Welcome to the essential guide for this year’s Towcester Food Festival. We have a great weekend lined up for you – read all about it here. A couple of highlights to whet your appetite. Phil Fanning, the Michelin star chef from Paris House in Woburn, will offer you a glimpse of his panache and style on our chef demonstration stage.
Every month, they run a lunch so their members can get out of the house and socialise with friends over a hearty meal. It might not sound like much to you and me, but for them it is a real highlight.
And if you like seafood, we have a real treat for you. As well as a specialist fish stall, a first for the festival, one of the traders in the street food market is Seadog Foods, winner of the Best of the Best accolade at the British St Food Awards for their “amazing seafood”.
NAB’s spare funding was about to dry up meaning they were going to have to increase the price from £5 to £7.50. We stepped in to help – and without our volunteers – or you coming to visit – we wouldn’t have been able to do that.
In fact, a world of flavour awaits you in our street food market with authentic, lovingly-cooked cuisine from the Caribbean, Africa, Thailand, India, Italy and Spain, and among the stalls.
One more huge thank you goes to South Northamptonshire Council who support the festival as part of its commitment to encourage tourism and the local economy.
A huge thank you if you came last year. It is great to see so many people having a good time and supporting small, artisan food and drink producers, for whom shows like this are quite literally - excuse the pun – their meat and drink.
This guide is packed full of information about the show, including a full schedule of the chef demos, details of the young businesses we are supporting and the stallholders who are exhibiting. Please keep it and bring it with you on the big day.
A huge thank you also to our wonderful band of volunteers, without whom, the festival would not be possible. Our army of helpers grows every year and their support allows us to make a difference in our community.
The festival is an event to savour, where you can come and spend time: either browsing, enjoying one of the free tastings or demonstrations, or simply sitting and relaxing with something good to eat and drink on one of our live music lawns.
In the past two years, we have given away nearly £3,000. We’ve supported the local foodbanks, Towcester Youth Coffee House and South Northants Volunteer Bureau but perhaps our most heart-warming contribution was to the Northampton Association for the Blind (NAB).

ABOUT THE FESTIVAL Towcester Food Festival is a great day out for foodies, families, or to spend time with friends. It takes place at Towcester Racecourse on Saturday June 11 and Sunday June 12. There will be over 100 food and drink stalls, chef demos, free tasting sessions, live music lawns, a family circus and pony rides beside the racetrack so whatever you do, plan to spend some time! This year, Michelin star chef Phil Fanning, who owns and runs Paris House in Woburn, will kick off the hourly chef demonstrations. He has the opening slot at 11.30am on Saturday. On Sunday afternoon, Howard Middleton, one of the stars of the fourth series of The Great British Bake Off, will grace the demo stage.

As ever, Towcester Food Festival seeks to support new food businesses through its bursary scheme and this year we are delighted to welcome our youngest ever winner – 17 year old Daisy Baker who makes incredible sausages. Find Daisy – and our other bursary winners – in The Launchpad Zone. Supporting them helps to protect the local food culture and create new enterprise. See pages 18-19 for more details of our winners. The festival’s street food market offers a world of flavour and among the stalls this year is Seadog Foods, who won the Best of the Best accolade at the British St Food Awards for what Michelin star chef Giorgio Locatelli described as their “amazing seafood”.
Howard’s first book – ‘Delicious Gluten-Free Baking’ – was published in September and there will be an opportunity to buy signed copies after his demo. So enjoy a cup of fresh-brewed artisan coffee; take in a chef demo; feast at the street food market; sip a glass (or two) of something cold on one of our two live music lawns; learn to unicycle at the family circus; or book the kids into a cookery class and take a moment to yourself. The exhibitors who are coming to the festival are listed at the back of this guide on pages 47-59. You will find them all located in the marquees and covered stalls within the festival. If you need help finding your way around, please ask one of our wonderful volunteers, who are on hand to help and make your visit a memorable one.
Tickets
Tickets can be bought in advance from the Towcester Food Festival website at: towcesterfoodfestival.co.uk, or at the gate on the day. Tickets are £6 in advance for adults, with no booking fee, and £8 on the day. This year we are introducing a small charge for children. Bought in advance, a family ticket for two adults and three children (aged 4 to 17) is £15. Under 4s go free. On the day, a family ticket is £20. A child ticket is £3. We are expecting even more visitors in 2016 so please buy your tickets in advance. As well as saving money, you will be able to avoid the queues by entering via our express lanes.
Parking
Towcester Racecourse has lots of free parking.
Your car will be quite literally right on the doorstep so you can come and go to stow your purchases if you wish. The entrance to the main car park is at the rear of the racecourse via the Shutlanger Road. There will be road signs directing you to the venue and marshalls will be on hand to direct you to your parking place. There will be disabled parking and a disabled drop-off beside the pedestrian entrance. The full address is: Towcester Racecourse, London Road, Towcester, NN12 6LB.

