Opening Banquet on The Mall The Olive Tree on the Mall presents a celebration of local produce in partnership with Shane McGrath of The Cliff House and Fergal Walsh of The Seagull Bakery. This is a collaboration of local producers and chefs bringing the very best of Waterford produce to your plate. This is communal dining over 5 courses where you can satiate your appetite, dining on a selection of Waterford’s finest foods such as glazed pig heads, short ribs, BBQ oysters and lobster, sourdough flat breads, whole Comeragh lamb, and even a few surprises! Lunch with Takashi Miyazaki One of Japan’s most experienced and innovative chefs will produce a lunch to remember in the wonderful surroundings of La Bohème on Sunday. Owner and Chef of Miyazaki Take Away in Cork, people travel for miles to sample his food. This is a very rare opportunity to eat Miyazaki’s food in a restaurant setting. A native of Fukuoka, Japan, Takashi uses real Japanese elements in Miyazaki’s food. Takashi’s 23 years Japanese cooking experience includes catering for heads of state and celebrities, and holding a number of Head Chef positions in both Japan and Ireland. Takashi was named 2015 Chef of the Year by John and Sally McKenna of The McKennas’ Guides, and has won numerous awards, Best World Cuisine in Munster 2017, Best Chef in Cork 2017 at the Irish Restaurant Awards, “Takeaway of the Year 2017”, and “Skill and Innovation Award 2017” at the Asian Food Awards. He is an advocate for Japanese cooking here in Ireland and his aim for Miyazaki is simple. “There are so many types of Japanese food. It is like a treasure box. I want people to enjoy the real flavours of Japan.” This is a multi course lunch and will be a very special and unique occasion for all gastronomes. The festival is honoured to have Miyazaki’s cooking at Harvest. John and Sally McKenna will introduce the event. Flahavan’s Fit Family Breakfast

Festival Market Waterford’s Viking Triangle is transformed into every food lovers dream, with a weekend of taste bud tempting events! The Mall will be stuffed with producers showcasing and selling their mouth watering food and beverages. It’s a veritable bounty of Waterford’s finest Harvest.

A FREE Flahavan’s breakfast for all the family to enjoy using all Flahavan’s products, produced locally in the lovely Kilmacthomas. The breakfast will take place in The Granary Café, Munster’s Best Café (2016). Peter from The Granary will create a tasty menu of oaty delights, such as Flahavan’s porridge with toppings, Bircher Muesli, oat cookies, oat breads and granola to accompany some delicious fruit salads, yoghurts, croissants, and other delights, all served with tea or coffee, to set you up for an active morning.

The Festival Market is all about local, quality produce and their dedicated producers. We’ve worked very hard to make sure there’s something for everyone. It’s for everyone who enjoys good food, from tiny taste buds to mature munchers. The Se2 Harvest Festival Stage will also have live music every day.

Bring along your bike, or walking shoes, get fuelled up with Flahavan’s, then hit the Greenway for a run, walk or cycle. Booking essential, tickets available in advance from The Granary Café. A small refundable deposit will be required on booking, to guarantee attendance.

Applemarket Street Food Waterford’s iconic Applemarket has recently had a brand new makeover, and Harvest will celebrate this with food served up in these special surroundings. There will be food offerings from lots of the local bars and restaurants, including Heereys, Bodega, Burzza and Gino’s. Line up for pulled or crispy pork from the Pig on a Spit. Freshly cooked burgers will

The Grand Finale at The Bay Tree Bistro

Burzza

The multi award winning chef and owner of the Bay Tree Bistro, and Munster Chef of the Year 2017, Keith Boyle, will send Harvest off in style as a magnificent four course meal brings the 2017 Festival to a close. Keith will team up with three other extremely talented, award winning, head chefs from the finest restaurants along the banks of the Three Sister Rivers, Billy Whitty of Aldridge Lodge, Wexford, Paul Hynes of La Côte Seafood Restaurant, Wexford and Michelin starred chef Ken Harker of the Lady Helen Restaurant at Mount Juliet Kilkenny. In true Bay Tree Bistro Style, each will create a course showcasing their individual talents, unique flair and their love of food. There’ll also be live music, and a Prosecco Reception on arrival. Famous for it’s burgers and pizza, for Harvest Burzza will do a special pairing menu. Offering home made sliders and pizza all weekend, you can pair them with your favourite Metalman Beer. From Friday to Sunday, pay as you go.

La Bohème Butcher Block Feast On Friday La Bohème are offering a Butchers Block Feast, a special 3 course set menu featuring 28 day aged local beef, prepared by expert Head Chef, Eric Théze.

