Summer At Last As the days are longer and the sun is at its strongest, remember to wear sunscreen of at least SPF 30 to protect your skin from harmful rays. If you’ve been diagnosed with skin cancer, Cooperman Barnabas Medical Center (CBMC), in partnership with Rutgers Cancer Institute of New Jersey (RCINJ), has melanoma experts who diagnose and treat malignant skin conditions. June is Pride Month, and CBMC is an LGBTQ-friendly facility with HEI (Healthcare Equality Index) designation, meaning we implement policies and practices related to the equity and inclusion of our LGBTQ patients, visitors and employees. June is also Men’s Health Month, a reminder for men to take charge of their health and schedule yearly checkups and preventive screenings. On page 24, for example, you’ll learn more about the importance of preventive screenings from Mark Gilder, M.D., a colorectal surgeon at CBMC who explains why these tests are imperative to our overall health and why they should not be put off any longer. This issue of Morris/Essex Health & Life also discusses pediatric asthma, a common chronic condition that can be exacerbated by summer humidity. Step Outside
When a man in an old movie is asked to “step outside,” that’s ominous. But when we at Morris/Essex Health & Life make that invitation in our annual Outdoors Issue, no violence is intended—except perhaps the silent smack of innovation against the humdrum. We’re believers, you see, in making the most of what life in our beautiful counties has to offer. And what “outside” offers in this season is warm, green, luxuriant possibility—a time of refreshment that can be a cue to fresh thinking too.
For one North Jersey family, that meant redoing their clumsy backyard deck and turning it into an entertainment mecca for family and friends (page 36). Their designer’s plan not only gave them a new two-tier structure big enough for everyone, it preserved much of the greenery in the yard, including a large tree beloved by the family. Being outside isn’t just about enjoying your own yard—it’s about exploring. On page 28, you’ll read about five outdoor activities we know you love and the many places in Morris and Essex counties where you can enjoy them. We’re fortunate to have many trails, waterways and parks from which to choose! But if you prefer to rest and relax along the ocean, you’re lucky to live a quick drive away from the Shore. Flip to page 32 to see our guide to some of the best beaches and then start planning your trip. What do you need to do today to make for a relaxing tomorrow? First, be sure to snag some just-off-the-vine veggies at your nearby farmers’ market (page 13). In time for Father’s Day, fire up the grill to make sure it can properly light (page 12). Plan your summer entertainment with a local show (page 13). And celebrate our country’s independence with a fireworks show. (A sampling of local displays is on page 12.) The outdoors exerts a siren call, but it’s not a call to passivity. We can do things to shape our experiences outside just as we design our homes and plan our schedules and choose our healthy diets. In a sense, our outdoors is what we make it. Not being Southern Californians, we can’t live outside year-round. But that just makes our Jersey summer all the more precious. So step outside. Enjoy the great outdoors—and this issue!

You’re not alone if you’ve been storing cleaners and other chemicals under the sink or in the garage that you no longer need but can’t put out with the regular garbage pickups. But there’s something you can do about it. Both of our counties have municipal hazardous waste collection programs. The Morris County Municipal Utilities Authority asks residents (no businesses, please!) to bring their hazardous waste materials to drop-off events at Morris County Public Safety Training Academy in Parsippany June 11 or Sept. 24 from 9 a.m. to 2 p.m. Residents must show proof of address. The Essex County Household Hazardous Waste Collection was just held in May, but stay tuned for another one likely in October. The lists below reveal things you may—and may not—bring: Acceptable: Aerosol cans, antifreeze, blacktop sealant, bug spray, disinfectants, drain cleaners, fertilizer, fire extinguishers, fluorescent light bulbs, gasoline, insecticides, kerosene, paints and varnishes, pesticides, propane gas cylinders (1- and 20-lb. only), thermostats, thermometers, used motor oil and filters. Unacceptable: Empty or hardened paint cans, alkaline batteries, unlabeled waste or containers with unknown contents, medical waste and sharps, radioactive materials, explosives, compressed cylinders (oxygen or acetylene), computers, electronics, smoke detectors, construction debris, tires. Few things are as much fun as heading to a live show in summertime, and our local theaters and arts centers are back in full swing after two summers of uncertainty. There’s no Whoopi Goldberg in this theater version of Sister Act, based on the 1992 film. The name Agricola, the Latin word for farmer, hints that this restaurant is farm-totable, meaning it sources ingredients from local farms for its dishes. What do burgers, mascara wands and cell phones have in common? They’re three of the most frequent distractions when we’re behind the wheel, says a new study from Rowan University in Glassboro. In the research, engineering students drove some of New Jersey’s most treacherous roads—including the Garden State Parkway, I-80 and I-95—logging which distractions interfered with drivers’ attentiveness. The top culprits, in no particular order, were phones, fidgeting, personal grooming, eating or drinking, talking to a passenger, reaching for the radio or another object and driving drowsy. Researchers hope the study will help the Department of Transportation create a safer driving environment. But until that happens, keep your eyes on the road, folks!

