WOW! I cannot believe that eight years ago Voice Magazine for Women hit the streets with its first issue. I will admit the years have had some bumps along the way. And as any small business owner will tell you, the going is not always easy. But for every “I love that magazine!”the staff and I are energized! No sweeter words are ever spoken! So, through changes and challenges, your support is the reason the magazine continues to grow. We could not do it without you! So, at the risk of sounding like a broken record…oops…CD?...MP3?... we want to shout with joy our appreciation to all of you – advertisers, readers, fans, media partners, those behind the scenes and everyone in between. Thanks for the encouragement and the contributions to the year after year growth of the magazine. Thank you for your loyalty and honesty. Our goal is to continue to provide uncompromising service and always have a local footprint. Also, another exciting event is the 5th International Women’s Day Celebration hosted by the Women’s Empowerment Network of Bristol, which will be held March 10 at the Country Club in Bristol. An old classmate approached me at our high school reunion with the dreaded question, “Do you remember me?” He looked familiar, but he wasn’t one of my close friends in high school. “Do you remember what you did?” he then asked. Gulp. I put my brain into overdrive trying to remember. Was I nice? Was I mean? Was I considerate, or was I a jerk? Fortunately, he did not give me time to answer. “That day it was raining, my sister and I had gotten in a car accident and you stopped to help us on the side of the road. Everyone else kept driving by, but you stopped. We never forgot that.” I remember that day. It was a split-second decision to pull the car to the side of the road. But had I been in a hurry or had a car been in my way, I may not have stopped. For the most part, I was a nice and considerate kid, but like many high school students, I had a “too cool” and “it’s all about me” streak as well. When my classmate recounted the story, I felt relief that he wasn’t bringing up a time I had been snotty to him, because I am sure someone could have approached me with that scenario as well. We all have in us the ability to treat others well and the ability to treat others like dirt. If you are anything like me, how I react depends on my mood. Sometimes I am friendly and personable with the cashier at the checkout stand, and other times I am rolling my eyes at his incompetence. Same situation—it’s just a different day. Or if I get cut off in traffic I sometimes think, “Gee, I hope everything is okay.” But, catch me on a bad day and I am ready to chase you down and give you a piece of my mind. It all depends if I feel like living out my faith that day or not. How have you been remembered? You have been remembered for who you were in a moment that counted. With this classmate, it just so happens that I am remembered as a nice, caring and considerate person. But I am sure I can find some other classmates who would disagree. I wish I could change it, but the impression has been made. The challenge for you and me is this: Do to others as you would have them do unto you each day, not just when you feel like it. Black History Month is an annual celebration of achievements by African Americans and a time for recognizing the central role of African Americans in U.S. history. Americans have recognized black history annually since 1926, first as "Negro History Week" and later as "Black History Month.” What you might not know is that black history had barely begun to be studied, or even documented, when the tradition originated. Although African Americans have been in America at least as far back as colonial times, it was not until the 20th century that they gained a respectable presence in the history books. Red Shoe Gala Lifting Up a Child's Voice Lifting Up a Child's Life CASA for Kids, Inc., serving abused and neglected children in Sullivan and Hawkins Counties is hosting their 3rd Annual CASA Red Shoe Gala at MeadowView Convention Center on Saturday, February 11th. Why a Red Shoe? It is a takeoff from Dorothy in The Wizard of Oz, when she stated, "There's no place like home." Home – precisely what CASA wants for every child – a safe and permanent home, that is. CASA for Kids is currently able to serve 51% of the neglected children coming to the attention of its juvenile courts, yet every neglected/abused child needs to have their very own professionally trained Court Appointed Special Advocate. Serving as investigative reporters and watchdogs for the child, CASA helps bring neglected children the enhanced hope of a safe permanent home where they can thrive and grow up to become productive adults. CASA plans the Gala near Valentine’s Day so guests can go home with Valentine’s gifts chosen from more than 200 donated silent auction items donated by many supportive businesses and individuals. Lt. Governor Ron Ramsey will also be auctioning off special items: a week in lovely home with a pool near Disney World, a stay in a cabin that sleeps 18 in Gatlinburg, a Bath Masters shower, dinner for 20 in Bruton Smith’s Suite at BMS, fine jewelry from Saslows and many more great buys from restaurants to sport items. After dinner, guests can dance to The Extraordinaires, a nine-member entertainment band from North Carolina, and then either enter or just watch the entertaining Red Shoe Contest presided over by area juvenile court judges. Contestants ‘strut their stuff’ while competing in exquisite stiletto heels, comfy red bedroom slippers or even decorated red tennis shoes. One of the male winners last year strutted in 5-6 inch red boots. The Red Shoe Contest is a fun thing, especially for the juvenile court judges. It is totally unlike the serious court hearings they preside over determining a child’s safety and future. A red shoe ice sculpture captures the specialty of the night (as seen on this month’s VOICE cover.) Guests will indeed enjoy a most memorable night as needed funds are raised. At the 2011 CASA Red Shoe Gala, $129,000 was raised. That success helped enable CASA for Kids, Inc. to help the courts administer justice, and in so doing, helped ensure safety and stability for 602 referred children this past calendar year, a 7% increase from children served in 2010 - an awesome accomplishment by 124 CASA volunteers supported by eight staff and 21 board directors. Yet it takes a supportive caring community for CASA to continue to excel. Once again, the CASA for Kids, Inc. program managed to help more neglected children than any other CASA program in Tennessee, including Nashville and Memphis. We want to be helping even more of ‘the least of these’ while enhancing safety & stability in the community,” says Executive Director Connie Steere and Board President John Sanders. AND add a Valentine’s Day card created by you with a special poem or verse that has a meaningful message that is just between the two of you! Whatever you put into your Valentine’s Day gift, it needs to stand out for its uniqueness and thoughtfulness, so get started quickly. YWCA Accepting Tribute to Women Nominations YWCA Bristol TN/VA is accepting nominations for the 21st annual Tribute to Women awards program, which recognizes outstanding women in the Tri-Cities. Nominations are due to the YWCA no later than Wednesday, February 15, 2012 at 5:00 p.m. The nomination form and a helpful hints sheet are available on the YWCA web site at www.ywcabristol.org. Each year, YWCA Bristol provides an opportunity to honor East Tennessee-Southwest Virginia women who have made significant contributions in the arts, business, education and charitable fields. Melting Away Some Chocolate Myths • Chocolate does not cause acne or make it worse. • Chocolate does not cause tooth decay, and the tannins in dark chocolate may fight tooth decay. • Chocolate does not contain a lot of caffeine. An 8-ounce glass of chocolate milk has only two milligrams of caffeine more than a 5-ounce cup of decaffeinated coffee. An ounce of dark chocolate contains only 28 mg of caffeine, while a regular cup of coffee has 95-140 mg.

