A wee dram over the festive season If you are new to whisky, or just don’t know where to start then here are a few favourites to get you started. The Macallan – very smooth, easy to drink and with bags of flavour. Royal Lochnagar – a very good balance between taste and peatyness. Grouse – a blended whisky from the Crieff Distillery, a great one to visit as there are lots of interactive exhibits, and if you would rather drink a whisky with a drop of something else – try water, ice or even ginger ale (the mother-in-law’s favourite), Grouse will leave you wanting more. Bushmills – an Irish whiskey from County Antrim with all the cheek and character of the emerald isle, unbelievably smooth and very undemanding. Ardbeg – if you are prepared for a challenge then this is it – perhaps the most peaty of all – a medicinal-like drink that will certainly clear your pipes!

Christmas turkey, duck or goose (or maybe an alternative!!) Which came first turkey or goose?

Most people believe that turkey is the star of the British Christmas dinner, but this new-fangled bird has only been gracing the British table since the 16th century when it arrived here from America. Before that,a traditional Christmas roast would be the Christmas goose. The goose as the bird of choice took a severe decline in the 1960s when it was considered a little common and turkey more exotic! We all want our Christmas dinner to be special and a meal to remember for the right reasons! So how can you make sure that your bird is the best choice?

Locally sourced

First take the time to buy your meat from a source you trust. You might prefer a trusted butcher or local farm shop, also great for buying all your veg and extras at the same time. Knowing how your meat has been reared and where it came from can help you determine the likely quality of the meat. Usually higher quality comes from younger animals that are subject to greater welfare standards. Of course prices will also reflect this so battery-reared birds will be much cheaper than those which have been subject to a mainly organic diet and free-roaming. Look for birds with unblemished skin, and if buying fresh

check whether they will be dressed or whether you will need to do additional preparation.

Consider carefully the size of the bird you require.

General recommendations allow around half a pound or 225 g per person for boneless meat and three quarters of a pound or 340g per person for meat with a bone in. Of course appetites vary and you may want to buy larger deliberately, in order to have enough for leftovers.

Beef it up!

Other alternatives to a bird are roast rib of beef for Christmas dinner. Roast beef is one of Britain’s national dishes and the major part of a traditional Sunday roast. Despite its role in the weekly event, a roast beef is also very popular for a Christmas roast as well and why not, it’s not all about the turkey after all.

The Travel Locker…. Local to you

Home to a Princess – Althorp House Northamptonshire was once known as the county of “spires and squires”, the home to wealthy landowners and several fine medieval church spires. The county is an inland county, landlocked between eight others, Lincolnshire in the north (England’s shortest county boundary at 62ft) Cambridgeshire, Bedfordshire, Buckinghamshire, Oxfordshire, Warwickshire, Leicestershire and Rutland. It has also been said that the county has more stately houses than any other county in England and Althorp is one of the best. Built in 1508, Althorp has been the stately home of the Spencer family for nearly 500 years and is the final resting place of Diana Spencer, Princess of Wales.

the former stables have been converted into a small gift shop and wonderfully large café. The café offers a range of freshly made sandwiches, cakes and snacks as well as hot & cold drinks. The courtyard is a very pleasant place in which to sit for a bite to eat and a drink and there is a dedicated picnic area close by. The interior of the house displaying a fine collection of furniture, ceramics and an impressive collection of portraits is simply stunning. The House is an Art Gallery, a treasure trove for lovers of portrait art, from Sir Peter Paul Rubens to Sir Anthony Van Dyck, there didn’t appear to be a space on the walls which did not have a portrait hanging from it.

On arriving at the western gate there is a long walk down to the house along an avenue of thirty-six oak trees, which have been planted for every year of Diana`s short life. A large herd of deer could be seen from the road sitting beneath the trees in the shade. Fallow deer have been roaming the parks 13,000 acres (5,300 ha) since the early sixteenth century. Currently there are separate herds of rare black fallow deer, sika and red deer.

An imposing oak staircase leads visitors up to three particularly striking portraits of the late 8th Earl John, the present 9th Earl Charles and the late Diana Spencer. There were several magnificent four poster bedrooms in what is essentially a family home which is open to the public for three months during the summer. Family photographs of the present Earls family, a collection of board games, a drinks table for house guests and a used snooker table testify to that!

