E

ntertaining friends and family during the holidays is one of life’s great pleasures. There is no better time to whip out the cocktail shaker or put the kettle on and turn ordinary booze into merry cocktails. You don’t need a fully stocked bar to impress your guests

or give Aunt Barb the buzz she needs to make her interesting. This time of year I like to trade in my martinis for Manhattans and warm up post-milking with a hot toddy. No matter how you celebrate the season, these cocktails will be the perfect compliment.

MOM’S HOT BUTTERED RUM A tradition in my family during the holidays. Hold off on the rum and make mocktails for the kiddies.

BATTER INGREDIENTS 1 lb. brown sugar 1 lb. butter 3 cups vanilla ice cream, softened A bit of fresh grated nutmeg Cinnamon is also a nice addition. A tablespoon should work.

CHRISTMAS PUNCH Be careful: This one can sneak up on you. For a festive alternative to plain old ice cubes, freeze water in a Bundt pan to form a pretty ice ring. If you’re feeling extra fancy, add some cranberries or lemon slices to the pan before freezing.

INGREDIENTS 3/4 cups sugar The peel from 3 or 4 lemons 4-5 sprigs of rosemary, crushed with your hand to release the oils 3/4 cups lemon juice 4 cups water 1 cup pineapple juice (or a bit more if you like) 1 bottle dark rum

TO MAKE BATTER Cream the butter and sugar together stir in ice cream. This mixture freezes well.

TO MAKE DRINK Add a heaping tablespoon of the batter to a mug. Mix in 2 ounces of dark rum and top it off with boiling water. Stir to combine.

hot toddy Just the right amount of whiskey and warm water to warm you and your guests up on a cool evening. Makes one drink.

DIRECTIONS Add the sugar, lemon peel, and rosemary to a mason jar. Shake like crazy for about 5 minutes. Let sit in a sunny window for at least 3 hours or up to 8. Add lemon juice to the mason jar and shake until the sugar dissolves. Strain lemon juice mixture into a punch bowl. Add water, pineapple juice and rum. Serve chilled.

INGREDIENTS 2 ounces whiskey 1 spoonful of honey Squeeze of lemon juice Hot water

F

rom greeting cards to TV shows – not to mention parades, parties, and shopping malls – Santa Claus is an ubiquitous sight this time of year. So ubiquitous, in fact, that – and we say this realizing it could put us on the naughty list – there’s a danger we’ll get sick of the Jolly Old Elf. With that in mind, what’s the planner of a big yuletide shindig to do? Call for reinforcements, North Pole-style. We’re talking about Dasher, Dancer, Prancer, and Co.: Yes, for the right price, you can rent reindeer. In fact, just down the road from Eau Claire you’ll find a herd of 50 of the docile, antlered animals at Noel Productions of Osseo, where Jeff Fritz and his family have been raising reindeer for 28 years. In November and December, the Fritzes have animals at as many as three events a day, ranging from parades (in 2001, eight of their reindeer pulled a sleigh through downtown Chicago) to corporate parties. They’ve done events throughout Wisconsin, Illinois, and Minnesota, and this winter are even branching out to a gig in Aspen, Colo. They also lease some of their animals out to others who exhibit them. Interested in getting the reindeer for your event? Fritz advises that you contact him as early as possible. The reindeer do certain events year after year, so the calendar fills up fast. In fact, he suggests that potential clients try to plan their events around the animals’ availability. Even though reindeer are a rare sight in Wisconsin, Fritz avoids using the term “exotic” to describe them. “Exotic” calls to mind wild animals like lions and tigers, he notes, whereas reindeer have been domesticated for millennia by the

people around the Arctic Circle. “They’re a very personable animal,” Fritz explains. “It’s like having a dog. They know who you are. Like a dog, they come when you call them. … They’re not easy to train, but they’re very smart.” Reindeer really can be taught to pull sleighs (although there’s no word on whether the Fritz family’s animals can fly) and are even-tempered enough to tolerate being exhibited in display pens and standing around for photo ops, as the Fritzes’ animals do. Fritz, who grew up on a dairy farm, bought his first reindeer in Canada nearly three decades ago and in the years since has developed a thriving business. Rather than dressing as storybook elves, the Fritz family dons authentic Laplander garb when displaying their reindeer. Their costumes help them educate the public about the history of human-reindeer interaction and the species’ cultural importance to the Laplanders – or Sami people – who live in northern Scandinavia, Finland, and Russia. Around the North Pole, reindeer – who are cousins to caribou – are raised for meat, hides, antlers, milk, and (yes, it’s true) transportation. The family and their reindeer are as busy as Santa’s elves during the Christmas season, but everybody’s ready to rest by the New Year, especially the cows, who begin calving in mid-April. “The biggest thing about it is people really do enjoy them,” Fritz says of the reindeer. GINGERSNAP PUMPKIN BARS

I

enjoy a good ol’ classic pumpkin pie anytime, but when the leaves start falling and the air gets crisp, I’ve got pumpkin on the brain. I came across this recipe during a lazy Sunday afternoon of Pinterest browsing. I LOVE gingersnaps. They remind me of my dad because he LOVES them too. So the thought of combining pumpkin and gingersnaps was almost more than I could handle. If you’re in charge of dessert at your upcoming holiday party, try this recipe. Your friends and family will be impressed and delighted!