We are delighted to welcome back Masterchef judge and food critic William Sitwell, who is now our Patron. William will officially open the show at 10am on Saturday morning and tour the stalls seeking out the best local producers.

Dogs
Dogs are welcome at the festival. However, they are not allowed into any of the marquees or covered food areas. Please bring your own drinking bowl and keep your four-legged friend on a lead at all times.

What’s on? Tasting sessions
The free tasting sessions went down a storm last year so with the support of Catchpole Cellars and Warner Edwards we will be running them once again this year. They will run during each day of the festival and take place in the tasting marquee, located by the family circus. Dennis Kingshott from Catchpole Cellars will host the free wine tasting sessions. He will take you on a tour of wines from the New World. Sion Edwards, from Northamptonshire’s award winning gin distillery Warner Edwards, will host the gin talks. He will reveal the secrets of gin making and offer some free tasters from the Warner Edwards range. For more details about the free tasting sessions, see page 17. There’s no need to book as it’s first come first served but do get there early as numbers are limited to just 40. The tasting sessions will take place at the following times on both days of the festival 11.30am – Wine 12.30pm – Gin 13.30pm – Wine 14.30pm – Gin 15.30pm - Wine On Saturday, John Evans, from Towcester Mill Brewery, will take you through the flavoursome world of beer at 11am and 2pm. Visit their stall for details. And at 10.30am on Saturday in the tasting marquee, Elliot Wallis, from Monkshood Coffee, will run a coffee brewing and tasting seminar to help you get the most out of your daily cup.

Food and drink
There are more than 100 food, drink and craft stalls. Meet the artisan makers and sample their fare. Our street food market has flavours from around the world – the Caribbean, Africa, Thailand, India, Italy and Spain – from wood-fired pizza to slow-smoked ribs. Among the street food traders this year are Seadog Foods, winners of the Best of the Best at the British St Food Awards. For more details, see page 61. And don’t forget to check out The Launchpad Zone, where you will find some exciting new food businesses, including our youngest ever bursary winner. Read more about The Launchpad Zone on page 18.
Chef demos
We’ve got some fabulous chefs on the chef demo stage. They’ll be sharing their skills throughout the weekend. The demonstrations take place hourly, from 11.30am on Saturday and noon on Sunday, and are free. There’s no need to book - just turn up and bag a spot in the marquee. All the chefs will wear microphones and the demonstrations will be streamed live on large TV screens so that you can see every detail of their art. Learn from the experts as they share hints and tips about everything from baking to the best pub grub, to Michelin star food. For the full line-up, please see Pages 26-29

