How to choose your Christmas Turkey, Duck or Goose We all want our Christmas dinner to be special and a meal to remember for the right reasons! So how can you make sure that your bird is the best choice? First take the time to buy your meat from a source you trust. You might prefer a trusted butcher or farm shop, we have some wonderful local ones on our doorstep. Knowing how your meat has been reared and where it came from can help you determine the likely quality of the meat. Usually higher quality comes from younger animals that are subject to greater welfare standards. Of course prices will also reflect this so battery-reared birds will be much cheaper than those which have been subject to a mainly organic diet and free-roaming.
Look for birds with unblemished skin, and if buying fresh check whether they will be dressed or whether you will need to do additional preparation. Consider carefully the size of the bird you require. General recommendations allow around half a pound or 225 g per person for boneless meat and three quarters of a pound or 340g per person for meat with a bone in. Of course appetites vary and you may want to buy larger deliberately, in order to have enough for leftovers. Choose well and enjoy your Christmas Dinner!

e l b i d E y s a E s t f i G s a m t s i Chr It’s too easy in these days of hectic lives and frantic consumerism, to feel the mania and the raging impatience come over you in the bustle of the shops, and then you end up with presents that cost too much and aren’t even right. I like to feel that what I’m giving means something – and for me, Christmas is created and celebrated in the kitchen. You don’t have to take the slightly saccharine food-is-love line to know that giving a present of something you’ve made with your own hands, in your own time, is what Christmas is or should be about. None of these recipesare complicated or take very long. One of the joys of the edible present approach is that it’s less stressful – you can buy ingredients in the normal course of your grocery shopping and a pretty jar, some cellophane bags, a handwritten label and maybe a rosette or a ribbon are all you need in the way of wrapping. Don’t forget, though, to write any storage instructions on the label, and a note of how long your present will keep for.
Christmas rocky road Ingredients • • • • • • • • •
50 grams dark chocolate 150 grams milk chocolate 175 grams soft butter 4 tablespoons golden syrup 200 grams amaretti biscuits 150 grams brazil nuts (shelled) 150 grams red glace cherries 125 grams mini marshmallows 1 tablespoon icing sugar edible glitter
Method 1. Chop both sorts of chocolate small, or use chocolate buttons made for melting, and then put into a heavy-based pan to melt with the butter and syrup over a gentle heat. 2. Put the biscuits into a freezer bag and bash them with a rolling pin to get big- and little-sized crumbs; you want some pieces to crunch and some sandy rubble. 3. Put the Brazil nuts into another freezer bag and also bash them so you get different-sized nut rubble. 4. Take the pan off the heat, and add the crushed biscuits and nuts, whole glacé cherries and minimarshmallows. Turn carefully to coat everything with syrupy chocolate. 5. Tip into a foil tray (I use one 236mm x 296mm / 9¼ x 12 inches), smoothing the top as best you can, although it will look bumpy. 6. Refrigerate until firm enough to cut, which will take about 1½–2 hours. Then take the set block of rocky road out of the foil tray ready to cut. 7. Push the icing sugar through a small sieve to dust the top of the Rocky Road. Then, if you like, add a sprinkling of edible glitter for some festive sparkle. 8. With the long side in front of you, cut into it 6 slices down and 4 across, so that you have 24 almost-squares. MAKE AHEAD TIP: Make the Rocky Road and refrigerate to set. Don’t add the icing sugar yet, but cut into bars, then store in an airtight container in a cool place for up to 1 week. Decorate with icing sugar and edible glitter about 1–2 hours before serving. FREEZE AHEAD TIP: Make the Rocky Road as above and freeze for up to 1 month. Thaw overnight in a cool place. Decorate as above.

