ust like that… it is the fourth quarter of 2017. Oddly enough, a lot of “f” words come to mind as I think about this time of year: football, fall, foliage, Frankenstein, family, friends, feast, freezing, fireplace, festive, fun, fa-la-la-la-la, Feliz Navidad…See what I mean? My favorite from the above list is family. During the fourth quarter of every year most of us usually pause long enough to enjoy the people who love us most and who we, in turn, love most ourselves. I don’t know how many of you can relate but this year has been nonstop craziness and I, for one, am looking forward to quality time with all of my family. Inside this issue you will find that we have been very busy here at VIPSEEN because this region is exceptionally caring and generous. We are beyond proud to represent all that is positive and good about where we live and are raising our families. After six years of publishing VIPSEEN, I still find it amusing when someone refers to this magazine as a “snooty” or “rich people” or “big shot” publication. It instantly tells me that they have never truly taken the time to look inside and read the stories. This magazine isn’t about social status; it is about social awareness. This publication serves as a platform to our region’s nonprofits so that they can help children, pets, veterans, and families in need. Thanks to our advertisers, we are able to share these great stories and the people who play a part in those stories, with anyone who is interested.

OMEN BIGWIG (NOUN): a very important person on a mission to end breast cancer forever by raising awareness and funds in their community; willing to have fun while wearing a ridiculous pink wig.
Susan G. KomenÂŽ East Tennessee and Susan G. Komen Virginia Blue Ridge selected and asked sixteen local leaders to commit to helping them educate and raise awareness about breast cancer during the month of October by wearing a crazy pink wig all month long. During the 4-week campaign, each BigWig will raise or give a minimum of $1,000,
which will be used to ensure access to essential breast health services and education programs, and support research to find the cures for breast cancer. Through this program, 75 percent of funds raised remain in local communities to help fund local breast cancer initiatives. Our region was first introduced to the Susan G. Komen BigWigs campaign in 2015 and VIPSEEN has been a big supporter from day one. We thought we would take it a step further this year and help the awareness by making the 2017 BigWigs our cover. On Thursday, August 24th, the Party Barn at The Olde Farm was filled to capacity with support for The Holston United Methodist Home for Children. Guests enjoyed a delicious buffet, served in the beautiful setting. The keynote speech was delivered by Greg DePriest, Director of Development for the Mountain Mission School. The President of Holston Home, Bradley Williams, gave a personal description of lives touched through the staff and programs of Holston Home.

The United Ways of Northeast Tennessee held their Regional Campaign Kickoff on Thursday, August 12th at the MeadowView Marriott Conference Resort and Convention Center. The event was hosted by HomeTrust Bank and the United Way of Greater Kingsport. This was the kickoff for the annual fundraising campaigns of United Way of Greater Kingsport, United Way of Bristol TN/VA, United Way of Carter County/Elizabethton, United Way of Greene County, United Way of Hawkins County, and United Way of Washington County. The keynote speaker for the event was Jamie Woodson, CEO of the State Collaboration on Reforming Education (SCORE). She has been a leading figure in spearheading Tennessee’s efforts to better prepare students for postsecondary education and the workforce.

Campaign goals for all six regional United Ways were announced at the luncheon. Mary Graham, President of United Ways of Tennessee, presented Eastman with the inaugural “Regional Leadership Recognition Award”, which recognizes those businesses and organizations emblematic of a strong, vibrant Northeast Tennessee region, committed to its infrastructure and growth, and who have inspired other organization to support that vision. Abingdon’s Main Street was busy on Saturday, September 2nd, as the Third Annual Busker Fest was held. The event featured jugglers, magicians, comedians, musicians, and other whimsical talent. The day had periods of rain showers, but most performers were able to present their shows under tents or from front porches along Main Street. Children delighted to be included in magic shows and as part of juggling acts, as the crowds responded with laughter and applause at the antics. The event was free to the public, but most performers had open guitar cases or other containers available for people to show their appreciation and to collect cash.

Acts came from all over the region and country to participate in the Busker Fest. A “busker” by definition, is a person who entertains in a public place for donations. The festival is organized by Abingdon Main Street in collaboration with the Abingdon Convention and Visitors Bureau.

