Before Hollywood, New Jersey was home to the biggest names in the movie biz. (Fort Lee in Bergen County claims an enduring place in pioneering cinema history.) It’s only fitting that Netflix, one of the largest streaming services, set up shop in our state. And there’s a good possibility the company can land in our county: Netflix has submitted a bid to develop Fort Monmouth, an old military base spanning parts of Eatontown and Oceanport. If its proposal is approved, Netflix anticipates building its second-largest production site (its biggest is in Albuquerque) at the sprawling, 300-acre property. It’s not a done deal, though, as the Fort Monmouth Economic Revitalization Authority received three other development bids in addition to Netflix’s submission. The approval process could take months, officials say. Who will Stay tuned.

He’s the face of Big Momma’s Dog Training and a therapy dog, but Baymax’s primary duty is “professional snuggler” for his “mom and dad.” The family’s love affair started in 2017, when Nicole drove three hours to Pennsylvania to pick him up—and he’s been a ham ever since. Over the years he’s mastered plenty of tricks, chewed countless squeaky toys, dressed up for holidays, played with his 5-year-old Lab mix bestie Harper and even helped Mom with her clients at Freehold-based Big Momma’s. Baymax continues to do all those things today, but he also spends time doing more therapy visits and just saying hello to people on his walks around Atlantic Highlands and Sandy Hook. What’s a typical school day like? We talk about the Lenni Lenape Indians, our first settlers. We let students do reading out of prim ers. We try to write as many words that rhyme with Wall as they can fit on their chalkboard. My three daughters and two grandsons went to Wall schools. In fact, I made my grandson wear the dunce cap—not as a punishment, but as a privilege to see what it was like. What do you consider the greatest accomplishment in preservation? Just keeping the history of Wall alive. We’re lucky we have Allaire Village [a living history museum in Allaire State Park], and we have InfoAge [a science and history museum in Wall]. We’re concentrating on Wall itself, from the Indians to today. I think it’s good to know where we came from, what was here and what our forefathers had to do to get us here.

Twenty Boy Scouts have earned their Eagle Scout rank by doing projects around the building, and most have been on one of those class trips, so I’m very encouraged. How did you feel about the county award? It’s nice to get recognition for a lot of years of hard work. I have painted, I have plastered, I have set brick. I’m not afraid to get my hands dirty.

Twenty Eagle Scouts and countless schoolchildren can all vouch for Wall Township’s De Hearn as a champion of history. The Jane G. Clayton Award issued by Monmouth County, which Hearn won in 2021, was just icing on the cake. This grandmother of four and longtime jewelry-store owner was instrumental in saving three sites, all built in the 1800s. Wall residents know them as the Allgor-Barkalow Homestead Museum, the Blansingburg Schoolhouse and the Morris-Allgor-Kittell Wheelwright Shop. And though Hearn is president of Old Wall Histori cal Society and museum director, you’ll find her plastering like the best of them to maintain the sites—even though she’s in her late 70s. What first inspired you to go to bat for the preservation of local historical sites? I joined the Historical Society in 1975, and that was at the beginning of the state’s bicentennial celebrations. But I have loved history since I was in grammar school. I went out to the Old Tennent Church, and I could see the blood stains on the pews. I just felt a kinship to it—that I belonged there—and I was 10, 11 years old. What can historic sites teach? The Wheelwright Shop is on our township seal and flag. Since we’re an old community—we were established in 1851—the children should see what was here before. We used to be nothing but big farmland, but now there’s been development after development. How have you reached out to schoolchildren? We approached the schools to bring the children there to teach as if it was 1850. We dress the girls in pinafores and the boys in suspenders to get a real feel for what it would have been like. The girls curtsy to the teacher, and the boys bow as per their morning routine after they say the flag salute.