By Crystal Robertson, UT Extension Agent- Unicoi County No celebration is complete without dessert, and for Valentine's Day, the dessert has to be chocolate. To give your sweetie a delicious dessert that also promotes heart health, opt for dark chocolate. Throughout history, dating as far back as the Aztecs, chocolate has been thought to have medicinal properties. Much research has been done on chocolate, but the bottom line is that dark chocolate is the richest in health benefits. Dark chocolate (at least 70 percent cocoa) offers an intense chocolate experience along with flavonoids and antioxidants that other varieties of chocolate do not. Dark chocolate can actually be good for you when eaten in moderation (it still contains calories from sugar and fat.) Crystal Robertson Flavonoids provide many health benefits that include preventing cholesterol from gathering in the blood vessels, reducing the risk of blood clots, and slowing down the immune response that leads to clogged arteries. Cocoa is also one of the richest sources of antioxidants found in any food. One ounce of dark chocolate provides the same amount of antioxidants as a glass of red wine. Milk chocolate, which most Americans eat, contains a low amount of flavonoids and antioxidant value compared to dark chocolate. It also has a relatively high sugar and saturated fat content and has been shown to increase blood cholesterol levels. A standard-size 40-gram chocolate bar has eight grams of fat, but a one-cup serving of hot cocoa only has ⅓ gram of fat and contains three times more antioxidants than green tea. White chocolate, which is a blend of cocoa butter and sugar, contains almost none of the antioxidants found in dark chocolate. In addition, more than half the fat in white chocolate is saturated.

• Chocolate cannot become addictive. Some people, referred to as "chocoholics," just have a strong preference for chocolate's taste, aroma and texture. • Chocolate bars are not less healthful than carob bars. Both have the same amount of calories and fat. Enjoy this recipe for Dark Chocolate Fondue with RED fruits, which contain many health-promoting phytochemicals including lycopene and anthocyanins. This color group may help promote a lower risk of some cancers, a healthy heart, memory health, and urinary tract health.

