Do you remember Christmas as a child? The overwhelming excitement every time another door on the advent calendar is opened; the yearning to pinch just one of those Cadbury’s chocolate decorations from the tree; the horror when you realise that said stolen chocolate might mean you are naughty and therefore undeserving of Father Christmas’ generosity? Where did it all go? Now we are too busy worrying about the ever-dwindling bank balance, what size turkey to order, whether drunken Uncle Paul will end up starting World War III during Christmas dinner and which wrapping paper works best with our living room décor! That’s right – we have turned into our mother.

And then of course, there’s the matter of the presents. The temptation is to just say ‘sod it!’ and do the Christmas shopping online. It would be so easy... you could spend a few evenings browsing through the major brands, comparing prices and then ordering most of it via eBay or Amazon at the cheapest possible price. No beating your way through crowds, no Slade or Wizzard screaming ‘Merry Christmas’ every time you walk into a shop. Baa humbug!

No Christmas lights, sounds or feel... is not Christmas! See, that’s the problem – no matter how much we moan, a Christmas without the actual hunt for the perfect gifts is not really Christmas anymore. e d i v i d r e d n e g s a The Christm This may be a huge generalisation but Christmas is not just a time of giving, celebrating and eating; it is also a season when male and female roles become very clear.

Does this strike a chord?

Christmas morning, presents are opened as mum runs around, grabbing every piece of wrapping paper, black bin bag in hand. Dad sits on sofa with his new book and cup of tea. Mid morning, mum’s basting the turkey that’s been in the oven what seems like three days, whilst grilling bacon for brunch. Dad sits reading his book, chomping on a selection box chocolate. Lunchtime and mum’s getting the vegetables on. Dad’s in the pub. Mid-afternoon, everyone’s eating Christmas dinner and mum’s running back to the kitchen as the broccoli’s still in the hostess trolley. Dad asks her to grab him a drink while she’s there. Early evening and mum’s re-washing the pans dad and kids washed an hour before. Dad’s snoring on the sofa.

Who were the ‘wise men’?

Well, simply put, it’s because most men don’t understand the point of wrapping a present just for someone to tear it off again. Therefore, they’ll leave the job until the last minute before moaning incessently and trying to talk a female relative into doing it for them. Maybe they do have a point. After all, when you think back to the very first Christmas as the Three Wise Men presented Jesus with gold, frankincense and myrrh, there was no mention of wrapping paper. We don’t remember reading the bible passage that said ‘and lo, the gifts were contained in small, decorative pieces of paper, festooned with bows and ribbons’. And for the most cynical of people, you could emphasise the fact that these were ‘men’ who were ‘wise’.

Top tip for the guys

But like it or not, wrapping paper is now part and parcel of Christmas, so here is our top tip for men who find wrapping presents a truly traumatic event – don’t! Skip the paper, opt for a gift bag and stick a nice big, ready-made bow on it. ‘Look, it’s a present!’ you can crow. ‘It has a bow!’

And then of course, there’s Christmas wrapping paper. For the uninitiated, this is simply a means to cover presents but for those in the know, it has become an emblem of the Christmas gender divide. Women can spend more on the paper, bows, ribbons and tags And even better, shop local and you may find than the present itself and hours will be spent they will offer a wrapping service. sticking, curling and personalising. Wintry wet weather has us reaching for our wellies, but how much thought do we give them really? Hard-working wellies deserve a bit of TLC now and then. First things first. A lot of wellies split at the heel seam, and this is because we insist on removing them using a step or our other foot to prise them off. Invest in a proper bootremover. It will preserve the life of your wellies and make them much easier to take-off.

CLEAN THEM. Yes - really. How often do you put your boots away still clogged with mud? Take the time to rinse them with clean water then spray them with a boot protector. If your wellies are the sort with a zip, make sure the zip is clean and free-running before storing the boots. Spray the zip with a silicone spray and they’ll last for years.

Store them properly in a cool dry place. Don’t dry kid’s wellies on a radiator as they will become brittle and perish. Don’t leave them in a freezing greenhouse or shed either. A boot rack is great, because it lets you store them upside down (less chance of spiders or mice taking up residence!) and allows the air to circulate – meaning they won’t smell.