What is there about Wall specifically that makes its history worth saving? I just feel we have so much that’s gone on here. The Revolutionary War was down by the Manasquan River, and the Allen family was trying to save the salt works that the English wanted to take over. Wall was so massive; it used to be from the Manasquan River to the Shark River, from the Atlantic Ocean to Howell Township. You have devoted many years to Wall Town ship’s past. What keeps you motivated? The constant upkeep of these buildings, and to watch these children come in that are so delighted and happy. Hopefully we’ll trigger something in their brains that will turn them on to history.

Slowing down is a fact of life as one ages, but Fillippina Nitti didn’t expect to be nearly unable to walk before the age of 60. Years of bilateral knee pain were taking a toll on the Middletown resident, and she was running out of solutions to improve her condition.

So, before her 58th birthday, Nitti heeded the advice of her husband, who previously had knee replacement surgery performed at Monmouth Medical Center. He told her to see his surgeon, David Chalnick, M.D., Medical Director of the Joint Replacement Center at MMC. Nitti told Dr. Chalnick that she was experiencing so much pain and discomfort in both knees while doing daily tasks that it was diminishing her quality of life. He recommended staged bilateral total knee replacement, in which he would perform replacement surgeries on two different dates. Nitti completed a few physical therapy sessions to develop strength, then underwent surgery on her right knee in April 2021. After a day of recovery at MMC, Nitti was back at home—and in awe.

“Staged replacement is fairly common for patients who have bilateral disease and need two replacements,” Dr. Chalnick says. “The time between surgeries is variable and depends on what is appropriate for the patient and their schedule. We’ve done surgeries within a few weeks or several months. We do what’s best for each individual patient.” After three months of physical therapy, Nitti was back to living the life she once enjoyed. “For so long, I would have to climb stairs one step at a time because the pain was so bad,” she says. “Now, I’m walking and climbing steps without pain. I’m working on walking more and riding the stationary bike. They were truly life-changing procedures.” Nitti’s was one of more than 800 joint replacements performed annually by MMC’s Joint Replacement Center, Dr. Chalnick notes. The program is dedicated to the care of knee and hip joint replacement surgery patients, and features a specialized team that uses state-of-the-art technology and techniques.

“I was able to fully bend my knee, which I wasn’t able to do in previous years,” she says. “I was expecting to be in pain after the surgery, but there really wasn’t any. It was amazing, and Dr. Chalnick and the staff were amazing too—they treated me like it was my birthday. That’s why I went back.”

In February of this year, just after Nitti turned 59, Dr. Chalnick performed total knee replacement surgery on her left knee.

“We’ve had disease-specific Joint Replacement Certification since 2009,” Dr. Chalnick says. “I’m proud of our program. We work very hard so every patient has a good experience throughout their hospitalization. We have exceptional team members that include nurses, social workers, physical therapists, residents and fellowship-trained surgeons.”

She had tried many treatments—two knee arthroscopies, lubrication and steroid injections, physical therapy, anti-inflammatory drugs and countless braces—but the pain never subsided.

“I was able to fully bend my knee, which I wasn’t able to do in previous years. I was expecting to be in pain after the surgery, but there really wasn’t any.”

“I couldn’t walk, and I couldn’t go around the corner,” Nitti recalls. “It was getting debilitating. My oldest son and I had a tradition of going to Comic Con, but I couldn’t go anymore because I wasn’t able to stand in line.”

Among the criteria that weighed heavily in the Best Hospitals in America List selection process was a hospital’s infection rates, maternity care, pediatrics, medication management, hand hygiene practices, nursing workforce and critical care. Leapfrog also tracked the number of highrisk surgeries, including bariatric surgery for weight loss, lung cancer surgery and hip replacement surgery, among others.

The recognition comes on the heels of MMC receiving its 15th consecutive Leapfrog A rating in the spring. It also follows an announcement last fall of MMC’s recognition for a third time as a Top Teaching Hospital by The Leapfrog Group, which is widely acknowledged as one of the most competitive honors American hospitals can receive.

The ENA Lantern Award application focuses on innovative practices and noteworthy attributes of the emergency department, collaborative approaches to delivering optimal care for patients, performance and outcome metrics, characteristics of the nursing team and facility and emergency department demographics. It distinguishes an emergency department’s commitment to quality, safety and presence of a healthy work environment.