Dark Chocolate Fondue 2 cups fat-free milk ½ cup powdered sugar, sifted 2 tablespoons all-purpose flour 2 tablespoons dark corn syrup 1 teaspoon vanilla extract 1 tablespoon strongly brewed coffee 5 ounces dark chocolate (70% cocoa), chopped (about 1 cup) Combine first 6 ingredients in a medium saucepan. Bring to a simmer over medium heat; cook 5 minutes, stirring constantly. Reduce heat to low and cook 2 more minutes or until mixture is smooth. Place the chocolate in a medium bowl; pour the milk mixture over the chocolate and stir until smooth. Transfer chocolate mixture to a fondue pot

and keep warm over a low flame. Serve with stemmed strawberries and cherries, raspberries, bananas, pineapple chunks, and angel food cake.

Quick Chicken Chili February 24 – National Chili Day Ingredients

Sweet Heart Salad Serves 12 Ingredients 2 envelopes unflavored gelatin 1/4 cup cold water 1/2 cup sugar 1 (20 ounce) can crushed pineapple, undrained 2 tablespoons lemon juice 1/4 cup maraschino cherry juice 2 (3 ounce) packages cream cheese, softened 12 maraschino cherries, quartered 2 drops red food coloring (optional) 1 (12 ounce) container frozen whipped topping, thawed Lettuce Leaves Directions 1. Soften gelatin in cold water. Meanwhile, in a saucepan, bring sugar and pineapple with juice to a boil, stirring until the sugar dissolves. Remove from the heat. Add gelatin and stir until dissolved. Add lemon and cherry juices. Cool to lukewarm. Whisk in cream cheese until thoroughly combined. Stir in the cherries and food coloring if desired. Chill until slightly thickened. Fold in whipped topping. Pour into an oiled 13-in. x 9-in. x 2-in. pan or 8-1/2-cup mold; chill until firm. Serve the mold or individual squares on lettuce-lined plates if desired.

Chocolate Wontons Ingredients 1 (12 ounce) package wonton wrappers 1 cup milk chocolate chips 10 strawberries, quartered 3 cups vegetable oil for frying 1/4 cup confectioners' sugar for dusting Directions 1. Place a wonton wrapper on a work surface. Spoon about 1 teaspoon of chocolate chips into the center of the wrapper. Top with a piece of strawberry. Dip your finger in water, and moisten 2 adjacent inside edges of the wrapper. Fold the wrapper into a triangle; squeeze out as much air as possible from the contents, and make sure the wrapper is very well sealed by pressing the edges with your fingers. Set the filled wrappers on a parchment paper-lined baking sheet. 2. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). 3. Fry the wonton triangles, a few at a time, until golden brown, about 45 seconds on the first side. Flip them in the oil, and fry an additional 30 seconds on the second side. Drain the fried wontons on paper towels. Dust with confectioners' sugar. Serve warm. Allrecipes.com

Directions 1. Remove visible fat from chicken, cut into bite-sized pieces. 2. Spray large pot with cooking spray. Add chicken, onion, garlic, chili powder (optional) or jalapeno (optional) cooking over medium-heat until chicken is no longer pink (about 7 minutes) 3. Lightly mash the drained, rinsed beans with a fork. 4. Add all remaining ingredients to chicken mixture and simmer on high for 10 minutes. 5. Adding Music to Your Special Day By: Beverly Clark Music provides a beautiful, emotional element to your wedding and reception. Here are some tips on how to enhance the different phases of your wedding with music. You’ll most likely choose two different types of music for your ceremony and reception - softer, romantic music to be played or sung before, during and after the ceremony, and entertaining or dancing music for the reception. In some cases, the same musicians are able to provide both. As an alternative, you might choose to have the church organist or soloist play or sing. You could also have one set of musicians for the ceremony and a band or entertaining DJ for your reception. Should you wish to have music playing before the ceremony, instrumentals can establish an atmosphere for your guests. This music may include mood-setting pieces that your early-to-arrive guests can enjoy as they wait for the show to begin or during a pre-ceremony reception or cocktail hour during which the bride and groom have separate chambers in which to greet guests.

