Scouring gifts always gives us a thrill, even though it takes work. There’s no one formula for the perfect present. Whether you’ll be hosting—or attending—a party, you’ll want to look your best. Last year many kids missed out on visits to Santa Claus at the mall because of COVID-19. This year the jolly old dude is back, ready to greet the young—but with special safety precautions. Here’s what you need to know for five Bergen locations: • American Dream, East Rutherford, through Dec. 24. Santa is known to enjoy the water park and ski slope at this mall, but you may catch him at other special programs taking place—the Elf Workshop, perhaps—in the facility. • Bergen Town Center, Paramus, through Dec. 21. Advance reservations are encouraged and can be completed online, but walkups are accepted as space permits. Social distancing rules will be observed. • Garden State Plaza, Paramus, through Dec. 24. Online reservations are recommended, but walkins are accepted as space permits. Below is a simple eggnog recipe for 12 servings, courtesy of Allrecipes, that’s sure to put anyone (21 and older) in the holiday spirit. INGREDIENTS: • 4 cups milk • 5 whole cloves • ½ tsp. vanilla extract • 1 tsp. ground cinnamon • 12 egg yolks • 1 ½ cups sugar • 2 ½ cups light rum • 4 cups light cream • 2 tsp. vanilla extract, for finish • ½ tsp. ground nutmeg DIRECTIONS: Combine milk, cloves, ½ teaspoon vanilla extract and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Bring to a boil. In a large bowl, whisk egg yolks and sugar together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes or until thick. Do not allow mixture to boil. Strain to remove cloves and let cool for about 1 hour. Stir in rum, cream, 2 teaspoons vanilla extract and nutmeg. Refrigerate for 8 hours, or overnight, before serving.

PUPPY LOVE Dog: Nina, 1-year-old Havanese Owners: Debbie Migdal-Baron and Mitch Baron of Allendale Debbie had hoped for a puppy for as long as she could remember, and timing seemed perfect last year. In fact, a reputable breeder she knew had a new litter of Havanese pups, and Debbie immediately fell in love with one. “I wanted a black little girl, and [Nina] was the one,” she recalls. Black-and-white Nina ultimately joined Debbie and her husband, Mitch, at their home, and the trio have been living it up ever since. “She loves to play catch and tug with Dad,” says Debbie, adding that she’ll even play by herself when no one’s around. “She tosses her toys in the air and catches them.” But the company of others is what this pooch enjoys most. Nina, who turned 1 on Halloween, rarely meets a person she doesn’t love, her owners report, and will take a seat in almost anyone’s lap. She also looks forward to playdates with her furry friends—when Nina’s not visiting them at their homes, she’s at the window keeping watch for them. PARKING GETS EASIER

Don’t worry if you’re late to dinner in Hasbrouck Heights, or if you’re running into town for a quick errand—parking likely won’t be a problem. Heights business district visitors now have more parking options, thanks to the borough’s recent purchase of a private lot for public use. The lot, located at 161 Walter Ave. behind the post office, will be free to shoppers and diners during the holiday season. After that grace period it will be pay-to-park, with users accessing spots via an online app. Downtown areas in other towns such as Englewood, Ridgewood, Rutherford and Westwood also typically waive or reduce fees on specific days in December. Shoppers are encouraged to check with individual municipalities for updated parking schedules.

YOUR CHRISTMAS TREE’S FUTURE

Decorating a tree for the holidays is a joyful occasion; taking it down, that’s more of a mournful hassle. But what if your Christmas tree could be put to constructive use? Try one of these ideas (and remember to take all the decorations off first): • Turn it into firewood. Your tree is perfect fuel for your outdoor firepit. Use smaller branches as kindling and chop the trunk into longer-burning logs. Avoid lighting it indoors, however, as the amount of moisture in the tree will create smoke and sooty fireplaces. • Create a sanctuary. Whether they’re rooted in the ground or secured in a stand, trees are great shelters for birds. So take your old Christmas tree into the yard and stand it in a secure spot for winter. Decorate it with a bird feeder, then watch as new aviary acquaintances drop by. • Compost it. Towns that collect Christmas trees at the end of the season turn them into mulch. You can use your tree similarly and simply toss it into the compost heap in your yard—the browns and greens will ultimately break down into soil and feed your garden. • Donate it. That’s right, several organizations—namely zoos and animal sanctuaries—will accept old Christmas trees. The Turtle Back Zoo in West Orange, for instance, uses them as décor in their exhibits. Some animals, such as goats, chow down on the greens too, so it’s imperative that all tinsel and ornaments are removed.

