Find out more at visitlancashire.com WWT MARTIN MERE WETLAND CENTRE CELEBRATES 40 YEARS From humble beginnings back in 1975, when the nature reserve first opened its doors to the public, WWT Martin Mere Wetland Centre is now one of the region’s leading nature reserves attracting record numbers of pink footed geese and other migratory birds. FLY WITH THE RED ARROWS Step into the cockpit of the new Red Arrows Sky Force ride at Blackpool Pleasure Beach from spring 2015 for a 72ft high white knuckle ride that will see you swooping and gliding on a 360 degree tour of the skies. UK’S BIGGEST WALKABOUT THEATRE You’ll be begging for more at this year’s annual walkabout theatre spectacular in Lancaster’s Williamson Park, as the story of Charles Dickens’ Oliver Twist is brought to life from 3 July – 15 August. Extend your stay with an overnight break in this compact and cosmopolitan city – just over 2 hours by train from London and Glasgow.
A FOOD OBSESSION After £4 million worth of investment the final phase of development at Lancashire’s Michelin Starred hotel & restaurant, Northcote, will be unveiled in early 2015. Coinciding with the hotels 30th year anniversary, the new bedrooms will add to the new cookery school, dining room and private dining areas that were opened in 2014. A NEVER ENDING LOVE AFFAIR Voted the most romantic film of all time Brief Encounter will be celebrating its 70th anniversary this year, and the film’s location, Carnforth Station & Heritage Centre, will be commemorating the anniversary with a new exhibition and events.
NEW LYTHAM PROMS FESTIVAL 2015 will see Lytham Proms morph into the week long Lytham Proms Festival from 39 August. This bigger, longer and more diverse event will now include more music, live comedy and literature in the lineup as well as the ‘Last night at the proms’ classical concert with Elaine Paige and Marti Pellow singing songs from the stage and screen.
TRANSFORMATION FOR GUILD HALL The Preston Guild Hall complex is undergoing a massive transformation which will be revealed in 2015 and will host an eclectic mix of retailers, quality dining venues and live entertainment including comedy nights, classical concerts and West End shows.
A ROYAL RETURN After an eight year gap, the county’s leading agricultural, The Royal Lancashire Show will return to Ribchester from 7-9 August. The line-up includes animal displays, food marquee, craft area and family entertainment .
TOUR DE FORCE Building on our enviable reputation for cycling, Lancashire is delighted to be hosting a leg of the Tour of Britain in September. Flags at the ready!
GREAT BRITISH RHYTHM AND BLUES FESTIVAL Now in its 26th year, this super cool music extravaganza has won Best European Blues Festival for the past two years and continues to delight audiences from across the world. THE TERN PROJECT The award winning Tern Project bird sculptures adorn the promenade and jetty around the Midland Hotel giving a nod toward Morecambe Bay’s reputation for brilliant wildlife. It’s no coincidence then that
BBC Autumnwatch has twice been broadcast from RSPB Leighton Moss just north of Morecambe in Silverdale. The reserve’s resident otters became very popular with viewers as well as bird

If you are visiting with the family then Cleveley’s Promenade is home to the Mythical Coastline Sculpture Trail, ideal for selfies and arty shots. For more arty inspiration take the kids out on the sands to build sandcastles and make beach sculptures with the rocks and seaweed. The open beach, Jubilee Skate Park and splash pad are also great for action shots. If its animals you want then Farmer Parrs is a good one for cuddly animal photos and if you visit in the spring you’ll get the chance to feed chicks and lambs – always a popular one to share on Facebook.
If architectural and still life photography is more your style then head north to the historical fishing port of Fleetwood, with its Art Deco Marine Hall, three light houses, Victorian market and bustling marina (including the Freeport Shopping Outlet). At low tide the sand banks of the estuary reveal the skeletons of old fishing boats and the Knott End passenger ferry harks back to a bygone era as it shuttles back and forth across the mouth of the River Wyre. EXPLORE THE NATURAL WORLD If birdlife sparks your interest then take a trip out to Wyre Estuary Country Park, an area of Special Scientific Interest in terms of migrating and feeding birds. The murmuration formations over the Estuary and Morecambe Bay are truly spectacular
if you visit during the autumn. The new tower at Rossall Point is also perfect for wildlife photography, providing both height and shelter from the elements; and the view at sunset across the bay is a moment to capture.