KUDOS We’ve heard of teachers using their own money to buy supplies for their students, but Jaleel Ritchwood goes above and beyond. He teaches special education at Marion P. Thomas Charter School, a Newark high school, and on an April episode of The Ellen Show he explained that he treats his students as if they were his own kids. That means buying them haircuts or shoes or anything else they need. Ritchwood also explained why he chose to go into special education: “I wanted to be an advocate for children with autism because they’re left out of a lot of things,” he told Ellen’s guest host, tWitch (Stephen Boss). He went home with a
$10,000 check to help fund his efforts, his nonprofit and his mentorship program. • Another extraordinary Morris/Essex resident is Theresa Brown, R.N., an oncology and hospice nurse and breast-cancer survivor from Montclair who released her second book, Healing: When a Nurse Becomes a Patient. It describes the frustrations of being a cancer patient in America, the importance of advocating for oneself and the difficulty of navigating all the “red tape” in healthcare. • Elsewhere in Montclair is Jai Agnish, a local journalistturned-musician who recently released his first of four singles this year titled “Free of This Disease.” But it’s not about COVID; instead, it chronicles his journey through addiction and recovery. Beach-chair Tycoons Their deal on TV’s Shark Tank fell through, but that didn’t stop these Shoregoing entrepreneurs from marketing their invention.
The family’s amped for a relaxing day in the sun and surf, but first there’s the dreaded trek—when beach chairs are haphazardly opening and closing, umbrella pieces are falling to the ground and everyone’s complaining. That’s a familiar scene to any beachgoer, and it was the scene nearly five years ago, when Short Hills resident Leslie Hsu, now 50, hit the sand with her husband, Greg Besner, now 56, and their two daughters. That’s when Hsu declared: “There has to be a better way.” The inspiration led the couple to create what they call Sunflow, an innovative beach chair setup (with accessories) that they say is more comfortable and easier to carry than the typical beach paraphernalia. Their invention won them a spot on the investment-appeal TV reality show Shark Tank, where they nearly secured a $1 million deal with investor Kevin O’Leary, nicknamed “Mr. Wonderful.” The handshake arrangement fell through after the taping, but the couple did the show one better and raised $3.5 million from investors.
Morris/Essex Health & Life recently spoke with the pair, who plan an upcoming move down the Shore to Spring Lake. What sets your chair apart from the competition? Leslie: We wanted to make it easier to carry and created a patented telescoping backrest, so with the push of a button it retracts. It’s small to carry but opens into a very big chair. I spend quite a bit of time on the beach when I get there, and typical chairs become uncomfortable over time. We set out to change that. Our chair is made with one piece of fabric so it’s almost like a hammock. Some Shark Tank judges were skeptical of the price—$198 for just the chair or $296 with all the accessories. Greg: People care a lot about their work-life balance. It seems we’re all working 24/7, being connected all the time, so when we finally do have our earned personal time, people treasure it and will invest. They’ll invest in premium camping or ski gear, or whatever their hobby is, but we found there really weren’t premium beach products.