How has the pandemic impacted people’s oral health? The pandemic has definitely disrupted oral health. We’ve seen an increase in gum disease and overall wear and tear of teeth, which is leading to poor esthetics. Dental prevention and esthetics are related and they both play an important role in my practice. Esthetics can boost a patient’s self-esteem, but we believe that esthetics is about more than just having a pleasant smile. It’s about the overall health of your smile. We believe in using tools to help slow down or halt irreversible damage, such as nightguards and retainers to Botox to deep cleanings (such as scaling and root planning). That’s why it’s important to get back to periodic dental cleanings and examinations after the disruptions associated with the pandemic.

What is the biggest problem you’re seeing with patients who have put their dental needs on hold during Covid-19? We are seeing an increased number of patients with Bruxism (grinding and clenching of the teeth) habits, even in very young children. Bruxism may have been triggered due to the stresses of the pandemic, such as anxieties about virtual schooling and the increased number of work hours spent in front of a computer. Bruxism is linked to a decline in a patient’s overall oral health, impacting everything from periodontal (gum) health to tooth fractures and deterioration to nerve damage. It can result in TMJ disorder, facial pain, ringing in the ears, headaches/migraines, and systematic bacterial transfer. But we take the necessary time to educate a patient and offer preventive tools to get a patient’s oral health back on the right track.

Holy Name’s nurses will be guiding the expansion of our highly successful Hospital at Home program, the first program of its type in New Jersey. Hospital at Home enables eligible patients to receive acute care and recovery support within the comfort of their own homes, for a wide range of conditions including COPD, congestive heart failure, infections, and issues requiring IV antibiotics. Hospital at Home patients receive the same level of expert care they would receive in the hospital, supported by a dedicated team of physicians, nurses, and medical assistants. COVID KEPT KRISSA’S MOM OUT OF THE DELIVERY ROOM. FORTUNATELY her nurses WERE MOMS TOO. Krissa had always imagined her mom would be by her side when she gave birth. That was the plan. Tired of the coronavirus? You’ve got company. Unfortunately, though, the virus isn’t finished with us, and we know that young people are vulnerable. Many parents with young children have renewed concerns as events and activities shift indoors for the colder months. It’s especially worrying now, with holiday gettogethers in full swing. Happily, the Centers for Disease Control and Prevention (CDC) eased some of those worries a bit last month, when it greenlit Pfizer’s pediatric COVID-19 shots for the 5-to-11-year-old age bracket. The move opened vaccine eligibility to roughly 28 million kids in the U.S. and was good news for anxious parents. As soon as the CDC gave the goahead, many in Bergen County immediately began scheduling appointments for their children to receive the first dose at the area hospitals, pediatric offices, pharmacies and similar sites. This doesn’t mean, however, that we should let our guards down. Parents are urged to continue protecting their children, especially in indoor environments. “Vaccinating children over age 5 is one of the best things we can do to keep them safe,” says Harry Banschick, M.D., a pediatrician at Holy Name Medical Center in Teaneck. “We urge kids who are high risk—if they’re obese, are immunocompromised, live in multi-generational families—to get vaccined first.” And Katrina Munteanu, M.D., a pediatrician at Broadway Pediatric Associates in Westwood, reminds us that kids who aren’t fully vaccinated—even if they’re around vaccinated family at their homes—are vulnerable at schools, for instance, because many might be around classmates who have been exposed. That’s why well-fitting masks are still encouraged for the younger ages. “At this point, it’s still recommended that unvaccinated children wear masks indoors,” she says. “We don’t know who else will be in a store or a movie theater—we still don’t know who’s been vaccinated and who hasn’t.” And parents should still be cautious even if their kids have received the first of the two-dose COVID vaccine. Dr. Munteanu reminds moms and dads that everyone, regardless of age, must complete a five-week wait period (three weeks after the first shot plus two weeks following the second) until they are considered fully vaccinated. In other words, pediatric patients who received a COVID shot during the first week of November are not fully protected from the coronavirus until early to mid-December. “Kids who just have the first dose have to be careful, as they can still get sick,” she says. “They can take their masks off in outdoor settings, but inside at a theater or a restaurant, it will depend on how crowded and how ventilated the space is. If it’s crowded, leave the masks on.” In high-transmission areas and places where kids may gather close together, such as daycare facilities, and on social occasions such as children’s playdates