For the ceremony, be sure to check with your site coordinator regarding any restrictions or limitations that might be in place on music selections. Some places of worship limit the music selections to whatever their own organist can play. Your reception music can range from a refined background element during dinner to music for dancing. For example, a string quartet, violin or harp is a polished backdrop for your celebration, while a rock band or twelve-piece orchestra will provide a wider range of lively tunes. You may even opt for different groups of musicians or even a DJ alternating with a band that specializes in your favorite style(s) throughout the reception — whether it’s jazz, rap or pop. Remember that good bands and DJs book up early, so you’ll need to start researching your options from nine to twelve months in advance. While a live band might seem like the ultimate in wedding reception entertainment, keep in mind that most won’t have the same range of selection that an established DJ will. There will also be “dead air” when the band takes their scheduled breaks, unless you make arrangements for something to be played during that time. If you opt for a DJ, make sure you choose one who is both experienced and fun and can play a variety of songs, from slower traditional to ‘50s to rock and roll to faster contemporary music for dancing. If you’d like to give guests a performance they’ll always remember, consider staging a humorous dance and/or lip-sync number to a popular tune with your fiancé and perhaps a couple of members of the wedding party. Traditionally, bands have been considered to be more formal entertainment than DJ’s. But since bands are considerably more expensive than disc jockeys, either has become perfectly acceptable at a formal wedding. Q. We aren’t sure who dances after the bride and groom’s first dance. Are there guidelines? A. It is customary for the bride to dance next with her father, then the groom dances with his mother. After that, the bride and groom’s parents dance, the bride dances with her father-in-law, the groom dances with his mother-in-law,

Q. I’m close to both my father and stepfather. With whom should I dance the father/daughter dance? A. This entirely depends on your relationship with your father and stepfather. If your father walks you down the aisle, then he might not mind if your stepfather is the first to dance with you. Another option is to dance with your father and then have your stepfather “cut in.” Or, if you’re really in a quandary, dispense with the father/daughter dance and just declare an open dance. How to Involve the Groom Most women are detail oriented while men mainly see the big picture. This can be a problem when couples plan a wedding. While flower arrangements and centerpieces may not be a man thing, here are some ideas to get him involved in other ways. • Let him choose, but give him choices. Instead of asking him general questions such as what color themes he wants, give him two or three color themes to choose from. That way, you know that you both will agree, and he doesn’t feel all of the pressure. • Get him involved in areas that he is interested in. If he is good with numbers, have him plan and be in charge of the budget. If your man is good at making deals, have him haggle and negotiate with vendors on prices. • Make the appointments fun. Go out on dates sampling potential food suppliers for your big day or listening to local bands for wedding entertainment. • Let him plan the honeymoon (while the bride relinquishes control.) February is American Heart month, and that means it's a good moment to think about a disease that kills more than 600,000 Americans each year. Heart disease is the leading killer amongst both men and women. According to the Centers for Disease Control and Prevention, CDC, making these healthy lifestyle choices can help: • Choose lean meats and poultry without skin and prepare them without added saturated and trans fat. • Select fat-free, 1 percent fat, and low-fat dairy products. • Cut back on foods containing partially hydrogenated vegetable oils to reduce trans fat in your diet. • Cut back on foods high in dietary cholesterol. Aim to eat less than 300 mg of cholesterol each day. • Cut back on beverages and foods with added sugars. • Select and purchase foods lower in salt/sodium. • If you drink alcohol, drink in moderation. That means no more than one drink per day if you're a woman and two drinks per day if you're a man. • Keep an eye on your portion sizes. • It's also important to know the signs of an impending heart attack, because they can start slowly and symptoms may seem mild. According to the National Heart, Lung and Blood Institute, these are the signs that may mean a heart attack is in progress. • Chest discomfort. Most heart attacks involve discomfort in the center of the chest that lasts more than a few minutes, or that goes away and comes back. It can feel like uncomfortable pressure, squeezing, fullness or pain. • Discomfort in other areas of the upper body. Symptoms can include pain or discomfort in one or both arms, the back, neck, jaw or stomach. • Shortness of breath. It may occur with or without chest discomfort. • Other signs may include breaking out in a cold sweat, nausea or lightheadedness. The College of Older Adults: Making New Connections. Bluff City, TN Efforts Underway to Bring a Boys & Girls Club to Bluff City. Several members of the community have formed a committee to open a Boys & Girls Club in Bluff City. The committee is working hard to secure the funding needed to make the Bluff City Club a reality. Boys & Girls Club will provide after-school care beginning in the fall of 2012, and plans are to expand to offer a full-time summer program in 2013. Additional fundraising events will be held to open and sustain the club. The first official event was a New Year Celebration for Kids and was a success. Almost 50 kids enjoyed games, face painting, pizza and more. Thank you to the community for supporting this event!