The Stables built around 1733 was once home to over 100 horses and 40 grooms, today it houses a small museum displaying items from the life of Princess Diana including the tiara she wore on her wedding day and one of the bridesmaids dresses. There is also a glass case containing books of remembrance from all over the world which have been received at Althorp. Some of

Bunches of fresh flowers and short notes of remembrance are still left at the Temple by some of the thousands of visitors. The island in the middle of the pool is the last resting place of Diana, the nations Queen of Hearts. Her burial place on the island is marked with a white memorial plinth and urn. One hundred white rambling roses flourish on the island and white-water lilies cover the water. Log benches circling the oval pool provide a comfortable place in which visitors can sit and rest their feet whilst they collect their thoughts. It is a peaceful place allowing time for reflection on your memories of the life of Princess Diana and the stunning sights viewed within the House and Park. During July and August, the house and estate are open to the public. The Althorp Literary Festival takes place very October and the next Food & Drink Festival takes place between 11-12th May 2019. Hedgerow winter warmers With so many orders for Christmas Door Wreaths and other seasonal decorations this is probably my busiest time of the year and I’m out in my workshop all day long. While the weather is getting colder and colder, I don’t have any heating out there; even if I wanted to, that’s the lot of a florist, keeping the flowers nice and cool! But when I come indoors, usually after dark, I head straight for the comfy chair in front of the wood burner with a steaming cuppa or better still, a glass of homemade sloe gin which can be equally as warming! Sloe is the fruit of the blackthorn, which blossoms white in early spring. It has fearsome thorns on its very dark branches, to protect it from grazing animals, and the wood has traditionally been used to make walking sticks and riding crops. The bitter fruit is usually ripe and ready to pick in October. The best time to make sloe gin is when the sloes have had a good frost (failing this you can always pop them in the freeze overnight!) because, in theory, the frost splits the skins to release juices and saves you having to prick each berry by hand…. Along with sloes, I like to add other foraged berries to make a rather nice ‘hedgerow’ gin which is great for using up those odd amounts left in boxes in the freezer taking up space, and add some spices to create a real winter warmer.

Hedgerow Gin

Here is my recipe Garden Gate Hedgerow Gin: 70cl bottle of gin (approx. 675ml) 75g blackberries 75g sloes 50g rosehips 50g haws 75g caster sugar4 star anise OR a cinnamon stick & 2-3 cloves (whichever you prefer) Simply put the frozen fruit into a wide-necked jar with the sugar and spices, pour in the gin, put the lid on tight and give it a good shake. Repeat the shaking daily, for a week, and watch the colour change to a beautiful reddish-purple and all the sugar dissolve. After that, hide it away in a cool dark place until Christmas, or better still until next autumn. When ready to drink, strain it, add more sugar if necessary, stirring well to dissolve, bottle it and enjoy. (If you don’t like gin, you could try vodka or sherry.) Homemade sloe gin or hedgerow gin is also fab as a long drink in the summer with tonic, ice and a slice, but roll on frosty morning walks to collect those gorgeous dusty blue/black sloes. Just make sure you leave plenty for the wildlife to help keep them warm through the winter too. Cheers! Christmas office party – good or bad idea! Celebrating Many of us look forward to celebrating Christmas with our work colleagues. It’s a chance to get out of the office and have a bit of fun. But for some employees the morning after is full of embarrassment and regret. Your behaviour at such events could seriously damage your career. Equally, if handled correctly you can also do a lot of good for your career at the annual festivities. Always attend even if it’s for just a short while as this demonstrates your willingness to be part of a team. Dress appropriately- you may be excited by the opportunity to get out of your work attire but remember that you are still with work colleagues and probably your boss. Where you are going will have an impact on how you dress but whatever the venue its best to avoid clothing that is overtly sexual.

Don’t be tempted to be drawn into gossip or talk about others or the organisations latest ideas in a negative way. You never know who’s standing behind you. Of course don’t swear, be impolite or vulgar. It may be that you have fancied one of your colleagues for months ( or they become irresistibly attractive once you’ve had a few drinks), but insisting that they join you under the mistletoe or showing them your best Dirty Dance moves is not advisable. These could lead to public humiliation at the event and years of teasing and having to avoid a ‘certain someone’. It is possible to have fun at an office party, but for your careers sake, remember everything in moderation!

Beware of the booze!! At many parties there will be alcohol and it can be tempting to over indulge, especially if the boss is paying. But it’s best to drink in moderation and alternate alcohol with water. If you feel you may be getting a little too relaxed opt for soft drinks. Remember to eat well to soak up the alcohol.

