1medium-sizedpotato l 1small onion l 1small leek (100gapprox.) l 25g butter l 1/2 vegetable stock cube l 100mlboiling water l 100mlsemi-skimmedmilk or c cream l Pepper to season

Method

1. Peel the potato and chop into small cubes. Peel and finely chop the onion. Wash and trim the leek and finely slice. 2. Meltthebutter in amedium saucepan, addthe leek,onion andpotatoand stirsothat everythingiscoatedin butter. Sweat down for10minsona lowheat,stirringoccasionally. Meanwhile,dissolvethe stock cubeintheboiling water. 3. Addstock andmilk to pan, coverand simmer on alow heat for15minsuntilthevegetables aretender.For asmoothsoup, carefullyblendthe mixture in thesaucepanusing astick blender.For achunkysoup, pourintoabowlwhenready andenjoy.