Thanks to a partnership between ETSU department of Art and Design and Johnson City Public Library, older citizens are getting the chance to spread their artistic wings. The Artful Aging Artist’s Reception focused on the work done with the photography class. Their work was featured in Slocumb Galleries at ETSU on August 17. Participants were taught skills in basic photography throughout the classes, and then encouraged to follow their hearts and photograph things they were passionate about. Several chose nature, some chose children or grandchildren, but no matter the subject, the class members raved about the exciting time they had with the class.

The reception was one any artist would be proud of, including catering by Seely Cooms. Many Friends of the Library members came out to offer support for those displaying their works. The program was offered through funding from a grant, and both groups hope to be able to keep these programs going after the grant ends. Aside from this class, offerings in other art genres like sculpture were also offered as classes. The students for that class will have a reception to display their works at Slocumb Galleries at the end of their course.

Family and friends of the Rose family in Gray, TN hosted a fundraiser livestock show at the Appalachian Fairgrounds on September 2nd. The proceeds from this event went to help the Rose family who recently suffered the loss of their son, Justin Rose from an automobile accident. The fairgrounds hosted an antique tractor show, an auction, live music, and other events. Many in attendance were getting their show cows ready for the main event: the “Hold My Heifer ” cattle show in honor of Justin. The event planners hope to make this an annual event, with proceeds in the future going to a scholarship fund for Daniel Boone high school students. Swing for Soccer PHOTOGRAPHY AND STORY SUBMITTED
The inaugural Swing for Soccer Golf Tournament benefiting the Science Hill High School boys and girls soccer teams took place Saturday, Aug. 12 at Buffalo Valley Golf Course. Brought to the community by the Science Hill Boosters and presented by The Goose Chase, this event offered golfers a chance to play at beautiful Buffalo Valley while providing much-needed support to Science Hill’s dedicated athletes. “Many sports at Science Hill - like soccer - are considered non-revenuegenerating sports,” said Michael Ray, treasurer of the SHHS Boosters. “On average, the monetary contribution from the school district accounts for less than 15 percent of what history shows is necessary to provide our students with a winning program. That’s a lot of additional money that student athletes have traditionally tried to make up through small fund-raisers like pancake breakfasts and selling cookie dough. And we know that friends, family and other supporters have had their fill of pancakes and cookies for a while. So we wanted to offer a nice alternative for helping our soccer programs.” Student-athletes did their part as well, securing hole sponsors for the event. The select-shot tournament brought in 104 golfers who helped raise $12,000 for the soccer program. Proceeds will go toward uniforms, training camps, food and tournaments.

The Australian Dress Down Under 2017 event was held on Saturday, August 26th at Cumberland Square Park in Bristol, Virginia. Guests were encouraged to dress in an Australian Outback style, and in keeping with the theme, dinner was catered by Outback Steakhouse. Gomer & the Three Pyles provided the live music, and there was also a silent and live auction. The live auction included an 8-week-old Australian Shepherd puppy, Boomerang.

The grand opening of Kingsport’s Centennial Park was held on the beautiful morning of Saturday, August 26th. The celebration began with the national anthem sung by Carla Karst accompanied by the Dobyns-Bennett Band. The ribbon cutting followed along with the first official turning-on of the interactive water feature at the center of the park. HEATHER COOK
“We wanted something for the young and for the young at heart to enjoy,” said Brenda White Wright, the Centennial Park Leadership Chair. MoonPie and Cheerwine joined the festivities by providing samples. Both companies join Kingsport in turning 100 this year. Entertainment ranged from the Central Baptist Church choir and a magician to performances by the Kingsport Ballet, the State Theatre Company, and Kingsport’s Showtime! “Now that I’m going to be a grandfather, I have even more love for this park,” says city manager Jeff Fleming. “It was built for future generations, and I will bring my grandkids here every year to show them the importance of celebrating history and sharing values with family.”

THE LADIES OF “RECLAIMED INSPIRED GOODS”
The first Wednesday Wine Walk in Downtown Johnson City was a huge success! Approximately 400 women gathered in the pavilion at The Farmer ’s Market and received a color coded wrist band. This allowed groups to start at different locations, due to the large response for the event. The event was hosted by Reclaimed Inspired Goods, Trek Bicycle Store, Overmountain Outdoors and Fleet Feet Sports. Women spent about 20 minutes at each location, enjoying complementary wine, snacks, and the opportunity to shop. Each stop also provided a “how-to” presentation and/or an introduction to their business. The sidewalks of Johnson City stayed very busy as the women went from one location to another and it was evident that everyone was having a good time. Hopefully, there will be additional Wednesday Wine Walks in the future to education the public about the offerings of Downtown Johnson City!

