of the sauce. If you have the luxury of a friend with an allotment. It’s a great time to use what’s growing as I do. Using Tommy’s prize leeks and Dave and Kims’ fantastic carrots and onions, this dish goes perfectly with some buttered Jersey royal new potatoes and a glass of crisp cold Sauvignon Blanc.

Traffic light salad stacks Red, amber and green stripes give these grated salad stacks their name, but of course, the order of the layers is up to you, and there is plenty of room for experimenting with cooked and raw grated vegetables and fruits.

Serves: 4 Prep time: 10 minutes Ingredients: 2 medium raw beetroots (125g/4 ½ oz) 2 medium carrots (125g/4 ½ oz) 1 medium courgette (175g/6 oz) courgette Dressing: 2 tbsp lemon juice ½ tsp Dijon mustard 4 tbsp olive oil Method: Peel and grate the beetroot and the carrot, keeping them separate. Trim and grate the courgette – there is no need to peel it. Whisk the dressing ingredients together. In a ramekin, teacup or dariole mould, press a layer of grated beetroot, a layer of carrot and a layer of courgette. Invert onto a small serving plate and tap to release the layered salad. Repeat to serve four. Serve the dressing spooned over the salad or in a small bowl on the side.

Cook’s tip If you have a food processor, fit the grating disk and grate the beetroot, carrot and courgette on top of each other, then invert the food processor bowl onto a large serving plate for a communal salad. Use up Beetroot, courgette, carrot Variations All kinds of vegetables can be grated and served raw – parsnips, radishes and celeriac are especially tasty. Potatoes should always be cooked before eating, but cooked grated potatoes work well in a layered salad. A layer of grated apple would be good, too, but serve quickly before it starts to brown. Extra flavour Lemon juice brings out the flavour of fresh vegetables, but any salad dressing could be used here. Vegetarian and vegan options This dish is vegan as long as you do not use a salad dressing that contains animal ingredients.

Written by a member of staff from the Science Museum, this book answers those questions you’ve always wanted to ask – ‘Could you dig your way to Australia?’ (Come on, admit it – you tried to on the beach when you were seven), ‘Are people with bigger heads cleverer?’ and’ Why do we walk on two legs?’ for example – as well as some – ‘Do spiders have ears?’– that might never have occurred to you. Each question is answered in conversational style, anticipating the reader’s responses and taking the explanation further. Why not come on your own Antiques Road Trip? Shires Antiques at Heart of the Shires Shopping Village have again hosted the film crews from the television programme Antique Road Trip. Experts Paul Laidlaw and Christina Trevanion both purchased items that will be shown when the new series is shown later in the year. This is the third time the antique centre has hosted the programme and was enjoyed by both the staff and experts. Centre owners Alison and Laurence spencer were both filmed with the experts. Laurence said “ It’s a good day for all involved, they have as much fun as we do”. The centre now has 30 dealers selling quality stock as well as the owners. A wide range of Antique furniture, silver, glass and collectables. A wide range of antique, vintage and new jewellery which now includes Fiorelli Silver and Cavendish French.

Towcester Vets: Still growing after more than a century in business Towcester Vets has been around for over 110 years but the last 12 months have been some of the busiest. Last May we opened our new surgery in Weedon for pets and farm animals, and in March this year we opened an equine surgery at Onley Grounds. This should improve the service we provide to current clients as well as allowing us expand to horizons new. Our aim is always to provide high quality care with a customer oriented service. THOUSANDS ATTEND TOWCESTER FOOD FESTIVAL Nearly 8,000 people attended this year’s Towcester Food Festival, up a third on last year, organisers say. Visitors munched their way through mountains of marshmallows, chunks of cheese and barrels of beer. By the festival close at 5pm on Sunday, a number of stallholders had sold out – one Mark Stephens, of the Moulton Pie Company in Northampton, sold out on Saturday, despite bringing twice the mount of stock he had last year. Festival founder Crispin Slee said: “We couldn’t have been more pleased with the way the festival went. The atmosphere was wonderful and the feedback from visitors and exhibitors has been incredible Three stallholders came up to me on Saturday and said they had had their best ever trading days. On Monday, I received an email from Yarty Cordials, who make the most delicious cordials and fruit vinegars. They had their best weekend in seven years of trading.

“I’d like to thank everyone who came and supported the event but I have three special thank yous. The first is to all our volunteers who were brilliant and without whom the festival would not be possible. The second is to William Sitwell, who kindly opened the event again this year, and the third is to South Northants Council whose support has given us the confidence to invest in the event and grow it so quickly.” Visitors to the festival at Towcester Racecourse enjoyed chef demos, a free circus, free wine and gin tastings, 100 plus food and drink stalls, live music and pony rides by the racecourse. Mr Slee added: “We are already planning for next year when we intend to grow the festival again. We want to put Towcester firmly on the foodie map and be known as one of the pre-eminent food festivals in the country.”