Just south of Preston and a mere 30 minutes from Manchester, the market town of Leyland and its surrounding countryside is well worth exploring. With a range of attractions just minutes from the M6, it’s also an ideal place to stop off on route, if you’re tackling a long road trip. Canal Walk of Wonder One of the ‘Seven Wonders of the British canal system’ -The Straight Mile is an impressive embankment that carries the Leeds Liverpool canal 60 feet above Burnley. NORTHCOTE’S NEW COOKERY SCHOOL Lancashire Life’s Sue Riley road tested Lancashire’s luxurious cookery school and came away with almost everything she ‘kneaded’ to know. Michael Vanheste led the inaugural Beginner’s Bread Course and as head tutor he will take most of the sessions at the new cookery school at Langho, with chef patron Nigel Haworth and executive chef Lisa Allen also running occasional masterclasses. During the day I learnt about flour and its protein content (look for 12-14% if making bread); that fresh yeast can be bought cheaply or sometimes given away

POTTED DUNSOP BRIDGE TROUT Ingredients: 250g unsalted butter cut into cubes 1tsp each of mustard powder, fresh ground ginger, cayenne and nutmeg 4 cloves of garlic peeled and the core removed 3 large unwaxed lemons 1 large handful of flat leaf parsley 1 loaf of good country bread sliced thick and toasted 1 handful watercress 6 small jars or 1 large jar 6 small fillets of very good quality lightly smoked river trout – preferably Dunsop Bridge Trout Method: Boil 250 ml water in a small pan, as soon as it reaches a rolling boil blanch the garlic cloves for 1 minute, drain and refresh the garlic in cold water. Repeat the process 5 times, then using a pestle and mortar or hand blender to puree the garlic with a level tsps salt. Grate the rind of all 3 lemons and reserve. Juice the lemons, sieve and reserve. Pick the parsley leaves off the stalks and chop as fine as you can and reserve. Peel the trout skins off and flake into large rough flakes. Pick any bones and discard. Reserve the skins. In a heavy based pan add the cubed butter and place on moderate heat. Bring to a boil and cook until the solids are brown and the oil is clear. Allow to cool and sieve off the solids. Pour back the clarified butter into a clean pan and warm lightly. Add the trout skins and simmer for 2 minutes to infuse the smoked fish flavours, remove skins and discard, add all the dry spices and simmer for 2 minutes to release the oils. Keep warm.

In a bowl mix the flaked fish with the garlic puree, the chopped parsley and the lemon rind, stir in the lemon juice, check the seasoning and pour into sterilised individual jars or 1 large Kilner Jar. Pour in the warm clarified butter and allow to infuse for 24 hrs before eating. Enjoy on slices of good toast and dip into the aromatic spiced butter. Will store for up to 3 months as long as the fish is preserved under the butter. PAGE 64

Who doesn’t remember childhood days spent at the seaside? Building sandcastle works of art, begging for ice cream, wobbling along the beach on the back of a donkey and beating your parents at crazy golf – great memories that you’re sure to want your own children to have.
Prime sandcastle sand can be found on the main beaches at St Annes, Blackpool, Cleveleys, Fleetwood and Morecambe. During the summer there are donkeys on the beach at St Annes and Blackpool (check in advance as they are entitled to one day off a week) and Fleetwood beach is a

Forget dark and drafty bird hides, the brand new hide at Brockholes nature reserve near Preston gives a 21st Century spin to these often intimidating spaces. With floor to ceiling glass visitors of all ages can see the birdlife on No 1 Pit Lake and the new Sand Martin wall,
which will be particularly active when the birds arrive to breed in the spring. The pit lake is home to different species of native and migrant birds. Look out for the little ringed plover, a species protected by law, which nests on the ground and can be very difficult to see.