Dr. Timothy R. Martin has practiced dentistry since 1973. He earned both his Bachelor of Science and his Doctor of Dental Surgery degree from the University of Tennessee, where he received the Mosby Scholarship Award for scholastic excellence. Dr. Martin served his country as a Dentist in the United States Army. Dr. Martin’s professional affiliations include American Dental Association, the Tennessee Dental Association, the American Academy of Sleep Medicine, the American Academy of Dental Sleep Medicine and the East Tennessee Academy of Dental Practice Administration. He is a founding member of the Mountain Empire Dental Study Group and has served as president and vice president of the Tennessee First District Dental Society. Dr. Martin has earned the Fellowship Award from the Tennessee Dental Association as well as The Tennessee Dental Association Volunteer Service Award for his service in Haiti and Dominica. Dr. Martin is a Fellow of the American College of Dentists, an achievement that less than 4% of dentists nationwide have accomplished. A significant portion of Dr. Martin’s practice is devoted to treating sleep apnea and snoring with oral appliances, which are an alternative to CPAP. He is one of only two dentists in the state of Tennessee to be board certified in Dental Sleep Medicine, one of only 189 in the country. He lectures extensively across the state concerning his work treating sleep apnea. Dr. Martin and his wife Linda are Kingsport natives. They have three children; Andy, Kevin and Lindsay, and four grandchildren. One of their favorite accomplishments was running the 1998 Marine Corps Marathon in Washington, D.C. You will be missed, Dr. Martin but we are sure that you will keep busy enjoying your retirement. Congratulations and thank you for all those beautiful smiles.

The Beast Bicycle Race held its second annual race this past Saturday, August the 26th. The race brings awareness to MSHA Cardio/Pulmonary Rehabilitation. The participants can take part in either a 50, 75, or 100-mile bike ride. Tim Murray is the chairman for The Beast and was excited to see the large amount of people show up to take place in the event. Starting and ending on ETSU’s campus, the riders will go down Cherokee Rd leading them into Unaka and Erwin and back to Johnson City.

At 101 Cherokee Street, three businesses have come together to create a destination spot in Downtown Kingsport. Tyler and Anne Greenfield worked to restore an old building and loading dock to provide space for Picsee Studio, Style, and High Voltage, an event space and gathering space. At the Ribbon Cutting Ceremony on September 14, Vice Mayor Mike McIntire opened the event and the ribbon was cut by building owners, Anne and Tyler Greenfield, the Picsee Chicks, and the owners of Style, Joe and Julie Gunn. Guests were able to tour the photography studio, explore and shop at Style, and have drinks and snacks at High Voltage. Picsee Chicks, Cristy Eagan, Becky Jones, and Jennifer Bolling posed for pictures instead of taking them as they showed their studio space to excited guests. Everyone was then invited into the beautiful Style shop which is filled with apparel, jewelry, art, stationary, and accessories. They also design stationery and operate a framing service. At the FuseBox, visitors were able to order drinks and eat on the renovated loading dock at High Voltage. Comfortable seating and an industrial atmosphere made for a perfect modern setting to host an event, watch a football game, experience a song writers circle, or gather with your friends. Although Picsee and Style have been staples in Kingsport for more than 8 years, it is a new experience to see them and High Voltage at 101 Cherokee St. Alderman Jennifer Adler and her family were able to use the Little Free Library on the corner of the building.

Ashley Davis and Jessica White attended the same high school, at the same time, but didn’t really get to know one another until yoga brought them together. Davis and White are the owners of the newest yoga studio in downtown Kingsport, Vida Hot Yoga Studio. After a week-long soft opening that they described as “extremely successful,” the duo was joined by friends, family, and community members on August 15th to officially cut the ribbon and open for business at their 102 West Center Street location. Vida Hot Yoga has over twenty instructors teaching classes from beginners to advanced. They also offer yoga for children. Clients can choose from over 34 classes at the studio. The studio is equipped with 18 infrared lamps that create the “hot” experience. Don’t know what you need to get started? Vida has that covered with a variety of workout clothes, mats, and other must-have items to begin your yoga journey. Vida is the only hot yoga studio in the Kingsport area.

