a glorious time of year this is. From strolling in local parks aglow with fall colours, to browsing through farmers’ markets stuffed with harvest vegetables, there’s so many ways to feast our senses on the season. This month we bring you “Simmered Fall Suppers” by culinar y herbalist Pat Crocker. It’s a collection of one-pot meals that blends the har vest bounty with hardy local herbs such as p u m p k i n a n d k a l e s t ewe d w i t h c u r r y spices, cannellini beans baked with fennel and rosemar y, and steamed vegetables and rice flavoured with garlic peanut sauce.

And Dr. Zoltan Rona brings us another g reat health feature this month focused on his “Top 5 Recommended Minerals for Fall” Number one on the list is potassium iodide, a mineral best kept in the medicine cabinet for emergencies, as it can be invaluable for thyroid protection in case of a nuclear war (a rising threat).

Also on the list is magnesium, a mineral which aids sleep, balances blood sugar, lowers blood pressure and helps prevent hear t attacks (Dr Joseph Mercola likes threonate or citrate for ms of magnesium, but I prefer to take 200 mg of magnesium bisglycinate ever y evening before bed for its relaxing and sedative effects.)

Another key mineral on Rona’s list is

zinc, which helps to prevent colds and sickness, making it a powerful ally as we go back to work and school.

Fur ther on the subject of circulating vir uses, monkeypox has been in the media spotlight lately, and now an immunization campaign is star ting up. But in his ar ticle “Monkeypox – To Fear or Not to Fear” on page 8, Dr Thomas Levy, MD, says don’t be too quick to line up for a shot He comments: “A good level of nutrition, along with judicious supplementation with vitamins and minerals, will almost completely prevent the transmission of monkeypox, from either an infected animal or human And when it is contracted, the application of any of a number of bio-oxidative and other therapies will give a rapid resolution to this infection.”

drink tended to induce an initial ‘relaxing’ effect for boys, before making them more restless. Girls’ behaviour was not signif icantly affected. Also, consuming one sugar y drink seemed to have a negative effect on s t u d e n t a c h i eve m e n t i n math for boys and a positive effect for girls

“Our study is the f irst to provide large-scale experim e n t a l ev i d e n c e o n t h e impact of sugar y drinks on p r e s c h o o l c h i l d r e n . EXTRACT OF WHOLE GINGER HAS ANTI-CANCER EFFECTS

Scientists published the r e s u l t s o f a f a s c i n a t i n g 2011 study in Cambridge University Press about the anti-cancer effects of whole g i n g e r I n c o n t r a s t t o effects of ginger’s individu a l c o n s t i t u e n t s , i t wa s found that extract of whole ginger can halt some canc e r s a n d s h r i n k p r o s t a t e cancer by as much as 60%

The research team suggested a possible synergist i c a n t i - c a n c e r e ff e c t o f several ginger compounds, potentially including one or m o r e c h e m i c a l s t h a t a r e found only in ver y small amounts, the impor tance of wh i c h m i g h t h ave b e e n ignored

The study included both cancer cells and mice, and t h e c h e m i c a l u s e d c a m e from a single batch of ginger freeze-dried over several weeks Breast and cer vic a l c a n c e r s a l l s t o p p e d g rowing in the presence of extract of whole ginger, and a spectr um of prostate cancer cells showed a process of cancer cell death

The amount of whole ginger that a human would have to consume to reproduce these anti-cancer benef its would be 3-1/2 ounces daily; although this is a signif icant amount, it may yet prove an effective cancer treatment because the study found no toxic side effects. MONKEYPOX INFECTION –TO FEAR OR NOT TO FEAR?