Skillnet: A taste of food and craft Treat yourself at The Skillnet tent in John Roberts Square. They’ve packed lots of exciting local artisan food startup companies into one big tent, so you can discover all that is good to eat from both local producers, and from all over the South East. They’ll happily offer samples of their wares, and ask for your opinions. Waterford Country Market Established in 1956, Waterford Country Market recently celebrated 25 years based in Olafs Hall in Waterford’s city centre. The Waterford Local Enterprise Office offers support and guidance to start-ups, including many amazing Waterford food producers. This is your chance to come along and meet the people behind those companies. Hear their food stories, ask them all those questions about how they got where they are, and most importantly have a sample of their many and diverse products.

In the heart of Waterford City, The Granary Café provides excellent dining in a light and relaxing environment, housed in a beautiful and charming quay-side granary built in 1870. Using only the best and the freshest ingredients in all of their dishes, they’re passionate about providing a warm welcome and a good food experience every time

Bringing their GROW, COOK, EAT philosophy down the town to the Harvest Festival, GROW HQ (with a little help from GIY) are bringing their unique festival style of laidback, pallet vibes to Harvest. They’ll be showcasing their ethos of GROW, COOK, EAT in a unique area that will demonstrate how easy it is to grow your own.

Sponsored by Dawn Meats, interactive and entertaining demonstrations will take you on that journey from farm to fork, from field to feast. All your foodie questions can be answered here by the producers of some of the best food in the South East. There’s even a pop up farm, where you can pet the animals, watch the sheep shearing or learn how to milk a cow.

Ballybricken Fair: There’s a nostalgic look back, as Ballybricken Green comes alive with the sights and sounds of the old Fair. Sit on hay bales, listen to music and admire the vintage tractor display. Over two days John Hayes, Woodcarver extraordinaire, will carry out wood carving demos, using chainsaws, and other specialist tools. Blaa Eating Competition In 2016 the Deise was quite frankly embarrassed when a Corkonian won the Blaa Eating Competition at Harvest. All we could do was hang our heads in shame and cry into our buttered blaas. This is our chance to take back the title! Bring your game face to Harvest on Sunday and hopefully Waterford will triumph this year. Start training now, then come down to the Mall Stage at 2.30pm on Sunday, and sign up for one of the most eagerly anticipated competitions of the year. BLAA Fest Brunch with The GastroGays at Walsh’s Bakehouse Patrick and Russell, The GastroGays, are in town specially for Harvest and will host two different events. The first is a Saturday brunch to celebrate the launch of Walsh’s Bakehouse brand new premises. The GastroGays will curate a menu where the humble blaa is the star of the show to give everyone a good feed as well as an appropriate drink. They’ll also share some of their great brunch stories from their travels around the world, including their infamous blaa story, as well as tips and tricks for styling and hosting your own brunch. There might even be a goodie bag to take home, with some Walsh Bakehouse Treats! Spaces for this event will be limited, so booking is essential. Festival Demos with Dawn Meats Come along to Palace Square over the two days of the festival, and participate in cooking demonstrations, with some of Munster’s top chefs, including 2017 Munster Chef of the Year, Keith Boyle. Chefs from some of Waterford’s top restaurants will feature over the two days, and they’ll be using the best of Dawn Meats and other premium butcher products. Take a seat in this Foodie Tent and watch the chefs cook some fantastic dishes. It’s your chance to ask those foodie questions you always wanted to know the answers to. Calmast at Harvest The Centre for the Advancement of Learning of Maths, Science and Technology was established in 2003 at Waterford Institute of Technology (WIT). It draws on staff, students and resources from WIT to achieve the vital national goal of promoting STEM (Science, Technology, Engineering and Maths). They also work with many national and international groups, including Waterford City and County Council, industry groups and schools to develop the Southeast, with Waterford as its Gateway City as a Science Region. Calmast also founded and coordinates Maths Week Ireland which is the largest festival of its kind in the world. The centre is led by Eoin Gill and Sheila Donegan.

Metalman Rocks Craft Beer Festival

The Mall Stage

Waterford’s own Metalman Brewing returns once more to Baileys New St with their Harvest Festival bar, featuring a wide range of their beers, including Harvest Fest special “Blaager” – the infamous Waterford lager brewed with blaas. There’s live music outdoors Friday, Saturday and Sunday, and a BBQ all weekend, courtesy of The Reg, The Munster Bar and Harvest. On Friday there’s music from 8pm with Soul Reazon. Saturday kicks off with Jawbone at 3.30pm, followed by Lorcan Reidy at 6pm, and Newfoundland headline at 9pm. Sunday sees Toucan perform at 3.30pm, followed by Susan O’Neill at 5pm. This all takes place on the stage in the intimate surroundings of the medieval French Church on Bailey’s New Street. Venue: Baileys New St Days: Fri/Sat/Sun Admission: FREE