On Aug. 19th, the Jonesborough Farm to Table Dinner transformed Jonesborough’s Main Street into a dining room for 200+ people sitting together at a single harvest table that rans an entire city block. Guests enjoyed a 5-course meal prepared by Chef Alex Bomba and Main Street Catering. A legion of volunteers took part to help set up for and serve the dinner, including 35 community volunteers as well as 25+ students from University High Key Club, Science Hill, and David Crockett High School. But the real stars of the evening were the farmers who grow the food used in the dinner.

“This event is designed to support and spotlight our local farmers,” says Chef Alex Bomba-- who has prepared this meal every year since its inception 7 years ago. “The menu is selected based on what’s available. It’s a constant back and forth with the farmers as the season unfolds, and weather affects the crops and the harvest. CASA of Northeast Tennessee hosted their 12th Annual Fundraiser Golf Tournament on Monday, August 21, 2017 at The Blackthorn Club. CASA (Court Appointed Special Advocates) of Northeast TN’s mission is to advocate for the best interest of abused and neglected children in the juvenile court. CASA believes that every child is entitled to a safe and stable home. Trained volunteers are the child’s voice to ensure that their needs are identified and addressed. In 2016, over 70 dedicated volunteers advocated for around 300 abused and neglected children, though many more were left without an advocate and a voice. Due to CASA’s involvement, these children had a voice in court and an advocate for their best interests. CASA is currently in need of caring community members, like yourself, to “speak up” for these children. CASA of Northeast TN serves the juvenile courts of Washington, Greene, and Unicoi Counties, including the Juvenile Court of Johnson City. Women artists were celebrated at the Journeys of Women Art Show V preview party held at the McKinney Center in Jonesborough on Sep. 7. The juried art show was open to the public from Sep. 8-16 and featured an exhibit of works completed by women artists throughout the region, with all of the art available for sale. A substantial portion of the proceeds will benefit the Women’s Fund of East Tennessee, a public nonprofit charitable organization serving 25 counties in East Tennessee, and one of the only local funds dedicated to a regional approach in researching, vetting and granting funds to organizations focused on improving the lives of women and girls.

On Thursday September 7th, Bellafina Chocolates celebrated the completion of their mural “A Celebration of Women, Children and Chocolate.” The community volunteers and local artists that made the mural possible were recognized for their contributions to the rainbowcovered mural. The community (and a group from the Boys and Girls Club) enjoyed an afternoon of free popcorn and snow cones, face painting, and a handson painting activity led by lead artist, Ellen Elmes. Entertainment was provided by Holloway Dance Studio, the Girls Inc. Step Show, (and New Visions Youth Program.) “I am so grateful for the many volunteers and talented artists that created this beautiful work of art, as well as the City of Kingsport and the Kingsport Public Art Committee for their support,” said Brenda Barnicki, founder and president of Bellafina Chocolates. Bellafina Chocolates is an artisan chocolate company whose sole purpose is to help threatened women and children around the world. 100% of profits benefit charities helping children threatened by disease, poverty, abuse, or neglect. The company is run entirely by volunteers, plus the paid positions added to help women recovering from addiction, incarceration, abuse, or other personal struggles.

The Community Center of Abingdon does Meals on Wheels a little differently than the others, and because of this they need to raise more money than other similar organizations. While most Meals programs put a starting age limit of 65, this group doesn’t. Why? Director Nathalie Graham says it’s because everyone, especially veterans, need to eat, no matter what the age. This decision means more veterans get help, but the group does not receive national funding for the charity. EMMITT YEARY SPEAKS ABOUT VETERANS

With younger vets suffering from PTSD and other anxiety disorders, that means they don’t go out much, and the twice weekly delivery of a hot and a cold meal means they have less worry in their lives. To raise money, the group recently held a golf tournament at Elizabethton Golf Course. Several local Veteran’s groups were on hand for the event, and some event took part in the tournament. Golfers placed based on overall team performance, but also had the options of competing individually for closest to the tee, putting, and longest drive.

During the kickoff ceremony, Walmart of East Tennessee presented Second Harvest with a donation in the amount of $55,211.74. Kids in the Tri-cities got to test their fitness abilities with the Dive, Ride, and Stride Triathlon event held August 19. Participants started off their race at Legion Street Pool. After registration and receiving their t-shirts and swag bags, they were divided into age group to start their heats of the race. The children started off with the water portion on the Main Street side, and after swimming to the end of the pool, they jumped out and ran over to the bicycles to put on their helmets and make their way up the sidewalk and to the Tweetsie Trail. There they biked a mile or more, depending on age, before starting their run down the other side of Legion Street. Younger participants then exited at the Legion Street overflow parking lot while the older kids made ran an extra block down Main Street before circling back to the lot to finish the race. Every child in the event received a medal and prizes were awarded for each age group. Door Prizes were also given away and two lucky participants rode away with new bicycles. Organizers also had a variety of sponsors on hand giving out tasty treats to the kids and parents attending.