Tell us about your experience on Shark Tank. Leslie: It was just as fun as you can imagine it would be. It’s really amazing how it comes together, and the right questions and information come out and then the final clip is so suspenseful. They’re really very kind—it’s all genuine smiles because they know it’s intimidating. They try to make every person who walks in take a deep breath and just feel welcome. How did you feel about the deal with Kevin O’Leary falling through? Greg: The experience was absolutely amazing. Leslie came up with this idea almost five years ago, and now we have a company, a product and brand and many happy customers. To be able to show it to the world on TV—what could be better than that? The deals are handshake agreements that happen in a very short time, then there are additional discussions and negotiations. We couldn’t come to a final agreement with Kevin O’Leary, but fortunately we have other investors who are excited about our business. We’ve raised $3.5 million, and that will allow us to make Leslie’s vision of additional products a reality. You’ve worked together in the past—with Leslie, a former handbag designer, on the creative side and Greg the business side—but this is your first time working solely on one business together. What’s it like working with your spouse? Leslie: I think one of the best things about it is we both have the same end goal, and we really stay in our lane. We’re adult enough to know what we don’t do well and experienced enough to know what we do well. Greg: I could never do this without Leslie— she’s the product visionary and designer and makes the vision come to reality. My background has always been general management—CEO, CFO, COO—the less sexy part of the business. Designing the product is the heartbeat of the company, but of course you need the rest of it too. On Shark Tank you spoke about the possibility of more products for Sunflow. What’s next? Leslie: We’ll have a higher chair—we’re hoping to have that out on the market by spring 2023. And there are other accessories coming that I’m really excited about, and I hope people will agree are very thoughtful. Greg: Innovating and invention of products is one piece of our growth, but we’re also focused on geographic diversification and expanding to other channels. It all leads to delighting more customers in more places. —Sarah Nolan

ACS GUIDELINES
The American Cancer Society recommends that people at average risk of colorectal cancer start regular screening at age 45. People who are in good health and with a life expectancy of more than 10 years should continue regular colorectal cancer screening through the age of 75. For people ages 76 through 85, the decision to be screened should be based on a person’s preferences, life expectancy, overall health and prior screening history. People over the age of 85 should no longer get colorectal cancer screening. For screening, people are considered to be at average risk if they do not have: • A personal history of colorectal cancer or certain types of polyps. • A family history of colorectal cancer. • A personal history of inflammatory bowel disease (ulcerative colitis or Crohn’s disease). • A confirmed or suspected hereditary colorectal cancer syndrome, such as familial adenomatous polyposis (FAP) or Lynch syndrome (hereditary nonpolyposis colon cancer or HNPCC). • A personal history of getting radiation to the abdomen (belly) or pelvic area to treat a prior cancer. WHEN ASTHMA ATTACKS
It can be difficult to distinguish if your child has a common cold or cough or a more severe respiratory condition like asthma. A pediatric pulmonologist at CBMC explains. Asthma is the most common chronic condition among children, according to the American Lung Association. But no child should have to suffer from shortness of breath, coughing, wheezing and/or chest pain when the condition itself is so manageable (though not curable). Anas Al-Turki, M.D., a pediatric pulmonologist at Cooperman Barnabas Medical Center’s Pediatric Specialty Center at West Orange and a member of the RWJBarnabas Health Medical Group, explains why it’s important to see a specialist if your child is exhibiting asthma symptoms, what treatment options are available, triggers to avoid and more.
After diagnosis, how do you work with patients and their parents to keep their asthma under control? I tell my patients to use an inhaler at the first sign of a cold, or if they have coughing, a runny nose, chest pain or chest tightness. Additionally, those who play sports or exercise should use an inhaler 15–20 minutes prior to activity. Other than inhalers, what are some other treatment options that you prescribe? There are a large variety of inhalers, as well as nebulizers, chewable pills, liquid pills and, for severe cases, injections. The treatment plan depends on the patient.
symptoms or asthma. This is one of the main reasons they should seek out a specialist—to help answer this question. So many other things can mimic asthma such as an upper respiratory tract infection and foreign body aspiration, especially in toddlers if they put something in their mouth and it goes into their lung. Part of my job as a pediatric pulmonologist is to help patients figure out what their triggers are so they can avoid them and overall improve their health.