Delish Deli Wintery Sausage & Cabbage Tart Method….Preheat the oven to 180 - 200oc 500g shortcrust pastry 90g savoy cabbage shredded • Coffee Union hand roasted “Best in Town” Line a 25cm tart tin (metal is best) with the pastry and 2tbsp olive oil • Fresh bread & cakes 1. leave to rest in the fridge while you make the filling. 1 large leek chopped Homemade 2. Put the olive oil in a large frying pan and cook the onion and 1• red onion chopped specials leek until soft and starting to colour, add the chilli flakes. 2• garlic cloves More seats, more products 3. There are some things that linger a little longer than they should over Christmas – the hangover from those ill-advised ‘couple of pints’ on Christmas Eve, the tiny bits of wrapping paper and glitter the hoover refuses to pick up, the remnants of Christmas Dinner, with the turkey entombed in an entire roll of commercial strength tin foil... But there is no need to simply pick at the turkey for a couple of days until you pluck up the courage to throw it away. Turkey is a versatile, much overlooked meat usually only reserved for the holiday season, which is a real shame as when cooked well and combined with various flavours and spices, it can more than hold its own against other lighter meats such as chicken and pork. Low fat and protein rich, it is also one of the healthiest meats available.

Look good, feel good Of course, you can’t simply carve off a few slices of day-old turkey and expect them to be a feast for the senses. But left-over turkey can easily be used as a substitute for chicken in a variety of eclectic dishes, such as paella, risotto, soups, casseroles and curries. There are also many herbs that enhance the meat’s delicate flavour; these include thyme, rosemary, bay leaf, marjoram and oregano. Americans often use a herb and spice combination using the herbs mentioned, sometimes with a little lemon thyme to add citrus tones. So don’t let your Christmas Dinner go to waste - become a savvy chef this year and recycle your left-over turkey!

(Serves around 4 people for a good hearty meal on a winters evening)

Ingredients 600g left over turkey 100g chorizo cut into chunks 5 fresh tomatoes roughly chopped 1 tin tomatoes 1 onion roughly chopped 1 red pepper, deseeded and roughly chopped into big chunks A dollop of tomato sauce! 2 tsp chopped fresh sage & thyme (dried is fine if you can’t get fresh) 1 tbsp sun dried tomato paste or tomato puree 100g grated cheese (which ever you prefer, cheddar, red leicester or for a deeper flavour, gruyere)

Gently sauté the chorizo to bring out the oils for about 5 minutes, (if you think it’s too greasy, just pour some oil away,) when the oil has been released add the onions and the herbs, turn the heat down, so that the onions gently sweat – you don’t want them to brown, after about 10 minutes add the fresh tomato, tomato sauce and cook gently for about 10 minutes over a low heat, add the red peppers and continue to cook for another 5 minutes. Add the cooked turkey and the tin of tomatoes and leave to simmer gently for another 15 minutes, or until the turkey is heated though, if you prefer a thicker sauce, add a tbsp of sun dried tomato paste or puree. Add salt and pepper to taste. Tip into a oven proof dish and sprinkle over the grated cheese, place in a hot oven (gas mark 4, 180c) for around 10 minutes to let the cheese melt. Serve with hot garlic bread to mop up all the juices. (You can use fresh turkey or chicken – but if doing so add the diced meat at an earlier stage – just after browning the chorizo). Enjoy.

We will remember them Why do we wear a poppy? Scarlet poppies grow wild all over Western Europe wherever the soil has been disturbed. The battles of the First World War churned up such vast areas of earth that millions of poppies germinated and bloomed, often around the bodies of the fallen soldiers. A Canadian surgeon called John McRae wrote the poem In Flanders Fields in which the poppies symbolise the deaths of those who fought. It is a haunting memorial to those soldiers who have died in any war. Why do we have a two minute silence? It was on the eleventh hour of the eleventh day of the eleventh month that the guns of World War I fell silent. Four years of fighting and devastation finally ended. The following year ceremonies of remembrance took place on what was known as Armistice Day. An Australian journalist, Edward George Honey first proposed a respectful silence to remember the dead. He wrote a letter to the London Evening News which was brought to the attention of King George V. The king then issued a proclamation which called for a two minute silence. These days Armistice Day is known as Remembrance Sunday and is a chance to honour the fallen soldiers of all conflicts.

Shopping List - Serves Two 4 duck Legs with thigh bone removed - ask your butcher Olive oil Puy lentils 1 carrot 1 head of celery Chicken stock Bay leaf Garlic Thyme Salt Peppercorns

Duck First salt the duck legs very generously all over and sprinkle with thyme and garlic. Cover and refrigerate for at least four hours. Rinse off the salt under the tap and dry the duck legs with a tea towel. They should be firmer and will have absorbed the thyme. Put in an oven proof dish with more thyme, garlic, and a bay leaf and cover with olive oil. Roast at 100ËšC, very slowly for 6 hours - perfect in a slow cooker or in the bottom of the oven. When done, take the duck legs our of the dish and place on a wire rack ready for later. The oil can be kept and used for roast potatoes. Celery Peel away the outside of the celery base with a vegetable peeler until clean and all the stringy outside has gone. Cut 4 inches up from the base, then quarter so you end up with 4 nice pieces. Braise in chicken stock for 20 minutes till tender. Season to taste. Lentils Soak lentils for 1 hour, rinse and then simmer as per instructions on the packet with a carrot, 1 stick of celery, pepper, thyme and bay leaf. To bring the whole dish together, put the duck in a hot oven to crisp the skin. Put the lentils in a bowl and serve 2 celery hearts and 2 crispy duck legs per portion with some of the stock from the celery as a lovely savoury jus. Superb. Bon Appetite! Your garden

