It’s better for everyone’s bottom line when we shop locally. There are some fantastic independent shops around from clothing to homeware, coffee shops to hardware stores. Support local businesses and get the satisfaction of knowing that you are contributing to your local community and economy.
2 Donate to the food bank
You’d be surprised how many people in our area are struggling to put food on the table. Redundancy, illness, domestic violence, debt or even the increased cost of heating during winter are just some of the reasons why local people go hungry. Why not donate some non-perishable food such as tinned food, tea bags, pasta or cereal to the food bank and support local people who need help. 4 Buy local produce when you can
You don’t always spend more when you shop for local food; in some cases it can cost less because in-season foods are generally cheaper and travel costs are minimised. It also cuts down on packaging. Local farm shops and markets are a great place to buy local, seasonal produce such as meat, vegetables, breads and cheeses. Local veg box schemes are also a great way to get fresh vegetables delivered to your door.

Between a quarter and a third of all domestic waste is packaging: much of this is food packaging. It is difficult to recycle, too. Research has shown that glass is the most recyclable material (the average glass bottle contains over 25% recycled glass and can be as much as 90% recycled glass) so try to buy products in glass jars or tin cans rather than plastic where you can. A good example is to buy your milk from your local milkman. Re-use glass bottles at home and always recycle the ones you don’t need.

Have a go at growing your own
As well as being cheaper and organic, growing your own is also a great way of getting some exercise and fresh air and is a brilliant activity to do with the kids. They get a great sense of achievement and it means they won’t grow up to think that we grow carrots in supermarkets. You don’t need acres of space either. Grow tomatoes in hanging baskets, herbs in a window box and you only need a plastic bin and some earth to grow potatoes.

Surviving the big freeze The ecology team in the office were recently pondering how different animals cope in the winter and it dawned on us that fish are often an overlooked animal in this regard. Yes, they are cold blooded and, yes, their physiology allows them to survive in hostile environments, but that makes it no less interesting to peek beneath the ice to see where they are and what they are doing while encased in winter’s frozen mantle. The first thing we should notice is that the world of the fish in winter is a world that swirls in slow motion. This is because many fish literally slow down, almost to the point of hibernation, during these cold months when food is scarcest and the warmth of summer is just a fond memory. As fish are cold blooded they have no natural way of warming themselves up, as we mammals do, they have to nestle down in the warmest pockets the water has to offer. During cold periods the coolest water actually moves towards the surface near the ice and the warmer water gradually slips to the bottom. This is because when water reaches the 4oC point its structure begins to change to the solid form freezing at the surface. This phenomenon in effect insulates the warmer water below. Fish take full advantage and hug the bottom to

survive. As the water warms in the spring this wondrous quality of water is naturally reversed with the warmer water returning to the top. In addition some fish are apparently more equal than others in the temperature tolerance department.Trout and salmon prefer colder water and are more active in winter so their winter depth will be at a higher water level. In nature’s sometimes cruel script, some fish, especially the young ones, will not survive this trial by ice. Their physiology is as yet inadequately developed and they may be unable to handle a particularly severe season. Their diminished awareness inevitably means many will become prey for larger predatory fish. Others even become disoriented in the ice formations near river banks and shorelines and become trapped in shallow pools. And so fish are remarkable survivors and demonstrate a fascinating lifecycle. Perhaps we should all consider digging a pond in our gardens. Explore their biodiversity and understand the value of the many species and how they interact. They are so much more than a tasty accompaniment to chips.

Duo of Rabbit
Rabbit loin wellington, braised leg and pomme puree My favourite way to serve this is with poached young leeks, chantry carrots, roasted baby shallots and toasted caraway seeds.