From a physiological perspective, what is asthma? It’s when your airway is sensitive, so it constricts or narrows in response to various allergens or factors such as dust, pollen, cat dander, dog dander and exercise. There are two main types: virusinduced asthma, which is triggered by a cold and usually presents in toddlers and younger kids, and allergic-asthma, which is found more in older kids and during allergy season. What are the main symptoms? The big ones are shortness of breath, coughing, wheezing, chest tightness, chest pain and sometimes low exercise tolerance. Each child is different, but symptoms usually start in the toddler years or in the teenage years at age 13 or 14. Most of the time patients outgrow asthma by their 20s and 30s.
How do you work with the multidisciplinary team at CBMC to treat these patients? We’re a very well-rounded team with multiple pulmonologists, respiratory therapists, a nurse, a social worker and allergists, as well as other specialists such as ENTs and cardiologists [who help treat] the chest pain.We perform what’s called pulmonary function testing, where we look at the function of the lungs. It’s a simple, noninvasive procedure where we use a computer to gauge how strong the lungs Anas Al-Turki, M.D. are.
We know spring is a big time for allergies, but what are the summer triggers? Heat and humidity are big factors for asthma. I always advise patients [with asthma] to use a dehumidifier at home and avoid heat and humidity as much as possible in the summer months.

The impressive 35-mile Patriots’ Path is an outdoor enthusiast’s paradise and extends across the entirety of Morris County, from East Hanover to Washington Township. The trail system is comprised of biking, hiking and equestrian paths, and includes plenty of open green spaces to enjoy. It links several watersheds, historic sites and other points of interest in the area, and connects the Lenape Trail in Essex County to Allamuchy State Park in Sussex County.

Known more for water skiing, tubing and wakeboarding, Morris County’s Budd Lake is the spot for schools of both small- and large-mouth bass just waiting to tug at your line. There’s also the 2,600-acre Lake Hopatcong, which boasts some of the state’s best freshwater fishing. You’ll be sure to reel in trout, hybrid stripers and catfish, to name a few. Over in Essex County, there are plenty of trout to catch at Verona Park Lake. This smaller body of water (about 13 acres) is great for amateur fishers and kids looking to cast a line from the shore. Don’t forget that a New Jersey fishing license is required for anyone between the ages of 16 and 70. Fees are $22.50 for ages 16 to 64 and $12.50 for 65 to 69. Description: Those looking to escape the Jersey Shore crowds will find solace at Bradley Beach, which has a serene boardwalk with shops and restaurants. Patrons can also walk, bike ride or jog along the boardwalk, and fishing is permitted at certain spots along the water. LOCH ARBOUR
Description: Loch Arbour is small, spanning just two long blocks and one-tenth of a square mile. But this quaint Jersey beach, arguably the tiniest in Monmouth County, is small but mighty, and offers great views of Asbury Park without the traffic and crowds. Stop by the Village Beach Club for refreshments, a snack and a bathroom break. Beach fees: $10 per person Monday-Thursday; $12 on Friday through Sunday and holidays. Beach parking: Most streets offer free parking, but there are a few streets near Ocean Place that require meters. LONG BRANCH
Description: Long Branch is a bustling shore town with a lot to offer, including the Pier Village promenade (and home to New Jersey’s biggest July 4th celebration, OceanFest), tons of beachfront restaurants and shops and two miles of boardwalk starting at Seven Presidents Beach, a 38-acre beach park for sand and surf. Beach fees: $5 on weekdays, $7 for weekends and holidays. Teens ages 14-17 are $3 every day, and kids under 13, seniors over age 62, military members, veterans and disabled individuals are always free. OCEAN GROVE
MANASQUAN
Description: Mile-long Manasquan beach is a clean, well-maintained beach for the whole family. Main Beach has food and an arcade, while active types will find plenty to do (like surf or fish) at Manasquan Inlet. Beach fees: $10 for everyone ages 12 and over; veterans and active military personnel and their families are free. Beach parking: Manasquan Beach offers free on-street parking. Alternatively, there are five municipal lots that, if you’re not a season pass holder, require a nominal daily fee of $10 on weekdays or $15 for weekends and holidays. Pets: Leashed dogs are only permitted on the beach (but not on the boardwalk) in the off-season of October to April. Description: Monmouth Beach Bathing Pavilion is where you’ll find sand and sun and plenty of space to sprawl out with your beach gear. Beach fees: $10 for a daily pass Beach parking: Street parking is free but limited; otherwise, try the free municipal lot located near the pavilion. Description: This 7-mile-long barrier beach peninsula jutting into the Atlantic Ocean and Sandy Hook Bay is part of the National Park Services’ Gateway National Recreation Area, which encompasses 26,000 acres of parklands in parts of New Jersey and New York. SEA BRIGHT