INGREDIENTS For the cookie dough base you will need: 2 cups all purpose flour 2 teaspoons ground ginger 2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon salt 3/4 cup softened butter 1 cup granulated sugar 1 large egg 1/2 cup dark molasses For the pumpkin layer you will need: 2 cans pumpkin puree 2 cans sweetened condensed milk 4 eggs 4 teaspoons pumpkin pie spice 1/4 teaspoon salt Optional: You can finish the bars off with a nice dollop of Cool Whip and a sprinkle of cinnamon.

DIRECTIONS 1. Preheat your oven to 350 degrees and line a 9-by-13-inch pan with tin foil. Use enough foil so that there is about 2-3 inches extra on either side. This will allow you to pull the bars right out of the pan after they have cooled. Whisk flour, ginger, baking powder, cinnamon, and salt in a medium-sized bowl. 2. Then add butter to the bowl of a stand mixer (or you can use an electric handheld mixer) and beat on high

BACON AVOCADO RANCH DEVILED EGGS

A

re you trying to decide what to bring to your next holiday party? Tired of the same old boring BBQ meatballs, cheese and crackers, or deviled eggs? Well these Avocado Bacon Ranch Deviled Eggs are a new twist on an old classic and are the perfect appetizer or dish to pass at your next Friendsgiving or holiday bash! The creaminess of the avocado pairs perfectly with the crisp bacon and slightly tangy ranch. These are the deviled eggs for people who don’t like deviled eggs!

INGREDIENTS 12 large eggs 1 ripe avocado, skin removed, cubed 2.5 tablespoons mayo pinch of black pepper 3 teaspoons Hidden Valley Ranch seasoning 8 strips bacon, broken into 3/4 inch pieces 1 tablespoon smoked paprika

until butter is creamy. Slowly add the sugar and mix on medium speed until fully combined. Next add the eggs and molasses and beat on medium speed for about 2 minutes, or until it starts to look creamy. 3. With the mixer on medium low, slowly add the dry ingredients and mix just until combined. The dough will be thick and sticky. 4. Wet your hands with water to prevent the dough from sticking to them and press the cookie dough in an even layer across the bottom of the pan. Try to make all the edges the same thickness, or slightly thinner, than the center. If the edges are too thick the cookie base will bake up through the pumpkin layer. 5. Now whisk pumpkin, sweetened condensed milk, eggs, pumpkin pie spice and salt in a medium sized bowl. 6. Pour pumpkin mixture over the gingersnap base and use a spatula to spread it into an even layer. 7. Bake for 1 hour. Remove from the oven and let cool in the pan for about 2 hours. Using a sharp knife cut into slices, add a big dollop of Cool Whip and a sprinkle of cinnamon and serve! If you want, you could make this a day ahead and store it in the refrigerator. I would wait to add the Cool Whip and cinnamon until just before serving it.

1. Start by adding your raw eggs to a large pot with a tight fitting lid. Add water to the pot until it comes up one inch above the eggs. Place the pot over high heat, uncovered and let the water come to a boil. Once it comes to a boil, turn off the heat but leave the pot on the burner. Cover with a tight-fitting lid and let the eggs cook for 12 minutes. Then drain water from eggs, and immediately run super cold water over the eggs for at least 2 minutes. Then place them in the fridge for a half hour to cool completely. 2. Remove eggs from the fridge

and peel. There are a lot of different techniques for peeling, but I find what works best for me is to gently roll the egg across a countertop covered with a clean kitchen towel, creating small cracks all over the egg. Then peel the egg while running it under cold water. 3. Slice each egg in half lengthwise, remove yolks and place yolks in a medium sized bowl. Place empty egg whites on your serving platter. Add mayo, pepper, ranch seasoning, and avocado to the egg yolks. Using a fork mash everything together until a creamy filling forms. If you want to get a little fancy, you can use a frosting tip to pipe the filling into the eggs. Add the tip to a small Ziploc baggy or piping bag and then transfer filling to the bag. Pipe filling into each egg, filling the egg generously. Sprinkle smoked paprika on each egg, add a piece of bacon, and try not to drool before you serve these! NOTE: This recipe can be made up to a day in advance and then refrigerated in an airtight container.