Nature on your doorstep I have a Hedgehog in my back garden We all no doubt enjoyed the great temperatures and glorious sunshine of Summer, but Winter has now arrived, bringing with it cold and windy weather, short, dark days and a less than abundant food supply for our resident wildlife. Whilst we may have the option of warming ourselves by the fire or stocking up on food from the supermarket, British wildlife has to adopt a different strategy. Our wildlife cope with this dramatic change in weather in a number of different ways. Many mammals for example have evolved to grow thick and insulated winter coats which help in trapping a layer of warm air close to their skin. Even with this evolved strategy, Winter is a very trying time as energy demands are high and food sources are at an annual low. It is because of this very fact that a number of mammals adopt a very different and remarkable approach….. Hibernation! We have all found the idea of curling up in the warm and sleeping the winter away appealing, but how does it actually work? For a lot of us, when we think of “hibernation”, we think of Brown bears in Canada or North America fattening up in preparation for tiding down in a well-insulated cave for the harsh winter months ahead. However this very same strategy is adopted by a number of species right here in the UK.

Hedgehogs are one such example but there are a number of other species including dormice, bats, grass snakes, newts’ even butterflies that have evolved to cope with the natural change in seasons. Hibernation is defined as “an extended period of deep sleep, or torpor that allows an animal to survive winter extremes” This is a very ingenious evolutionary strategy which, once triggered by a drop in ambient temperature, reduces the animal’s natural metabolic rate and lowers their body temperature. Thus reducing the animals’ energy needs, at a time when food supply is at an annual low. What I find truly remarkable about this strategy is that an animal, such as a hedgehog, which is very active, racing along through a bramble thicket in search of food, is able to slow down so dramatically and in doing so become so vulnerable. This is why it is so important that these hibernating creatures find safe refuge over winter. What a shame their timing so often coincides with November 5th when we celebrate Guy Fawkes. That bonfire looks the ideal spot for a long sleep until the celebrations start. As winter progresses and that pile of firewood diminishes, we should remember who may be tucked up at the bottom. As wildlife enthusiasts let us be mindful of those in our back garden who plan to sleep through this winter!

“Yes dear, I could do with turning the leaf mould bin, there’s some vintage stuff out there, it’s been a fabulous year for autumn colour all round.” Weather conditions right up to early autumn can influence the time and rate of leaf colouring and you can never predict which trees will make the star turn. Colour pigment, moisture, temperature and tree variety all affect autumn leaf colour but the single most predictable factor in leaf change is daylight. The shortening of daylight hours and lengthening of night, signals the trees preparation for dormancy. Chlorophyll production slows and the leaves true colours are revealed. Like spring bulbs or that first summer vegetable, falling leaves mark another significant change. That feeling of edgy transition occurring before us. Breathe taking colour balance, the familiar musty smell of decaying leaves all act as a sweetener for the colder months to come.

There’s something altogether quite regal about autumn colour, a complex palette mix of deep warm natural and earthy hues give dramatic effect, from canary yellow through to mauve. Why not create a focal point in the garden, plant something with good autumn colour like a liquid amber with leaves turning to a red ruby colour or for smaller gardens maybe amelanchier with foliage turning yellow through to red or maybe one of the Japanese maples. Maybe create an autumn corridor lined with shrubs such as dogwood. Contrast this with the yellow turning foliage of hazel and even try the native spindle bush (Euonymus europeus), its berries when revealed are a bright pink and a reminder of those luminous socks we used to wear in the 80’s. “Right! He suggested buying a set of cheap steel rims for my car and putting the winter tyres on those, storing the originals in my garage. The tyres improve handling on greasy roads, but will really come into their own in snowy and icy conditions, or wet conditions where the temperature is below 7 degrees. Braking and traction are improved immeasurably on winter tyres. If your car is rear wheel drive I’d say winter tyres are essential. If your car is front-wheel drive I’d still say they’re essential. Although the improvement in performance isn’t as great, it is still very noticeable. My friendly tyre-fitter suggests changing them over in November and running with them until February/ March depending on the weather. This year try some winter tyres. You will never regret it. They may even save your life!