Snow globe hot chocolate Ingredients • 3 large white marshmallows • icing pens, in black and orange • 1 giant chocolate button • 1 chocolate - a mini Reese’s peanut butter cup or other domed chocolate is perfect • 2 tbsp cocoa powder • 2 tbsp Horlicks powder • handful mini white marshmallows • 1 cookie (small enough to fit in a jam jar) • 3 strawberries laces You will need 1 cocktail stick 1 large jam jar ribbon and gift tag Method 1. First make the marshmallow snowman. Skewer the marshmallows together with a cocktail stick - cut off any of the stick that protrudes from the top. Use a little of the icing pen to stick a chocolate button and peanut butter cup to the top of each marshmallow stack, then draw on a face and 3 dots for buttons. Plait 3 strawberry laces and tie around the neck for a scarf. Stick the snowman to a cookie with a little more icing, then set aside to dry for a few mins. 2. Mix the cocoa and Horlicks together in the bottom of your jar. Put the snowman on top, then scatter around the mini
marshmallows. Screw n the lid, tie with a ribbon and a gift tag with the following instructions: Warm 300ml milk in a pan. Remove the snowman from the jar and add the milk. Stir until smooth and chocolatey, then enjoy, with your marshmallow snowman for dunking.
Chorizo jam
Ingredients • 500g cooking chorizo, diced • 1 large white onion, finely sliced • 2 garlic cloves, crushed • 85g light muscovado sugar • 3 tbsp Sherry or red wine vinegar • 2 tbsp maple syrup • 1 shot of espresso coffee or 100ml/4fl oz strong black coffee Method 1. Fry the chorizo in a large saucepan for about 5 mins until golden and crispy at the edges. Remove the chorizo with a slotted spoon and transfer to a plate, leaving the oil that has been released in the pan. 2. Turn the heat down low and gently cook the onion in the chorizo oil for 15-20 mins or until very soft and starting to brown. Stir in the garlic, muscovado sugar, Sherry, maple syrup, espresso and chorizo. 3. Cook slowly for 35-40 mins, stirring occasionally, until thick and syrupy. Turn off the heat, leave to cool a little, and then tip everything into a food processor. Pulse briefly to chop everything up into really small pieces, then leave the mixture to cool before packing it into 2 sterilised jam jars. Will keep for up to 1 month.

Chicken and wild mushroom stroganoff Serves 2 Shopping List
Method
1 large chicken breast – sliced into thin strips 100g mixed wild mushrooms – sliced 1 medium onion – peeled and sliced 1 clove of garlic – chopped ½ tsp of smoked paprika 1 tsp french mustard ¼ pint chicken stock ½ pint double cream 25ml brandy 100ml white wine Squeeze of lemon Juice 2 tbsp Olive Oil for cooking Salt and pepper for seasoning
Once all preparation is completed the actual cooking is very quick. Take a large heavy based saucepan, heat the oil and fry the onion and garlic until tender. Add the mushroom, chicken and smoked paprika. Sauté for 3-4 minutes until chicken is brown and firm. Add French mustard, brandy and wine. Simmer until liquid reduced by half, then add the chicken stock and again reduce by half. Add the cream and lemon juice and cook until thickened, consistency coating the back of a spoon and season with salt and pepper to taste.
This dish works perfectly with rice and vegetable or just as well stirred through pasta.

Christmas Wines Many of you may have watched Saturday Kitchen and tried to digest the wine adjective marathon by the presenters. It can all get a little over wordy, complicated and confusing at times. Here at Wine Freedom we believe the most important part of wine drinking is to understand what you like and what you don’t like. Before anything else ask yourself these three things :
1- Are you enjoying what’s in your glass, or not? 2- Does it keep you interested enough to want the next sip? 3- Is it good value? If the questions above apply to you then we recommend you use a good wine merchant, one that understands you and your pallette – one like Wine Freedom. Our sense of taste is so subjective and fantastically personal. Ultimately the most exciting part is understanding why you love the flavours you do and why you can’t abide the ones you don’t. This small proportion are hyper sensitive to the five sensations of taste, bitterness in particular. Some of his top scoring wines are so sought after that they’re sold before they’re even made! His ‘kick ass’ Kung Fu Riesling in our opinion is set to re-educate the UK on how amazing this grape variety really is. Listed at many top restaurants around the globe, amazingly versatile with a wide range of dishes. If you like Sauvignon Blanc this might just be your new rock ’n’ roll?! Terre di Giumara Frappato Nerello Mascalese IGT Sicily £7.95 Yes, a bit of a mouthful to say. This wines is made from two grape varieties, Frappato which tastes a little like a cross between Merlot and Pinot Noir and Nerello Mascalese which is a close relative to Sangiovese (the main grape used for Chianti). Super soft and a great match with roast turkey, a side of beef or pop in the fridge for 30 minutes and try with some salmon.