CYCLE ADVENTURES ON THE WAY OF THE ROSES Morecambe – Bridlington – 170 miles Last summer, my friend James decided he wanted to celebrate his 40th birthday in style by tackling the Way of the Roses cycle route. How could we turn down such an adventure! After endless planning and with panniers packed, we embarked on this four day trek starting on the Morecambe Bay coast (after an obligatory group photo on the promenade.) Everyone was so friendly and we were greeted by so many well-wishers on route as we travelled through the historic city of Lancaster, over the Millennium Bridge and into the Lune Valley. Although much of route was familiar to me, you really get a different perspective when traveling on two wheels – especially peering over the hedge rows! The first day was ‘Lancashire Day’ and for us it was a good day with the wind on our backs. We flew down the green lanes in and around the northern reaches of the Forest of Bowland. In no time at all we had great views of Ingleborough and the Yorkshire Dales ahead guiding us into Yorkshire. Top tips – It’s worth having an official Sustrans map with you (in addition to signage). Take your time and enjoy the whole adventure. It takes 3 - 4 days to complete, and with plenty of country lanes, quieter roads and some serious hills thrown in, it's a challenging but rewarding cycling ride. You’ll definitely get to see why it’s one of Britain's best 'coast-to-coast' routes… Mark McTigue

BIKING IN BREATHTAKING BLEASDALE
Inglewhite to Chipping via Scorton Miles 32 – Terrain, undulating With a definite October nip in the air, my cycling friends and I donned gloves and helmet in the glorious sunshine as we cycled out of the pretty village of Inglewhite. We climbed through the Forest of Bowland towards Beacon Fell Country Park taking us onto Bleasdale Moor, up towards Lancaster and eventually bringing you to the village of Scorton. As is usual, we stopped for a well-deserved rest at the Priory Café for homemade soup, sandwiches and a warm fire fuelling us up for the route back to Chipping. The return route took in Oakenclough, a small community centred on an old paper mill powered by the River Calder. We continued along the peaceful country lanes, where I kid you not - you can hear a pin drop, towards the village of Chipping, known for chair makers, cheese making and the Wild Boar Park The highlight of the ride has to be the views across to Morecambe Bay and the Cumbrian fells as you climb the hills out of Scorton, not to mention the opportunity to see so much wildlife. It was the kind of day when you feel glad to be alive, clear blue skies, Autumn colours in the hedgerow, and the wildlife all around. We never tire of the wondrous views, stunning fells and the plethora of great places to grab a warm drink and a bite to eat. Top tip- Allow plenty of time to take in the scenery, remember your camera and don’t tell everyone…they will all want to go! Cycling in Lancashire is our guilty pleasure! Michelle Mellor

Standing proudly on its hilltop with its battlements and towers, silhouetted against the sky, Lancaster Castle dominates the surrounding town of Lancaster. Here a succession of military fortifications dating back to a Roman fort in AD79 has provided security against attack. Each succeeding fortification has gained in strength. The castle was founded in 1093 by Roder de Poitou and the castle developed from humble fort to a significant building that today now boasts over a 1000 years of history!
The Guided Tour To see all of the castle you must go on a guided tour, but don’t worry the tours have unsurprisingly been recently handed the “Best Told Story” accolade by Visit England, which according to the citation, is an honour “awarded for particularly innovative and effective interpretation or tour, telling the story to capture visitors’ imaginations.”

Ancestors of the Reynolds family have lived at Leighton Hall near Carnforth since 1246 and, from the 19th Century when it was owned by the famous furniture making Gillows, it has rather unusually being passed down through the female line. The family live in the whole house, all of the time, so the likelihood of bumping into one of them when you visit is quite high. As visitors often comment that “It’s so nice to see a house that’s actually lived in!” Being situated within Arnside & Silverdale Area of Outstanding Natural Beauty is without doubt one of the privileges of living at Leighton Hall but as lady of the house Mrs Suzie Reynolds puts it “The challenge is keeping it all together – there always seems to be some urgent maintenance problem that needs doing that quickly eats up precious resources.” @visitlancashire

Built on the site of a Norman keep the grand property you see today dates largely back to the 1560s. Whilst its hilltop position provide visitors today with amazing views, its location is integral to its original purpose, to protect and defend the family; although the fact that the tower was besieged during the Civil War proves that this wasn’t always successful.