Although many have never heard of it until recently, monkeypox infection is not the result of the emergence of a new vir us Rather, it was f irst identif ied in captive cynomolgus monkeys in Denmark in 1958. [1] The f irst documented human infection was repor ted in 1970 in a 9month-old in the Congo. After clinically recovering from the infection and its associated rash over a month-long period, this baby then contracted the measles and died six days later [2]

While not found exclusively in remote populations in Central and West Africa, limited monkeypox outbreaks appear to have occur red most commonly in such areas of the world, where advanced malnutrition can potentially make some otherwise benign infections life-threatening. [3] This initial case also ser ves to highlight the fact that underlying chronic malnutrition with moderate to severely depleted vitamin and mineral stores in those living in such remote areas of Africa literally sets the stage for contracting any infectious disease

The ease of prevention and susceptibility to rapid cure of the virus should be kept in mind before deciding to proceed directly with any monkeypox vaccinations that end up being offered to the public

Monkeypox cases have only occur red as ver y limited outbreaks, never as an epidemic or a pandemic Such an outbreak is a cluster of cases in a given area from a pathogen with a limited contagion risk. A n e p i d e m i c / p a n d e m i c requires a pathogen that is ver y easily spread This is not the case with the monkeypox vir us.

Typically, while human-tohuman transmission is certainly possible, it is the exposure to and/or the consumption of infected animals, as well as their consumption of each other, that both spreads this vir us and ser ves as a reser voir for it This is an additional reason for its primar y presence in Africa, in addition to the overall poor nutrition on much of this continent [5,6]

Most of the fear cur rently seen with the potential spread of the monkeypox vir us is due to the fact that both monkeypox and smallpox comes from the same genus of DNA vir uses [21] Smallpox has been estimated to have killed between 300 and 500 million people in the 20th centur y. [22] Understandably, then, anything that is remotely related to smallpox can be expected to generate a g reat deal of concer n

While the smallpox vaccine is credited for the effective eradication of smallpox, it is also believed by some that waning vaccine immunity is cur rently leaving over 70% of the world’s population unprotected against smallpox, as this vaccine has not been routinely administered since 1980 [23] Some estimates indicate that the smallpox vaccination has offered roughly an 85% protection against monkeypox infection. [24] And since the vaccine immunity against smallpox is felt to be waning, the associated cross-immunity against related vir uses like monkeypox is felt to be fading as well [25]

However, monkeypox is simply not smallpox. Evidence indicates that many asymptomatic infections occur with monkeypox, and that it is far less contagious than smallpox, with human-to-human transmission being decidedly uncommon. Concur rent epidemics or outbreaks of smallpox and monkeypox have not been repor ted, and smallpox is not a zoonotic infection like monkeypox, but infects humans only [26]

Finally, in the more well-fed and healthy populations in the world, monkeypox is simply not a killer vir us once contracted.

Monkeypox is Easily Prevented, Readily Resolved

The primar y bio-oxidative therapies (vitamin C, hydrogen peroxide, ozone, ultraviolet blood ir radiation, and hyperbaric oxygen) have all been shown to eradicate any viral infections for which they have been properly administered In fact, intravenous ozone can promptly resolve even an advanced viral infection whenever access to it is available

Properly-dosed intravenous hydrogen peroxide is comparably effective, and as long as the healthcare practitioner is willing to use it, its expense is nominal and it is available literally ever ywhere Vitamin C, ultraviolet blood ir radiation, and hyperbaric oxygen therapy are incredibly effective as well, but less available and either slightly or substantially more expensive to apply than the hydrogen peroxide and/or the ozone therapies These therapies, along with other suppor tive antipathogenic measures, are discussed in g reater detail elsewhere [33]

Another g reat option for dealing with any vir us once contracted is a combination vitamin C/cor tisol approach, especially when the intravenous administration of biooxidative agents is not readily available, if at all A sizeable oral dose of vitamin C (3 to 5 g rams, liposome-encapsulated or as sodium ascorbate powder) along with 20 mg of cor tisol (hydrocor tisone) is dramatically effective in its clinical impact, often resulting in a prompt cessation of infection evolution followed shor tly thereafter by complete resolution

As a ver y general guideline, the vitamin C/cor tisol should be taken three times daily until baseline health is restored Complete clinical resolution is typically seen in 12 to 36 hours. A more prolonged treatment plan is only required when the pathogen has had a longer time to replicate and clinical illness is more pronounced when therapy is initiated [34,35]

monkeypox is primarily limited to infections in susceptible animal populations. When monkeypox does infect a human, its clinical course is little more than that of a typical case of chickenpox, as long as the infected individual is not g rossly malnourished.