Socialising Do socialise and chat to lots of people at the party. It can be a good time to build relationships with colleagues from other departments, or those you’d like to impress but don’t usually get chance to speak to, so do circulate. Don’t be boring by talking about nothing but work however. Usually some general conversation about holidays, families

To commemorate the lives of the 114 soldiers from Daventry who lost their lives during the First World War, Daventry Museum has invited local Daventry schools & community groups to make & decorate a small model chair to represent each individual soldier. Once built and decorated, these unique chairs will be displayed at the museum and then given to those who wish to remember a soldier by promising to set an empty seat at their table on Remembrance Sunday on 11th November 2018. On Sunday 11th November the museum will be open from 11.30am to 2.00pm to see this display.

400g golden caster sugar 397g can condensed milk 140g salted butter, chopped into pieces 1 tsp vanilla bean paste 2 tbsp coffee liqueur (or another alcohol of your choice amaretto or brandy works well) Grease and line a 20cm square baking tin with baking parchment. Put the sugar, condensed milk and butter in a large heatproof bowl (the mixture will bubble up as it cooks to roughly double its size), add a good pinch of salt and stir together. Heat the mixture in the microwave on high for 10 mins, stirring every 2-3 mins. Keep an eye on the mixture, as it will bubble up and may go over the sides of the bowl.

Tips to strengthen your winter immunity The evenings are getting darker, the temperatures are dropping, and it’s the season where we are more likely to be surrounded by colds and viruses. Your body works hard to fight off infections but there are several measures you can do give it a boost and keep winter bugs at bay.

Recipe

Smoked haddock & garden pea risotto Serves 4

Ingredients 500g undyed smoked haddock fillets 800ml whole milk 2 tbsp olive oil 1 onion finely chopped 2 sticks celery finely chopped 300g arborio rice 150ml white wine 500ml chicken stock 100g cooked garden peas 1 bay leaf Salt & pepper Pre-Heat Oven to 200˚C/180˚C fan/GM6

Method Put the smoked haddock fillets into a ceramic dish, add the bay leaf and cover with the milk. Cook for 15 minutes or until the fish is almost cooked. Remove the fish from the milk, saving the milk in a jug.

In a wide heavy bottomed saucepan, heat the oil and add the onions and celery. Gently cook for 5 minutes until they start to soften, then add the rice and fry for 2-3 minutes, stirring regularly. Pour in the wine and simmer for a further 2 minutes then add the stock a ladle at a time stirring as it reduces. Once all the stock has been incorporated start adding the milk, again one ladle at a time until the rice is tender to the bite. You may not need all of the milk. When the rice is nearly cooked, flake the fish into the rice and add the cooked peas. The fish will be salty, so taste before seasoning. Easy Christmas recipe

Really easy cinnamon rolls Ingredients 350g can ready-made croissant dough 30g unsalted butter, softened 2 tsp cinnamon 6 tbsp soft light brown sugar Heat oven to 180C/160C fan/gas 4. Line a 23cm cake tin with a square of baking parchment so the corners stick up (this will help you to lift the rolls out). Unroll the croissant dough from the can and lay it out on your work surface. Cut it into three sections along the dotted lines, but don’t cut the diagonal line. Spread over a quarter of the butter. Mix the cinnamon and sugar together. Using one square of dough at a time, sprinkle over 2-3 tsp of the sugar and roll up the dough. When you have three rolls, cut each one in half and then each half into three. Arrange the rolls in the tin in two circles – you need to spread them well apart as they will rise and spread. Stick the end bits in among fatter pieces from the centre of the rolls so they cook evenly. Bake for 15 mins or until the rolls are risen and cooked through.

Step back in time…. Local to you

Weedon A former military stronghold Weedon Barracks played an important role as a key military base in the run up to, and during World War II, and was particularly significant for its cavalry factions. In the famous Berlin Olympics of 1936 the Olympian Equestrian team trained here. As it was predominantly a cavalry barracks, Weedon’s importance subsided as the need for horse based warfare declined, and the last cavalry left from Weedon in 1946. In order to understand just how significant it was in wartime, in between October 1942 and November 1943 there were an incredible 3.5million rifles issued from the site! The Weedon based soldiers were a prominent part of village life and the residents valued their presence. The young lads growing up in the village in particular, looked up to the soldiers...