Some of the region’s top chefs prepared a delightful smorgasbord with fresh product provided from local farmers and food providers for a unique event, “The Farmer and The Chef”. The event was held on Thursday, September 7th, at The Blackthorn Club in Jonesborough, Tennessee. The event was hosted by Second Harvest Food Bank of Northeast Tennessee. Proceeds from the fundraiser go directly to help feed the individuals and families in Northeast Tennessee who may go hungry due to lack of access to food. September is Hunger Action Month.

She shared how the Club was her saving grace after she took in her sister’s five children and how the Club has provided experiences and programs that her children would go without if it weren’t for the Club. The event gets its name from the fact that the kids are the true guests of honor for the night. A Club member sits at each table with attendees and enjoys a special steak dinner alongside the guests who enjoy a delicious burger. FRIENDS of the Tri-Cities held their annual barn dance a little early this year. Past dances have been held in October, butthey decided to warm it up with an August 25th dance date. Everyone came dressed in their best cowboy wear and feasted on some mighty-fine food before heading upstairs in the barn of the beautiful Allandale Mansion in Kingsport. “The Bearded” played some down-home music and provided kids with extra washboards and a microphone. FRIENDS danced the night away with generous support from The Palmer Center Foundation of Kingsport. This is one of several events thrown by the FRIENDS group throughout the year. They have activities for various age groups and all ages get-togethers like the dance and a November trip planned for Dollywood. The second annual Nine at Night party was held on Friday, August 18th at the Blackthorn Club in Jonesborough. The event featured food and drinks, live music, and games. The games included a glow-in-the-dark driving range, glow-in-the-dark putt putt, virtual reality experiences, and a novelty photo booth.
Attendees also had the chance to test their putting skills against the nation’s best in the Major Series of Putting contest. The winner will have the opportunity to compete in the 2017 Major Series of Putting Championship event in Las Vegas.

In addition to the game stations, there was also a Joe Gibbs Racing Car from Stanley Black & Decker on full display. Appalachia Service Project had a home project in the parking lot and attendees had the opportunity to sign the frame of the house. Nine at Night is part of the Niswonger Children’s Hospital Classic. The Classic is the Mountain States Foundation’s biggest annual fundraiser and benefits the region’s only children’s hospital. Unpopular Opinions Disclaimer: The opinions in this article are not necessarily the opinions of VIPSEEN Magazine, its owner, or the staff (other than me, of course). Have you noticed the trend of asking other people to share their “unpopular opinions”? News anchors are proudly sharing their unpopular opinions in editorial segments. Newspaper columnists are letting everyone know their quirky dislikes. The hash tag #unpopularopinions is trending on Twitter daily. Every other post on social media is one asking friends to post their unpopular opinions and requesting that people only respond with “agree” or “disagree”. I suppose that’s so no arguments are started, because we all know that social media is never an outlet for discord. So, why the fascination with other people’s unpopular opinions? I have no idea, but I find it interesting that what we once thought taboo is now considered trendy. It’s no secret to anyone that I am a teller of unpopular truths, so I decided that I would share a few of my own less common opinions here… • Not all babies are cute. We always say they’re cute, but some babies are ugly. • I don’t like super pointed fingernails. I know they’re the current fashion, but they look scary and catlike. • I don’t love Broadway plays or any other show where people randomly break into song. Also, I’d rather hear nails on a chalkboard than someone singing opera. • Sushi is downright repulsive. • I don’t get the big deal about Harry Potter. He even got his own “world” at Universal Studios in Florida, but I think the whole Harry Potter thing is way overrated. • Pole dancing classes are stupid, unless you’re training to be a stripper. • The “man bun” and the “man headband” trend needs to stop immediately. • Public displays of affection are awkward and unnecessary. • I can’t stand those plate thingies people wear in their ears. This is not Africa and you are not going to be featured on the pages of National Geographic. • Coconut is disgusting in both taste and texture. The people who drink coconut water voluntarily are just freaks. • I think we should do away with the ACT and SAT. All high school graduates who can balance a checkbook, carry on an adult conversation without using the words “like” or “whatever” every 3 seconds, and jump start a car should automatically be accepted to any college of their choosing. • The fact that we aren’t driving flying cars in 2017 makes me question whether we really sent people to the moon in 1969. • I don’t like the Beatles, Star Trek, or Star Wars. I am also well aware that 99.9% of you reading this are screaming, “DISAGREE” right now. • I’ll never understand Dr. Who or the people who love it. • I will never figure out smoking. I just can’t see anything refreshing about putting tobacco in your mouth and setting it on fire. • These are just a few of my own personal opinions. They aren’t meant to offend anyone. I know they aren’t popular with most people, but they’re mine and I’ll stick with them until I’m influenced otherwise. • Heck, maybe if everyone started sharing their own unpopular opinions, people would get accustomed to differing views and stop being offended by every thing they don’t agree