Get a thick bottom pan hot, season the legs and sear them all over.
Method
Place the legs into a sauce pan with a large glass of white wine and whatever stock veg you have lying around... leeks, onions herbs etc the more the better! Put 5 bay leaves, 15 peppercorns, 4 juniper berries and a bulb of garlic in it,also top up with chicken stock until everything is covered. Bring to the boil, when it comes to the boil skim off the scum that appears and turn it down to a gentle simmer, simmer until nice and tender about 1 and a bit hours.
In the same pan add a knob of butter and the spinach and cook until wilted, season. If you have some grate some fresh nutmeg into it. Allow to cool.
Take the legs and vegetables out turn up the heat and reduce by half – refresh with garlic and thyme ( throw in a bunch of garlic and thyme ) this freshens the sauce up so you get depth of flavour from stewing the vegetables then the beautiful fresh flavour from refreshing it, thicken with a beurre manie or corn flour.
4 loins of rabbit 800g flat or field mushrooms 4 slices Parma ham 2 sheets of readymade puff pastry 2 egg yolks 2 handfuls of spinach per wellington Store cupboard ingredients Pre heat the oven to 200c Heat some oil in a large pan and quickly seal the loins all over – allow to cool.
To make the duxelle, roughly chop the mushrooms and blend in a food processor to form a rough puree. Transfer the mixture into a hot, dry pan and add a splash of white wine, knob of butter and season. Allow everything to evaporate stirring occasionally. Set aside and cool. Roll out a generous length of cling film, lay out two slices of parma ham slightly overlapping. With a pallet knife spread the mushroom mixture evenly over the ham about 1/2cm thick. Scatter the spinach on top of the mushroom duxelle. Place two loins next to each other on the parma ham and keeping a tight hold of the cling film from the outside edge, neatly roll the parma ham and mushroom over the rabbit into a tight barrel shape. Twist the ends to secure the cling film. Refrigerate for 10 to 15 minutes, this will allow the wellington to set and helps keep the shape. Roll out the pastry quite thinly and cut to a size that will cover your rabbit. Unwrap the meat from the cling film. Egg wash the edge of the pastry and place the prepared rabbit in the middle. Roll up the pastry, cut any excess off the ends and fold neatly to the “underside “. Turnover and egg wash
For the pomme puree
1kg potatoes – such as desiree or maris piper 140g butter – cut into cubes 300ml hot full fat milk 6 tbsp double cream truffle oil to taste salt and pepper Peel the potatoes and cut into even size dice so that they all cook at the same time – about 12 – 15 minute in boiling salted water. Drain well, then return to the pan and cook for 1 – 2 minutes over a dry heat. Mash the potatoes very thoroughly or press them through a potato ricer or mouli back into the pan – they should be completely lump free. Don’t be tempted to use a food processor as this will make the potatoes gluey. Gradually beat 140g of butter into the potato until it starts to look shiny. Heat the milk in a small pan and the cream at boiling point then slowly add the milk and cream to the puree with some salt and fresh ground pepper. The potato should become a soft velvety puree. You may not need all of the creamy milk. Add the truffle oil and more seasoning if required. Keep warm until required.

With the unveiling of the Braunston Timeline in All Saints Church on 7th December, attention has been drawn to the amazing history and landmarks of this vibrant village in rural Northamptonshire.
Set in the heart of rural England
Braunston lies at the junction of the Grand Union Canal and the Oxford Canal in a truly rural setting on the border of Northamptonshire and Warwickshire. The village, on the hill above the canal, thrived for over 150 years on the canal trade - carrying goods from the Midlands to London. Now it is a centre for leisure activities and boasts by far and away the busiest stretch of canal anywhere in the country. The biggest single canal enterprise is the Marina (on the A45); in addition there is a score of smaller businesses providing all the needs of the modern boater. On the towpath near the Marina is “The Stop House” where, in the old days, tolls were collected from the passing boats. The village itself is on a ridge above the canal where All Saints’ Church dominates the countryside for miles around. Built in 1849, it is the third church on the site and the Norman font still survives from the first; there is much of interest to see in the church which is proud of itself in the community. In 1895 the railways came to Braunston, remains of the bridge can still be seen on the A45 and if you take

advantage of one of the many walks through Braunston you can pass along the track to St Peters Church in Wolfhampcote (one of the oldest churches in England) where you can see the old arches of the railway and just make out the original curves of the Oxford Canal ( if you look closely!!).
The most recent addition to its history spanning 2,000 years The Braunston timeline has taken over two years to complete and will be on permanent display in the church. It is in full colour and measures five metres long and one metre high and has been professionally designed and produced by local businesses. It provides a superb back drop for families to visit, school trips studying history and ramblers passing through this village of significant interest. It depicts its history to include murder, scandal and the last inhabitants of the abandoned village of Braunstonbury.

Dig out the old explorer 222 map or visit www.ordnancesurvey.co.uk/shop/explorer-maprugby-daventry.html and tailor make some routes in and around the area. Suggested starting points with parking for walkers is The Admiral Nelson pub in Little Braunston alongside the canal or The Old Plough, ( originally built in 1672 ) in High Street. Both do great food during your visit to Braunston.

What’s your Goal? Many of us use the New Year as a time to plan ahead and set goals or resolutions. What would you like to achieve in 2014, and how would you like your life to be different? It’s possible to set goals for most areas of life: - health, career, social life, relationships and finance for instance. Or you might look at the different roles you play, such as wife, friend, mother, employer, and use your thoughts about how you could improve your success in those roles to help determine your goals. Only you can decide what would really make a positive difference to your life, and you are most likely to succeed if you select goals that really matter to you. There is less chance of success if you are trying to achieve something because another person wants you to. Indeed some New Year’s resolutions only last a few days. To make a lasting change it’s important to make sure your goals are realistic, and to seek motivation, inspiration and support to help you stay on track. Do not set yourself too many goals or set targets way beyond your reach, as you will soon become disheartened and less likely to succeed. It’s better to set smaller goals that you can add to, or increase if things go well, and build on your positive results Some people like to write their goals down or share them with others, and this can add to the accountability that individuals feel around goal setting, thus improving their chances of success. It can also be useful to ask for support from friends, who can give you gentle reminders if you are in danger of going off

track. Where relevant, you may also want to get inspiration, advice and training from others such as weight loss experts, sports trainers or personal and career coaches. Other useful tools include imagery – this might be visualising yourself having achieved your goals, or sticking photographs which represent success to your fridge door or mirror. You might also find the use of quotes, role models and affirmations useful. An affirmation is a statement which says what you are aiming for in a positive way, and in the present tense. It helps to imprint positive beliefs on your subconscious. Finally, don’t forget to congratulate yourself when you do achieve success.