In 2021, the MMC Emergency Department received the Crisis Response Team Award from the New Jersey chapter of the ENA in recognition of the department’s significant contributions and response to the challenges of the public health crisis stemming from the COVID-19 pandemic.

MMC RECEIVES HONORS IN INAUGURAL ‘BEST’

Created in partnership with The Leapfrog Group, a national watchdog organization of employers and other purchasers focused on health care safety and quality, the list identifies the facilities that consistently deliver the safest, highest-value care for patients and excellence in hospital experience.

The award recipients will be recognized at the Hall of Honor awards ceremony Oct. 2 in Denver.

The Leapfrog Hospital Survey is the gold standard for comparing hospitals on standards of safety, quality and efficiency. To compile its new list of the top hospitals in the country in partnership with Money, the Leapfrog Group used data from the 39 performance measures in the seven different categories in its 2021 hospital survey, which participants were required to submit by August 31, 2021. To qualify for the list, eligible hospitals were required to carry an “A” letter grade on the Leapfrog Hospital Safety Grade assessment for fall 2021. Hospitals were also required to meet a qualitative assessment of excellence, and were disqualified if they exceeded national mortality rates for heart attacks, heart failure, pneumonia, chronic obstructive pulmonary disease or coronary bypass surgery or if they earned a “C” or worse on the 2022 spring Safety Grade assessment. Leapfrog applied additional criteria related to safe medication ordering practices, intensive care unit staffing and performance related to certain high-risk surgeries including bariatric surgery, hip replacements and lung cancer surgeries.

The digital platform Money announced its inaugural list of the Best Hospitals in America on July 6th, with Monmouth Medical Center among just 148 U.S. hospitals to receive the award.

Classes are just getting started but haven’t reached the height of their curriculums. There’s still time this summer to take your family to a destination that will engage young imaginations and inform as it entertains. Whom to take: The family-friendly museum has fun and educational exhibits for all ages. Strollers are permitted except in theaters, outside which stroller parking is available. Distance from Monmouth: 54 miles Why go now: If your kid loves turtles and marine life (or maybe it’s you), check out the museum’s new feature flick Turtle Odyssey, which debuted in July and runs through the end of the year at the LeFrak Theater. Valuable lessons can also be learned at “Extinct and Endangered: Insects in Peril,” another recently opened exhibit that spotlights threatened ecosystems and insect species and features largeformat photos, some as big as 8 feet. Distance from Monmouth: 57 miles Why go now: Chances are good that you’ve recently looked up and seen a large bird of prey. Hawks, eagles and owls are becoming more common in North Jersey. The Raptor Trust is a bird rehab center—the staff takes care of birds that are found injured in the wild and releases them when nursed back to health. Those that can no longer survive in the wild remain at the trust and are used to educate the public. Summer is the perfect time to take a self-guided tour and see the resident raptors. Guided tours and programs are booked for the season, but fall reservations are underway. Where to grab a bite: The trust doesn’t have on-site eateries, but a short drive will take you to the Millington Station Café (breakfast and burgers), Bonji Bowls (bowls and smoothies) and Fu Feng Yuan (Chinese). DIRECTIONS: Preheat the oven to 375°F. In a small bowl mix together the sea salt, 1 teaspoon pepper and paprika. Sprinkle the mixture on all sides of the chicken and set aside. Melt 4 tablespoons of the butter in a large skillet over medium-high heat. Brown the chicken on all sides, working in batches if needed. Transfer the chicken to a large Dutch oven and set aside. Deglaze the skillet with the vermouth, scraping up any browned bits from the bottom of the pan. Lower the heat and add the remaining 2 tablespoons butter. When the butter starts to foam add the mushrooms and sauté until softened, 3 to 4 minutes. Sprinkle the mushrooms with flour and stir. Add the chicken broth and the sherry in a thin stream while stirring. Simmer and stir for an additional 2 minutes. Season to taste with kosher salt and pepper. Pour the mushroom and sherry sauce over the chicken. Wedge the artichoke hearts between the chicken pieces. Cover and cook until the chicken reaches an internal temperature of 165°F, 50 to 55 minutes. To serve, place the chicken pieces on a large platter and top with the artichoke hearts, mushrooms, juices and flatleaf parsley. If you don’t have sherry or vermouth on hand, you can swap out both with a dry white wine, such as Sauvignon blanc or Pinot Grigio. And if you prefer to make this dish without alcohol, substitute apple cider vinegar for the sherry and white wine vinegar for the vermouth.”