Supported by Se2, the Mall Stage will have three days of brilliant live music throughout Harvest from lunchtime through to late afternoon and early evening. From singer songwriters to brass bands, and from funk to soul, there’ll be something for everyone over the weekend. The Reg and Metalman Brewing presents the ‘2017 Craft Beer and Oyster Festival’, with Metalman and fresh Harty oysters, at the Viking Longboat at Reginald’s Tower from 2pm on both Saturday and Sunday of Harvest. See the chefs shucking oysters, and sample different craft beers or a glass of Prosecco.

Blackwater Gintastic Lunch Trail

Midleton whiskey tasting

Join Peter Mulryan, from Blackwater Distillery, and sample the very best of Irish gin, while learning from a Master Distiller. Real gin, good gin, is one of life’s pleasures, it’s year round summer in a glass and Peter will guide you through the very best of his products. The tasting takes place in Davy Macs, followed by a two course, gin inspired lunch, just down the road in Bodega.

A lot has happened in the past year, from the release of new expressions such as Redbreast Lustau and the success of Jameson Caskmates, Method & Madness Midleton Whiskey, to numerous announcements by new distilleries keen to be part of the resurgence in Irish whiskey. Come along to this tasting and the guys from Midleton Whiskey will guide you through a tasting of five premium whiskeys.

Thin Gin and Tapas Bites on the River

Craft beer tasting Local and regional brewers will take you through a tasting of six craft beers, explain the craft of making good beer, and how to know your pale ales from your pilsners. Hosted by Metalman and Yellow Belly Breweries.

Take an hour long cruise along the River Suir on the Brian Boru and enjoy some Thin Gin cocktails, made to perfection by an onboard mixologist. There’ll be a taste of Spain also, with pinxtos from the Olive Tree. Spaces are limited, and this one is sure to sell fast, so get your tickets early.

Readings at the Book Centre

Ireland’s Ancient Feast

The art of writing is sometimes forgotten in modern society, but not by the dedicated scribes who meet each week in the Ferrybank Library to hone their craft and delve deeper into the world of words. With the support of local author and lecturer Fergus Hogan, they join together to write stories, poems and autobiographical pieces. During the Harvest Festival they will share some of their stories with you, along with some very special pieces written on the theme of the harvest.

Join the Sea Gardner, Marie Power, for a feast inspired by the earliest settlers. Forage for your food on land and shore like the ancient hunter gatherers, then enjoy a delicious feast of wild foods at Dunhill Castle. Coffee House Lane Roasting Demo

Willow weaving

The only coffee roasters in Waterford will be on hand over the three days of Harvest to demonstrate their roasting techniques, while taking you through the process from start to finish. Mark Bergin, from Coffee House Lane, will be on hand to show you how to get that perfect cup of coffee.

Join Cathy Hayden, Basketmaker, as she guides you in how to weave with willow. Passionate about her craft, having worked with willow for the past 25 years, Cathy will take you through the process, step by step. Make your own traditional style willow platter under the expert guidance of this weaver. All materials supplied.

For Harvest they are creating the very first Harvest Coffee Blend. You can sample and then buy some of this wonderful product over the weekend at their stall.

At Garter Lane Autumn Leaves and Tasty Treats Explore Autumn colours and harvest time tasty treats with this fun Harvest Festival themed art and crafts workshop for children. Places limited so early booking is essential. Kindly supported by Tesco Community Fund.

A free panel discussion style talk hosted by WLR FM’s Kieran O’Connor, sports commentator. Kieran will interview a panel of athletes and experts with the main focus of the talk being on nutrition for sport and a healthy lifestyle. Panellists include Waterford Senior Hurler and captain of the Waterford Senior Hurling team Kevin Moran, who will open up about Waterford’s experiences this season along with some of his tips and personal experiences regarding sports nutrition and being match ready. Cian Foley will also join the panel, and will speak about his personal journey from being unfit and overweight to becoming a national kettlebell champion. He’ll also focus on his diet and new concepts outlined in his book “Don’t Eat for Winter”. The final panellist is Arthur Dunne, Leinster Rugby Academy & FoodFlicker GAA Performance Nutritionist. Two days of workshops and talks dedicated to bringing some much needed balance back into your life. 2pm-3pm: Don’t Eat for Winter with Cian Foley Cian is a kettlebell champion and has recently written a very well reviewed book about nutrition and diet titled “Don’t Eat for Winter”. Cian will speak about his personal journey to fitness, focusing on his diet and new concepts outlined in his book.