And even in populations with signif icant nutrient depletion, monkeypox is ver y often a completely asymptomatic infection, as high levels of protective antibodies to monkeypox have been documented in signif icant percentages of these populations Also, unlike smallpox, monkeypox has both a ver y low level of contagion and only rarely results in a fatal outcome, even in the most susceptible of populations.

A good level of nutrition, along with judicious supplementation with vitamins and minerals, will almost completely prevent the transmission of monkeypox, from either an infected animal or human. VITAMIN D PROTECTS AGAINST MORE AGGRESSIVE COLON CANCERS

Researchers have found that cholecalciferol, or vitamin D3, acts on a specif ic biological pathway that results in a protective effect against more agg ressive for ms of colon cancer Evidence that vitamin D inhibits the g rowth of colon cancer cells is not new, but this 2011 study found that vitamin D slows down the action of beta-catenin, a key protein in the carcinogenic transfor mation process that can cause colon cancers to develop as the more agg ressive type.

The study was conducted on mice and also on human colon cancer cells. The scientists repor ted that treatment with vitamin D in the initial stages of colon cancer could prevent development of agg ressive cancers and save lives, but they stressed that this would not be useful in the

advanced stages Vitamin D is available from some foods such as oily f ish (salmon, mackerel, sardines, and tuna), from direct sunlight on exposed skin, and from supplement pills or cod liver oil The sole vegan source is UVir radiated mushrooms.

VITAMIN C LINKED TO LOWER BLOOD PRESSURE

A study has concluded that a higher intake of fr uits and vegetables, for which a g reater blood concentration of vitamin C was used as an indicator, decreases the risk of developing high blood pressure by up to 22% for those in the top quar ter of vitamin C levels The large epidemiological study adjusted for numerous potentially confounding factors, such as age, sex, body mass, alcohol consumption, smoking, blood pressure medications, and even vitamin C supplementation In other words, the link between higher vitamin C levels and reduced blood pressure risk was found whether the subjects took supplements or not, so long as the vitamin C concentrations were high. Only the systolic blood pressure reading (the number on the top) was included in the study.

SAFFRON ANTI-CANCER BENEFIT CONFIRMED AND MECHANISM EXPLAINED

2011 research has both conf ir med previously obser ved benef its of the spice saffron against hepatocellular cancer, and deter mined that the mechanism for this effect is its ability to stop the proliferation of cells and to initiate apoptosis, a process of cell death. (Hepatocellular cancer, or HCC, is liver cancer, which is the third leading cause of cancer mor tality worldwide; it is linked to chronic hepatitis, nonalcoholic fatty liver disease, alcohol abuse, and environmental toxins such as tobacco smoke. Prior studies have shown saffron to have antioxidant, anti-inflammator y, and anti-carcinogenic proper ties.)

Rats were given 75, or 150, or 300 mg per kilog ram of body weight per day (mg/kg/day). Saffron reduced the incidence and number of liver cancer nodules in the g roups with the lower doses, but fur nished the 300 mg/kg/day rats with complete protection against HCC Analysis showed this effect stemmed from blocking HCC cell proliferation, and from prompting these cancer cells to self-destr uct. Stocking the pantr y for economical and r ustic meals is as easy as a trip to the far mers’ market where the bounty is almost endless, and the last of the woody herbs is bunched and ready to dr y. I recommend that you use dried lentils because they cook in under an hour.