Pony rides Cookery classes for children
The kids cookery classes will run over both days and will be led by Rachel Wilson from Cookery Doodle Doo in Silverstone. There are two different sessions and kids can learn how to make either a Flowerpot Cheesecake or Super Doodle Noodles. The classes run for 30 minutes and cost £4. They are suitable for children aged three and above. Under fives require supervision and please can you advise if your child has any food allergies. Family circus
The renowned Panic Family Circus will be back at Towcester Food Festival this year. It’s great entertainment for kids – big and small! – and everything is free! Professor Panic and his team will be putting on clown shows, Punch and Judy shows and storytelling sessions. There’s also a chance to learn how to walk a tightrope (at low level of course), ride a unicycle, twirl a hoola-hoop and make giant bubbles. Panic Circus will be open throughout both days. Look out for the stilt-walkers. Timings of the shows will be on blackboards outside big top.
What’s on?
Sue Griggs from Northants Pony Parties will be bringing four cute little ponies to the festival. These rides are suitable for children as young as two years upwards and cost £5 a go. They take place beside the racecourse, just in front of the Grace Stand. Please make sure your children wash their hands afterwards!
Other things for kids
As well as cookery classes, petting farm, pony rides and a family circus, the Kidz Painting Party Company will have a stall where kids can paint pottery and have their faces painted. There will also be a small bouncy castle.
Bell Plantation petting farm
The nice people from Bell Plantation are bringing a mini-petting farm to Towcester Food Festival. They’ll be showing off ducks and chickens. Throw the chickens a little bit of food or corn, and watch them gobble it up! Bell Plantation will also be promoting its thriving new farm shop at show. The shop stocks fresh meat and veg, bacon, sausages, eggs, bread and a wide array of yummy things to stock your larder.
Live music lawns
During the weekend, there will be live music on our two music lawns. Bag a table or spread out a picnic rug and sit, eat, drink and lap up the atmosphere.

As much as we yearn to respond to the constant call to ‘Buy British’, it isn’t always so easy in practice. If we like the look of a shirt, a suit, or a pair of socks, once we’re sold on the idea it’s an effort to then check the label and then discard the thing if it’s not crafted by British hands. It’s the same with a car of course, or a fridge, a dishwasher or a mowing machine. It’s hard enough nailing the right choice and choosing to spend one’s precious money wisely, without having some heavy, patriotic moral duty layered on. But when it comes to food, it’s different. In fact it’s just easy. For without question the finest ingredients are always those grown closest to you and have travelled fewer miles before you shove them in your gob. And with such a vast and confusing range of choice, when it comes to food nothing is more glorious than using seasonal ingredients as your starting point. And with the basic ingredients bought the world is still your oyster. A few herbs and spices added to bring a scent of Asia and the memory of a far off holiday comes slap bang onto your kitchen table while the heart of it is still British. The Towcester Food Festival is an event at the heart of my argument. Laid out in front of us are stalls teeming
with British and local produce. You can wander, chat, taste and dream and by buying produce and making a small commitment to – even if just occasionally – buying those items again, you are encouraging the burgeoning growth of British food culture. And never underestimate how important that is. Buying local supports local business and local jobs. And the growth of that culture does us all good – from better pub grub to well fed and happy kids. FREE TASTING SESSIONS If you like a little tipple every now and again, then we have just the tonic for you – a series of free tasting sessions. Beer, wine, gin? We have them all. These sessions are free but they limited to approximately 40 people per session on first come, first served basis. So if you want to join in, make sure you get there early to bag a spot. Dennis Kingshott from Catchpole Cellars will host the free wine tasting sessions. Dennis will take you on a tour of wines from the New World. He will host the following sessions on both days of the festival:

The sessions take place in the tasting marquee, beside the Catchpole Cellars stand. You will sample four different wines from each country.
On Saturday only, John Evans, from Towcester Mill Brewery, will talk about brewing and cask ale, and tempt you with some free samples of the Mill’s tasty beer.
Catchpole specialise in top quality wines from small producers and offer cases by mail order. So if you try something you like, you can arrange for a supply to be delivered after the festival.
His talks will take place at 11am and 2pm in the marquee at the back of the Empress Stand. Look out for the signs. And at 10.30am on Saturday in the tasting marquee, Elliot Wallis, from Monkshood Coffee, will run a coffee brewing and tasting seminar to help you get the most out of your daily cup.