Preheat the oven to 425°F with one rack on the top third and one on the bottom third. Line a baking sheet with parchment paper and set aside. On a lightly floured surface, roll the puff pastry into a 10-by-14-inch rectangle. Using a paring knife, lightly score the border of the pastry to create a ¼-inch margin. Place the pastry on the prepared baking sheet and prick it inside the border with a fork to prevent puffing. In a medium bowl, toss the carrots with the oil, 1 teaspoon salt and 1 teaspoon pepper.

Spread the carrots in a single layer on a separate baking sheet. Place the puff pastry on the upper rack. Place the carrots on the lower rack. Bake the pastry until it is lightly golden, about 20 minutes. Remove from the oven and allow it to cool slightly. Roast the carrots until the edges are golden brown and the carrots are tender but crisp, 15 to 20 minutes. While the puff pastry and carrots are in the oven, drop the garlic through the tube of a food processor fitted with the metal blade to mince. Add the ricotta, feta and ¼ cup of the raisins and process until smooth. Season with salt and pepper. Spread the cheese mixture within the borders of the puff pastry. Sprinkle the remaining ¼ cup raisins over the cheese and arrange the carrots in a single layer on top. Return to the oven and bake until the carrots are tender, and the edges of the cheese mixture start to turn golden brown, 15 to 20 minutes. Garnish with the chives, slice into squares, and serve.

In a large skillet, heat the oil over medium-high heat. Add the chickpeas, thyme and cayenne pepper. Season with the 1 teaspoon salt and the pepper. Cook until the chickpeas start to turn a deep golden brown, 6 to 8 minutes.

Using a slotted spoon, transfer the chickpeas to a bowl and set aside. Reduce the heat to medium and add the wine and lemon juice to deglaze the pan. Add the shallots to the skillet and sauté until they are soft, about 3 minutes. Add the garlic and sauté 1 additional minute. Pour in the cream and cook until slightly thickened, about 2 minutes.

Chickpeas are an excellent source of plant-based protein that you can keep handy in your pantry for quick weeknight meals. Make sure to rinse off your canned beans when you drain them, as this will help to reduce the sodium content by 41 percent.”

Turn the heat to low and add the spinach a handful at a time. Allow each batch to wilt before adding the next. Use a slotted spoon or skimmer to transfer the pasta from the pot of water to the pan of spinach and cream sauce. Add the Parmigiano and 1 cup of the pasta cooking water. Stir the mixture briskly over medium-high heat until the sauce is thick, 2 to 3 minutes. Transfer to a serving platter. Top with the chickpeas. Toss and serve immediately.

A Snack You Crack

The two top producers of sunflower seeds, which together account for more than half of world consumption, are Russia and Ukraine.

POWER UP Nutritionally, fiber-rich sunflower seeds beat the pants off many snack alternatives. They abound in healthy fats and in protein, which helps boost energy levels. (So do their generous quantities of vitamin B1 and selenium.) They contain zinc, which helps the immune system fight off viruses. And thanks to their vi tamin E, flavonoids and plant compounds, the seeds are also fighters of inflam mation, believed these days to be a key factor in many ills, including heart disease and cancer. Indeed, studies have linked high sunflowerseed consumption to a re duced risk of heart disease and high blood pressure. The numbers? A 100gram (3.5-ounce) serving of dried sunflower-seed kernels supplies 234 percent of your daily vitamin E need, 129 percent of your require ment for B1 (thiamine) and 103 percent of your B6 (which helps build brain and nerve cells)—along with nearly 100 percent of your magnesium, man ganese and phosphorus. Compare that to a happily trifling 1 percent of your sodium, which we tend to overconsume. (However, sunflower seeds are often sold with shells coated in salt—so look for the no-salt version if you’re watching your sodium intake. Also, remember that at more than 200 calories per one-fourth cup this isn’t a low-cal food. So don’t chomp down huge quantities.)