Founded in 1980, the Eastman Road Race is a race that has it all. The Eastman Road Race has something for everyone: A 10K run, 2 mile run, 2 mile walk, and youth runs. Starting on September 8th, the youth runs were held at 6:00 pm. Followed the next day starting at 8:00am was the 10k run, 2 mile run, and 2 mile walk. Participants were given a very nice race package including a performance shirt, socks, and a pre-race dinner. Fall’s Favorite Flavor…Cinnamon!

gently makes her presence known with the scents and smells of cinnamon. Imagine up by the fire with a cup of warm Cinnamon Latte oozing over with whipped cream. FOrallcurling taking a stroll in the woods admiring the colorful leaves while munching on a cinnamon
and sugar coated snicker-doodle cookie. And if that isn’t enough motivation to warrant an afternoon in the kitchen baking, then think back to Christmas Morning when your mom baked Cinnamon Walnut Swirls, a rich buttery yeast roll filled with ground walnuts, cinnamon and sugar with drizzled cream cheese glaze. Make memories come true and bake- up some deliciousness with Fall’s favorite flavor …cinnamon! No need to order a latte at a fancy coffee shop; make it at home with this simple recipe. Whole milk and strong espresso paired with homemade cinnamon syrup makes this latte sweet, creamy and packed full of flavor. Whipped cream shaped leaves sprinkled with ground cinnamon were piped using a leaf tip and frozen until ready to serve. Pour the latte into a large mug, top with whipped cream and cinnamon coated leaves, sit back and enjoy! Best served with a couple of snicker-doodle cookies or a Cinnamon Walnut swirl. Snicker-doodles as they are called can be crisp or soft depending on the ingredients used. Sometimes called sugar cookies, Snicker-doodles have a cracked surface caused by rolling the raw dough into a mixture of sugar and ground cinnamon. The texture of the cookie has a soft center and crispy edges especially if made with shortening. Some recipes call for butter or oil, sugar, flour, eggs, cream of tarter as the leaven. Snicker-doodles are easy-to- make and bake on short notice and perfect for freezing unbaked or baked. The cookie name Snicker-doodle may have come from Germany called “schneckennudelin” or “snail dumpling” but no matter where they are from we are thankful for this delicious cookie. Cinnamon Walnut Swirl is like a cinnamon roll only ground walnuts; sugar, egg, cream and butter make the filling of this sweet breakfast or afternoon tea bread. Rich buttery yeast dough is mixed with whole milk, active dry yeast, sugar, eggs and bread flour. The dough is mixed together and allowed to rest for rising, then rolled into a large rectangle and filled with the ground walnut mixture. The roll is tightly rolled into a jellyroll shape and cut into 12- 1” rolls and placed in a greased spring form pan. Some rolls are baked on baking sheets but this recipe was baked in a spring form pan. After the rolls are allowed more time to rest (rise) they are baked 50 minutes and cooled before drizzling with cream cheese glaze. These rolls are served like a cake or can be pulled apart into individual swirls. The dough freezes well so double the recipe to make two-dozen. No matter what Fall means to you be sure to include the flavor of cinnamon, once considered more precious than gold in ancient times, these traditional recipes will become your families favorite flavors to be cherished for years to come.