ROSEMARY (Rosemarinus off icinalis) Use sparingly because rosemar y can over power ing redients and its flavour does not dissipate with long slow cooking Rosemar y brightens roasted potatoes and other vegetables Use thick, woody rosemar y stems as kabob skewers and strew rosemar y over the coals for g rilling foods

Recipes

Cannellini Bean and Fennel Bake (Makes 6 servings)

3 Tbsp coconut or olive oil

2 cloves garlic, f inely chopped

1 onion, chopped

2 leeks, halved, cleaned and cut into coins

4 cups chopped tomatoes or 2 cans (14 oz each) tomatoes and juices

½ cup vegetable broth

1 fennel bulb, sliced f ine

¼ cup chopped fresh savor y

2 sprigs fresh rosemar y, chopped

1 can (14 oz) cannellini beans, drained and rinsed

½ cup chopped walnuts

¼ cup chopped fresh parsley

1) Preheat oven to 375° F (190° Celsius)

2) In a Dutch oven, heat oil over medium-high heat Sauté onion for 3 minutes

3) Add garlic and leeks and cook, stir ring for 5 minutes or until vegetables are soft

4) Add tomatoes and broth and bring to a boil.

5) Stir in beans, fennel, savor y, and rosemar y Cover and bake in preheated oven for 45 minutes or until fennel is tender.

6) Stir in walnuts and parsley, and ser ve

Pumpkin Pot (Makes 4 to 6 servings)

3 Tbsp coconut or olive oil

1 onion, chopped

½ red pepper, chopped

2 Tbsp Red Cur r y Paste (recipe follows) or Garam masala*

2 cups ½-inch cubed pumpkin or squash

2 car rots, chopped

1 cup sliced mushrooms

1 cup cauliflower florets

½ cup vegetable broth

2 cups chopped kale or Swiss chard

1 can (19 oz) chickpeas, drained and rinsed

1) In a large pot or skillet, heat oil over medium-high heat. Sauté onion for 3 minutes.

2) Add red pepper and cur r y paste and cook, stir ring frequently for 2 minutes.

3) Stir in pumpkin, car rots, mushrooms, cauliflower, and broth Bring to a boil, stir ring frequently Cover, reduce heat and simmer for 12 minutes or until squash is tender and liquids are reduced and thickened

4) Add kale and chickpeas and cook, stir ring occasionally for 5 minutes or until kale is wilted and incor porated into the stew.

* Garam masala, the mildly spiced blend of Middle Easter n flavours, can be easily made with fresh whole spices, but it is available, already blended and g round, in many f ine food stores.

Red Curry paste

Red Curry Paste (Makes about 1-1/2 cups)

1 Tbsp coriander seeds

2 tsp cumin seeds

1 tsp fenug reek seeds

½ tsp g reen peppercor ns

1 star anise

4 cloves garlic

2 shallots or ½ cup chopped onion

1 stalk lemon g rass, white bulb, and tender g reen par ts, coarsely chopped

2 dried cayenne peppers, chopped f ine

1 one-inch piece galangal or ginger root

2 Tbsp chopped cilantro root, optional

1 Tbsp coconut nectar or brown rice syr up

1 tsp g rated lime zest (kaff ir lime if possible)

1 Tbsp lime juice

1 tsp toasted sesame oil

1 tsp shrimp paste or f ish sauce (optional)

1 Tbsp coconut cream

1) In a spice wok or small cast iron skillet, toast coriander, cumin, fenug reek, peppercor ns, and star anise over medium heat, stir ring constantly for 3 minutes or until frag rant and popping Set aside to cool

Black-Eyed Pea Paella (Makes 6 servings)

3 Tbsp coconut or olive oil

3 stalks celer y, chopped

1 sweet red pepper, chopped

1 onion, chopped

4 cloves garlic, f inely chopped

1 hot red pepper, chopped

9 oz mushrooms, sliced

9 oz tempeh, cut into cubes

2 Tbsp chopped fresh rose-

mar y

1 Tbsp chopped fresh savour y

1 Tbsp soy sauce

1 cup shor t g rain brown rice

2 cups vegetable broth

Rosemary is a powerful antioxidant and its carnosic acid can protect the brain from stroke and neurodegeneration

1 can (14 oz) black-eyed peas, drained and rinsed

2 Tbsp thyme leaves

1) In a wok or flameproof tagine*, heat oil over medium heat. Sauté celer y and onion for 5 minutes.