If you’re a nut for the raw nature of the seed, go to a source where sunflowers are cultivated or try growing your own. For a dash of practical ity, you can try farmers’ markets, grocers—even a gas station or two may have some packaged seeds. They’re usually sold with the hull still on, but you can buy them hulled. Keep quantity in mind when thinking of qual ity. A moderate amount of seeds will keep at room temperature for a couple of months—longer if you seal them in airtight containers. For larger quantities, opt for tight containment with refrig eration. Anything longer than a year won’t be worth it, so don’t throw your seed parties too far in advance. Use common sense and avoid seeds with a smell or noticeable mold. Most consumers just opt for cracking the hulls open and eating the kernels. No frills, just straight to the source. But as with any ingredient there are different ways to cook or shake it up. Roasting sunflower seeds is an option. Add them (hulled) to a salad or a yogurt for that pleasing crunch. Add some texture to that trail mix or fiber to those muffins. Check online to use them in recipes for tofu burgers or South American arepas. And don’t forget about the oil extracted from sunflower seeds that can be used in preparing a variety of foods.

Sunflower seeds are harvested from the large head of the mature sunflower plant (Helianthus annuus). And let’s get straight right away that the flat, bean-like, black-and-white-striped thing with the tough outer hull is not the seed itself. (Botanically, that’s called a cypsela.) Instead, the seed (or kernel) is that nutty-tasting little treasure you get when you crack the striped hull open. Like the pistachio, it requires a bit of work to yield its reward. Now here’s the question: Are you the type to gobble as you crack, or do you patiently open a whole pileful and then go for a splurge of pleasure? Either way, your nibbling is part of a long his tory. One of the few crops with North American origins, sunflowers were first domesticated by indigenous tribes thousands of years ago. Seeds can be pressed to yield a highly prized, lightcolored oil high in unsaturated fatty acids. It has been used as a preservative, a textile decoration, a hair dye, a topical remedy for rough skin or slowhealing wounds, a treatment for constipation and high LDL (“bad”) cholesterol—and a cooking oil.

Researchers at Virginia Polytechnic Institute tested a number of common snack-food nuts and seeds for levels of phytosterols, plant chemicals that can improve heart health and cholesterol levels. The champs, they found, were pistachios and sunflower seeds—those kindred goodies that are so worth the necessary cracking.

The Fahey family recently donated $5,000 to Fulfill, a community food bank in Neptune. Funds were raised during the annual Fahey Restaurant Group Golf Outing, organized to help provide food and services to neighbors in need. Nearly 500 walkers and runners participated in the Holmdel Foundation For Educational Excellence’s (HFEE) Annual 5K earlier this summer. MONMOUTH COUNTY SPCA Georgie’s Bar in Asbury Park hosted the MCSPCA Loveafoster event this summer, raising more than $4,000 for the Monmouth County SPCA. Funds were raised through basket raffles and puppy kissing booths, and all performers donated all their tips to support the fundraiser. 7 Georgie’s and MCSPCA staff members are all smiles during their fundraiser.

Girl Scout Troop 63 earned their Bronze Award by participating in the Mattel PlayBack program, which recycles old Barbie dolls and toys so they do not end up in landfills. The Max Challenge of Ocean, owned by Pamela Miller, supported the cause by hosting a free fitness class for the girls and their families. Miller also raffled off a free 10-week challenge to anyone who brought in Barbies to donate. During its 2022 Annual Meeting at the Rumson Country Club Riverhouse, Rumson Garden Club awarded the Catherine B. Gonska Memorial Scholarship to Trinity Hall student Annaliese K. Heidelberger.