Masala Cuisine Friends Dharma Kantelia and Pallavi Shah met while working in the financial sector. They hit it off after realising they shared a passion for authentic Indian cooking. Cookery classes at the festival Are your kids besotted by Bake Off or mesmerised by Masterchef? Or do they simply love helping you in the kitchen? Phil Fanning, the Michelin starred chef who is kicking off our chef demos this year, first fell in love with cooking at his mother’s apron strings. Maybe your son or daughter could be the next big young culinary thing. Feed their culinary talent by enrolling them in one of our children’s cookery classes. While they’re making something delicious, you can always enjoy a little time to yourself among all of those the stalls! Rachel Wilson of Cookery Doodle Doo in south Northants will run the cookery classes over both days of the festival. Rachel worked in the food industry before becoming a mum and launching her own cooking school. Her classes are suitable for children aged three and above, although under fives will need to be accompanied please. Your children can learn how to make a Flowerpot Cheesecake, a sweet treat made with pears, cookies, mascarpone cheese and cocoa that looks liked potted plant, or Super Doodle Noodles, a delicious, healthy, ready-to-eat noodle salad made with Asian flavours.
These classes tend to fill up quickly so please book in advance to avoid disappointment. When you book, please take care to advise Rachel if your child has any allergies. The kids cookery classes take place on the second floor of the Grace Stand. (See map.) Chef Demonstration Stage
We’re delighted to welcome Michelinstarred chef Phil Fanning to our demo stage this year. Phil owns and runs Paris House in Woburn, one of the most celebrated restaurants in the country. He joins a line-up of fabulous local cooks who will be sharing their skills throughout the weekend. The demonstrations take place hourly and are free – just saunter up and take a seat. All the chefs will wear microphones and the demonstrations will be shown on large TV screens so you can see everything up close. The chefs will concentrate on using fresh, locallysourced, seasonal produce to prepare their signature dishes. Katie Johnson from Wot’s Cooking will host the demo stage. Katie is a farmer turned broadcaster and writer, who worked as a presenter and producer for the BBC for 15 years. The scheduled running order is:

Phil arrived at Paris House in 2010 and restored its Michelin star a year later - all at the age of 29. Heralded as one of the ‘brightest culinary talents in Britain’, he mixes modern British techniques with Japanese and Asian influences to create

