Pucallpa comes from the Quechua puca (red) allpa (soil) owing to the rusty color of the department’s clay earth. The indigenous people refer to Pucallpa as May Ushin (reddish land), a name which comes from the Pano language family.

What to eat? The river and the Amazon region provide the main ingredients for Ucayali’s cuisine. Typical dishes include patarashca (fish seasoned and cooked in bijao leaves), inchicapi (chicken soup with peanuts, coriander, and cornmeal), inchicucho (prepared with corn, peanuts, and chili pepper), juane de gallina (rice with chicken, eggs, olive, wrapped in bijao leaves and spices), yuca juane with paiche (ground peeled cassava and sacha culantro with pieces of paiche, onion, sweet pepper and spices, wrapped with bijao leaves), picadillo de paiche (dried and salted fish strips with onions, tomatoes, and coriander), tacacho con cecina (a banana dough with cured pork), and chonta (a heart of palm salad). The most popular drinks include masato (cooked, kneaded and fermented cassava), aguajina (mashed, filtered, and sweetened aguaje palm fruit), and fruit juices such as camu camu and cocona.

What to buy? Among the main activities of the indigenous communities Shibipo - Konibo there is craftsmanship, recognized in its five lines: jewelery with ecological seeds, basketry (fabrics of cañabrava), textiles (embroidered looms painted with natural dyes where the geometric designs stand out), ceramics (tinajas and mocahuas) and carving in Amazon woods (sculptures).