and seasonal get-togethers with family and friends, masks are strongly recommended until all parties are vaccinated, Dr. Banschick says. The CDC also recommends taking precautions during in-person gatherings, as the vaccine is not 100-percent effective and breakthrough cases still occur. “Holidays are going to be tricky because there will be individuals who are and aren’t vaccinated,” Dr. Munteanu adds. “Kids should be safe if parents and family are vaccinated, but it gets complicated when an unvaccinated person comes in. A lot will depend on everyone’s comfort level, but it’s best for children to leave [masks] on—especially around older grandparents and those who are at-risk—because family members can still get exposed.” Parents should also continue to teach children to wash their hands with soap and water for at least 20 seconds, use hand sanitizer that is 60-percent alcohol or higher and cough and sneeze into a tissue or into their arm or elbow, advises Dr. Banschick. Remind kids to dispose of tissues properly. How else can parents mitigate risks this season? As in 2020, creating bubbles or pods with just families and close friends is an option. While it’s not necessary this year, it’s not a terrible idea, Dr. Munteanu says. But she cautions that even those protective environments can break down as people start to feel comfortable. “It’s not foolproof, but it’s one way to help mitigate the spread of the coronavirus,” she says of this tactic. “The virus doesn’t have a conscience and doesn’t select who it infects. FROM LAURENT TOURONDEL, LT BAR & GRILL, HACKENSACK:

SHORT RIB BAO BUNS, PICKLED JALAPEÑO CHIMICHURRI, HOISIN GLAZE SERVES 4–6

INGREDIENTS:

n sliced black garlic braised short ribs n hoisin glaze n pickled jalapeño chimichurri n red cabbage, sliced n jalapeño peppers, thinly sliced Hoisin glaze: n 32 oz. hoisin sauce n 32 oz. short rib braising liquid reduction n 8 oz. sriracha In a medium-sized saucepot, combine all ingredients and cook on low heat for about 25–30 minutes or until sauce has a caramel consistency. Pickled jalapeño chimichurri: n ½ cup olive oil n ¼ cup white onion, chopped n ½ jalapeño, chopped with the seeds n ½ cup of pickled jalapeños, drained and chopped n ½ cup cilantro, roughly chopped n ¼ cup parsley, roughly chopped n lime juice, to taste n salt and pepper, to taste Combine ingredients and season with salt and pepper. Cover with plastic wrap and keep in the refrigerator until ready to use. Season chimichurri with salt, pepper and lime juice to taste. To order: n 4 pieces sliced short ribs (about 1½ oz. each) n 4 each bao buns n 2 oz. pickled jalapeño chimichurri sauce n 4 each jalapeños, thinly sliced n 2 oz. red cabbage, thinly sliced n ½ oz. micro cilantro n 1 each quarter lemon wedge

DIRECTIONS:

In a quarter sheet tray, place and season each slice of short rib. Using a brush, evenly coat both sides of the short ribs with the hoisin glaze and place in a 350°F oven until edges are crispy. Meanwhile, steam the bao buns for 3–4 minutes until hot and fluffy. Place the short rib in between bao buns and evenly spoon pickled jalapeño chimichurri across all four buns, top with red cabbage and sliced jalapeño. Garnish with micro cilantro.