2) Add sweet and hot peppers, garlic, and mushrooms and cook, stir ring frequently for 3 minutes or until vegetables are soft

3) Stir in tempeh, rice, rosemar y, and savor y and cook, stir ring for a minute to coat the rice

4) Add vegetable stock and soy sauce and bring to a boil. Cover, reduce heat and simmer for 40 minutes or until tender.

5) Stir in peas and thyme

*A tajine, or tagine, is historically a Berber dish from Nor th Africa that is named after the type of ear thenware pot in which it is cooked.

Steamed Vegetables and Rice (Serves 4 to 6)

3 Tbsp coconut oil

1 onion, chopped

1 car rot, chopped

½ red pepper, chopped

6 mushrooms, chopped

1 small zucchini, chopped

1 cup mixed red, brown, wild rice

1 Tbsp Garam masala spice blend

2 cups vegetable broth

1 head broccoli, sliced

½ head cauliflower, sliced

1 cup Garlic Peanut Sauce

(storebought or recipe follows)

1) In a large skillet, tagine or Dutch oven, heat oil over medium-high heat. Sauté onions for 4 minutes.

2) Add car rot and red pepper and cook, stir ring fre-

quently for 2 minutes.

3) Add mushrooms and zucchini and cook, stir ring frequently for 3 minutes.

4) Add rice and spice blend and cook, stir ring constantly for 1 minute.

5) Add broth and bring to a boil, stir ring constantly Cover, reduce heat and simmer for 30 minutes.

6) Spread broccoli and cauliflower evenly over top of rice mixture. Cover and simmer for 10 minutes or until vegetables are crisp-tender

7) Ser ve with Garlic Peanut Sauce.

Garlic Peanut Sauce (Makes 1 cup)

1 cup salted peanuts

3 cloves garlic

2 Tbsp coconut oil

1 onion, chopped

½ cup vegetable broth

2 Tbsp rice vinegar

2 Tbsp soy sauce

1 Tbsp coconut nectar or brown rice syr up

1) In a food processor, chop peanuts and garlic until ver y f ine

2) In a saucepan or skillet, heat oil over medium-high heat Sauté onions for 5 minutes

3) Stir peanut mixture and broth into onions.

4) Bring to a boil and add vinegar, soy sauce and nectar

5) Reduce heat and simmer, stir ring occasionally for 5 minutes

Used properly, this mineral can protect the thyroid gland from radiation damage A nuclear war may release radioactive iodine into the air and negatively affect the thyroid gland This could lead to various thyroid problems including thyroid cancer.

Potassium iodide is nonradioactive and can reduce the risk of thyroid damage. It is meant to be taken only during an emergency and not as a daily supplement It works by blocking the absor ption of radioactive iodine, as supplementation causes the thyroid to f ill up with nonradioactive iodine.

It needs to be noted that potassium iodide can only protect the thyroid but not the rest of the body. It only stops the thyroid from absorbing the radioactive iodine

The optimal time to take potassium iodide for maximum benef it is less than 24 hours before an expected exposure and up to 2 hours after the exposure. People below the age of 40 have a higher risk of developing thyroid cancer from radiation exposure, so they need to use larger doses than those over 40 who may not need to take any amount at all. It’s best to check with public health authorities about doses for those over age 40

Let’s make this more concrete. We are all like houses. Psychotherapy and Hypnotherapy as Powerful Tools

At some point in our journey, psychotherapy combined with hypnotherapy can be quite powerful For example, many of those who have successfully lost weight can report that they still have all the same ‘fat’ feelings inside – those feelings didn’t go away with the weight.