Cinnamon Latte
INGREDIENTS: 2 cups whole milk 1-cup espresso or strong brewed coffee 1-teaspoon maple syrup or vanilla extract Cinnamon syrup ½ cup sugar ½ cup water 2 teaspoons ground cinnamon 1 cinnamon stick
INSTRUCTIONS: In glass microwave safe bowl, microwave water, sugar, ground cinnamon and stick for 3 minutes on high in microwave. Stir mixture and cool. In saucepan, add milk, coffee, and maple syrup or vanilla. Heat until very warm but not boiling. Add cinnamon syrup to milk, stir to combine and thoroughly heat. Pour latte into 4 mugs add whipped cream and whipped cream shaped leaves. Serve with cinnamon stick if desired. Whipped Cream Leaves: Whip 1 cup chilled heavy whipped cream with 4 tablespoons confectioners sugar to still peaks. Reserve half of whipped cream for latte. In disposable piping bag fitted with large leaf tip # 366 fill bag with remaining whipped cream and pipe leaf shapes on parchment lined baking sheet. Place baking sheet in freezer until frozen. Sprinkle with ground cinnamon if desired. Yield: 4 servings
Cinnamon Walnut Swirl Yield: 1 dozen rolls
INGREDIENTS: 1- cup warm whole milk (105-110 degrees) 1- ¼ ounce package active dry yeast 1/4 cup granulated sugar-divided 4 cups Bread flour- tested King Arthur 1 ½ teaspoons salt ½ cup vegetable oil 1 egg ¼ cup butter, melted- for spreading on dough INSTRUCTIONS: Dough: In small bowl, combine milk, yeast and 1/8 cup sugar, let stand 5 minutes to proof .In separate mixing bowl, combine flour, remaining 1/8 cup sugar, and salt. Set aside. In bowl of stand mixer, fitted with dough hook, add milk mixture, oil and eggs. Beat to combine, gradually add flour mixture. Beat until smooth. Dough will be soft. Add additional flour if too sticky. Place dough onto a lightly floured surface knead until smooth and elastic about 5 minutes. Coat mixing bowl with cooking spray and place kneaded bread into bowl. Cover and let rise in warm place until double about one hour. Meanwhile, prepare filling. In saucepan, bring to soft boil milk and butter. Set aside. In small mixing bowl, add nuts, sugars, cocoa, yolk, vanilla and salt. Gradually add milk butter mixture to nut mixture. Stir and set aside. Lightly grease 1-9” spring form pan with cooking spray and line bottom with parchment paper. Set aside.
FILLING 1 ¾ cup ground walnuts 1/4 cup granulated sugar ¼ cup dark brown sugar 1-teaspoon ground cinnamon 1-teaspoon dark unsweetened cocoa ¼ cup whole milk ¼ cup butter 1 egg yolk ½ teaspoon vanilla ¼ teaspoon salt On lightly floured surface, roll out dough into a 10 x 15 inch rectangle. Brush dough with melted butter, sprinkle with nut filling to within one inch around the edge. Roll up dough starting at long side, jelly-roll style, pressing edge to seal. Cut into 1-inch slices and place in spring form pan. Cover and let rise in warm place for one hour or until doubled. Preheat oven to 350. Bake rolls for 50 minutes. Check at 20 minutes to see if rolls are darkening. Cover with foil and continue baking if needed. Allow to cool remove from pan. Drizzle with Cream Cheese glaze. Cream Cheese glaze: 1- 4 ounce package cream cheese, ½ teaspoon ground cinnamon, 1 teaspoon vanilla, 1 cup confectioners sugar and 4 tablespoons whole milk. Beat all ingredients together until smooth. Drizzle over rolls.
Snicker-doodles INGREDIENTS: 1 cup shortening 1 ½ cups granulated sugar 2 eggs 2 ¾ cup all purpose flour 2 teaspoons cream of tarter 1- teaspoon baking soda ½ teaspoon salt 1-teaspoon vanilla Coating: ½ cup granulated sugar + 1 teaspoon ground cinnamon

INSTRUCTIONS: Preheat oven to 400. Line baking sheets with parchment paper, set aside. In large mixing bowl, cream together shortening and sugar until thick and creamy. Add eggs and vanilla beat until mixed. Sift together flour, cream of tarter, baking soda and salt in separate bowl. Spoon blended flour mixture into cookie dough. Beat dough to blend but do not over beat. Mix together coating in small bowl, set aside. Roll dough into 1” balls, roll into cinnamon and sugar coating. Place balls on baking sheet 2” apart. Bake at 400 for 8-10 minutes.