FROM MATHIEU PALOMBINO, GIGI AND MARIO, EDGEWATER:

GRILLED ARTICHOKES SERVES 6

INGREDIENTS:

n 6 jumbo artichokes n large bouquet of fresh thyme, rosemary, oregano, bay leaf, sage n 20 whole black peppercorns n 1 white onion, quartered n 1 head garlic, halved n 6 Tbs. sea salt n 6 lemons n 1 garlic clove, minced or grated n ½ cup capers n ¾ cup olive oil

DIRECTIONS:

Trimming the artichokes: With a small paring knife, remove the small leaves around the artichoke’s stem. Using a serrated knife, cut off the top 1/3 of the artichoke. With kitchen scissors, trim ¼ inch off the top of each leaf. Do not discard trimmings. Poaching the artichokes: Bring 10 quarts of water to boil in a large lidded pot. Add sea salt, halved garlic head, onion, peppercorns and herb bouquet. Squeeze the juice of four lemons into the water, then add the rinds to the pot. Submerge the artichoke in the water stems down, so the water enters the artichoke. Add leaf trimmings to the top of the pot. If the artichokes float to the surface, you can keep them submerged by placing an inverted plate on top. Simmer for 45 minutes. Artichokes are cooked when you can easily pluck a leaf without resistance, or when a paring knife slides smoothly through the middle of the stem. Drain and let cool completely on a sheet pan, stem up. Grilling the artichokes: Slice ¼ inch off stem. Using a serrated knife, carefully halve the artichokes. Do not apply pressure, as the artichoke is very tender and will fall apart. Heat castiron pan or heavy griddle over high heat and grill artichokes facedown for 2 minutes, then flip and grill for 1 minute more on the other side. For the vinaigrette: Combine the juice of two lemons, olive oil, capers and grated garlic clove in a small bowl. Season with salt and freshly ground black pepper to taste, and drizzle over grilled artichoke halves. This is a visually appealing, hands-on appetizer for a holiday meal. The rewards mount as your guests peel the leaves one by one, getting to the heart of things.

Oversized balloons and tassel garland, for instance, can be used to frame the chair and a well-stocked bar cart. “It’s always fun to have a signature drink at any party,” Petersen says. “Make it something that you love or something that goes with the season and you think your guests will enjoy.” And don’t forget to have enough confetti for when the clock strikes midnight. HELP ately ) r e p s e (D WANTED With the holiday season in full swing, employers are encountering a hard reality: a workforce reluctant to return to work. By Leslie Garisto Pfaff Jason Beck is tired. Since the spring, he’s been working six days a week, and with the holidays here, he’s putting in longer hours, under tougher conditions. As a divisional manager for a group of luxury stores, one in Garden State Plaza, he’s a victim of what many are calling the hiring crisis. Simply put, there aren’t enough people looking for jobs to fill the positions that currently need to be filled. That means that Beck has to step in when there are holes in his sales force— and lately, there are always holes in his sales force. Like almost everyone who works for a retail chain or a franchise, Beck is contractually prevented from speaking to the press, which is why we can’t name the store he works for, and why we’ve agreed to change his name in this article. Even if this proscription weren’t in place, though, it’s unlikely that brick-and-mortar retailers—already reeling from the effects of the pandemic—would want to advertise the fact that, in the year’s busiest shopping season, customers are apt to encounter longer lines, and fewer experienced salespeople, than in previous years. “Bergen County employers are struggling to recruit workers, despite high levels of unemployment,” notes Lynda Wolf, director of the Bergen County Job Center (BCJC). That’s especially true, she says, among hourly, entry-level and midlevel nonmanagerial positions, particularly in the sectors of manufacturing, hospitality, food service, retail sales and health care. A November walk through Mitsuwa Marketplace, the 45,000-square-foot Japanese mall in Edgewater, revealed “hiring” signs at virtually every kiosk, and a manager at a Bergen County Panera Bread told us that hiring “is one of our biggest difficulties.” Similarly, a manager at one of Bergen