Description: The borough of Sea Bright has seven free public beaches along Ocean Avenue. There’s also Sea Bright Municipal Beach in the center of town, which has more bells and whistles including lifeguards, parking, restrooms and locker rentals. Municipal Beach is also walking distance to Sea Bright’s downtown area, but there’s no boardwalk—it’s more like a sitting area, with no activities or concessions. Beach fees: $8 for ages 12 and over; kids under 12 and military personnel and family members are free. SEA GIRT
Description: Two miles of oceanfront and pristine waters await you at Spring Lake. It’s a modest beach (and boardwalk), ideal for those seeking some peace and quiet. An earth-friendly Summit family never gave up the green grass as they pursued an outdoor redesign, updating their clumsy old deck to make it an entertainment mecca. Their new, two-tier structure is big enough for the entire gang, with multiple modern seating clusters and a holiday-size table, but it doesn’t compromise a cherished backyard. And that was key, because while decks are a snap for parties, this family felt there was no substitute for grass, especially with the little ones. “It was, hands down, one of the best investments we’ve made,” says homeowner Matthew. “Our previous deck was in rough shape and relatively unusable. It’s transformed our backyard.” With this design by Distinctively Outdoors in Parsippany–Troy Hills, put into effect during COVID and completed in late 2020, Matthew and his wife Joanna always feel close to their two school-age children, even when they’re playing in the yard. That’s because of an elegant cable railing system from Deckorators that doesn’t obstruct the view and offers built-in cap lighting for nighttime use. “That was the one thing they really wanted, to see through to their backyard,” says Laura Coyne, designer/general manager of Distinctively Outdoors. Of course, any project has its challenges, and for this new deck it was a rather large tree. A chainsaw was out of the question. Yet building around the tree would sacrifice gathering space, Coyne says. The solution? “We changed the whole flow of their outside space, and we made it work.” So, while the tree reined in the top deck, it had no impact whatsoever on the larger deck a few stairs down—a combo that at least doubled their space. This was much more than a deck replacement. The couple was thinking about the future when they called on Distinctively MSXHEALTHANDLIFE.COM

Outdoors to design a space that spans the entire width of the colonial. This deck does not include an outdoor kitchen, although Distinctively Outdoors has done many that have that feature. For the present, the couple wanted to focus on creating an outdoor gathering area. But, Coyne says, the deck was built so as to accommodate barbecue features in the future. “Everything starts with the right design,” says Coyne. For oneness with the environment, the couple chose khaya, a walnut brown, from Deckorators Voyage composite decking, which designers bordered in black like a picture frame. As other finishing touches, Deckorators Pro contractor Mercury Decks enclosed the staircases and below the deck, while avoiding potentially unsightly seams in the decking. The designers staged the furniture, and it was an instant hit, a mixture of teak sofas on the lower level and Savannah brown wicker seating above, with Dune-colored performance cushions that can withstand both the elements and the kids. One of today’s sought-after materials is weathered cement, which gives a variety of tables on this deck a sleek but sturdy look. In contrast to stone, comfort is king with the companion handwoven-wicker chairs, Coyne adds. Weathered cement extends its charm to a pedestal table and a waterfall-edge console paired with versatile poufs that serve as a table or chair. The teak seating cluster on the lower level abounds in natural beauty “from the oldest part of the tree,” Coyne says. Before Distinctively Outdoors stepped in, the family wrestled with a basic deck that didn’t suit outdoor living. Now,, get-togethers are the joy they should be. “It worked perfectly,” says Matthew. “We preserved everything that we intended but still gave the backyard a fresh, modern look.”