Not your average place to grow up A first-hand account, from a local gentleman whose playground was the barracks when he was growing up, suggests that the soldiers were very patient and tolerant of the boys, with the young lads being seldom told off for playing at the barracks. Growing up in the shadow of the barracks, many of the local boys were keen to follow in the footsteps of the soldiers, and went on to enrol in

the army as wide eyed teenagers. They enjoyed army life and the camaraderie that they experienced. Learning how to look out for one another exactly as they had done as boys – this remains a key mantra for our armed forces today.

Unravelling a fascinating history After falling into disuse, the barracks were demolished in 1955/56 and replaced by 200 or so houses. However, some key buildings were retained and are now grade II* listed buildings, in recognition of their architectural significance, including The Depot, and the early nineteenth century Stores Buildings of the former Royal Ordnance Depot. These Stores Buildings are today used as industrial workshops. The statutory listing is important as it shows how historically significant the old barracks were. The listed building scale goes like this: Grade I = buildings of exceptional interest. Grade II* = particularly important buildings of more than special interest. Grade II = buildings of special interest, warranting every effort to preserve them. Therefore having a grade II* listed former military building is hugely important. Another interesting and distinctive feature of the village and former barracks site is the presence of the

Step back in time…. Local to you Grand Union Canal which reached Weedon in 1796. The military branch canal entered The Depot under a portcullis, set in a building known as the East Lodge, forming part of the surrounding wall, and is still standing. Napoleon’s plans for invasion in 1803 scared the English and they set about making considerable additions to their army and militia. It became clear to our leaders that the storage of military supplies near to the coast was no longer prudent, and plans were made to set up a depot for the storage of arms and ammunition near to the centre of the country. A site in Weedon Bec was chosen, due to the proximity of the canal and Turnpike, and the rest is history…

Attracting visitors from near and far The former Royal Ordnance Depot at Weedon (built between 1804 and 1816) has now, finally, been turned into an interesting and informative Visitor Centre. Here visitors can learn of Weedon’s fascinating history – of the barracks and earlier times. Inside this welcoming new Visitor Centre you will find detailed models of the barracks as they were in World War II. Visitors can also read about the history of the site including its hugely significant weaponry and armour. It is understood that up to 2000 tonnes of gunpowder were stored here until the 1890s. To put this figure into perspective that means that the amount of gunpowder stored at Weedon was more than 800 times the amount that Guy Fawkes was planning to use in 1605 to blow up the Houses of Parliament! – Quite a powder keg indeed! Before the Visitor Centre opened this summer many people may not have known much about Weedon Barracks at all. Happily, it now provides an invaluable resource for historians and the general public alike.

Weedon today Despite the clear narrative conveying the history and development of the site, you will still need to use some imagination when visiting The Depot today. Much of the site has been developed into an industrial estate, providing an attractive and convenient location for local businesses, and the houses which now lie where the barracks once stood, making it difficult to fully comprehend the former character, appearance and might of the military stronghold. However, for those with a keen interest in history, or anyone looking for a day out with a difference, Weedon Depot is a must to see and explore. Good luck unearthing its fabulous history – you won’t be disappointed.

Here’s some tips on how to make your home safer during this holiday period. 1. Make sure all your doors and windows are secured at night and when you go out. 2. Set your alarm if you have one. 3. Put any presents bought or received out of the way, not in clear site of windows or doors. 4. Secure any ladders, so they can’t be used for upstairs windows. 5. After Christmas when all the presents have been opened, don’t put the empty cardboard boxes out for recycling, as this shows everyone passing what new items you’ve had for Christmas, take the boxes to the local recycling centre.

Christmas meals in minutes

Christmas turkey & apple waldorf platter Serves 4

Ingredients 250g left over turkey 50g walnuts, toasted 2 green apples, sliced into thin wafers 1 stick of celery, thinly sliced 2 spring onions, thinly sliced 50g dried cranberries Handful of watercress 3 tbsp good quality shop-bought mayonnaise 1 clove of garlic, finely chopped Juice of half a lemon Sea salt and pepper 1 tbsp natural yoghurt 50g cashel blue cheese, crumbled

Method Start by toasting the walnuts Add the mayonnaise into a small bowl with some garlic, add dijon mustard, yoghurt, lemon juice, and some blue cheese For the salad – chop up celery, spring onions