Chocolate Orange and Malteser Christmas Pudding One bar of milk chocolate One bar of white chocolate Terryâ&#x20AC;&#x2122;s choc Orange Maltesers Fondant icing Red Skittles or Smarties
Snowball Truffles 200ml double cream 200g good-quality dark chocolate (at least 70% cocoa solids) 200g desiccated coconut
1. Place your chocolate orange in a cup to stop from moving. 2. Melt a little milk chocolate and attach each malteser to the chocolate orange. Leave for 5-10 minute to set. 3. Turn the orange upside down and cover the bottom half with Maltesers in the same way. Leave for another 5-10 minutes. 4. Melt a little white chocolate and pour over the top. 5. Top with green fondant icing for holly leaves and 3 red skittles/smarties for berries.
1. Pour the cream into a saucepan and bring just up to the boil. Chop the chocolate into small pieces and place in a large bowl. Pour over the boiling cream, then stir until the chocolate and cream are well blended and smooth. Cool, then set aside in the fridge until the mixture is solid, about 2 hrs. 2. Scoop out teaspoons of the mixture and roll into small walnut-size balls with your hands. Sprinkle the coconut onto a plate and roll the truffle in the coconut until evenly covered. Will keep in a cool place for 3 days or freeze for up to 1 month.
Present on little cake board and enjoy!

Remembrance Day The Great War started in 1914, and after four years of bitter fighting the guns of Europe finally fell silent at 11am on 11th November 1918 – six hours after the armistice was signed in a railway carriage in the Forest of Compiegne, France. The following year, King George V sent out a proclamation requesting that a 2 minute silence be held, so “the thoughts of everyone may be concentrated on reverent remembrance of the glorious dead”. Since that first Armistice Day in 1919, a two minute silence has been observed yearly at war memorials and other public places at 11am on the eleventh day of the eleventh month, and on the second Sunday of November. After the end of the Second World War, Armistice Day became known as Remembrance Day, to include those who had fallen in WWII and other conflicts. Twelve thousand British servicemen and women have been killed or injured since 1945.

Otters
The European Otter Lutra lutra lives in a variety of aquatic habitats from lakes, river and streams to marshes, swampy forests and coastal areas. Otters are perfectly adapted to an amphibious lifestyle and can be seen along watercourses through the UK. Otters are active throughout the year. However, they are solitary and nocturnal spending most of the day inside their holts. Holts can be found in river banks, tree cavities and within piles of wood or rocky debris. As otters are strictly protected under the EU Habitats and Species Directives it is an offence to damage or approach an otter or while in its holt where it may be sheltering and raising young. The average life expectancy of an otter is ten years with reproduction starting at 18-24 months. Litter sizes range from 1-5 young; this can potentially make population recovery a slow process if litters are small or if infant mortality is high. The ottersâ&#x20AC;ş diet consists of over 80% fish; insects, reptiles, amphibians, birds and even other small mammals. An otter can dive for several minutes and uses its long whiskers called vibrissae to detect movement in the murky water making it a very efficient hunter. The aquatic habitats used by otters are extremely vulnerable to man-made changes. The draining of
wetland and the removal of vegetation as well as pollution, development and human activity such as dog walking near holts and feeding sites can all put pressure on our local otter population. Historically otters occurred throughout the UK, however they were pushed to near extinction in England in the 1960â&#x20AC;şs and 1970â&#x20AC;şs due to pesticide use, habitat destruction, competition and for their pelts; they were also considered to be vermin. There is now evidence that otter populations in the UK are recovering. In Warwickshire, otters have been recorded along the River Avon and the Tame as well as the River Blythe; there are even reported sightings of an Otter outside the RSC in Stratford Upon Avon. We have also been fortunate enough to capture images of an otter with our camera trap! For keen eyes, Winter is the perfect time to look for animal tracks in the mud and snow. The reduction in vegetation cover exposes many previously unseen features. Otter tracks are distinguished by five digit pads with a central lobed pad. Their claw marks are seldom visible. However, tail drag marks can often be seen trailing in between the footprints. The best place to find otter tracks is along watercourses.