FRENCH SAVOYARDE WITH BACON, CHEESE AND LEEKS Yields 4 servings
INGREDIENTS:
n▢ 8 eggs, lightly beaten with a fork n▢ 2 tsp. butter n▢ 2 Tbs. olive oil n▢ 4 medium potatoes, peeled and cut into small cubes n▢ 6 rashers bacon, chopped n▢ 2 medium onion, chopped n▢ 2 oz. Gruyere cheese, roughly grated n▢ salt and black pepper, freshly ground n▢ Gruyere cheese, freshly grated, for serving n▢ 1 spring onion, finely chopped, for garnish
DIRECTIONS:
In a medium-sized frying pan measuring 14 inches in diameter, melt the butter and oil together over medium heat. Place the potatoes in the pan and fry them for about 10 minutes, tossing regularly and cooking until they are lightly golden and almost cooked through. Add the bacon and onion to the pan and continue to cook these for a further 10 minutes or until the onion has softened. Preheat the grill to the highest setting. Season the eggs with pepper and just a pinch of salt (it will get more saltiness from the bacon). Arrange ¾ of the grated Gruyere cheese over the ingredients in the pan. Turn the heat up and pour in the eggs. Using a palette knife or spatula, draw the outside of the omelette inward, allowing the liquid egg to escape around the edges. At this point, your omelette will still look a little liquid on top. Sprinkle the rest of the cheese, then place the pan under the grill for less than 10 seconds to set the top.

FRENCH TOAST CASSEROLE WITH SAUTÉED APPLES Yields 8 servings
INGREDIENTS
n▢1 French bread loaf n▢8 large eggs n▢1½ cups milk n▢2 tsp. cinnamon n▢1 Tbs. vanilla extract n▢¼ cup sugar n▢maple syrup, to taste n▢powdered sugar, to taste For the brown sugar cinnamon topping: n▢4 Tbs. unsalted butter, melted n▢2 Tbs. brown sugar n▢1 Tbs. sugar n▢1 tsp. cinnamon n▢ 1/8 tsp. salt For the apple compote: n▢2 Granny Smith apples, sliced ¼-inch thick n▢2 Tbs. unsalted butter, melted n▢1 Tbs. orange juice
DIRECTIONS:
Spray a 9x13 baking dish liberally with non-stick cooking spray. Next, cut or tear your bread into cubes or small pieces and place into a large bowl. Set aside. In a separate large mixing bowl, combine eggs, milk, sugar, vanilla and orange juice and whisk until combined. Pour the mixture over your bread cubes and gently fold until combined. Transfer coated bread to the prepared glass baking dish, cover and refrigerate for a minimum of 2 hours or overnight.

Once ready to bake, remove the casserole dish from the refrigerator and preheat oven to 375°F. Prepare your brown sugar cinnamon topping by combining melted butter, brown sugar, sugar, cinnamon and salt in a mixing bowl. Whisk until smooth. Spoon mixture evenly over the top of your French toast casserole and bake in the oven for 35-45 minutes or until it is a light golden brown and your desired level of crispiness. Place on a wire cooling rack to cool for 10 minutes. While waiting for casserole to cool bring a sauté pan to medium heat. Add butter, apples and orange juice and sauté for about 8-10 minutes or until apples have softened. Top with apple compote and sifted powdered sugar or a drizzle of maple syrup.

