• 1 (10 oz) bag fresh Kale Greens; chopped
• 2-1/2 cups steamed broccoli florettes
• 1 cup pre-shredded red cabbage
• 1 cup pre-shredded carrots
• 1 (14.5 oz) can Margaret Holmes White Acre Peas; drained
• 1 (15 oz) can Glory Foods Seasoned Medium Green Lima Beans
• 1 (16 oz) bottle cole slaw dressing
• 2 tbsp. fresh lemon juice
• 1 (15 oz) can Bruce’s Yams Cut Sweet Potatoes in Syrup, broken into pieces
• 1/3 cup (moist) dried cranberries
• 2/3 toasted nuts (almonds, pine nuts, etc.)
1. Place kale greens, steamed broccoli, red cabbage, carrots, peas and lima beans in a large mixing bowl.
2. In a separate small bowl, whisk together the cole slaw dressing and lemon juice; add to kale mixture and toss well.
3. Add the sweet potatoes and cranberries; mix until just incorporated. Transfer to a salad bowl and sprinkle with nuts.
Honey Carrot Cake
• 1 (16.5 oz.) box yellow cake mix
• 3 whole eggs
• 1/3 cup dairy sour cream
• 1/2 cup water
• 1/3 cup vegetable oil
• 2 tsp. fresh lemon juice
• 1 (15 oz.) can Glory Foods
Honey Carrots; drained and chopped small
• 1/2 cup chopped pecans
• 1 tub prepared cream cheese frosting
1. Preheat oven to 350°F.
2. Grease and flour a 9” round cake pan; chill 10 minutes.
3. In the bowl of a mixer, beat together cake mix, eggs and sour cream until smooth
4. Stir in the water, oil, lemon juice, Glory Foods Honey Carrots and pecans; transfer to the prepared pan.
5. Bake for 35-40 minutes until toothpick comes out clean.
6. Place on a wire rack to cool.
7. When completely cool, ice top of cake with frosting.
Squash & Cheese Casserole
• 1/4 cup bell pepper, chopped
• 2 (14.5 oz.) cans Margaret Holmes Squash with Vidalia Onion, drained
• 1 cup cheddar cheese, grated
• 1 egg, beaten
• 4 tbs. margarine
• 1/2 tsp. sugar
• 1/4 cup chopped parsley
• 1 slice bread, crumbled
• salt & pepper to taste
1. Preheat oven to 350°F.
2. Saute bell peppers in margarine until soft.
3. Combine with drained Margaret Holmes Squash with Vidalia Onion.
4. Fold in cheese, sugar, egg, salt, and pepper.
5. Pour mixture into 1 quart greased casserole dish. Top with parsley and crumbled bread.
6. Bake uncovered for about 30 minutes.