12.30pm: David Ferguson – Ferguson’s of Rugby David is executive chef and director at ‘Ferguson’s of Rugby,’ using seasonal, high quality ingredients to create imaginative, well balanced dishes. David’s culinary career began at Nairns, a busy 120 cover restaurant in Glasgow, where he worked alongside TV Chef Nick Nairn. Since then, he has worked alongside award winning chef Alex Howard and rosette winning Chef Marc Billings, and, among other places, at the Leicester Opera House. 1.30pm: Carmela Sereno Hayes – Carmela’s Kitchen in Northampton Carmela was born in Bedford to Italian parents who settled in the UK in the late 1950s. Today, half of Carmela’s family have made their way back
to Italy, where they carry on the local traditions and cooking styles. This remains a constant point of reference for Carmela, an Italian food writer and cookery teacher who holds her heritage close to her heart, teaching her ‘Cucina Povera’ cooking style at regular classes and workshops around Northamptonshire. Carmela’s mantra is to cook simple, inexpensive, flavoursome food with good quality seasonal ingredients. 2014 saw the release of her first cookery book ‘Southern Italian Family Cooking’ and already Carmela is working on recipes for her new title on Pasta & Sauces. 2.30pm: Nathan Russell Nathan has been cooking professionally for 14 years across a range of different styled restaurants and eateries. He left college with a professional chefs diploma and went to work around the world, in restaurants in France, tapas diners in Spain and even street food vendors in Thailand and India. Mostly recently, he has been a second chef and then head chef in fine dining restaurants across England. Nathan has always been exercise mad and regularly hits the gym to buff up. Between them, Justin and his wife Bronni, have developed a substantial loyal following of diners who enjoy his keenly priced contemporary style food, sourced locally wherever possible and always with attention to freshness and seasonality. Seafood is a great favourite at The Red Lion and daily deliveries from Brixham provide plenty of inspiration for the specials board alongside the regular mouthwatering menu. His engaging personality and quirky sense of humour made him a popular guest panellist on Bake Off’s spin-off show ‘An Extra Slice,’ and watch out for him again on the tele this year. Cooking is in Jane’s blood. She grew up in London, where her father was a chef who owned two cafés and her aunts were pastry cooks, and she spent much of her childhood in a kitchen. Jane is now chef/owner of ‘The Barn’ at Upper Stowe where she has been since May 2013 and where she serves hearty, home cooked meals, snacks and cakes with all food prepared and cooked on the premises. Set in a 19th century farm building, The Barn is a unique, peaceful location to have breakfast, lunch or tea and cake. FESTIVAL NEWS NEW FOOD FESTIVAL FOR NORTHANTS The team behind Towcester Food Festival are launching a new event – the Northampton Winter Food Festival. It will take place at The County Ground in Northampton on Saturday November 12 and Sunday November 13 2016. The event will reflect the spirit of Towcester – a celebration of artisan food and drink with a street food market, tastings and chef demos – but with yummy, winter treats and foodie gifts in the run-up to Christmas. The bursary scheme for the 2017 festival is now open. Thanks to Bell of Northampton, NEFF will be bringing their state-of-the-art show kitchen to Towcester Food Festival which features all of NEFF’s latest high-tech appliances, from flexi induction hobs to Slide&Hide ovens with their disappearing doors made famous by the Great British Bake Off. Bell, the home of good design, is NEFF’s local master partner and stocks a complete range of products, alongside other top brands, at its 20,000 sq ft showroom in Kingsthorpe. If you haven’t paid them a visit in a while, it’s well worth a trip. They have the best kitchen displays in the area from brands such as SieMatic and Mackintosh. Clearview, Jotul, Gazco and Stovax. Created by the team behind the highly successful Towcester Food Festival, it will be a celebration of artisan food and drink with up to 100 stalls, chef demonstrations, tasting workshops and a street food market. With capacity for 10,000 visitors over two days, Northampton Winter Food Festival takes place under cover at The County Ground. It will capture the essence of Towcester but with extra yummy, winter treats and foodie gifts in the run-up to Christmas. CRAFTI’S BIZZI BAGS
Thanks to a big-hearted Towcester business, parents will be able to pick up an activity pack for their little ones at the festival, complete with crayons and pictures to colour in. The ‘bizzi’ bags, so-called because they keep kids busy, will be available at both entrances and have been kindly donated by Crafti’s, based at the Old Mill and one of the town’s unsung success stories. Started quite literally from the kitchen table, Crafti’s has grown to employ 12 people in the town and supplies its products to household name firms across the country and abroad. It also has an office in New York. It is the brainchild of mother-of-two Suzanne Halpin who grew so frustrated at the fact that restaurants offered nothing to keep her kids entertained that she decided to launch her own business. Crafti’s began by offering their core ‘bizzi bag’ range but has now expanded to supply everything from flags and hats to grab and go food boxes which come complete with crayons and can be coloured in.
Suzanne said: “The triangular crayons are great. They are easier for the kids to hold and they don’t roll over the table onto the floor. We have also just launched a range of woven bags. They are reusable so kids can colour them in as they like and keep them as something personal and useful.” Crafti’s also supply currency firm Euro Exchange with packs for kids which includes a passport on which they can draw their face, a holiday diary, a postcard to colour in and currency converter so they can learn about foreign exchange. Crispin Slee, founder of the festival, said: “Crafti’s is a great local business and we are very grateful for their support.”
The company supplies the likes of John Lewis, easyJet, Virgin Active, Thomson Airways, Ed’s Diner and has just landed a deal to supply to 500,000 units to Haven, which runs 36 holiday parks in the UK. Suzanne and husband Michael, who left his job as a high-powered salesman to join the firm, continue to innovate and have just changed all their crayons from round to triangular.