{ SPECIAL REPORT } County’s four Target stores noted that “it’s happening here, and everywhere.” “I don’t care what area you’re in,” says Carol Rauscher, president of the North Jersey Chamber of Commerce (representing nine Bergen municipalities, including Englewood and Fort Lee), “whether it’s a grocery store, a restaurant or a clothing store, hiring today is very, very difficult.” Municipalities, too, are having trouble finding seasonal and permanent workers. In early November, the Borough of Glen Rock posted a notice on the online help-wanted site ZipRecruiter emphasizing that it was “urgently hiring” workers through the fall and winter to clear snow and leaf litter. At the same time, the Village of Ridgewood issued an alert on The Ridgewood Blog that it was experiencing “unprecedented difficulty in hiring crossing guards for this school year” and was working “diligently on hiring more.” Many towns, including Ridgewood and Wyckoff, are facing a severe shortage of school bus drivers; in Ridgewood, the shortage, which was beginning to be felt last spring, actually delayed the town’s return to in-house classes until this fall, and the situation is still dire. Connor Shaw represents the United Service Workers of America, a union of school and paratransit bus drivers (who convey people in wheelchairs) in the tristate area. He notes that Englewood, for instance, which needs 120 school bus drivers to be at full capacity, is currently down to 90, and that Elmwood Park’s paratransit drivers are only at 75 percent of capacity. In fact, he says, “all of our yards could use 25 percent more drivers.”

a lack of stability.” In other industries, many workers simply made a transition from in-person work to work-from-home, and a lot of them found that they liked the flexibility it offered—especially if they had young children at home. Only two other states had a greater percentage of remote workers than New Jersey, which experienced an increase of 1,253 percent in telecommuters from 2019 to 2020. Those satisfied telecommuters not only enjoyed their newfound freedom, but were also able to save money they would otherwise have spent on commuting, eating out, etc. A large percentage of them have decided not to return to their old jobs now that they’re being asked to come back to an office, and some of them are currently living on their savings while they decide where they might like to work in the future—part of a new social movement being

The BCJC is doing its share to help employers in a bind. In September it hosted a countywide, week-long recruitment event, and it’s held a number of virtual job fairs and information sessions, as well as partnering, in November, with Garden State Plaza on a two-day, in-person job fair, which Lisa Herrmann, the mall’s senior director of marketing, describes as “part of an ongoing program introduced to support retailers’ hiring efforts.” It’s clear that employers will have to up their game in this strange, new job market. If they’re not looking beyond their home turf for workers, says Rauscher, they’ll have to start doing that ASAP. Many workers in Bergen County restaurants, she notes, live not in Bergen but in nearby Hudson County, where the cost of living is lower overall. The pandemic, of course, is a major precipitating factor in the current labor shortage. Federal unemployment benefits, which kept many people afloat after much of the world—including the job market— shut down in spring of 2020, also kept people from rushing back into the market when businesses reopened in June of that year. Still, says Wolf, “we had expected to encounter a post-pandemic hiring rush after the additional federal unemployment benefit ended on Sept. 4, but it never materialized.” Some worker hesitancy can be blamed on COVID fears, which didn’t abate when the economy started opening up. A HEALTHY HOLIDAY

To balance the overindulgence of the season, treat yourself to any of these salads, perfect as an appetizer or as a nutritious side.

WHITE WINTER SALAD INGREDIENTS:

FOR THE SALAD: n 1 small shallot, finely chopped n 1 Tbs. lemon juice n 1 tsp. apple cider vinegar or sherry vinegar n fine sea salt n ½ tsp. Dijon mustard (optional) n 3 Tbs. olive oil n 1 Tbs. walnut oil n 5 large Belgian endives (approximately 1¼ lbs.) n 1 large or 2 small fennel bulbs (approximately 6 oz.), halved lengthwise and sliced 1/8-inch thick crosswise (use a mandoline for best results) n 4 small white (hakurei) turnips (approximately 4 oz.), sliced 1/8inch thick n 1 small or ¼ large daikon, sliced 1/8-inch thick n ghee n roasted parsnips n 1 cup walnut halves, coarsely chopped and toasted FOR THE PARSNIPS: n 1/3 cup ghee n 1 Tbs. olive oil n 2 lbs. parsnips, peeled, cut into 3- to 5-inch lengths, halved or quartered if large n 4 branches of thyme (optional) n fine sea salt

DIRECTIONS:

To make the parsnips, preheat oven to 400°F. Line a rimmed baking sheet with parchment paper. Place ghee and olive oil onto the prepared pan and slide it into the oven for 2 to 3 minutes, or until most of the ghee has melted. Carefully (the pan will be hot) toss parsnips, thyme (if using) and warm fat; season generously with salt and toss once more. Spread parsnips into one even layer. Roast parsnips, tossing once or twice, until tender and properly brown (deep golden all over and dark brown in spots), 45 to 55 minutes. Or let the roots cool to room temperature. Ghee-roasted parsnips can be refrigerated overnight and reheated in a 300°F oven for 15 minutes. To make the salad, in a large mixing bowl, whisk together the shallot, lemon juice, apple cider vinegar and a pinch of salt and set aside for 5 minutes or so. Whisk in the Dijon (if using), olive oil and walnut oil. Cut an inch off the bottom of each endive and discard. Gently peel back the leaves, continuing to trim the root as you go, until you get to the core (with tightly bunched leaves attached); cut each core in half lengthwise. Add the endive leaves and cores, fennel, turnips, daikon and a pinch of salt to the bowl of vinaigrette and toss gently to coat.

On a large serving platter, layer the roasted parsnips with the endive salad and toasted walnuts. Complete this layering process until the ingredients are all incorporated. Serve at once.

LITTLE GEM SALAD WITH LEMON AND BOTTARGA Serves 4-6

INGREDIENTS:

FOR THE SALAD: n 4-6 heads little gem lettuce, approximately 1½ lbs., or any small, crisp lettuce such as baby romaine n fine sea salt n zest of 1 lemon (use a microplane for best results) n ¼ cup grated bottarga (use a microplane for best results) n 2 green onions, white and light-green parts, thinly sliced on the diagonal FOR THE DRESSING: n 1 Tbs. lemon juice n 3 Tbs. olive oil n fine sea salt

DIRECTIONS:

To make the dressing, mix the lemon juice, olive oil and a few pinches of sea salt in a jar. Set aside. Place the little gem leaves and cores in a large mixing bowl and season with 1 to 2 pinches of salt. Drizzle about 3 tablespoons of the vinaigrette or dressing over the leaves and gently toss, adding more as needed, until every leaf is dressed. Arrange the leaves on a large serving platter— “cup” side up—and top with half of the remaining ingredients. Repeat layering once more. Serve immediately.

ROASTED WINTER SQUASH WITH PUMPKIN SEEDS AND DULSE

Serves 4-6

INGREDIENTS:

n 1 kabocha squash (approximately 3 lbs.), stemmed, peeled, seeded n fine sea salt n 2 chile de arbol n a few sprigs rosemary or marjoram (optional) n 2 Tbs. olive oil, plus more for roasting n scant ¼ cup pumpkin seeds, toasted n 1 heaping Tbs. (loosely packed) dulse flakes n ½ tsp. red wine vinegar, divided n 1 tsp. pumpkin seed oil or olive oil n 2 tsp. lemon juice n 2 handfuls tender greens (approximately 2 oz.), ideally a mix of sweet and spicy varieties (such as pea shoots, fava leaves, mizuna, arugula, frisée and/or mâche) n 1/3 cup (loosely packed) edible flower petals (optional)

DIRECTIONS:

Preheat oven to 450°F. Line 2 rimmed baking sheets with parchment paper. Cut the pumpkin into about 1½-inch wedges and divide between the 2 pans. Toss each batch with 2 pinches of salt, 1 chile de arbol, a rosemary or marjoram sprig or two (if using) and olive oil to coat (approximately 3 tablespoons per baking sheet). On each pan, spread the wedges in a single, sparse layer. Roast 40 to 45 minutes, or until tender and caramelized, turning the pieces halfway through (use a spatula, as tongs break up the flesh) to ensure even browning. Meanwhile, chop the toasted pumpkin seeds and dulse with a small pinch of salt until you have a mix of crumbs and shards (or use a spice grinder—but don’t grind it too fine). Throw this mix into a small bowl and toss with ¼ teaspoon vinegar and 1 teaspoon pumpkin seed oil. In another small bowl, stir together the lemon juice with a pinch of salt and 2 tablespoons olive oil. Set both bowls aside. Once the pumpkin is ready, drizzle a little vinegar all over (this is easiest if you have your vinegar in a fine-tipped squeeze bottle, but a small spoon works too). Let the pumpkin cool slightly; discard the chile and herb sprigs. Scatter half of the greens on a large, flat platter or divide among plates; drizzle half the lemon dressing evenly over the top. Place the pumpkin on top, then another scattering of greens and the pumpkin-seed-and-dulse mixture. Drizzle the remaining lemon dressing all over, and top with edible flower petals, if you’d like.