INGREDIENTS:
n 10 cups bread, cubed n 3 cups cooked ham, cubed n▢1½ cup cheddar cheese, grated n 1½ cup Monterey cheese, grated n 9 large eggs n▢2 cups milk n▢1 tsp. salt n▢1 tsp. dry mustard n▢½ tsp. garlic powder n ¼ tsp. black pepper n chives, for garnish
DIRECTIONS:
Butter or coat with cooking spray a 9x11-inch baking dish. Layer in bread, ham and cheeses. In a medium-sized bowl, whisk together eggs, milk, salt, mustard, garlic powder and pepper. Slowly pour over bread, ham, and cheese. Cover with foil and place in the refrigerator overnight. Take strata out of the fridge. Heat oven to 375°F. Bake for 30 minutes covered. Remove foil and continue to bake for 15 to 20 minutes until the top is golden brown and puffy. Remove from oven and allow to cool for 5-8 minutes before serving. Can be stored, covered in the fridge for up to 4 days.

DataJoe checked and confirmed that each published top vote getter had, at the time of review, a current, active license status with the State of New Jersey regulatory board. Nutritionally speaking, the raspberry, a tasty fruit with a silent “p,” packs a potent punch. The raspberry isn’t really a berry, botanically speaking. Part of the rose family, it’s actually several species of the genus Rubus, including Rubus idaeus (the European red raspberry) and Rubus occidentalis (the North American “black” raspberry). Growing on a bush three to six feet high, it’s cultivated in temperate zones the world over. Raspberries have a bumpy, “aggregate” quality: A fruit is made up of roughly a hundred tiny blobs called drupelets, each containing a seed. So is its cousin the blackberry (also not technically a berry!), but here’s a difference: Pluck a blackberry from the vine and you’ll get its stem (called the torus) too; do that with a raspberry and its torus stays on the plant, leaving the fruit with an indentation. Greek mythology would have you believe red raspberries get their color from the blood of the nymph Ida, who sought to comfort Zeus. (Modern science tips its hat to the Greeks with that idaeus name, but attributes the hue to water-soluble pigments called anthocyanins instead.) The Roman agricultural writer Palladius wrote of raspberries, and their seeds were found in Roman Britain. Centuries later, Edward I (reign 1272–1307) was said to be the first to call officially for the fruit’s cultivation. But today, if we connect raspberry with royalty, we’re apt to think of the late musician Prince and the color of a certain beret.
POWER UP The raspberry tops the Mayo Clinic’s hit parade of fiber-rich fruits, with about 8 grams of fiber per cup, lending a well-known boost to regularity and blood-sugar control. Just 80 grams of red raspberries provide 21 milligrams of vitamin C, useful for fighting off infections and protecting the immune system. That’s almost one-quarter of your daily need—for a modest 42 calories. A 2014 study showed that “black” raspberries helped suppress the effects of endothelial dysfunction, a coronary artery disease in which large blood vessels constrict. With a low glycemic index in addition to the fiber content, you can’t go wrong with raspberries. They’re a good source of folic acid for the development of red blood cells and potassium for the balance of fluid levels in the body. And considering the fruit is 86 percent water, you don’t have to worry a whole bunch about portioning. Paint the town red with them. BUY/STORE/SERVE Your local grocery, fruit stand or farmer’s market most likely has this fruit in abundance from late spring through October. Unlike with people, you want to be superficial about raspberries. Look for uniformity of color and gloss on
the exterior. Make sure fruits aren’t crushed or moldy. If the raspberry’s color looks dull or fading, pass that package by. (One trick: If you can, discreetly turn a plastic box of raspberries upside down. If some fruit adheres to the bottom, that’s a bad sign.) Raspberries have a short shelf life once picked; if rinsed, they can take on mold easily. So only wash them if you plan to eat them right away. Always go organic when it’s available, and keep unwashed berries in a covered, shallow container in your fridge. Raspberries can be served as they are, straight from the container. They can be pulverized into jams. They cameo well in a lot of breakfast items, such as cereal, oatmeal, yogurt or even your classic fruit salad. The tang of the fruit pairs well with a nice cheese if you’re preparing a platter, and even a barbecue sauce can be helped by the slightest hint of raspberry. The leaves of the raspberry plant? 1 PARSIPPANY POLICE DEPARTMENT The Parsippany Police Department offered its support to the local Girl Scouts of Northern New Jersey troops during their annual cookie drives.