A world of flavour awaits visitors to the street food market at Towcester Food Festival in June with traders selling food from the Caribbean, Africa, Europe and the Indian and Asian subcontinents. Alongside them will be the very best of British – Seadog Foods. Seadog is a North Devon street food vendor run by Beth Newsome and Jim Coslett. The couple won the Best of the Best accolade in the most recent British St Food awards. Giogio Locatelli, the Michelin star chef who was one of the judges, said he was “amazed by the quality of the food.” Jim and Beth take the daily catch landed by North Devon fishing boats and, using recipes inspired by street food around the world, make amazing seafood. Crispin Slee, founder of Towcester Food Festival, said: “One of the dishes they won with was a Smoked Clovelly Herring Laksa.
“Another dish we are bringing is our take on a fish burger. It is Japanese-inspired with wasabi mayo, pickled vegetables, a sweet soy BBQ sauce which we make ourselves and a white fish fillet cooked in panko and sesame seeds. “It was another one of the dishes at the British St Food finals and we have been getting amazing feedback about it ever since.” There are 12 traders in the street food market and the hot food includes a vintage Citroën truck run by a couple from Milton Keynes who will be serving grilled cheese sandwiches made on sourdough bread baked in Northamptonshire.

As soon as I tasted it, I thought to myself ‘They have to to come to Towcester Food Festival.’ I am delighted they are coming.” Jim said: “We will be bringing a version of the laksa to Towcester, although it will be made with smoked mackerel as herring won’t be in season.

It’s nearly 3 years ago since l saw Shirley’s advert for hosts and since then l have looked after over 80 different alternative dogs, some coming back for their holidays more than once. It’s great to hear that their owners have asked for to kennels them to come back to me. You can get attached to them and some do become favourites. From a The way Barking Mad works is simple really. I have two Black Labradors that have stayed many times in the summer and over New Year two years running. They need help around midnight because they are frightened of fireworks. Henry, a German Pointer, comes often with his cuddly toy, as well as a Springer Spaniel called Pi. He loves his ball and is very good off the lead. All dogs come with their instructions, a CV almost, telling us when to feed, how much, walking routines and whether they can be let off the lead, etc. They also bring with them their beds, food, toys and poo bags, and our home soon becomes their home. It’s surprising how quickly they settle. I love hosting and the house feels so empty when we don’t have a dog to care for, but l know it won’t be long before the next one will be arriving. They enjoy their holiday as much as we enjoy looking after them. So if you love dogs but feel you cannot make the commitment to own one, contact Shirley to become a host family.

Become a Festival Maker! When we first launched, we were humbled by the number of people who came forward to become one of our volunteer ‘Festival Makers’. Many of those first volunteers will be back with us this year and over time we have become a festival family. We had our first night out last year, greyhound racing with a curry courtesy of Towcester Racecourse, and we even have our own Facebook group. In the vein of Olympic ‘Gamesmakers’, our Festival Makers play a key role at the festival – helping to greet visitors, and guide them around the event. We’re always looking for new recruits so if you want to join in, there’s still plenty of time. Our most prodigious family of volunteers are the Findells – mum Sarah, dad Malcolm, and their sons, Ross and Tom, have all volunteered. Tom took annual leave from his full time job to help out for both days last year – and is doing the same again this year. He brings an air of calm to our two-way radios. He said: “I find it hard to find time to volunteer due to work however I can’t miss out on the opportunity to take part in the food festival. It’s a great local event – this is year three for me and I’ve already booked annual leave to take part. It’s two days where I can get out in the sun
(fingers crossed), meet some great friendly people and generally have an enjoyable time. It’s great to feel valued and part of something Towcester can really be proud of!” Sarah, who lives and works in Towcester, said: “This will be year three for me and my ‘other half’. It’s our way of contributing something to the local community. The weekend is great fun and a way of meeting new people being part of something always makes you ‘feel good’!” Crispin Slee, founder of the festival, said: “We are hugely grateful to all our volunteers. They enter into the spirit of things and do a wonderful job. Thanks to all our volunteers, we have been able to give away nearly £3,000 to good causes over the past two years.” Volunteers can give as much time as they like, or as little as four hours during the weekend of the event on June 11 and 12.