Proposed changes: The top capital gains tax rate would increase to 25%. For those also subject to the NIIT, it would result in a total tax of 28.8% on long-term capital gains or qualified dividends.

Proposed changes: The current exemption amounts would sunset in 2026. After this year, the exemption would revert back to the base established in 2010, which accounting for inflation, will be in the range of $6 million per person.

The carrot (Daucus carota) is an edible taproot, straight from the ground, out of sight and protected from the elements until it’s plucked, fresh and crisp. It got its start in what’s now Afghanistan around the 1000s. Orange? Predominantly. But it didn’t start that way. Before the 17th century carrots routinely came in varied shades, from purple to yellow to red to white, and some cultivars still do. A genetic mutation allowed farmers to concentrate on the orange carrot most familiar today. One common belief is that orange carrots were promoted to honor William of Orange, the Dutchman who became England’s King William III. Apparently that’s fictitious, but historian Simon Schama says Dutch citizens who rebelled against the House of Orange considered the vegetable an offensive tribute to their former rulers. They called orange “the color of sedition.” Who knew? POWER UP We did know that carrots benefit eyesight (though they don’t magically allow you to see at night). Half a cup of chopped raw carrots meets 73 percent of your daily need for vitamin A. You get this essential nutrient when your body converts the carrot’s beta carotene. And retinal, the active form of A, joins with a protein called opsin to form rhodopsin, a molecule that aids color vision and vision in limited light— and also helps maintain the cornea. But there’s more! The fibers in carrots promote regularity, aid in controlling blood sugar and help you feel full without having to gorge. They’re also useful in clearing the body of cholesterol, lowering heart-disease risk. And if you order right now, the carrot will throw in vitamin B6 (helps convert food to energy), vitamin K1 (good for blood coagulation and bone health), biotin (aids the metabolism), \and potassium (helps control blood pressure). All for just 25 calories in that half-cup serving. Some of carrots’ benefits also vary with their color. Red carrots contain lycopene, which benefits heart health—just think red for that red organ. Purple carrots are rich in anthocyanin, a water-soluble pigment that helps protect the stomach against inflamma-

tion—think of those famous purple pills for gastrointestinal issues. BUY/STORE/SERVE There’s little mystery about where to buy carrots. Organic (usually grown pesticide-free) or not, full-sized or in the “baby” carrot form that’s been popular since the ’80s, they’re available in every grocery store or farmers’ market. (For “rainbow” multi-colored selections, try Wegmans, Whole Foods, Walmart or Amazon online.) Choose a plant that’s plump and firm to the touch, with few visible cracks and no hair on the root. Frozen and canned carrots are sold too, but for both taste and nutrition, fresh is superior—the closer to the source, the better. If you can’t use all your carrots in one go, keep them in a sealed bag in your refrigerator’s crisper drawer. They’ll last there for three to four weeks (figure two if they’re cut or chopped). And they’ll keep better if the green stems are no more. (Those greens can absorb moisture, drying out the carrot.) Don’t keep them with apples; they’ll turn bitter. If they lose their original hue or turn slimy, they’re out the door. Carrots can be steamed, stir-fried, roasted, braised, boiled, sautéed or microwaved. You’ll find carrot cakes, carrot muffins, carrot puddings, carrot chips and carrot soups—and carrots are a key ingredient in the healthy, good-for-the-soul vegetable soups and stews we prize in winter. They’re a standard go-to for salads (chopped, sliced, shaved or julienned), and if you search online you’ll find recipes for carrot fries. Best of all, raw carrots are a crunchy, tasty salvation when you’re tempted to nosh on sugar-loaded or salt-loaded snacks instead. —Brian Kelley

Add all ingredients to a cocktail mixing glass (or any other type of glass). Fill the glass with 1 handful ice and stir continuously for 30 seconds until very cold.

The Food Brigade in Dumont holds weekly drive-through food distribution, handing out full meals provided by local restaurants.