I was much like this at age 17 I had incor porated many wonderful changes in diet and exercise, but didn’t have the awareness yet that I really needed to go deeply into the basement as well as all over the house and do a thorough cleaning. Like the person who loses weight and is still unhappy, I had a par tial shift but not a deeper shift in the overall flow and feeling inside the house

The shift happens in our inner world f irst and then moves outwardly.

Ways to tur n awareness a n d a t t e n t i o n i n wa r d a n d develop the inner ‘witness’ are endless – yoga, meditation, or simply just sitting in our own backyard quietly listening to the sounds of a bird while noticing our own thoughts. With practice we begin to shine the flashlight of conscious awareness into the recesses of our being.

When a client is ready and i f hy p n o t h e r a py wo r k i s called for in their process of healing, I lead them into a relaxed state using guided visualization. Sometimes, I have them imagine they are going on an “inner vacation” somewhere that is just perfect for them Already, their c o n s c i o u s n e s s i s t u r n i n g inward in a pleasant and relaxing way A busy mind that was preoccupied with wo r r i e s a n d c o n c e r n s i s guided to be in the present m o m e n t ( t h e o n ly p l a c e healing occurs) and now we can move towards taking a

look at what needs to be sor ted Awareness is now placed inside the house

For some individuals this is easy – sometimes so easy that it is my job to “put on the breaks” so they don’t uncover too much dust and junk too quickly and become overwhelmed For others, it takes longer to open those inner tracks because they have become so accustomed to being r un by the busy-ness of the mind and the almost total focus on outer for ms

Some are afraid to open the door to the basement, afraid of what they will f ind, afraid of change – this is nor mal! However, as a client prog resses, they begin to realize the g reat value of opening the basement door and taking a look – they also realize that it is not really so scar y after all! In fact, sometimes it is f illed with wonder!

Clients star t to lear n how to keep what is working in their lives and let the rest go They process and release old energy and increase and expand what was already there and already fantastic that they didn’t know about Along with bags of garbage to be disposed of, they also discover treasures in the house

Creating a New Life for Ourselves

Pretty soon, with commitment and perseverance, we begin to create a different life for ourselves The subconscious mind, having previously r un the show without any awareness, star ts to become conscious We can make healthier choices and see more clearly We have opened the windows and let light and fresh air into the house Light begins to stream into all the rooms that were shut and dark We begin to realize that happiness is our bir thright and we gain tools to access that innate happiness. We begin to realize that the happiness we seek is not dependent on what happens “out there.” Rather we are embodiments of happiness for no reason. Our house has become a unif ied whole and all the rooms are inviting.

To keep the house clean is a daily practice. Hypnotherapy and psychotherapy help to clean up the house and do a g reat deal to clean up the basement. Having a regular practice of meditation and/or yoga also keeps the house clean. Throughout our lives, as a for m of regular inner maintenance, it is g reat if we can become more “meditative” and make meditation or yoga a daily practice. Peppered with times where we will dive into hypnotherapy or psychotherapy or some combination of the two, we can really star t to feel a lightness coming into our being. By committing to oneself, to “cleaning the house” and becoming more conscious – we do a g reat ser vice to ourselves and humanity. By choosing a life of happiness for no reason and refusing to accept that life is all about suffering, we help to uplift others and create a pathway for others to awaken too! NEEM - The Tree That Heals Nations

The venerable Neem tree (Azadirachta indica) has been revered as a medicine in India for thousands of years From its antiviral and ant-inflammatory properties to its ability to enrich the soil and f ight off pests, the versatility and potency of this plant is undisputed In fact, it has a long history of use in Ayurvedic medicine for treating a variety of conditions including eczema, ringworm, and acne. It has also been effectively used as an insect repellant to ward off mosquitoes, locusts, and other pests.

Now the Neem tree is gaining recognition in the West thanks to the efforts of people like Klaus Ferlow. He was one of the f irst to bring Neem products to the Wester n world, and now offers a line of ointments, creams, and shampoos for healing a variety of skin and hair issues

He has also written a new book: NEEM – The Tree That Heals Nations, released in August 2024
